But the name is more revealing than it first appears: in founder Unai Trotti's native Bilbao dialect, cartulis translates to "nerd." Like any labour of love, the project is driven by a deep, obsessive dedication, centred around sound, mood and community. Recorded at Cartulis' 15th anniversary party this autumn, RA.1017 captures why Trotti is such a compelling DJ. Playing only vinyl, he has a deft ability to balance functional club pressure with more leftfield selections, and as he outlines in his Q&A below, it comes from a belief in creative limitation, committing to a finite set of records and trusting instinct over abundance. Across the two hours, there are plenty of big, physical tracks built for the dance floor, but also some genuinely strange, confrontational stretches. Around the 15-minute mark, church bells ring out as a gothic female vocal looms overhead—David Lynch, if he needed an electro soundtrack. RecipeBiscuit base 250g gingersnap biscuits, crushed 150g melted butter Grease an 8 inch cake tin. Mix the biscuits with the melted butter and press into the cake tin. Chill.Filling 250g mascarpone cheese 400g full fat cream cheese 75g icing sugar 250ml double cream 1 teaspoon vanilla paste 35g crystallized ginger, finely chopped Whisk the cheeses, sugar and cream until thick. Fold in the ginger and vanilla and spoon onto the biscuit base. Smooth off the top and chill.Pedro Ximenez Sherry candied pears 4 pears 100g castor sugar 75ml Pedro Ximenez sherry 1 tablespoon honey or maple syrypQuarter the pears, remove the core and cut each quarter in half. Heat a large frying pan and sprinkle the sugar over the top. Cook to an amber liquid then add 100ml of boiling water and the sherry. Boil to a thick syrup and add the pears. Cook until the pears are soft and glazed – about 5 minutes. Add the honey and cook for another minute. Cool. Spoon the pears onto the chilled cheesecake.
Netflix is buying the studios of Warner Bros Discovery Netflix will also get HBOMax (but I can't see that sticking around long). Shareholders of WBD will get $23 in cash and $4.50 in shares of Netflix common stock, valuing the deal at $83 billion ($144 billion NZD). The TV networks that were part of the old Discovery company, plus the Warner Brothers networks like CNN, TBS, TNT, etc, are all moving to their own publicly listed company known at the moment as "Global Networks". This is of course all subject to regulators, not just in the USA but internationally too – Netflix already operates in 190 countries. NYT is suing AI startup Perplexity The suit alleges Perplexity has illegally copied and distributed The Times' copyrighted content, including stories, videos, and podcasts. It uses this content to formulate responses to user queries. The Times says the AI also generates outputs that are “identical or substantially similar to” The Times' content. Publishers have been suing new tech companies for a hundred years, starting with radio, TV, the internet, social media, and now AI,” said Jesse Dwyer, Perplexity's Head of Communication. “Fortunately, it's never worked, or we'd all be talking about this by telegraph.” Samsung launches the tri-fold phone Apple is a single screen phone, but there are rumours it's working on a foldable screen device to be announced next year. Samsung though says, 'hold my beer', and launches a tri-fold device with a 10 inch screen. That's in addition to the outer screen. Wild. If you want one, you'll need to buy it from Korea, China, Taiwan, Singapore, UAE, or the USA. The first-generation device won't be available in New Zealand. Giving edible gifts at Christmas is a winner I say! Some ideas take some forethought, like preserved lemons, fruit pastes, chutneys and sauerkraut, but there's plenty of other ideas that you can whip up over a day or weekend right before the big day. Think shortbreads, flavoured oils, scented salts or sugar meringues, spiced nuts, dukkah, gingerbread loaf, or one of my favourites, biscotti. Jars, bottles and small wooden or cardboard boxes can all be found in second hand shops, as can ribbon, wool, cotton etc to make them all look pretty. Tie some rosemary or bay leaves to jars and bottles for a festive look or decorate boxes with potato and paint stamps. Get creative! Pistachio and cranberry biscotti Homemade biscotti makes for a wonderful Christmas gift as it keeps well (so can be made ahead) and it's one of those things that's so much better than the store-bought variety. Makes about 30 Ingredients 3 medium sized eggs, at room temperature ½ cup olive oil (can use 5 tbsps. butter) ½ tsp orange zest 2 ¼ cups plain flour 1 tsp baking powder ½ tsp salt ½ cup caster sugar ½ cup brown sugar ½ cup roasted almonds, roughly chopped ½ cup shelled pistachios ¼ cup dried cranberries Method Preheat oven to 180 C and line a baking tray with baking paper. In a large bowl, lightly whisk eggs, olive oil, and orange zest. Add flour, baking powder, salt and sugars and stir until just incorporated. Fold in almonds, pistachios and cranberries and mix until combined. Divide dough into half. Place each half on lined tray and with damp fingers, shape into a log shape about 4cm x 30cm. Flatten slightly. Bake for 30-35 minutes or until golden brown in colour and hard on the outside but not all the way through. Let cool and use a serrated knife, slice at an angle about 1.5cm thick. Place slices back on the tray and bake for 12-16 minutes more, until firm. They will firm up more as they cool. Place on a wire rack to cool before filling jars with them as presents. De Huawei MateBook Fold is een opvouwbare laptop die opent tot een groot 18-inch OLED-scherm. Tijdens de test in De Schaal van Hebben valt vooral het ongebruikelijke formaat op: het apparaat gedraagt zich als laptop, tablet en monitor tegelijk. Met de uitklapbare standaard en het meegeleverde losse toetsenbord kun je het scherm als werkstation neerzetten, terwijl het vouwmechanisme zonder haperingen werkt en inmiddels technisch volwassen oogt. In de praktijk blijkt de bruikbaarheid in Nederland echter beperkt. De laptop draait op HarmonyOS, Huawei’s eigen besturingssysteem, omdat Windows niet beschikbaar is voor het Chinese techbedrijf. Daardoor ontbreken vrijwel alle veelgebruikte apps uit Europa en de VS. De appwinkel is volledig Chinees, basisdiensten zoals agenda’s zijn niet geschikt voor Nederlandse instellingen en veel toepassingen werken alleen via de browser. Voor standaardproductiviteit of dagelijks gebruik vormt dat een duidelijk obstakel. Het digitale toetsenbord dat op het onderste schermdeel verschijnt werkt snel, maar blijft typen op glas minder comfortabel dan op een fysiek toetsenbord. Het externe toetsenbord biedt uitkomst, al maakt dat de opstelling minder compact. De ingebouwde webcam presteert matig, al ondersteunt deze wel handgebaren voor functies als scrollen en screenshots, die vooral als experiment aanvoelen. Met een prijs rond de 3000 euro en een beperkte software-omgeving is de MateBook Fold geen realistische optie voor Nederlandse gebruikers. Tegelijk laat het apparaat wel zien hoe opvouwbare laptops zich ontwikkelen: richting grotere schermen, flexibelere werkstanden en nieuwe manieren van interactie. 10 years of distillation -- what a milestone for Virginia Distillery Company and for American Single Malt writ large! Joshua and Jason discuss these 10 years but talk, too, about their relationship with the company that goes back 15+ years ago, before the distillery started producing their own spirits. The duo also taste through VDC's new Gingerbread Stout Cask Matured release. Add to this, Joshua discovers that there's a difference between a "Snickerdoodle" cookie and a "Snickers" cookie, which he had been calling, in his head, a "Snickerdoodle" because it actually resembles a Snickers bar. It gets very controversial, people. The good news is, Joshua has shared his in-house "Hatton's-Snickers-Doodle" recipe below which is *delicious*. See below, and try it at home! Hatton's Snickers-Doodles: 1 cup Unsalted Butter (softened) 1 cup Brown Sugar (tightly packed) 1/2 cup Sugar 2 large Eggs 1 teaspoon Vanilla 2 1/4 cups Flour 3/4 teaspoon Baking Soda 1 teaspoon Salt 2 cups Torrone Nougut (finely chopped) 1 cup Milk Chocolate Chips Method Preheat oven to 350 degrees. In a large mixing bowl, cream together butter, brown sugar, and sugar until light and fluffy and pale yellow in color. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Stir in flour, baking soda, and salt. Fold in chocolate chips and Torrone Nougat. Bake for 8-10 minutes or until the edges start to become a light golden color. Let cool for at least 10-15 minutes before removing from the baking sheet. Put a cookie in your mouth and eat it. Repeat. ...as usual, have a seat, have a pour, and listen in. Unless you're driving. If you're driving, be smart and stay sober but be sure to listen into the conversation!
