For years, chef Yia Vang operated his restaurant Union Hmong Kitchen in a trailer outside of a brewery in Minneapolis. Last year, he finally opened his first brick-and-mortar restaurant, and it already feels like a neighborhood institution — especially in the region of the U.S. with the largest community of Hmong refugees from southeast Asia. Over a meal of whole grilled branzino, Hmong sausage, purple sticky rice, and a lot more, Yia tells Dan about his mission to tell his parents' story — and the story of the Hmong people — through his cooking. Yia also talks about his own journey: he was born in a Thai refugee camp, moved with his family to Amish country, and then worked as a church “lunch lady” before breaking out on his own. Yia Vang did not set out to be a restaurateur, but after his Hmong food popup took off in Minneapolis, he realized this was his mission. Vang emigrated to the U.S. from Southeast Asia with his family as a young child, seeking refuge among other Hmong people in Minnesota. His popup found a home in a trailer and eventually started operating as Union Hmong Kitchen in Minneapolis' Graze Food Hall. He is now working with partners to open a full-service brick-and-mortar restaurant called Vinai in 2024. Vinai is named after the refugee camp in Thailand where his parents ended up after the Vietnam War and many of the restaurant's ingredients will be sourced from his parents' farm. Vang is spreading the word about Hmong culture and cuisine through his cooking, his podcast called “Hmonglish” and TV appearances on the Food Network, Iron Chef and the Outdoors Channel. Listen as the James Beard-nominated chef describes the culinary influences that make Hmong cuisine so unique and how he's honoring the legacy of the Hmong people through their food.

Yia Vang is the chef and owner of Union Hmong Kitchen, a restaurant in the Graze Food Hall in Minneapolis’s North Loop, and he’s about to open Vinai in the center of the city. Vang was born in Thailand as a Hmong refugee and grew up in the Twin Cities, which has the largest Hmong population outside of Southeast Asia. The Hmong are traditionally mountain-dwelling people in mainland Southeast Asia, particularly Laos, and many of them supported the United States during the Vietnam War, which meant that as the U.S. withdrew, it left many Hmong in the lurch, so they migrated to the United States in the 1970s. At Union Hmong Kitchen, Yang tells that story through the food. He said his people adapted to their new communities, and so did the food, incorporating local ingredients as well as foodways. That means Minneapolis Hmong food is different from the Hmong food of Sacramento, Calif., or Boca Raton, Fla. “But at the end … what connects is is our history, our story. And it’s a story of pain, suffering that really connects us together,” he said. Vang is also a TV personality, having appeared on morning shows and cooking competitions, and he also was the host of the Food Network’s “Stoked” as well as “Feral” on the Outdoors Channel, in which he captures and cooks invasive species. Vang recently discussed his experiences, his approach to incorporating broader Minnesota cooking traditions into his own food, what he calls “Hmong sofrito,” and much more.
