Standard-strength Porter and Stout styles such as American Porter, English Porter, Oatmeal Stout, Milk Stout, Irish Stout, and some American Stouts feature roasty flavors and aromas from the presence of roasted malts. These grains are roasted similar to how coffee beans and cacao beans get roasted, and take on many of the same flavor notes—coffee and chocolate are two common flavor descriptors for these beer styles.Beers in these styles tend to cast a wide net when paired with chocolate and can work solidly with a wide range of chocolates, making them good to have on hand for impromptu pairings. This week I travel to Bell Tower Brewing in Kent, Ohio. My guest for this episode is Jennifer Hermann who is one of the co-owners as well as the head brewer for Bell Tower. In this interview we talk about the history of the brewery from it being in church in the mid 1800s to it becoming the home of a commercial laundry equipment company, and then later becoming Kent's 3rd brewery. Jennifer talks about her early fascination with beer that led to her home brewing and then later volunteering at Thirsty Dog and Hoppin Frog. Eventually she landed a brewing gig at Market Garden in Cleveland and the rest is history. We dive into the marshes of South Carolina and come up with a refreshing 6 pack of this Pluff Mud Porter from Holy City Brewing. This beer is a classic American Porter and a popular one for Holy City's efforts in the Charleston market. If you're in the area, this is one you'll probably want to try, along with any of the other beers this regional brewer has available. But what is "Pluff Mud"? We wondered that, too. We liked how they explained it. Here's what the brewery says on their site: "Pluff mud, noun, A mixture of dirt and water indigenous to the marshes of the South Carolina Lowcountry, with a distinct odor thats endearing to locals, but off-putting to tourists and redcoats." Well, now that's a good reason to name a beer after a specific type of mud localized to the area.
Beer Archaeologist Travis Rupp is bringing history back to life one beer at a time As far as cool job titles go, Beer Archaeologist is pretty high on the list. Travis Rupp holds that title, as well as R&D Manager at Colorado's Avery Brewing Co. In addition to his boozy life, Rupp is also a professor of classics, art history, and anthropology at University of Colorado Boulder and he's currently working on a book - Brewing in the Ancient World. I'm not sure if he ever sleeps. Rupp joined us this week to talk about the history of brewing around the world. We discuss the beers of ancient Rome, Greece, and Egypt, Viking brews, monastic ales, and George Washington's penchant for beer and wine. Attitudes towards beer varied in each culture with some celebrating it as the drink of the goods, while others imbibed in secret as they decried beer as the beverage of Plebians. We also dig into the ingredients and methods used and the difficulty some of these ancient additions impose when trying to bring them back to life. Ancient yeasts are the hardest to acquire, and some of the spices used in the past are now known to be toxic. Rupp tells us the other brewers cringe as he brews some of his ancient ales, gumming up the brewhouse with sticky corn or dragging and entire spruce tree into the brewery. Avery has released many of his recipes in their Ales of Antiquity series. We enjoyed the latest release, George Washington Porter and coming soon is an 18th century IPA. Rupp has no intentions of slowing down and has plans for beers years into the future. He'll continue to travel the world scouring archaeology sites for signs of brewing and do his best to bring something to life that will allow us all to get a taste of the past.
