In this episode of Chef AF, I had the pleasure of interviewing native Charlottean, Partner and Executive Chef Chris Coleman, who leads the kitchen at The Goodyear House, a community-oriented and neighborhood-driven restaurant. Coleman is a partner of the restaurant group, Built On Hospitality and in addition to The Goodyear House, their restaurants include Old Town Kitchen & Cocktails, plus pick up and delivery only, Scratch House Chicken. Coleman's culinary journey began at his grandparents' farm in Mississippi, where he spent summers immersed in a world of locally-grown food and Southern growing seasons. During the podcast, Coleman shared how his early experiences on the farm influenced his love for local, sustainable ingredients, which eventually led him to pursue a career in the culinary arts. Starting as a busboy at a restaurant in Charlotte at the age of 14, Coleman found his passion in the organized chaos of the kitchen, which ultimately led him to attend culinary school and later become an executive chef.Coleman and I delved into his culinary style, his time on the Food Network, and how his upbringing on the farm shaped his approach to cooking. Hands down, Chris Coleman has some of the most incredible life experiences of anyone I've known. He's a self-taught drummer/pianist/guitarist that played the Today Show with Kings of Leon, recorded tracks with Miranda Lambert & Frank Lidel, and married the love of his life, Holly Williams. But I got the sense after meeting Chris that none of this came by chance. It had to have come by destiny (which, I believe is simply the residue of hard work and determination).  In this episode, we talk about the work ethic of successful artists, how he stumbled upon the discovery that he was also a visual artist, and his experience as a newly licensed pilot on 9/11/2001. I found this conversation to be absolutely riveting and I hope you will too. Chris Coleman is REIA Radio's next guest. Chris grew up with his parents and grandparents on the coast of Mississippi. During his middle school days, Chris learned how to weld, building go carts and motorbikes. At age 15, he and his family had to leave their home to avoid the wrath of hurricane Katrina. After returning home, the aftermath of the hurricane presented an opportunity for a very handy Chris, allowing him to make some money doing clean outs, demos and almost anything that was needed. Following his father's advice who came to Nebraska chasing storms as a roofer, Chris came to Omaha and during got a special opportunity while in high school to go to Tech School in Milford, Nebraska. Chris bounced around a couple of jobs as a machine tools specialist for some years before finally deciding to pursue a sales job, an idea he had while he was in high school. He got his Realtor's license in 2015 and it was off to the races right? You'll hear that things don't always go according to plan and that's what makes this interview such a great one. Being the head of security for a televangelist can be pretty scary… apparently. In late 2008, Chris Coleman received a threatening email. The writer was upset with his boss, Joyce Meyer. They wrote that if Joyce didn't stop preaching the “bullshit,” they would kill Chris. If not Chris, they might kill his wife, Sheri and their sons Garett and Gavin. Chris had no idea who could have sent the message. Like, literally no idea. And he was the head of security. Then Kristin tells us about Gerard Finneran, who boarded a flight from Buenos Aires to New York City, eager to knock back some drinks. He drank several, then got up to serve himself even more. The flight attendants informed him that passengers weren't allowed to serve themselves drinks. (Duh.) Later, they cut Gerard off. He didn't take it well. And now for a note about our process. Vice President of Development for Wingspan Development Group Chris Coleman says that the privately owned real estate company is more of a “developer with a general contractor in-house,” than a traditional developer. That vertical integration gives Wingspan a differentiator in the market. Currently focused on multifamily and mixed-use developments in Northern Illinois, Southeastern Wisconsin and Central Florida, Wingspan is now seeking to expand into the Greater Phoenix, Greater Denver, and Greater Atlanta markets. On this episode of Real Estate for Breakfast, host Phil Coover and Chris Coleman discuss Wingspan's real estate development strategy, how the company differs from other developers, and some of the group's most successful projects. Additionally, they discuss how Wingspan is navigating the current real estate climate and how Chris and other company leaders chose which new markets to target. Chris explains that the Phoenix, Denver, and Atlanta markets are all areas that he himself or the group's Director of Development, Jason Macklin, are personally familiar with, and that is what gives Wingspan comfort in moving forward in those regions. Chris refers to this concept as the group's way of avoiding “the dumb tax,” or losing money by naively developing in areas that the local operators have passed over due to local knowledge of a development challenge. Chris also discusses the group's formation, and how it grew out of its sister company, Nicholas & Associates. As a family-owned business, Chris points out that Wingspan can be selective about its deals, and that patience can sometimes give it an advantage over traditional development companies. Overall, Chris says, Wingspan's number one priority is to protect the family and execute good projects. As Wingspan's Vice President of Development, Chris is responsible for all of the company's lines of business, including development oversight, fostering new debt and equity relationships, and implementing Wingspan's overall strategic plan. Prior to joining Wingspan, Coleman served as Chicago Division President for William Ryan Homes, Inc. Chris first began his career in real estate in 1988 as a market analyst with The Zale Group. After spending time in Florida and Georgia, Coleman returned to Chicago in 1997 to launch his own firm specializing in in-fill redevelopment. He joined Wingspan Development Group in 2017. Chris Coleman was never far from Southern food. He spent summers on his grandparents farm in Mississippi, and was 14 when he started his first industry job at a local fish camp in a suburb of Charlotte, NC, working his way up through the ranks from busser to kitchen expediter. While a culinary student in Central Piedmont Community College's =, Chris took a job as a line cook at the McNinch House, one of Charlotte's most storied fine dining restaurants. He was quickly promoted to head chef at the age of 21, and he's continued to build on that success in the Charlotte region, now the chef and a partner at The Goodyear House in Charlotte's NoDa neighborhood, and the recently opened Old Town Kitchen & Cocktails in nearby Rock Hill, SC. He brings technique and creativity to a local food sensibility, has supported area farmers and food producers throughout his career, and his cooking is familiar yet always with a twist, like the deviled egg toast topped with smoked NC roe I mention in this episode. I'm always interested in what he's going to cook next.
