On this episode of Make It Cute, Miles is joined by Dennis Littley (@askchefdennis) where they talk about travel experiences surrounding food, different experiences within the kitchen, and the future of food and the restaurant industry. Chef Dennis is a seasoned chef and experienced traveler and shares his love of food and a very easy recipe for a dish he experienced "for the first time" while traveling in Venice. Clams and Linguine Ingredients 1 lb of good quality Linguine (De Cecco Del Verde, or Barilla) 1 bag Farm Raised Little Neck Clams (bag of 50 or at least 15 clams per person) 2 cloves of Garlic sliced (less or more as desired) 1 Tablespoons Fresh Parsley chopped 1 Tablespoon Fresh Basil chopped Pinch of Crushed Red Pepper Pinch of Black Pepper Sprinkle of grated Romano Cheese 2-3 Tablespoons Extra Virgin Olive Oil Instructions Place large stock pot on stove to cook pasta per directions on the box Finely chop parsley and basil Chop garlic Rinse clams in cold water checking to make sure they are all closed, or that they will close when tapped. If they are open they are dead, do not use them! As soon as the pasta water is ready add the pasta and set your timer per instructions. Place a large saute pan on the stove and add the olive oil and garlic. Briefly saute the garlic then add the clams, basil and crushed red pepper to the pan and cover with a lid allowing the clams to steam open. If you have timed this correctly the clams will open with about two minutes to spare on the pasta, turn off the heat on the clams and keep covered until serving. Drain pasta, place in bowl and divide clams and sauce between them Sprinkle fresh chopped parsley on top of the clams and serve with grated Romano cheese. Learn more about your ad choices. On this short episode of Make It Cute, Miles is under the weather so he gives a bit of a catch up into life in general, some of his favorite remedies when he is sick, and shares his favorite broth recipe. Sick Broth Bro: 1/2 shallot 4-5 mushrooms 16 oz favorite broth 1 green onion 1 knob of ginger 1 tbsp soy sauce Slice shallots, mushrooms, onion, and ginger. In a medium pot add broth, then add aromatics. Simmer for 10-20 minutes, strain out aromatics then add soy sauce to taste. Enjoy immediately and drink up the warm goodness. Warm Spiked Cider: 4 oz apple juice 1.5 jim beam apple 2 oz white wine .5 oz caramel syrup (syrup not sauce) In a pot warm apple juice. Chamomile Cocktail: One cup chamomile tea 1 ounce vodka 3/4 of an ounce of St. Germain In a mug or heat press glass combine steeped tea, add your vodka, and finish with St. Germain. Stir and enjoy warm. Creamy Lemon Pasta: 1/4 cup ricotta cheese 1/4 cup cream cheese 1/4 cup sour cream One lemon (juiced and zested) 1/4 box of pasta Salt Pepper Your choice of parmigiano regiano or pecorino romano Garlic Add water to a pot, bring to a boil. Once water is boiling add pasta. In a pan combine ricotta, cream cheese, sour cream, lemon juice, lemon sauce, and a little bit of olive oil. Season to taste with salt and pepper. Add and as much garlic as you like I recommend one to two cloves. Finish the sauce with your choice of Parmesan or pecorino cheese. Add cooked pasta to the sauce and serve warm. On this episode of Make It Cute, the title says it all. Miles is a 24 year old outlining what he believes is his quarter life crisis. Miles talks about the struggles of understanding his place in the world at such a pivotal age and transitional period in life and dishes some dirt about some of his least favorite things of being 24. Everything But The Kitchen Sink Pasta Roasted vegetables of choice 1/2 cup ricotta 1/4 cup parmesan 1/4 cup pesto 1/2 lemon (zest and juice) Salt Pepper 4 oz pasta of choice Bring a pot of water to a boil and add salt. Add in pasta of choice. In a blender or a food processor add in your roasted vegetables, ricotta, parmesan, lemon zest, lemon juice, pesto, and season with salt and pepper. Process on medium until sauce is emulsified, add olive oil for consistency if necessary. Strain pasta into a bowl and reserve 1/4 cup of pasta water. Combine sauce and pasta and top with garnish of choice. Cookies 1 stick unsalted butter, softened to room temp 1/4 cup powdered sugar 1 cup AP flour, spooned and leveled Zest of 1 lemon Glaze 1/2 cup powdered sugar 1-2 TBSP milk or heavy cream 1/2 tsp lemon extract Lavender simple syrup, to taste Lavender Simple Syrup 1 to 1 ratio of sugar to water (ie 1/2 cup sugar + 1/2 cup water) Dried, food grade lavender buds (I used 1 TBSP) Boil sugar and water until sugar disappears Add lavender buds and steep 20 minutes Let cool then strain into a container Cookies Preheat oven to 350F Beat butter & sugar together until creamed. Add zest and mix until combined. Add flour and mix JUST until combined. Do not overmix You can either: roll your dough into a log & roll in sanding sugar or sprinkles, chill for 20 minutes then slice OR roll dough out on a lightly floured work surface and use any size cutter to cut your dough. Place on a parchment lined baking sheet and bake 15-20 minutes until pale but golden. Let cool on baking sheet for 5 minutes before placing on a wire rack to cool completely. Glaze When your cookies are cool, prepare your simple glaze by mixing all ingredients together until combined. If your glaze is too thin, add more powdered sugar. If your glaze is too thick, add more milk a little bit at a time until desired consistency is reached. Lemon Sour Martini 1.5 oz vodka 1 oz sour mix .5 oz sweet vermouth Grab a shaker and fill with ice. Add vodka, sour mix, and sweet vermouth. Shake until the shaker tin is visibly frosty. Miles talks about how cleaning isn't just a physical act, but also how it can affect other parts of your life. Brown Butter, Shallot, and Thyme Risotto: .5 cup arborio rice 1 shallot 2 cloves of garlic 1 tbsp butter 2 tbsp olive oil 2 tbsp cooking wine 3 sprigs of thyme 5 cups chicken stock Parmesan cheese Finely mince shallot and garlic. In a large pan add in olive oil, followed by shallot, garlic, and salt and pepper. Let cook 2 minutes. In a separate pot bring chicken stock to a boil and reduce heat to low to keep warm. Add in rice and toast 1 minute. Add in .5 tbsp butter and let melt and brown. Deglaze pan with cooking wine and then add stock using a ladle. Slowly add stock after rice absorbs the previous ladle-full. Continue to add stock and cook until rice is creamy and cooked through. ~20-40 minutes. Add in remaining butter and parmesan cheese. Serve immediately. Spring In A Cup: 1 oz vodka 1.5 oz strawberry pucker 4-5 oz fresh squeezed orange juice Sprite to top In a glass add ice. Follow the ice with the orange juice and vodka. Slice cherry tomatoes in half and add to bowl. Season with salt, pepper, and garlic powder. Drizzle over olive oil, vinegar, dijon mustard, and add shallots. Mix to combine. Miles talks about the good, the bad, and the boozy and gives you some life hacks you never knew you were missing. I Can Buy An Entire Sheet Cake Truffles: 6 cupcakes (frosted) 5 oz Semi sweet chocolate 5 oz White chocolate Acquire your cake, whether that is making it, store bought, cupcakes (like I'm using), etc. If cake(s) are frosted remove frosting using an offset spatula and separate into separate bowls. Using a food processor or your hands crumble the cake until it is a sand like consistency. Gradually add in frosting until the texture is similar to Playdoh. Roll into balls and put on a tray and chill in the freezer. Melt chocolates in separate bowls (microwave in 30 second intervals). Remove balls from freezer and dip into preferred chocolate. Let harden and enjoy. ***You can also freeze them before or after dipping in chocolate. Pink and Pretty: 3 oz pink Whitney vodka 4-5 oz sprite/lemon lime soda .5 oz maraschino cherry juice Maraschino cherry (to garnish) Fill a glass with ice and add in pink Whitney. The Best Brown Butter Chocolate Chip Cookies: 1/2 cup unsalted butter 1/2 cup light brown sugarpacked 4 tablespoons granulated sugar 2 large eggs 3/4 teaspoon vanilla extract 1 cup all-purpose flour 1/2 teaspoon baking soda 1/2 teaspoon kosher salt 3/4-1 cup chocolate chips or chopped chocolate Maldon salt to garnish Add butter to a saucepan and melt until golden amber in color, set aside and cool. Add in brown sugar, granulated sugar, and vanilla extract. Mix. Add in eggs, one at a time, mix. Combine dry ingredients (flour, baking soda, kosher salt). Fold in dry ingredients to wet ingredients. Add in chopped chocolate or chocolate chips. Set aside in fridge/freezer to chill. Preheat oven to 350F and using an ice cream scoop or measuring spoon to portion out cookies evenly on a baking sheet. Sprinkle with Malden salt/flakey sea salt. While spam is frying chop garlic, onion, scallion. Once spam is cooked through add in vegetables and fry for 5-6 minutes until soft and warm. Add in beaten egg and scramble. Add in day old cooked rice and then follow with soy sauce, oyster sauce, and hoison. Stir fry until combined and warm, then off the heat add sesame oil and garnish with scallions. Valentine's Spritz: 1.5 oz watermelon schnapps 1 oz strawberry schnapps 1.5 oz vodka 5-6 oz sprite or lemon lime club soda Strawberries for garnish Combine watermelon schnapps, strawberry schnapps, and vodka in a mixing glass. Chili Oil and Garlic Pasta (Aglio e Olio) 1 serving of long pasta (spaghetti, bucatini, etc) 4 tbsp of chili oil 2 garlic cloves (minced/chopped) Parmesan (optional) Parsley (optional) Bring water to a boil, salt, and cook pasta one minute under al dente according to box instructions. While pasta is cooking, add 3 tbsp of chili oil to a cold skillet and turn on to medium low. Add garlic and cook for 2-3 minutes. Turn off heat and add 1 tbsp room temperature chili oil. Add pasta directly into sauce from pot and add a ladle full of pasta water. Mix until emulsified. Serve immediately top with parmesan cheese and parsley. Miles's Moscow Mule 1.5 oz raspberry vodka 4-5 oz ginger beer .5oz-1oz lime juice to taste Grenadine or cranberry juice (for color, optional) In a copper mug or bar glass add ice. Divorcee's Chocolate Croissants: 1 sheet puff pastry 4-8 oz chocolate 1 egg (for egg wash) Malden salt (optional) Cut puff pastry into desired size using chocolate as a guide, leaving 1/4-1/2 inch space on each side. Roll the chocolate up into the puff pastry. Brush with egg wash and sprinkle with finishing salt. Bake puff pastry 2-3 minutes longer than the puff pastry directions (all puff pastries are different, like humans, some may need certain things as opposed to others). Let cool for at least 5-10 minutes. Enjoy warm! Spiked Smoothies: 1 cup of fruit medley (at least include pineapple) 1/2 cup almond milk 1.5-2 oz coconut rum 1 banana (sliced) Combine fruit medley, rum, milk, and banana in blender. Serve immediately, or store in fridge for up to 1 week. 2021 Drinking for Results Cocktail: 3 oz White wine of choice 1 oz St Germain Grapefruit or Lime White Claw Combine wine and St Germain in a cocktail shaker with ice.
