The Wren Boy in the West Sitting on the farthest spit of peninsula in Europe, Dingle Distillery is the first craft distillery in Ireland post-consolidation. From its place on the Wild Atlantic Way, Dingle set forth the path for the dozens of Irish distilleries that followed in the last decade-plus. Managing Director and son of the founder Elliot Hughes joins me to talk through Dingle's history and four expressions: Dingle Single Malt, Samhain, Bealtaine, and La Le Bride. Embracing the culture of their (and County Kerry's) Gaeltacht region, Dingle leans heavily into Celtic lore (try pronouncing the distillery's Gaelic name...I'll wait). Elliot Hughes of is the managing distillery director for Dingle Distillery. What started as a bar outside of Dublin has become a distillery in Dingle, in the southwest corner of Ireland. Dingle is far-flung, but it's also a popular tourist destination with mild weather perfect for aging whiskey. Dingle's yearly releases pay homage to the town's connection to Celtic pagan traditions, which include various festivals, equinoxes and solstices. Irish single pot still whiskey is in the midst of a welcome resurgence. Once one of the best selling styles of whiskey in the world, its rollercoaster journey has been well documented on this podcast and elsewhere. Though the Midleton distillery was the only distillery in Ireland producing this style from the early 1970s until 2012 when Dingle Distillery began production, today there are more than a dozen producers of Ireland’s unique style of whiskey with more in the pipeline. Before the available choices of single post still whiskey stretched beyond two - Green Spot and Redbreast 12, one man had fallen in love with both the spirit and its history. Today, Fionnán O’Connor, my guest on the podcast, is recognized as one of the foremost experts on the history of single pot still whiskey.

One woman has been part of the story of Dingle and the distillery since before this crazy idea to distill in one of Europe’s most westerly towns was hatched. Her name is Mary Ferriter and there is no Dingle Distillery without her. As General Manager and Global Ambassador for the Dingle Distillery, she has observed and managed its growth from a unique perch. Graham Coull grew up in Speyside spelling "whisky" without the "e" - as any proper Scot would. It didn't help him get his first job in the Scotch Whisky industry at Glenfiddich, nor did it help him get his current job 14 years ago as the manager at Glen Moray. Next month, he'll be leaving Elgin for Ireland's Atlantic coast to become the manager at Dingle Distillery - and it'll mean learning not only new styles of making whiskey...but a new way of spelling it! Oliver Hughes and his partners in Ireland's Porterhouse Group opened Dingle Distillery in late 2012, just as the Irish craft distilling boom was beginning. Dingle was Ireland's first new distillery in 25 years since the opening of Cooley Distillery in 1987, but Hughes barely got to see the first early bottlings of Dingle Whiskey before his death in 2016. Today, his family and colleagues have taken Oliver Hughes's dream and are building on it, with the first exports of Dingle's single malt whisky to the United States coming later this year. We'll visit the distillery and talk with some of the people carrying on that mission on this week's WhiskyCast In-Depth. Dingle - Jeder Irlandfan kennt es. Dort gibt es den Delphin Funghi, einen malerischen Hafen mit bunten Fischerbooten, wild romantische Küsten und Felsen, Ringforts, viele Schafe und noch mehr Touristen. Dem Delphin wurde sogar zwischenzeitlich ein Denkmal gebaut. Seit kurzem gibt es dort auch eine Brennerei. Eine Brennerei für Hochprozentiges. Für Gin, Whiskey und für Vodka. Obwohl die Herstellung von Vodka nicht unbedingt üblich ist für Irland, ist das nicht der Grund weswegen wir dort waren. Was uns zu unserem Besuch bewegt hat, war die ungewöhnliche Erfolgsgeschichte, eines Startups, das sich anschickt, den irischen und sogar den europäischen Markt aufzurollen.
