Fuchsia Dunlop is a cook and food writer specialising in Chinese cuisine. She was the first Westerner to train as a chef at the Sichuan Institute of Higher Cuisine, and has spent much of the last two decades exploring China and its food. In her latest book, Invitation to a Banquet, Fuchsia explores the history, philosophy and techniques of China's rich and ancient culinary culture. Each chapter examines a classic dish, from mapo tofu to Dongpo pork, knife-scraped noodles to braised pomelo pith, to reveal a singular aspect of Chinese gastronomy, whether it's the importance of the soybean, the lure of exotic ingredients or the history of Buddhist vegetarian cuisine. In this podcast episode, Fuchsia joins host Ben to dive deep into the history, culture and techniques behind Chinese cuisine. From the ancient origins of steaming to the finer points of knife skills and texture, Fuchsia provides fascinating insights into what makes Chinese food so unique. We talk about our origin food dishes: “there's one dish that is very dear to me that sort of expresses partly why I fell in love with Sichuanese food. And that's fish fragrant aubergine or eggplant. I think when I went to live in Sichuan in 1994, what was so impressive was that the local food was unlike anything I'd had in England. It was all very fresh and healthy and all these seasonal vegetables and amazing flavors. That's the thing about Sichuanese cuisine that it's all about the art of mixing flavors. So this particular dish for me just represents the sort of-- I mean, it's made with pickled red chilies, ginger, garlic, spring onion, and a bit of sweet and sour. Then you have the sumptuous kind of golden butter-ness of the aubergines. So it's a really homely dish with cheap ingredients and it's sensational. Sichuan everyone thinks [numbing and hot], lots of chilli and Sichuan pepper. But actually, it has this kind of melodious heat with a hint of sweetness and it's just conjuring up this complex flavor from a few limited palette of seasonings. I think that's one of the things that I fell in love with Sichuanese food” Fuchsia debunks common myths and misperceptions about Chinese food in the West, from the idea that it's unhealthy to the notion that exotic ingredients are eaten only out of poverty. She traces how historical circumstances led Chinese cuisine to be seen as cheap and lowbrow in the West compared to French or Japanese food. Delving into the cultural exchange around food, Fuchsia offers a nuanced take on debates over cultural appropriation and argues that an openness to different cultures can be "life enhancing." She shares colorful anecdotes from her research and travel in China that bring dishes like Pomelo Pith and Shanghainese "Western food" to life. But the interesting thing is-- because I've written about this and talked about it a lot because I find it fascinating. The restaurant and hospitality industry is one of the leading sources of jobs not just in America, but across the globe. What an individual learns working in a kitchen, front of house, behind a bar, or in support of a restaurant can serve as lifelong skills to develop across industries. Chef Brandon Edwin Chrostowski knows this better than most people, not just because he's made a career for himself in the restaurant industry, but he's made it his goal to give as many people as possible a career in the space alongside him, with Edwins Leadership & Restaurant Institute. At eighteen years old Chef Brandon received a ‘break' from a judge who gave him a year of probation instead of a ten year prison sentence. After his probation, he studied under Detroit Chef George Kalergis, and worked his way to the Culinary Institute of America in New York. Upon graduating from the CIA, Chef Brandon worked in renowned kitchens around the world like Charlie Trotters, Lucas Carton, and Le Cirque. Then in 2007, Chef Brandon founded Edwins Leadership & Restaurant Institute, which trains people returning from court involvement in the culinary arts, empower them with a passion for hospitality management, and prepare students for a successful transition home. The Impact of Edwins was so great, it was the subject of the 2017 Oscar nominated documentary Knife Skills. So far hundreds of folks have passed through the 6 month program at Edwins, and graduates have held a 95% employment rate with less than 1% recidivism into the court system. In addition, Edwins has expanded to include a butcher shop, bakery, a sister restaurant location, and with a full blown housing complex and campus. Our first premiere of the week comes from Bangor born, and now Auckland based, DJ Koncept. The New Zealand based producer has supplied a blissful liquid drum and bass symphony, touching off golden age jungle memories and knitting them with future concepts. Originally from Bangor Co Down, and now based in Auckland NZ, DJ Koncept has been a DJ for around 20 years. He Started off his musical journey with hip hop, and then moved onto producing Drum & Bass, and more recently Breakbeat Hardcore. Koncept veers towards music that is more mellow and melodious, and he's partial to head-nodding breakbeats and pounding bass. Artists like as A Sides and Kool Keith have appeared on DJ Koncept's releases, and Koncept has won many competitive DJ battle's as turntablist. Koncept has clearly not shy'd away from releasing and competing and has has garnered several accolades over the years. Aside from becoming the 2018 UK DMC Champion, he regularly combines turntablism aspects into his live DJ performances and music productions. DJ Koncept has two projects due for release on the well-known labels Kniteforce and Remix Records, as well as co-running two labels with his brother Adam aka Albert Wesker. ‘Vinyl Combat' is the main label the pair run which is now dedicated to DnB, as well as the more recently established ‘Knife Skills' label with a focus on alternative forms of breakbeat music. They're now up to their 17th release with more forthcoming material inbound. Koncept has put together a six minute masterpiece that is soulful and funky yet melodic and euphoric. Vocal swells are met with warm fluffy pads that drift around the mix like a white cloud on a sunny day. Reverb tails and vocal screeches create tension for unique and sublime elated moments. This seems like somewhat of a throwback to late 90's and early 00's jungle jubilant memories but Koncept has managed to carve out an idiosyncratic 2022 interoperation that remains unique yet reflective. Brandon Chrostowski is an American chef, better known as founder, president and CEO of EDWINS Leadership and Restaurant Institute. The nonprofit organization acts as both a French restaurant and a culinary institute located in Cleveland's Shaker Square. It trains and is staffed largely by former prison inmates and was the subject of the 2017 Academy Award-nominated documentary short, Knife Skills. Chrostowski joined us for the origin story of EDWINS and explains how it continues to grow despite challenges presented to the restaurant and hospitality industry during the pandemic.
When the pandemic first hit the U.S. last March, and we found ourselves working and learning from home and had a lot more time on our hands, many of us made our way to the kitchen to bake sourdough bread and sweet treats and make homemade meals from scratch. Many of us also brought our kids into the kitchen to teach them how to cook, to spend quality time together, and to bond. In fact, according to Guelph Family Health Study, 50% of parents involved their kids in cooking more often during the pandemic. While cooking can often feel like a chore, or something you don't have time for, cooking with your kids is one of the best ways to get them out of their picky eating habits, encourage them to eat their vegetables, and become healthy, adventurous eaters. Although it may be messy, it doesn't have to be time-consuming or stressful and you can use it as an opportunity to teach a life skill, spark creativity and build a stronger relationship with your kids.
