I sat down to chat with Dylan Taylor, CEO and chairman of Voyager Space. Voyager Space has a contract to build America's next space station, STARLAB, in collaboration with NASA. Dylan I would say is probably one of the top five most significant names in the entire space industry. A lot of people know Bezos and Musk, but Dylan's in that bucket. He's got a message for us today around the importance of space as an industry for social advancement.A lot of us get tangled up in thinking about space in the context of the mission to Mars. And it seems pipe dream-ish, Dylan brings us back down to reality, reframing space as a unique environment for scientific research, manufacturing, and societal advancement. He highlights Voyager's mission to scale up space infrastructure projects and recent milestones achieved with Airbus and SpaceX. Our conversation explores the implications of privately owned space infrastructure and the emergence of two distinct space ecosystems led by the US and China. Dylan emphasizes the benefits of privatization in advancing the space industry, citing SpaceX's innovations like reusing rocket boosters to reduce costs and increase accessibility to space. Dylan also shares his personal journey from a real estate executive to involvement in space exploration, highlighting the importance of following one's passion. The I.S.S. is expected to be retired in 2030, closing a multidecade chapter for humans in space funded by the government. With the next chapter of human space exploration spotlighting the private sector, a slew of companies are developing what they hope will be the I.S.S's commercial successor. Voyager Space, a holding company concentrated on space infrastructure, is the startup behind Starlab, one of 3 projected pre-selected by NASA to potentially rise to the challenge. Morgan Brennan sits down with founder & CEO Dylan Taylor about space stations, his own spaceflight with Blue Origin and the commercial space sector.

Darts and Letters is creating a new podcast, Academic Edgelords. This is a scholarly podcast about scholarly provocateurs. This is a leftist podcast that takes a second look at their peer-reviewed work, and tries to see if there's anything we might learn from arguing with them. We are hosted by: Victor Bruzzone, Gordon Katic, Matt McManus, and Ethan Xavier (AKA “Mouthy Infidel”). On this episode, we introduce our show by reading the ultimate academic edgelord: Ted Kacynski, who just died. This domestic terrorist was also a real scholar, with a few peer-reviewed works in mathematics. We read his manifesto: Industrial Society and its Future. Why has the Kaczynski become so popular with young people? He is just one extreme proponent of an anti-civilizational political theory called anarcho-primitivism. Few call themselves anarcho-primitivists, yet the basic ideas have become widespread, thanks to worsening environmental degradation and the ongoing techlash. You probably saw some anarcho-primitive thinking on Twitter right after Kaczynski died; many people lamented his death, and praised his arguments. What makes his thinking appealing to some? What does it get right about technology, and what does it get very wrong? We also discuss the broader anarcho-primitivist tradition, with the help of Chamsy el-Ojeili and Dylan Taylor's critical but generous review article from April, 2020, “the Future in the Past”: Anarcho-primitivism and the Critique of Civilization Today," in Rethinking Marxism. Dylan Taylor is a ranch apprentice at the Chico Basin Ranch, where he plays an integral role in the success of the 89,000-acre cattle operation. Born and raised outside of Fort Worth, Texas, Dylan had no ranching experience before coming to Ranchlands. In fact, much of his early career was spent in the Texas barbeque scene, where he worked for many years in some of Austin's most renowned barbeque restaurants and even started his own with some of his best friends. And as you'll hear in this conversation, he eventually transitioned out of the restaurant business and was hired on as a cook at the Zapata Ranch, which began his tenure at Ranchlands. This week is Baby Loss Awareness Week, October 15th is Pregnancy, Infant, and Child Loss Remeberence Day, and today on Sense of Soul podcast we will be remembering Dylan Taylor. His parents, our dear friends Angelica and Billy Taylor joined us for a hard and very heartfelt conversation. In 1997 the newly married couple were preparing for their first child. They had learned through an ultrasound that they were having a boy. Billy and Angelica were so excited to begin their lives as parents. Everything was going well until Angelica begun to have concerning symptoms that lead her to the hospital, in her second trimester. Angelica was diagnosed with “HELLP Syndrome” a rare pregnancy complication. It is a type of preeclampsia that causes elevated liver enzymes and low platelet count. Many women who have HELLP syndrome need to give birth early to prevent health complications. Angelica and Billy were faced with having to make decisions that nobody should ever have to make. However this was an emergency and the urgency was a matter of life and death. The risks were great, inducing labor would mean that their baby would be very premature, but if they didn't, there would be a chance Billy would lose them both. Angelica and Billy take us back to the day they had their firstborn, to the moments they lost their firstborn. Hear from a fathers prespective as Billy so genuinely shares his story, learn how they struggled in grief, yet managed to survive this traumatic loss and find their happy once again. If you or someone you care about has lost a child to stillbirth, miscarriage, SIDS, or any other cause at any point during pregnancy or infancy. 1 in 4 women will lose a baby during pregnancy, delivery or infancy, Please join us in raising awareness this October for Pregnancy and Infant Loss Awareness Month and share this episode. We dive into a range of topics across the climbing spectrum, while trying not to be old-shamed by our young friend. But first, tragedy strikes in Patagonia as the climbing world loses one of its best: Corrado “Korra” Pesce, who died while descending Cerro Torre on January 28th. His partner Tommy Aguilo experienced serious injuries and attempted to descend alone, and was ultimately rescued in a completely heroic effort by some of the best climbers in the world. We discuss the story itself, and pay homage to the noteworthy successes and climbing accomplishments that were sadly overshadowed by the tragedy that ensued. Finally, we end on happier note, as Dylan Taylor, aka “Climberisms” on Instagram, imagines a conversation between Adam Ondra and Alex Honnold about baby diapers. Show Notes “Corrado 'Korra' Pesce dies after climbing new route on Cerro Torre with Tomas Aguilo” A crowdfunder to help Korra Pesce's daughter. Description of Tommy and Korra's new route. This episode is an amazing story about the Commercialization of Cislunar Space by a company named ThinkOrbital. It's also the story of how two talented people were bold enough to share their innovative idea to design something…different, better, and for all space explorers. Co-Founders Sebastian Asprella and Dr. Vojtech Holub met on Discord during COVID, and soon found that by applying their interests and talents together in a big way, a big idea for a single-launch space station could become a reality. And thus, ThinkOrbital was born! One of Beth's favorite ThinkOrbital long-term objectives is that they look to explore customers beyond “traditional” space users, promoting the quality of business, research and recreational scope available in space! Today on this Casual Space Podcast episode, Sebastian and Vojtech walk us through their concept to create a novel space station that is scalable, modular and can be deployed with a single launch to be assembled on-orbit. Wow. About Sebastian Asprella: Think Orbital Co-Founder, CEO Sebastian brings 25 years of leadership and intrapreneurship experience across business management and IT sectors. With a background in electromechanics and business administration, Sebastian has been working for the European Medicines Agency (EMA) since 2001 starting from business administration to heading complex multinational digitalization programs. Sebastian has previously consulted on business development for EnergyX, while his early career experience ranges across telecom and oil and gas sectors. About Vojtech Holub, Ph.D.: Think Orbital Co-Founder, CTO Vojtech brings 13 years of research and development and software engineering experience, along with research expertise in aerospace engineering. Vojtech holds over 20 patents and has published 17 conference and journal papers. His paper published in the AIAA's Journal of Spacecraft and Rockets has served as a founding thesis for ThinkOrbital's Commercial Space Station design. About ThinkOrbital https://thinkorbital.com/ ThinkOrbital is designing and delivering the premier commercial low Earth orbit destination with a mission to accelerate exploration of cislunar space. They have developed a concept based on mature technologies available today, to create a novel space station that is scalable, modular and can be deployed with a single launch to be assembled on-orbit. Jeff Bezos' rocket company, Blue Origin, has sent "Good Morning America" host Michael Strahan, the daughter of famed astronaut Alan Shepard, and four paying customers on a supersonic joy ride to the edge of space. The crew took off aboard one of Blue Origin’s suborbital space tourism rockets, called New Shepard, at 10:01 a.m. ET from the company’s launch facilities near the rural town of Van Horn, Texas, where Bezos owns a sprawling ranch. Strahan and Laura Shepard Churchley, whose father Alan Shepard went on a suborbital flight in 1961 and later walked on the moon, rode alongside investors Dylan Taylor, Evan Dick, and Lane Bess, as well as Bess' adult child, Cameron Bess — all of whom paid for their seats. To learn more about how CNN protects listener privacy, visit cnn.com/privacy

Dirt Talk had our very first guest in the Dirt Talk Studios this week, which is very exciting. He's also arguably our youngest guest to date. This week, our guest is Dylan Taylor, a 20-year-old laborer and construction management student from MN. Dylan is a pretty special guy for a lot of reasons: he's already worked 2 summers as a laborer for Duininck Inc., he just started a 2-year college program for construction management, and he's traveled and meet with people all over the industry to make connections and learn from those more experienced than him. In episode 87 of Dirt Talk, hosts Aaron Witt and Alex Horton have a conversation with Dylan about what it's like to get into the industry at a young age, important advice he's already received, using doubt from others as fuel for your own internal fire, and how he's figuring out how to run equipment with only one hand. To follow along with his story, you can follow him on IG @1armedtrades or on LinkedIn. To connect with other people who listen to this show, use and search for the hashtag #betterdirtworld and join in on the conversation. David is from Slave Lake, Alberta. When he was around 39-40 he was having issues with his heart and was referred to Dr. Dylan Taylor at the Maz. His heart function was at 45% and he took medication for many years to help with his condition, but his heart was gradually deteriorating. Through his experience at the Maz, he feels that everyone there cares greatly about their patients. At every turn they had an answer and a solution for him. They were there for him. He knew that if he needed help, he would get it right away. Eventually his heart function declined so much that they had to look at new options. He was evaluated for a transplant, but was not eligible – so they offered him a Ventricular Assist Device (VAD) or mechanical heart. Because of the Maz and donor support that helps make the Maz one of the leading complex cardiac care centres in the world, David is alive. David is now in his early 60s. And credits the Maz with keeping him alive for over 20 years. His experience has changed his perspective. You always think it will be someone else that gets sick. You never think it will be yourself. “When you are sick like that, you don't realize how sick you are – you think it's normal. You only realize how lousy you felt once you are feeling better.” The biggest change he has noticed now is how much easier it is to breathe. See omnystudio.com/listener for privacy information.

Dylan Taylor is a global business leader and philanthropist. He is an active pioneer in the space exploration industry as a CEO, investor, thought leader and futurist. Every day is like Christmas for Dylan, because working in the space industry has always been his passion and calling. Beth asks Dylan about when his interest in space began, and Dylan describes how investments in space can be transformational for all humans and our future- on this episode of the Casual Space Podcast. ABOUT DYLAN TAYLOR: Dylan Taylor is a global business leader and philanthropist. He is an active pioneer in the space exploration industry as a CEO, investor, thought leader and futurist. Currently, Dylan serves as Chairman & CEO of Voyager Space Holdings, a multi-national space holding firm that acquires and integrates leading space exploration enterprises globally. Dylan has been cited by Harvard University, SpaceNews, the BBC, Pitchbook, CNBC, CNN and others as having played a seminal role in the growth of the private space industry. As an early-stage investor in more than 50 emerging ventures, including Accion, Kepler, York, Astrobotic, Made in Space, Relativity, and Planet, Dylan is widely considered the most active private space investor in the world. Dylan has extensive global business experience as both a board director and CEO. He previously served as a Director for UMB Bank, a Fortune 500 company based in Kansas City and as a mutual fund director for the Jackson Funds where he oversaw assets of $8B across 130 distinct funds. Dylan has been a Fortune 1000 CEO with P&L responsibility in excess of $3B and operations encompassing 16,000 employees in 60 countries. In addition, Dylan has participated in 4 IPOs over the course of his career. From the Casual Space Podcast: On how his love for space got started and why it’s getting stronger every day: “Every day is like Christmas, I certainly love what I do. For me, (space) is a life long passion, the question I ask myself a lot is, ‘Why did it take so long to realize what I loved and was truly passionate about?!’ I think the answer is, you get caught up in life, you get caught up in a career path… and ironically, if you have early success in your career that’s not directly tied to your passion, it can be a little bit of a trap. I think you can find yourself in the hamster wheel, and it can be hard to get off.. I certainly was like the situation I was in. I was in more of a traditional business career, and that was fine, and there were gratifying elements of that, but it was not truly satisfying the passion that I had for space.” “My passion for space is really about the societal impact of space. It’s about the transformational element of space. It’s about the ability for humanity to reimagine what it means to be human, and what our opportunity as a species is going forward. So to me, it’s more about having the canvas to paint our future onto. I think space is truly transformational from a contextual, intellectual standpoint.” On what made Dylan Taylor brave enough to leave his career path to follow his passion for space: “My close friends and family encouraging me- I could see that we were entering a growth for the industry, and I’ve never been personally happier being in the industry. My free time and social activity and my life revolves around it- it’s not a career, it’s more of a calling.” On the challenges of space and why it’s worth exploring: “We have some real global challenges. Climate change, income inequality, mass migration caused by civil unrest, geopolitics, etc. My thesis is that the reason those problems seem intractable, is because we really don’t have the right context to evaluate those problems. We don’t really have the right view, that we’re all humans, on a rock floating in the middle of space, squabbling over (in my mind) tiny differences. I’m all about space as a contextual reorientation that allows you to see things clearer, and in a more enlightened way. “The ROI of space in infinite. Humanity 2.0, a reimagining of what we could be- a more aspirational inspirational viewpoint is amazing, and space holds the canvas that we can paint that future on to.” On why it takes everyone to make space exploration successful: “It’s incredibly important that we diversify space and that we take advantage of all the talent that exists in the world. This is a human endeavor, and we all know humans are identical in their capacity to do incredible things. In fact, if we can’t figure out a way to bring all humans into the fold, we will not be successful in space. And it does not have to be just in STEM, space is for everybody, and we need all skills. All backgrounds. We are commercializing space at such a rapid rate that I tell my friends, ‘Everyone is in the space industry. They just don’t know it yet.’ The number of jobs within the space economy that are going to be created over the next few years is going to be mind-boggling. So if you’re focused on space, and you’re training yourself up to be part of the space economy, you will be providing yourself a very very bright future!” More about Dylan Taylor and the “space” he works with: Dylan’s technical background, global business experience and unbridled passion for space make him a unique figure within his industry. He regularly speaks and writes about the future of the space economy and is sought after by the media for his expertise in the financial aspects of space investing as well as industry dynamics. As a writer and columnist, he has written several widely read pieces on the future of the space industry for SpaceNews, ROOM, The Space Review, Apogeo Spatial and Space.com. As a speaker, Dylan has keynoted many of the major space conferences around the world and has appeared regularly on Bloomberg, Fox Business, and CNBC. Dylan is a leading advocate of space manufacturing and the utilization of in-space resources to further space exploration and settlement. In 2017 he became the first private citizen to manufacturer an item in space when the gravity meter he co-designed and commissioned was 3D printed on the International Space Station. The historic item is now housed in the Museum of Science and Industry in Chicago. Dylan has also had an extensive philanthropic impact on the space industry. In 2017, Dylan founded the nonprofit and social movement, Space for Humanity, which seeks to democratize space exploration and develop solutions to global issues through the scope of human awareness to help solve the world’s most intractable problems. Additionally, Dylan is the Co-Founding Patron of the Commercial Spaceflight Federation, which seeks to promote the growth of commercial space activity. Additionally Dylan serves as a strategic advisor for both the Archmission and the Human Spaceflight Program. Dylan is the founder and Chairman of Multiverse Media, parent company of the popular space philosophy website 2211.world as well as the Ad Astra Dinners, a Jeffersonian styled dinner series featuring some of the world’s leading influencers discussing the future of humanity in space. It is also the executive producer of the documentary film, The High Frontier. In 2020, Dylan was recognized by the Commercial Spaceflight Federation with their top honor for business and finance, following in the footsteps of 2019’s inaugural winner, the late Paul Allen. Dylan Taylor earned an MBA in Finance and Strategy from the Booth School of Business at University of Chicago and holds a BS in Engineering from the honors college at the University of Arizona, where he graduated Tau Beta Pi and in 2018 was named Alumnus of the year. In this episode: We meet Dylan Taylor, who is an active pioneer in the space exploration industry as a CEO, investor, thought leader, and futurist. Currently, Dylan serves as Chairman & CEO of Voyager Space Holdings, a multinational space holding firm that acquires and integrates leading space exploration enterprises globally. He previously served as a director for Fortune 500 company UMB Bank and is the former Global President of Colliers International. Dylan is also the founder and board chairman of the nonprofit organization Space for Humanity, and a cofounding patron of the Commercial Spaceflight Federation. In this episode, Dylan discusses what inspired him to shift his professional focus from banking and real estate to financing space exploration, his thoughts on how commercial space and government agencies can harmoniously complement each other, which space initiatives have the best chance of being realized in the near future, and shares Voyager’s ethos for acquisitions. He gives what he believes are realistic timelines for humans returning to the Moon and getting boots on the ground on Mars, and also shares his reasons behind founding Space for Humanity. In describing Space for Humanity’s mission and criteria for selecting the citizen astronauts they intend to send to space via commercial space flights, Taylor says, “That narrative can be, look at these amazing kinda ‘everyday citizens’ that are committed to going to space, coming back, and the covenant is: ‘We’ll send you, no cost to you — but when you come back, you need to impact the world in a positive way.’ So, it’s sort of a fellowship, if you will.” To learn more about Voyager Space Holdings, visit https://voyagerspaceholdings.com. Note: This podcast was recorded on May 19, 2020, predating the successful SpaceX/NASA Crew Dragon Demo-2 launch (originally slated for May 27, 2020, actually launched on May 30, 2020), which is why it is referred to here in future tense and as occurring on a different date. This recording also refers to a lack of mask wearing in Colorado which predates the statewide mandatory mask order instituted by Governor Jared Polis on July 16, 2020. “I’m in the camp that is super passionate about space as a tool for transformation. So what energizes me is getting humans into space.” — Dylan Taylor Many of us let those dreams go when we started thinking about our careers, including Dylan Taylor (@SpaceAdvisor). In his late 30s, Dylan had some success in the business world, but after reading “The Last Lecture” by Randy Pausch, he began reflecting on one of his earliest passions: space. Fast-forward to a decade later, and Dylan is now one of the top 10 investors in space technology. He currently serves as the Chairman and CEO of Voyager Space Holdings, a global space holding firm that acquires and operates companies in the realm of space exploration. On this episode of Outliers, I speak with Dylan about all things space technology. He explains how space has the capability to change humanity and how he chooses which space companies to invest in. He also discusses the future of space manufacturing and space tourism. (Spoiler: Space tourism is taking off, and you’ll probably know someone who’s been to space within the next few years.) This is the story of Sealand, a micronation established on an abandoned WWII fort in international waters, seven miles off the shores of Britain! Roy Bates, the visionary Prince of Sealand, and his 'micro Royal Family’ declared the Principality of Sealand in 1967. The founding of this country was marked by the raising of a newly designed flag, a declaration of independence, and the signing of its own constitution. Following this, Sealand issued passports to its nationals, commissioned its own stamps, and has even minted official currency. To get the facts on this micro-nation and share the adventurous story of Sealand, I’m joined by Dylan Taylor-Lehman in this episode. Dylan is the author of the book, Sealand: The True Story of the World’s Most Stubborn Micronation and Its Eccentric Royal Family. Tune in to learn… -How Sealand began, -How big (or small) Sealand is, -If Sealand is actually a recognized sovereign nation, -How they were able to claim an abandoned WWII fort as their own country, -What it’s like to live on Sealand, -About the coup and kidnapping of prince Michael, -& so much more! He came up with a bunch of ideas to try to get food to his customers, but it ended up being just the way he had been doing and being in a food cart has it’s advantages because he was essentially grab and go. He did add the online ordering system so people can order ahead. Some interesting things he added was Family Packs(https://holytrinitybarbecue.com/order-ahead/june-19-21-family-pack-feeds-4-6-cddjn) and The Single Dad(https://holytrinitybarbecue.com/order-ahead/june-19-21-single-dad-feeds-2-3) which have really taken off. Kyle grew up outside of Dallas and went to Texas A & M. After graduation he became an animal feed commodity trader in Round Rock, but didn't enjoy that. He moved on to work for 7/11 in their corporate division and was transferred to Portland. The thing was, Portland didn't have the BBQ he was used to...so he started cooking on his own(and eventually selling). You may have seen his first version which was called Q PDX, but soon transitioned to Holy Trinity Barbecue and is nestled in a cart pod with 7-8 food carts in it. He talks about the great class he took from Dylan Taylor and references it several times as a place he learned a ton of about his craft, especially making sausage. During the month of May he did Sausage collabs with various carts including a Korean sausage and a pepperoni pizza sausage. Dylan Taylor, founder of space investment firm Voyager Space Holdings, has a perspective on growing companies that's different from traditional venture capitalists. Voyager takes a majority share ownership and the long view, unrestrained by typical fund life windows. Dylan is on the Cold Star Project, and host Jason Kanigan asks him: Does Voyager take over the day-to-day management of its acquisitions? Do you put your own CEO in charge? What values/vision do you look for in leadership? Tell us the story of the first acquisition for Voyager, and what you learned in the process. What did you learn to do differently next time? What could have cost you a ton of money if you hadn’t done things a certain way? How has space investing changed over the last several years? How is space investing different from other types of investments in other industries? What makes a sector-specific fund a better investor than a generalist? In addition to being a business person, you are also a philanthropist. Why? You founded the non-profit Space for Humanity. What is Space for Humanity’s mission? It was announced recently that you have commissioned the first private moon payload on the Xplore mission for the benefit of Space for Humanity. What is that all about? Do you find that you’re the very first potential investor a founder or group of co-founders has approached...or have they been through discussions with one or more other VCs first? How has this affected discussions? What other project are you working on or are excited about? What frustrates you about the industry, if anything? What gives you the most hope about where the industry is going? When, in 1967, self-made millionaire named Paddy Roy Bates inaugurated himself ruler of the Principality of Sealand, a tiny dominion of the high seas, he began the extremely strange, completely true story of Sealand, an indefatigable micronation located on a World War II anti-aircraft gun platform off of the British coast. Dylan Taylor-Lehman’s book “Sealand: The True Story of the World’s Most Stubborn Micronation and Its Eccentric Royal Family” describes how this rogue adventurer seized the disused Maunsell Sea Fort from pirate radio broadcasters, settled his family there and defended their tiny kingdom from UK government officials and armed mercenaries for half a century. Join us for a discussion of the Bates family’s outrageous attempt to build a sovereign kingdom on an isolated platform in shark-infested waters in this installment of Leonard Lopate at Large on WBAI.
25 year-old Dylan Taylor has extensive experience in the barbecue world as a pitmaster and has worked at famed barbecue joints all across Austin including Terry Black’s Barbecue, 2M Smokehouse, Truth Barbeque and La Barbecue. He now owns and operates his own barbecue spot, Goldee’s Barbecue, in Fort Worth, Texas with four of his childhood best friends. Originally, Dylan made the move from Arlington to Austin to go to college and to play music with his band, but after a year he realized college was not his thing. He then began delivering pizzas for Pizza Hut but he was quickly sold on that central Texas barbecue life once he started dining out at local barbecue spots. In this episode, we discuss why Dylan fell in love with this industry, how his childhood friends hustled their way up to owning a restaurant in their hometown, the struggles of opening up a new place, the type of delicious meats and sides they’re serving up and how Dylan is adjusting to the current climate.
Dylan Taylor-Lehman returned to the program to discuss his history of the micronation Sealand. Perhaps you are perplexed, maybe you are wondering; what the heck is a micronation? And what is Sealand? I had never heard of these entities until Dylan told me about them. This is a truly bizarre bit of history and it all began as a pirate radio station off the coast of England. Barbecue in California is Booming, I'm lucky to have moved here to witness this exciting era. The Underground scene is part of the DNA here, you can find all types of foods, fruits and deserts and even Drinks in underground settings. This has definitely contributed to the Barbecue explosion that we're seeing in SoCal. Over the next few weeks I'll be introducing you to some really cool popups that you might not have heard of yet but you will! Some of these folks are catering and cooking in their backyards and others are doing popups at breweries, Farmers markets and other cool establishments. For those folks that say there is no good Barbecue in California, you need to tune in and check some of these folks out!!! In this episode I sit down with Grant Mason of Foundry Barbecue in Orange County. Grant is a Family Man that is born and raised in Huntington Beach. He got hooked on BBQ while he was in College in Utah then after moving back to California and missing his go to spot he decided to start cooking his own. Now a few years later he's taking his hobby to a new level. Earlier this year he spent time with BBQ Journeyman and Pitmaster at many top BBQ Joints including his own Goldees BBQ which will be opening in the fall of 2019, Mr. Dylan Taylor. This experience has given Grant the confidence to continue his trek towards opening a joint of his own. Oh and by the way, he's cooking on a Sweet Fatstack Smoker! With two young Children, his wife Kara pitches in when she can but she's known for putting out some incredible cookies at their popups but you must arrive early if you want some! You’re listening to the Best BBQ Show and I’m your host, Yoni Levin. I realized something today. After almost 100 episodes of the show, I’m not sure you all know my story on why this show came to be. I’m not sure you know how I got interested in BBQ to begin with or why I’ve spent two years covering the Texas BBQ scene and all the interesting people in and around it. It all started when I was a young boy in upstate New York. Now I say upstate because I’m not talking about New York City. I’m talking about way up state. As in almost Canada. I grew up in small city called Rochester, NY. A city that is almost foreign to me now that I’ve been away for two decades. The only BBQ in Rochester at that time was a place called Dinosaur BBQ. To this day I still like their sauce, but that’s about all that’s good about it. I’ll probably go back the next time I’m up there just to see if they’ve stepped up their game, but I wasn’t impressed back then. Back then all I had was a weber kettle and a dream. Someone gave me a copy of the BBQ Bible and my interest was peaked. Shout out to Steve Raichlen. I read lots of the recipes, dog eared pages, highlighted, took notes and started my BBQ journey. My favorite method back then was the snake method and it was my foray into slow smoked meat. I also spent some time on amazing ribs which if you’ve been following bbq long enough is one of the oldest sites on the internet all about bbq and how to cook it. One of my favorite articles is about how the smoke ring is a myth and how you can produce one without any smoke at all. Now I say slow smoked but I’m embarrassed to admit that I was doing everything wrong. I used cheap charcoal briquettes that didn’t burn very well. I was smart enough not to use lighter fluid back then but I did make some common mistakes. One of them was soaking little piles of wood chips. I soaked those wood chips for hours. I used different kinds, different sizes and I just couldn’t seem to figure out why I wasn’t getting the results I wanted. The one thing I didn’t try was just not soaking the dang wood chips. If hindsight is 2020, my hindsight is clouded with thick white smoke that comes from wet wood. Luckily, that was merely the beginning of my BBQ journey. After college I traveled the state working for non-profits in politics and the environment. I helped create legislation that saved plastic, encouraged recycling and brought a ton of awareness about homelessness. I also worked in kitchens, bars and served at restaurants between campaigns. I loved the work but it wasn’t the full time gig I had dreamed of. Then I caught, what I thought back then, was a huge opportunity. There were field organizer positions opening up for a huge new Greenpeace campaign. I would travel the world helping solve major issues on the national and international level. I went to conferences on both coasts and even attended the conference of the parties United Nations Framework Convention on Climate Change. Long story short, after they sent me to Austin in 2008 I realized there was more politics than progressiveness and decided to stay in this amazing city I had discovered almost completely by accident. Luck would have it that when I moved to Austin I landed in a small neighborhood just south of the river. A small neighborhood that just happened to have a BBQ trailer in it. A BBQ trailer called LA Barbecue. I had luckily found, what was then, one of the only quality BBQ joints in Austin. I know what you’re thinking, not Franklin? Not Lockhart? Nope, my first BBQ in Texas was LA Barbecue. The place where John Lewis worked before he opened Lewis BBQ. Where Esaul Ramos of 2M, Dylan Taylor, and Brendan Lamb of Smiley’s BBQ all worked. When I first showed up in 2012 they had just opened and I knew it was rare to find a place with good BBQ that didn’t have a line. I had heard of Franklin, but had yet to eat there. I was there early and often. Although, back then early just meant a few minutes before they opened. I would bug the guys in the pits and quickly made friends with Ali Clem who was there every day serving up the good stuff to those of us who patiently waited. I was a regular. Some weeks I’d show up 3 days in a row. They had free beer and even some old timers playing country music on a very small hand built stage. About a year later, something happened. I showed up at the usual time and I wasn’t the first one there. No big deal, I just got there a little earlier the next time, but that didn’t do for long. Soon I had to come in 30 minutes early, then 45, then an hour. My #1 spot was in constant jeopardy by all the people discovering this delicious place that I wanted to be my secret! Fast forward a few years and I got my 118 gallon pit. Started cooking my own briskets. Made a list of places I wanted to go and just kept on trying barbecue all over Texas. Then it happened. In May of 2016 I saw a short documentary produced by Yeti about an 81 year old pitmaster named “Tootsie”. She worked all week as a custodian and then woke up early on Saturdays to cook barbecue out in Lexington, Texas. The moment I saw that video I knew I had to go. I rounded up a few friends and we headed out there to try the best BBQ in Texas. If you haven’t been to Snow’s before, it’s an experience. The cool country air, the small town roads and the friendly people are just part of the experience. We didn’t even bring chairs. We just got in line and waited for that slow smoked goodness we had heard so much about. After that day I was hooked. A couple months later we went again and then again. Before I knew it I was waking up at 5am to be near or at the front of the line every Saturday to eat at Snow’s. After a while the crew started to notice. They were like, weren’t you here last week? And “how many weeks is that in a row now?” I became a regular in a small town where magic was happening. Clay Cowgill was the first one to start keeping track. We were fast friends and soon I was spending half the time talking to him while my lady, incredibly patiently, held my place in line. We talked about wood, meat, smoke, timing, feel and I started adjusting my home cooks to match some of Snow’s methods. Almost a year later, we showed up early as planned to see the line was 10 times longer than it had ever been. Our early Saturday ritual was about to take all afternoon. I went and asked Clay what was going on and he told us they had just gotten the #1 spot on the Texas Monthly top 50 for the second time. Til that point I hadn’t even heard of the list, but I was going to find out about it since all these people decided to get between me and my BBQ. A few months later I was talking to some friends about podcasts how to create one and we decided to create one about BBQ. I started calling my friends who owned, operated or cooked BBQ and asked them if they would be on my show. Now, almost 3 years later I’m so happy to share Texas BBQ with you and all the amazing people in it. The BBQ family has been so generous to me and I can’t wait for what’s next in modern barbecue and this show I have created. Stay tuned. 2019 is going to be an interesting year. We’re on youtube and we have more friends than ever on Instagram. I’m so thankful to have ya’ll as listeners and if it wasn’t for you, there’d be no show. So I’ll make a deal with you. If you keep listening, I’ll keep talking tasting and trying to cook Texas BBQ, the best barbecue in the world. For now, go out there what this amazing bbq scene has to offer. If you need some tips, feel free to message me. If you think I need to cover some places, send them to me and they will be added to my list. This is your host, Yoni Levin saying “Go eat some meat with the people you love and have a great week."
This week I’ve got a great episode for you. I long list of people I spoke with at the close of Texas Monthly BBQ. Some of these BBQ restaurant owners, cutters, pitmasters rarely get to meet and this is one of those rare occasions. The final hour of TMBBQ. I’ve got a long list of people that I got to speak with while I was walking around. So get ready, we’ve got a lot to cover. We spoke with Catherine Stiles and Lance Kirkpatrick, two of the many talents at Stiles Switch BBQ. They were hanging out with John Kulow aka ATX Food Guy. We talk to Evan Leroy of Leroy and Lewis BBQ. A modern man who always experiments with new ideas, even in BBQ. Evan was with Brad Robinson of Chuds BBQ as well as Chris Mcghee from The Switch. We talk briefly to Shane Stiles and Johnny Texas before I run into Rober Sierra of S&S Pit Crew. A guy everyone is happy to see and someone who works hard cooking BBQ. Robert cooks for his competition team when he’s not cooking for his family. I talked to Dusty Dworak from 2M Smokehouse, his knife skills serve some of the best BBQ in the state. John Mueller pulls me away to hang out with the LA BBQ crew, Ali Clem and LeAnn Mueller. They told us about their travels and all the weird things they ate in Asia. I grab a shot with Dominic Colbert and Mike Ruffino while John Brotherton shouts out his friends. Misty Roegels and they guys from Panther City get on the mic until I run into Patrick Hernandez. Patrick was working with Truth BBQ for the fest and they had one of the longest lines of the day. Of course if we’re going to hang around by the Truth tent we’re going to talk to Cory Taylor, one of the most outspoken members of the team. Leonard Botello IV owner and vision behind Truth BBQ talks to us about Houston and their soon to open second location. Finally, I run into Dylan Taylor and Joe Yim who have been cooking at Terry Black’s BBQ at one of the biggest operations in Austin. Just over that weekend they cooked over 400 briskets and they’re still smiling and having a good time. That’s the beauty of the BBQ life. You can work long hours and still have a big smile on your face. You’re creating something delicious and putting smiles on peoples faces. You get to make people happy. That’s why this show exists, because I know it makes people happy. It connects people all over the world. I’m happy to be that connection. It’s an honor to be your host and it’s an honor to present you yet another episode of the Best BBQ Show. Enjoy. Dylan Taylor has built up quite the resume at a very young age. After working at highly acclaimed BBQ spots such as Terry Black's, La Barbecue, Truth Barbeque, and 2M Smokehouse (among others), Dylan decided the time was right to start working toward opening his own place. While he scouts out possible locations, Dylan has launched Taylor Barbecue Catering, available for medium to large barbecue catering requests. In addition to the catering options, Dylan also offers restaurant consulting services as well as fully immersive, hands-on cooking classes. Students who attend Dylan's classes learn the cooking process of any and all barbecue meats from start to finish. Dylan has class options that include everything from instruction on seasoning, trimming, cooking, and slicing meats to fire management, sausage making, and more. The services he provides are all encompassing and provide a rare opportunity for aspiring barbecue cooks to learn from someone with his level of expertise. In this episode we discuss Dylan's classes, catering options, and future restaurant plans as he gears up to make the next big leap in an already acclaimed barbecue career. You may know Dylan Taylor from a wide number of different projects: his stellar work in the theater, his various roles in TV and movies that make you say, "Wait, that's all the same guy?" or perhaps his scene-stealing VO work in one of the most popular video game franchises in recent history. After listening to this conversation, however, you'll find that behind all of the roles, accents, and incredible work is a down-to-earth, really good guy. Enjoy! Chance encounters at Franklin Barbecue and la Barbecue set the stage for Dylan Taylor's shift from pursuing a music degree to jumping headfirst into the barbecue world at Terry Black's Barbecue as a meat cutter. Dylan later worked for la Barbecue and helped train staff at Lewis Barbecue in Charleston before landing his current gig at Truth Barbecue. In between all that Dylan and friends have gone on epic barbecue-centric road trips and he describes his experiences sampling the different styles of barbecue across the country and how they compare to central Texas style. Kansas City, Memphis, The Carolinas, and Dylan's favorite Texas BBQ stops are discussed. He also tells us why he takes pictures of his meat. Check out a special prize giveaway on this episode! You asked for it, you got it! Thanks for requesting a longer episode Meat Men. In this studio roundtable, we bring three masters of the smoked meat craft into the Meat Man studios to discuss Texas barbecue, cooking techniques, dispatching feral hogs, music, food tips and more. Along with your Meat Men hosts Yoni and Stover, were Brendan Lamb (from La Barbecue), Clay Cowgill (from Snow's BBQ) and Dylan Taylor (from Truth Barbecue). They were a lot of fun to have in our Austin studio. When you hear the audio clip of hogs exploding, you'll have the same reaction we all did. It gets crazy. Kelis also makes a "cameo." Let Best BBQ know what other barbecue chefs, grillmasters, celebrities, Instagram stars, or whoever, you want us to bring into the podcast studio and we will start making it happen. As always, thanks for listening and don't forget to rate and subscribe so we know how you think the show is going.
