Throughout Season 3, Jill Devine has talked to several guests about food: the good, the bad, and the ugly. One consistent theme, Jill has concerns about her oldest daughter, Lu, and her pickiness with food. Jill took to her social media accounts to ask for help with Lu. Carmen Berry showed up in Jill’s inbox with an amazing email. Here are some highlights: My name is Carmen and I saw your request for recipes to get kids involved in the kitchen! I am a registered dietitian, a mom to an 8-month old (and an aunt to a 2 and 4-year-old), and I work at Operation Food Search! In my role at work, I am responsible for leading the nutrition education team to facilitate and build skills and knowledge that lead to sustained healthy eating habits in the community through hands-on cooking classes, interactive grocery store tours, cooking demonstrations, nutrition presentations, and other nutrition education outreach events. Just this past year, we launched our own internal hands-on kids cooking course called Operation CHEF, Culinary Habits to Empower Families. During the 6-week course, students ages 8-12 prepare delicious recipes and learn new cooking techniques. I agree with many of your podcast guests that getting kids in the kitchen is really beneficial to open their mind to trying something new. Something else that you can try is bring your kid along to the grocery store! There are some studies that show when a kid is included in the planning of the meal and the grocery shopping, it increases the likelihood that they try the food item. But it is important to be patient and keep trying! If your kids are helping shop and cook and still refuse the food, don’t get discouraged! Never force the issue because that usually backfires. Simply continue to make fruits and veggies a part of every meal and snack and offer them in a variety of ways. Be a good role model and eat the veggies offered at each meal. Eventually your picky eater will develop a taste for a few favorites. My last resort I always suggest is what I call “stealth nutrition” which is sneaking in veggies into various recipes. I say last resort because this shouldn’t be your only strategy. It is important for picky eaters to see and experience a variety of veggies in a variety of ways. Stealth Nutrition Ideas: - You can add grated veggies to a lot of foods – fold into meatballs or meatloaf, add to a casserole, soup, or fried rice. It’s hard to pick out grated veggies since they are so small. - Making tomato sauce? Add in shredded or diced veggies. Blend up in a blender to completely hide it if you’d like. Carrots add some natural sweetness to tomato sauce. - Add fresh fruit to pancakes or muffin batters. A fun one is adding in grated carrots and apples to pancakes for a carrot cake like breakfast treat! Or make colored pancakes by adding in mashed up fruit like blueberries or raspberries to the batter. - Fold pureed butternut squash or sweet potatoes into mac and cheese. The pureed orange veggies just disappear in the cheese sauce! - Blend spinach into smoothies! I like to make a green smoothie with spinach, pineapple, banana and grapes. But if you’d like to hide it, blend it up with mixed berries. The purple hides it completely. A recipe I have attached to this email is for turkey tacos – a tried and true recipe from Cooking Matters! Your daughter can grate the carrot, dump in the cans of beans and tomatoes, measure the spices, shred the cheese, and chop the lettuce and tomato with a plastic knife! Jill was blown away by the email and invited Carmen on the podcast. They discussed the email in detail, as well as other ways to talk to Lu about food. The number one take away all parents should keep in mind – BE PATIENT AND BE A GOOD ROLE MODEL! Lastly, because of the pandemic, every other Wednesday, Operation Food Search hosts a Facebook Live – called Cooking with Carmen! If you can’t watch it live, it’s recorded, and you will always have access online. Register for our Weekly COVID-19 Town Hall, 5/21 from 6-7 p.m. MST The COVID-19 Pandemic has presented unprecedented challenges to maintaining healthy habits and healthy weight for our patients and families. We know that kids tend to loose structure and gain excess weight in the summer – we saw this prior to COVID-19 and we are now facing the most stressful and unpredictable summer of our lifetime. In this our 12th COVID-19 podcast, we will discuss healthy routines for pediatricians to discuss with patients and parents in their practice to help protect and preserve healthy habits and weight.   Today we are fortunate to be joined by Matt Haemer, MD and Richard Boles, PhD of our Clinical Nutrition Team at Children’s Hospital Colorado. Dr. Haemer helps to lead the nutrition team at Children’s Hospital Colorado and is Associate Professor of Pediatrics and Nutrition at the University of Colorado School of Medicine. Dr. Boles is psychologist with the Clinical Nutrition Team at Children’s and Associate Professor of Pediatrics and Nutrition at the University of Colorado School of Medicine. Key Points The habits that help kids maintain healthy weight during the COVID19 pandemic are the same habits that help with mental health, good school performance, and healthy peer relationships. By focusing on the healthy routines we’ll talk about today, pediatricians can support parents as they help their children achieve all these goals. Lifestyle Medicine Psychologist Richard Boles PhD offers practical advice that pediatricians can share with families to help maintain healthy habits during this very challenging time. Pediatricians play a critical role in helping parents to promote healthy habits. They can help parents realize when a child’s weight gain is unhealthy, offer brief follow-up counseling to help families set goals for lifestyle change, refer families for extra help when needed, and share  resources like those below.  A primary care provider can make a single referral to Children’s Hospital Colorado’s Lifestyle Medicine Program to address any and all medical problems from excess weight that a child may have, or to help children prevent these medical problems at any age. What can we do when politicians prefer polarizing rhetoric to concrete action? We can roll up our sleeves and serve those who need help. Meaningful service can be the antidote to disappointing political paralysis. In this episode of Add Passion and Stir, two longtime leaders in service, Michael Brown of City Year and Boston chef Jason Santos (Buttermilk and Bourbon) talk with host and Share Our Strength founder and CEO Billy Shore about why it is so important to ‘turn on your social justice nerve’ and ‘flex your service muscle.’ Michael founded City Year in 1988 in Boston and grew it to a national service program of 3,100 18-25 year olds improving academic performance in high-poverty, poor performing schools in 28 cities. “Service is part of the American spirit… it is at the very heart of how we perceive ourselves as a nation,“ he declares. Jason began volunteering with Share Our Strength’s No Kid Hungry campaign more than 20 years ago as a very young chef, and since then has taught many Cooking Matters courses, been inducted into the Cooking Matters Hall of Fame, and raised an impressive amount of money for the campaign. “I have to do my part to help fix something that, in 2017, still blows me away that it’s such a problem,” he says. Listen to how these leaders use service to cut through politics and give themselves and others the gratifying experience of serving others.

Sheila Dillon speaks to the writer Michael Pollan on the craft, science and pleasures of cooking. In his new book, Cooked, "a love letter to cooking", Pollan who is one of the world's most popular thinkers on food reflects on the value of being a cook and preparing our own food. From understanding the physics and culture of the barbecue to the art of fermentation, Pollan has spent the last two years researching cooking techniques around the world to help explain how transforming food has influenced our evolution and development over millions of years.Cooking, says Pollan, is "baked into our DNA", we are "the cooking animal". For that reason he examines what we've lost as rates of domestic cooking have declined since the 1960's and what it will take for more of us to make a meaningful return to the kitchen.Producer: Dan Saladino.
