There's a natural white spice, almost pepper-like and a distinctive mineral quality. Satin smooth texture on the palate, juicy fleshy, ripe and delicious. Medium(ish) weighted and lengthy on the finish. The Food: Whilst great on its own, this wine pairs well with starter courses like sashimi or Waldorf salad, and some lighter main courses like Flounder with fresh lemon or fettuccine with tomato, basil and prawns. He shared tips about fishing techniques, baits like worms and crabs, and recommended looking for areas with bait activity and structure. Matthew Isbell focused on beach fishing, particularly pompano and flounder. He described challenges with recent rain and wind affecting water conditions, and shared a detailed technique for flounder fishing involving using a tandem rig with two paddle tails and a unique slow-reel presentation that significantly increased his catch. Both guests provided insights into current fishing conditions along the Alabama coast, discussing water temperatures, bait strategies, and promising fishing locations. Today, founder is most often used as a synonym of fail, or, in contexts involving a waterborne vessel, as a word meaning “to fill with water and sink.” Formerly, it was also frequently applied when a horse stumbled badly and was unable to keep walking. It's likely this sense of founder led to the original and now-obsolete meaning of flounder: “to stumble.” In modern use, flounder typically means “to struggle” or “to act clumsily”; the word lacks the finality of founder, which usually suggests complete collapse or failure, as that of a sinking ship.
