Jariko was born in Washington DC and as a military brat grew up all over the world. In 1997 he enlisted in the US Army. After basic training and Airborne School he completed the assessment and selection process for the 75th Ranger Regiment and was assigned to the 2nd Ranger Battalion at Ft Lewis Washington. Jariko went on to serve in the Ranger Regiment for 15 and a half years where he deployed to combat 15 times in Iraq and Afghanistan from 2002-2012 as a Weapons Squad Leader, Rifle Platoon Sergeant, Senior Enlisted Advisor, and Company First Sergeant. Jariko Retired from active duty in 2017 after four years as the Senior Military Science Instructor at St. John's University in New York City. Since Retiring he has advised and produced on major motion pictures, national ad campaigns, and television series'. Jariko is now the Media 1SG for Black Rifle Coffee, reporting from combat zones and producing epic original content. How will the restaurant industry survive the coronavirus? Chef Jason Vincent (Giant, Chef Special) joins Billy Shore from his home quarantine in Chicago to talk about the difficult decisions he’s had to make as a restaurant owner in these challenging times. Vincent believes the current crisis is putting a magnifying glass on long-standing problems like healthcare. “It's a tough lesson to have to learn in a terrible time, but lots of stuff needs to get fixed,” he says. He decided early on to keep providing health insurance to his employees during the shutdown. Vincent is concerned the pandemic may exacerbate mental health issues in the restaurant workforce. “This is when the raw nerve gets exposed… people who don't like being alone, being made to be alone. It gets touchy real fast,” explains Vincent. A father of two young girls, he also worries about what the crisis may do to the mental state of kids. “You see the crinkles on their faces when they hear the word coronavirus on the news. You see their pause after hearing about a ventilator,” he explains. Col. Jason Vincent and Maj. Stuart Gallagher about an article they published that is in AUSA Army magazine titled, PSYOP, Civil Affairs Units Need to Prove Themselves.
In 2013, Jason Vincent's life changed in the course of a phone call. Food & Wine called to tell him that he'd been selected as a Best New Chef, and suddenly he was thrust into the spotlight. For a while, it burned him up. Vincent made the decision to step away from restaurants for two years to take care of his mental and physical health, and that of his growing family. Now he's back in the game as the chef-owner at the much-beloved Giant in Chicago, and making a priority of creating a healthy work environment for his staff—so much so that Food & Wine came calling once again when Giant was included in the inaugural class of Great Restaurants to Work For. Jason Vincent joins the show. Jason highlights what the people need out here in Colorado, and tells Terry he doesn't feel the need to fill the store with products outdoor enthusiasts won't use. Jason mentions the love for the outdoors, and the experts standing at each station that are passionate about the outdoors. Admin at Jackson Lake State Park, Darby Shanks joins the show to talk about the astronomy at Jackson Lake. Darby talks about the up to 33" wipers you can catch, and all you need is a park pass to get in. Terry asks Darby where Jackson is located, about the events coming up, and about the hunting access close to the park. Also, Ray Reeves calls the show to tell Terry about the inventory Adventure Camper recently got in, including the most popular models from Sonoma. Megan Franzen of Steamboat Lake State Park joins the show to discuss interpretive programs at Steamboat Lake. Megan mentions the rainbow trout & alpine views at Steamboat, and the camping facilities that can be booked up to six months in advance. Megan says programs are available every weekend, as well as some days during the week, as well as programs available to kids. Nate says there is much to do in the Colorado outdoors, and carp can actually put up the biggest fight in Colorado, and actually make you a better angler. Jason Vincent of Sportsman's Warehouse talks about Summer Fest & tips for tying knots for fly fishing, with the help of Austin Parr & Terry Wickstrom. Terry mentions the blood knot, and the guys come to an agreement on what knot would be best & how to tie it for his winner of Ask The Expert. To kick off our coverage of Charleston Wine + Food, Jason Vincent & Ben Lustbader from Giant in Chicago joined Caity Moseman Wadler and Kat Johnson to talk about being business partners, co-chefs and best friends. After taking a hiatus from the kitchen, Jason & Ben developed the idea for Giant after a spontaneous conversation about creating a kebab-style club sandwich. Now, they cook simple, familiar, yet "chef-y" food in the Logan Square neighborhood.
This time of year often dictates what home cooks and professional chefs work with in the kitchen. Right around Labor Day, the corn is high and abundant, and we're seeing it on menus everywhere. So we thought, why not feature corn in this week's challenge? We asked Jason Vincent, one of Chicago's most seasonally-focused chefs to join us this week. He is the Chef and Owner of Giant, which recently opened in Chicago's Logan Square neighborhood. We asked him to come up with something using corn as the star, plus five other easy-to-find ingredients, and get a main dish on the table in 15 minutes or less.
