Believe it or not, this is the first episode ever of the Lone Star Plate solely about barbecue! My guest is Leonard Botello IV, the owner of Truth BBQ, and he uncovers the secret of why barbecue in Texas is like no other.   Truth BBQ is based in Houston, and it has been recently featured as #10 in Texas Monthly's list of Top 50 barbecue places in Texas. Just to give you a quick backstory, they started as a roadside outpost in Brenham, Texas in 2015. Leonard took a used Klose pit and a small building on Highway 290 and turned it into a bbq hotspot bringing in people from Austin, Houston, Brenham, and after a while, all over Texas. He’s been in living Texas for 15 years having moved from Costa Mesa(Orange Count) in California for a synthetic turf company doing design work. He moved sight unseen to Georgetown. After large layoffs he went out on his own. Currently he he has 4 full time jobs which includes doing design work for custom apparel company called Thunderwear(https://www.thunder-wear.com). We talk about his connection with Chet Garner(The Day Tripper - https://thedaytripper.com) and how a Bacon poster he created bridged a friendship with Daniel Vaughn. He ended up doing a map for Daniels Book The Prophets of Smoked Meat. Knowing Daniel and doing work for him led to a book party in Dallas where he met writer and photographer Kelly Yandell(The Meaning of Pie) who was on the board at Foodways Texas. It was this connection that had Brady doing work for Foodways Texas, Camp Brisket, and Barbecue Summer Camp. It is here where he connected with Jess Pryles and has been doing work for her ever since. Mainly the gist of the discussion is that these connections, these friendships, fueled additional connections, friendships, and work. We talk about his methodology into how he creates designs for clients and what he needs going into it(he asks 20 questions to get a good overall perception). He explains packages and about the current lead time which wonderfully is not too long right now. At the very end we find out where the M. came from in 'M. Brady Clark'. This past weekend I went to what I would say is the best BBQ festival I've hung out at yet. The Red Dirt Festival. It's in the town square in Tyler, TX where they set up a stage but the music doesn't start until the barbecue is over. This is different from most because you can actually hear people and hang out when you eat their BBQ. For me, it was a dream! I usually have to filter out background music, equipment, generators, and more. This time we got to talk quietly as everyone managed their cooks. We started out hanging with the Truth BBQ crew. Patrick Hernandez and Reid who were making sure their amazing briskets were staying warm on the pits of Arnis Robbins from Evie Mae's. Reid is known for having his celebrity friends like Houston's Paul Wall stop by their Heights location at Truth. The meaty part of this episode is with Jordan and Cody while they cooked a whole hog on a custom pit made by A.N. Bewley manufacturing. Cody and Jordan spoke over 3 weeks about the design and Bewley built it just in time for the event. It's an impressive setup. It has a whole mechanism for flipping the hog, multiple openings and a simple way to make coals mounted on the back. After this weekend I'm so excited about BBQ and the Texas barbecue scene I can't even sit still about it. I'm going all over the world this year to talk to people who eat, cook and love BBQ. There's a danger to cooking with fire. Recently, B's Cracklin in Atlanta had a fire that consumed their entire restaurant. Within days of the news Leo Botello IV, owner of Truth BBQ in Houston, put together a fundraiser. Not for the restaurant, insurance will eventually cover that, but for the employees of B's Cracklin. For the hard working people in the barbecue industry who have temporarily lost their jobs. Watching people come together in a shared goal is truly beautiful. In this episode I get to talk to a ton of great people in BBQ. Elliot Moss of Buxton Hall, Mauro "Max" Chiefari formerly of Franklin, Matt Horn, The Mighty Joe Yim, Burt Bakman, Wayne Mueller and Clay Cowgill. I even get a quick chat with Reed, Chris and Cole who are part of the hard working team at Truth BBQ. If you haven't been to Truth, the food is exceptional and the staff is unreal. Their attention to hospitality and service is a beautiful thing to watch. Like many of these event episodes, I'm chasing down the story and catching these guys as they're working. I started at 6am and was on my feet with the Pitmasters till service at 8pm. A long day of fun and watching the masters work. I'm grateful for all the access and information I'm allowed by professionals in BBQ. It is an honor to be allowed to get in the way as much as I do. I feel like an embedded journalist chasing the fire, smoke and sweat that goes into the delicious food we all love. This week I’ve got a great episode for you. I long list of people I spoke with at the close of Texas Monthly BBQ. Some of these BBQ restaurant owners, cutters, pitmasters rarely get to meet and this is one of those rare occasions. The final hour of TMBBQ. I’ve got a long list of people that I got to speak with while I was walking around. So get ready, we’ve got a lot to cover. We spoke with Catherine Stiles and Lance Kirkpatrick, two of the many talents at Stiles Switch BBQ. They were hanging out with John Kulow aka ATX Food Guy. We talk to Evan Leroy of Leroy and Lewis BBQ. A modern man who always experiments with new ideas, even in BBQ. Evan was with Brad Robinson of Chuds BBQ as well as Chris Mcghee from The Switch. We talk briefly to Shane Stiles and Johnny Texas before I run into Rober Sierra of S&S Pit Crew. A guy everyone is happy to see and someone who works hard cooking BBQ. Robert cooks for his competition team when he’s not cooking for his family. I talked to Dusty Dworak from 2M Smokehouse, his knife skills serve some of the best BBQ in the state. John Mueller pulls me away to hang out with the LA BBQ crew, Ali Clem and LeAnn Mueller. They told us about their travels and all the weird things they ate in Asia. I grab a shot with Dominic Colbert and Mike Ruffino while John Brotherton shouts out his friends. Misty Roegels and they guys from Panther City get on the mic until I run into Patrick Hernandez. Patrick was working with Truth BBQ for the fest and they had one of the longest lines of the day. Of course if we’re going to hang around by the Truth tent we’re going to talk to Cory Taylor, one of the most outspoken members of the team. Leonard Botello IV owner and vision behind Truth BBQ talks to us about Houston and their soon to open second location. Finally, I run into Dylan Taylor and Joe Yim who have been cooking at Terry Black’s BBQ at one of the biggest operations in Austin. Just over that weekend they cooked over 400 briskets and they’re still smiling and having a good time. That’s the beauty of the BBQ life. You can work long hours and still have a big smile on your face. You’re creating something delicious and putting smiles on peoples faces.
