Menu innovation never stops, but at times of rising costs and diminished labor, finding relatively easy ways to create menu news is especially appealing.It's operationally straightforward to swap one sauce for another, but quite impactful in terms of flavor.Sweet-and-spicy was certainly the flavor combination of last year, and Arby's, Qdoba, Buffalo Wild Wings, Genghis Grill, Red Lobster, Chester's Chicken, and Bonchon all added sauces in that category. Twin Peaks added a hot sauce that's so spicy its name requires an asterisk, while other chains augmented what they already had, such as The Halal Guys and Naf Naf Grill.McDonald's, while busily upgrading its burgers, also decided to make its beloved Big Mac sauce available for any menu item.Dunkin' found that the Butter Pecan Swirl which was a seasonal syrup that guests could add to their coffee was so popular that they made it a permanent addition to the menu.
How do you build a restaurant brand platform? This week's episode of the Restaurant Business podcast A Deeper Dive features Gregg Majewski, the longtime industry executive and founder of Craveworthy Brands. We spoke with Gregg at the FSTEC Conference in Texas earlier this month. Majewski had worked for years in the industry as an investor and executive, most recently as CEO of Mongolian concepts BD's Mongolian Grill, Genghis Grill and Flat Top Grill. The past few months have seen grocery foodservice endeavors ramping up. Hy-Vee, for example, first had a partnership with Wahlburgers in 2017 to open dozens of locations of that burger brand, including freestanding units. Now this week, the company said that any Wahlburgers restaurant locations it opens moving forward would be inside its stores exclusively, saying, quote: “With the changing nature of the restaurant business combined with staffing challenges, we are evolving our strategy when it comes to standalone Wahlburgers restaurant locations.”And it's not it's not just Hy-Vee. Other grocery chains are expanding their in-store branded restaurant locations.Kroger has been rapidly rolling out Mix Food Halls, operated by Kitchen United, in its stores, featuring several well-known restaurant brands. These include Fuku Fried Chicken, Wow Bao, Genghis Grill, Hardee's, Pei Wei Asian Kitchen, Nékter Juice Bar, Nathan's Famous, Saladworks, Wing Zone, Capriotti's Sandwich Shop and Dickey's Barbecue Pit. And a whole bunch more. H-E-B has also been expanding its own-brand in-store restaurants, including South Flo Pizza and True Texas BBQ, which was actually recently named the best chain barbecue restaurant by Texas Monthly. H-E-B said it's going to include both those concepts in a new, two-story, 97,00-square-foot supermarket in Lake Austin, Texas, along with, what else: a coffee shop that offers breakfast tacos and a full bar.The Fresh Market also had an interesting foodservice-adjacent moment: rolling out a shoppable livestream cooking show promoting their Valentine's Day offerings.Supermarket News tuned in with our sister publication Nation's Restaurant News to see what the restaurant world makes of all this grocery restaurant business. She talks about landing her first restaurant management job right out of college and how she learned a great deal about systems, new restaurant openings and how a company grows. She shares that the company grew from 15 units to 200 during her 9 years with them. Cominsky talks about growing a Chicago based Mediterranean fast casual brand and opening several locations under her leadership. She shares that she went on to serve as Vice President of Operations at a healthy quick service restaurant before taking on the role of Vice President at Mongolian Concepts.Cominsky talks about why she decided to join the Mongolian Concepts team. She shares that Mongolian Concepts is the parent company of three casual dining, stir-fry brands and how she welcomed the strong challenge of taking three unique brands, making them successful, aligning them with their systems and training, while allowing each of them to have their own culture and identity. She adds, “I also firmly believe that Mongolian Concepts has the ability to grow exponentially and become the best stir-fry concept in their respective markets.”Pepe and Cominsky discuss the importance of improving communication, labor shortages, and recruiting new talent. Cominsky shares that she had a 30-60-90 day plan laid out when she joined the company, and that her number one goal was improving communication across the board, which resulted in improved trust and bond within the team. She talks about the company's two-pronged, digital and hands-on training technique for new hires to make certain that they feel empowered and supported. When it comes to recruiting new talent, Cominsky shares that the brand takes a multifaceted checks and balances approach to ensure that teammates want to stick around. She adds, "It's something that we talk about every day. We talk about how we can become better staffed and what we can do better to keep our team and to get the best people and to make sure that they're happy.”Pepe asks Cominsky what we can expect to see from Mongolian Concepts in the coming months. Cominsky is excited to share that in addition to remodeling some of their existing units, they recently opened a new Genghis Grill location. She talks about the pride the team felt regarding the roll out of a new menu at the brand's concept, bd's Mongolian Grill, which will feature chef-curated dishes as well as some signature cocktails. Cominsky mentions the importance of menu innovation and shares that the company's concept, Flattop Grill, is introducing new dishes including Ramen and Poke bowls. She says, “Innovation with this menu allows for significant growth in dining room sales. The growing popularity of “Mongolian” restaurants owes less to Mongolian food and more to, er, how shall we say, marketing. To whit: "It’s actually not a cuisine, but an INTERACTIVE style of exhibition cooking modeled after a centuries-old legend. According to this legend, 12th century Mongol warriors, led by the mighty warrior, GENGHIS KHAN heated their shields over open fires to grill food in the fields of battle!" The question of what the Mongols under Genghis Khan actually ate, however, is really rather interesting. In particular, did conquering that vast empire change their diet in any way? Jack Fenner and his Mongolian colleagues Dashtseveg Tumen and Dorjpurev Khatanbaatar analysed bones from three different cemeteries, representing Mongol elites, Mongol commoners and Bronze-age people from the same area, looking for differences in what they ate. They found some, but interpretation remains difficult. I didn’t think to ask Jack about using a shield as a wok.
