Wild Mushrooms: Mycology, Foraging, Cooking and Remediation Guests: Ryan Bouchard and Emily Schmidt, Co-Founders, Mushroom Hunting Foundation As children, we were cautioned about mushrooms, because some of them are poisonous to eat. Most of us avoided them altogether. This is unfortunate, because in truth, there are many wild mushrooms that are edible and provide both delicious and nutritious culinary value. So which ones are safe and which ones are unsafe? In this episode we explore mycology, which is the study of mushrooms and mycelium. Mycelium is the hidden dynamic mass of branching, thread-like hyphae that produce the visible fruiting bodies we call mushrooms. Mycelium is essential to maintaining a healthy forest ecosystem, which we will begin to investigate through a story walk through the woods. Our guests Ryan Bouchard and Emily Schmidt co-founded The Mushroom Hunting Foundation to educate people about wild mushrooms, safety and mycology. Ryan is the author of Gourmet Mushrooms of the Northeast, a combination book and calendar that details the annual progression of the mushroom seasons and focuses on species that are easiest for novices to identify as safe. Edible mushrooms can be found year round, with different species fruiting during different seasons, including the winter months. Both Ryan and Emily are experts in hunting, identifying, preparing and cooking mushrooms. In this episode, they delve into the health, nutrition and many uses of fungi, including the decontamination of polluted soil through a process called mycoremediation. Mycelium is capable of neutralizing soils contaminated with pollutants such as PCB chemicals, hydrocarbons, pesticides, heavy metals, bacterial pathogens, and even plastics. [00:01:28] I come from a background of educators and coaches.[00:01:55] Playing multiple sports.[00:02:21] I made varsity as a freshman. My parents thought that the coach made a mistake.[00:02:40] Decided senior year to play basketball or volleyball in college, went with volleyball. Mostly because of my mom. She really wanted me home for Christmas and she knew that if I played basketball, I would not be home for Christmas.[00:03:35] I thought, why not try this coaching thing? Let's give it a whirl.[00:04:16] It was a really big eye-opening lesson for me.[00:06:05] I had to separate, and I still do, have to separate myself as a player, and myself as a coach.[00:07:44] I was always good at a lot of things, but I never felt I was great at one thing. So, to compensate for that, I always had to outwork everybody.[00:10:32] But when I became the head coach, I had to separate for a while so that I could create my own identity as a head coach.[00:12:01] My entire life philosophy, just in everything I do is leave it better than you find it.[00:13:14] The best coaching I've ever done is when I didn't have to get off the bench.[00:14:45] I think the first thing is having core values; that looks different for every program, but having those three or four things; this is what our program stands for.[00:15:11] Book club for each of the grades within their program. [00:16:28] The other thing that we do in our program is called iron buddies. Originally, it's a biblical reference: "iron sharpens iron."[00:18:59] I actually really don't enjoy going and watching volleyball. I don't enjoy it. [00:20:27] I really learned to watch from is Walt White, our baseball coach. I'm constantly picking his brain about stuff. Emily Schmidt, our water polo coach, her and I are in the same path as far as being here and took over around the same time.[00:21:54] I think that I have an advantage because I coach a female sport and it was a female athlete. I think that's one thing that my male colleagues can't, they just, they're never going to be able to. Connect with. And I think it'd be a disservice to my athletes to not use my own experience in that way.[00:23:41] I've had to really work harder at the X's and O's part of coaching, because I am a natural athlete and a natural workhorse.[00:26:24] Modeling the communication that I have with some of those veterans in front of the freshmen and the transfers. [00:28:50] Forgiveness is a super powerful thing, and I don't think that coaches are told and taught that very often. I have made so many mistakes as a coach.[00:33:00] I didn't take the time to get to know my freshmen in a way that was meaningful.[00:35:43] One of the first questions I ask recruits is, do you play multiple sports? Because here's what being a multi-sport athlete taught me.[00:38:30] One of the things that I've noticed a lot with, most often with multi-sport athletes is they handle pressure a lot better.[00:40:46] Having adults, whether it's parents or coaches or siblings that say it's okay to be multi-dimensional.
