In this episode of Snacky Tunes, Darin continues the conversation about the ongoing challenges faced by the Los Angeles restaurant community in the wake of the devastating fires. Over two weeks in, the fires continue to impact the city with little clarity on the road ahead.First, Darin welcomes back Charles Namba and Courtney Kaplan of Tsubaki, Ototo, and Camélia, who share their experiences navigating the crisis. The duo instead provides an honest look at how the fires have affected their business and the broader restaurant industry—facing a 50% drop in covers, grappling with outdoor dining decisions, and doing their best to keep staff employed. They offer valuable insights and practical tips on how listeners can support their favorite spots during these uncertain times. In the second half of the show, Courtney Storer joins the conversation to discuss how she has been feeding the community through her company, Coco's to GoGo, an inspiring culinary initiative driven by a dedicated network of volunteers. She shares actionable advice on organizing community support, the importance of self-care for those committing to long-term relief efforts, and her goal to make her nonna inspired food feel like a warm hug.Snacky Tunes: Music is the Main Ingredient, Chefs and Their Music (Phaidon), is now on shelves at bookstores around the world. As a part of the conference, Shari signed copies of her new book, Chefwise: Life Lessons from Leading Chefs Around the World (Phaidon, Spring 2023, #chefwisebook), with cookbook and culinary shop, Now Serving. Our show features two interviews -- first Shari chats with Courtney Storer, Chef & Culinary Producer of the hit TV series, The Bear, now streaming on Hulu. Courtney is a chef with more than 15 years of experience in restaurants, and the sister of Christopher Storer, the creator of the The Bear. As the show's culinary producer, she has been responsible for the food that is presented in each scene, as well as for the culinary skills of the cast, and getting the writers, cast, and crew acclimated to the culinary world the series takes place in. Courtney has worked in high-profile kitchens from Verjus in Paris to Jon & Vinny's in L.A. Second, Shari speaks with Matthew Kang, Lead Editor of Eater LA. Matthew has covered dining, restaurants, food culture, and nightlife in Los Angeles since 2008. His work has been featured in Angeleno Magazine and TASTE Cooking. He is the host of K-Town, a YouTube show covering Korean American food in America. Previously he was a commercial bank analyst and received a business degree from the University of Southern California. Thanks and congratulations Courtney, Matthew, Brad, and everyone involved in #LAChefCon! Wonderful to be a part of! Today's show also features Shari's PR tip to embrace a nickname, speed rounds, and Solo Dining experience at LULU, an open-air courtyard restaurant at the Hammer Museum in Westwood, LA, celebrating good food that is good for the planet; founded by legendary chef, food activist, and Chefwise contributor Alice Waters, and acclaimed chef, writer, and cookbook author David Tanis.  ** Check out Shari's new book, Chefwise: Life Lessons from Leading Chefs Around the World (Phaidon), available at Phaidon.com, Amazon.com and wherever books are sold! #chefwisebook** Listen at Heritage Radio Network; subscribe/rate/review our show at iTunes, Stitcher or Spotify. Today's episode is all about The Bear. We're joined by culinary producer Courtney Storer to break down the behind-the-scenes of Season 2, which is now airing on Hulu. Courtney is a Los Angeles-based chef who's many credentials include running the kitchen at Jon & Vinny's. Courtney is, in a nutshell, one of the main reasons why The Bear feels like such an accurate representation of restaurant life, and why it's resonated with so many inside and out of the industry. We talk about her experience working with actors to ensure they're moving around the kitchen believably, how she went about creating the gut-wrenching chaos present in the already iconic Feast of the Seven Fishes episode guest starring Jamie Lee Curtis, and how important it was to her to do right by Chicago's legendary culinary scene. Courtney is wise beyond her years and we also get into some heavier topics like mental health in the kitchen, how our personal trauma informs our beliefs about ourselves, and why so many chefs have no problem taking care of others, but have a really tough time taking care of themselves. In Part 2 we're joined by Father Sal. We give our overall takes on Season 2, and discuss things like who gave the best performance, which episode made us cry the most and is Rick Bayless an idiot for saying the show set the industry back 20 years. In Part 3, we let our creative juices flow and pitch our best ideas for how we think The Bear should open Season 3, Episode 1. If you're afraid of spoilers, I recommend listening to Part 1 with Courtney and saving the rest of the pod for after you've seen the show. The Bear is often praised for how accurately it portrays restaurant culture, and for that, you have Courtney Storer to thank. Storer spent years working in the kitchens of famed spots like Verjus and Animal and eventually became the culinary director for the Los Angeles restaurants Jon & Vinny's, where she spent six years growing the business into the iconic institution it is today. So when Storer's brother Christopher decided to create a show set in a restaurant, he knew just who to call. As a culinary producer on the show, Storer stepped in to advise on everything from chopping technique to the terminology used to communicate in the kitchen. But before Storer was leading culinary teams in a variety of environments, she actually began her career working in HR at UPS and Whole Foods. To hear how Storer has pivoted her career time and again, tune in to this week's episode. If Courtney Storer's life sounds like an episode of The Bear, it's no surprise. She's the culinary producer of the hit show, which was created by her brother, Christopher Storer. The restaurant world has reacted strongly to The Bear and its portrayal of kitchen culture. Courtney, for her part, was drawn to the restaurant industry as a teenager but had to lie about her age to snag her first job. She later wound up working in HR, but was encouraged to attend culinary school because of her passion for cooking. That led to a stint in Paris and senior roles at Animal and Jon & Vinny's, the critically acclaimed Los Angeles restaurants.Courtney joins host Kerry Diamond to talk about her culinary journey and what it was like working with the cast and crew of The Bear to accurately portray back-of-house life.
