This week was the last onsite interview in the history of Pint Talking and got to hang out with Paoloa Vabuena and John Hill from Pulpo Brewing Co. in Willoughby Ohio. Pulpo is the first Latina women owned brewery in Ohio. They are associated with Barroco arepa bar and Hola Tacos. Paola and John talked to me about navigating the waters of tumultuous craft beer market in 2023 as well as increasing production to satisfy their needs of the other locations. This week I visited Terrestrial Brewing Company in Cleveland, Ohio and sat down with Ralph Sgro is the co-owner and brewer at Terrestrial. During the visit we talked about the change in the brewery landscape as more and more breweries battle to stay relevant in a saturated craft beer market. We discussed on site expansion and how the market has changed dramatically in the past couple of years. This week I visited Pompatus Brewing Company and sat down with the Joker of Love Steve Miller. Steve is the owner and brewer at Pompatus. While we did talk a little music, we mostly talked about our most favorite beverage on the planet. While Steve may be brewing on a small system, he's delivering some fantastic beer to his customers. During the show we discussed his background that started in Boulder Colorado before the craft beer explosion had really gone bananas. This week I visited with Cory Smith from Twin Oast Brewing in Port Clinton, Ohio. It has been a couple years since I last visited with Cory and since then there have been several changes. They have added a 60BBL lagering tank to combine with their 30BBL tank. They have also put in a new biergarten which features pour your own beer faucets.The biggest news came in June of 2023 when Twin Oast aquired Catawba Island Brewing Company. This will eventually become a sour beer production facility, and fans of Hot Blonde don't need to worry as they will continue to brew that year round. This Friday and Saturday 9/29 and 9/30 Twin Oast will be hosting their annual Oastoberfest. You can buy tickets online through 9/26. After that you will need to purchase them at the door. They are $5 for Friday and $10 for Saturday. There will be plenty of entertainment as well as 19 breweries serving up their beer. If you have time you should definitely check it out. This week I visited with Jeff and Shari Bailey at Auburn Acres Hop Farm in Auburn, Ohio. They started growing hops in a small section of their property for their home brews early on, and after 8 years they have grown it to 1 acre featuring hop varieties such as Triple Pearle, Vista, Chinook, and Triumph. During our sit down we talked about everything that is involved in running a hop farm including the prep work in the spring to post harvest. We also focused on their newly opened event space which is two barns joined together that date all the way back to the late 1800's. During the show we also got to sample some of the beer from local breweries that are using their hops. Oktoberfestbier or Festbier is a German-style of low fermentation beer that is very similar to lagers in its blonde color but also in the fact that it is fermented at a cooler temperature than ales. In this episode Bob and I look at the Helles Bock. Also called “heller bock” (meaning “pale bock”), the German-style Maibock is paler in color and more hop-centric than traditional bock beers. This week I was in Newark, Ohio and I sat down with Heather and Josh Lange who own Dankhouse Brewing. Dankhouse has always been a favorite of mine as they specialize in Hazy IPAs and Sours. While sours aren't my jam anymore I do quite like theirs. During the show we talked about how Dankhouse was born from a homebrewing dream in a garage, and how Josh developed the business plan in his work van. The original plan was to own start craft beer bottle shop, but once a large chain grocery store put the kibosh to those plans the brewery quickly took flight. In the end we should all be glad that the bottle shop idea failed, and the brewery idea prevailed. This week I was in Columbia Station, Ohio visiting Ann Zofchak Red Wagon Brewing/Four Paws Brewing. Four Paws/Red Wagon is a fun place situated on a farm just north of Medina County. There is plenty of food options, a massive patio, and yes dogs are most certainly allowed on the patio. During the interview Ann talked about falling in love with brewing in the 90s and then taking a break for 10 years only to have the spark once again be re-ignited in the early 2010s. She brewed commercially off and on and got some really good on the job training collaborating with a number of local breweries. In this episode Bob and I take on an interesting category. We discsuss the American Brown Ale, which in theory looks like a version of the English brown, but jacked up on hops (allegedly). American brown ale with roasted malt, caramel-like and chocolate-like characters should be of medium intensity in both flavor and aroma for the American brown ale. American-style brown ales have evident low to medium hop flavor and aroma and medium to high hop bitterness. The history of this style dates back to U.S. homebrewers who were inspired by English-style brown ales and porters. It sits in flavor between those British styles and is more bitter than both. Examples of this style: 1. HiHo – Touchdown Brown 2. Treehouse – Bear 3. This week I was out west again in Toledo, Ohio. I got to spend some time with Alex and Ali Drosdowicz who are co-owners of Quenched and Tempered Brewing Company. Alex is the head brewer at Quenched and Tempered and Ali runs the marketing for the brewery as well as handling all the can art. They began brewing in 2019 in Grand Rapids, Ohio which is approximately 20 miles from Toledo. The tap room did not open until August of 2022, but Quenched and Tempered had already earned quite a following over the previous 3 years. Q&T has events almost every day that they are open. They recently celebrated becoming part of the ORA in Toledo, and on 8/11 they will begin the weekend celebration of their taproom's 1 year anniversary. This week I was in Toledo, Ohio hanging with Michael Martin who is the Brewery Sales Manager at Maumee Bay brewing Company. Maumee Bay Brewing Company has a rich history as it is the oldest brewery in Toledo. Opened in 1995 MBBC is in a 19th century hotel filled with unique stories. The brewery has two different floors for serving, as well as an outdoor patio. There is also a restaurant located on the property and MBBC offers a full kitchen that services the brewery as well. MBBC is also expanding to Columbus, Ohio in late 2023 or early 2024. The quest for more of the India pale ale flavor has led them to the imperial India pale ale, a stronger version of the American IPA, which boasts even more hoppy flavor, aroma and bitterness. Imperial India pale ale is darker in color than the American IPA, substantially more bitter, and high in alcohol by volume. This week I was down in Delaware, Ohio hanging with Frank Barickman who is the owner and head brewer at Restoration Brew Works. Frank and I discussed the brewery's opening in 2015, and how they survived through 2020. We also talked a lot about how breweries need to evolve in 2023 to remain successful. During the interview we drank some very tasty beers including a Pilsner featuring a new aged lager yeast that helps it finish out fast like an Ale while still maintaining a traditional lager taste. We also drank an award-winning Irish Red that they often use as a gateway beer for non-craft beer drinkers to convert them. At the end we drank a delicious Russian Imperial Stout from 2021. In this episode Bob and I stay on the IPA train, and turn our attention to the Hazy IPA. Emphasizing hop aroma and flavor without bracing bitterness, the New England IPA leans heavily on late and dry hopping techniques to deliver a bursting juicy, tropical hop experience. The skillful balance of technique and ingredient selection, often including the addition of wheat or oats, lends an alluring haze to this popular take on the American IPA. Examples of this style: 1. This week I celebrate my 100th episode with a visit to Cambridge, Ohio. This week's brewery visit was at Guernsey Brewhouse, and I got to sit down with Shawn Long who is the co-owner of Guernsey Brewhouse along with his wife Amy. We were also joined by Shawn's co-brewer Tony Wray. We talked about the history of Cambridge and its lack of brewing history. We discussed the challenge of being a rural brewery and the challenges of being discovered by brewery explorers. This led to Shawn making a very solid point that your regulars are the ones that sustains business due their reliability, which makes it very important to brew great beer that they want to drink. I can tell you that there is no shortage of great beer at Guernsey Brewhouse. We enjoyed a lager, shandy, hazy IPA, and Imperial stout. This week I sat down with Nick Sheets and Zack Cline at Henmick Farm & Brewery near Columbus, Ohio. Henmick is situated on 8 acres of the Sheets family farm in Delaware County. Henmick has a huge amount of outdoor space to accommodate some larger crowds that they often see come through the doors Thursday through Sunday. The beers at Henmick run the gamut. Their portfolio incudes lagers, IPAs, Belgian style beer, farmhouse Saison, to stouts. During the show Nick talked about how it has been a dream of his to own a brewery for over two decades. Finally in 2020 he quit his job in the corporate world to fulfill his dream. Henmick Farm & Brewery was born, although thanks to the pandemic of 2020 the opening was pushed back an additional seven months. Henmick offers a location that not only can you go and enjoy a beer with friends, but it is kid and pet friendly. In this episode Bob and I stay home in the U.S. and follow the Blonde Ale with the Cream Ale. The American cream ale is a mild, pale, light-bodied ale, made using a warm fermentation (top or bottom fermenting yeast) and cold lagering. One of the most approachable styles, a golden or blonde ale is an easy-drinking beer that is visually appealing and has no particularly dominating malt or hop characteristics. In this episode Bob and I switch to one of the most delicious beer styles in all the world, Kolsch. Kölsch is one of the most strictly defined beer styles in Germany: according to the Konvention, it is a pale, highly attenuated, hoppy, bright (i.e. filtered and not cloudy) top-fermenting beer, and must be brewed according to the Reinheitsgebot. Style examples: 1. JAFB – Kemp's Kolsch 2. Saint Arnold Brewing Company – Fancy Lawn Mower Beer 3. Colner Hofbrau Fruh – Fruh Kolsch ABV: 4.4 – 5.2% IBUs: 18-30 Color: 3.5 - 5 Serving Temp: 40-45F Serving Pressure: 10-12 PSI Beer Representation: The Brewer of Seville Kolsch and the Gang 5.1% ABV 27 IBUs Beer Description: Fermented low (63F) and under pressure this beer produces a slight breadiness which blends nicely with the floral notes from the Hallertau Mittelfruh hops. At the end the beer dries out slowly to produce a nice crushable summer time lawn mower beer. Beer Representation: Tree House Brewing - Outlier ABV: 4.3% IBUs: N/A Beer Description: Outlier is a Kolsch-style ale brewed to be eminently drinkable yet loaded with nuance, character, and individuality. It pours a glowing translucent yellow color in the glass with a puffy head that sticks around while you enjoy it. This week I sat down with Doug Reynolds at Uniontown Brewing in Ashland, Ohio. Doug has been on the show a couple of times before, but the last time we sat down in the tap room was November of 2020. In this episode Bob and I head back to Germany to drink one of our favorite styles, the Schwarzbier. Sometimes called black lagers (the name literally means black beer), they may remind some of German-style dunkels, but Schwarzbiers are drier, darker and more roast-oriented. These very dark brown to black beers have a surprisingly pale-colored foam head (not excessively brown) with good cling quality. This week I sat down with Eric Kuebler and Rob Weaver from The Laird Arcade Brewery. The Laird Arcade Brewery or LAB is located in an arcade built sometime in the mid 1800's in downtown Tiffin, Ohio. Tiffin is a college town that is the host to both Heidelberg College and Tiffin University. The LAB opened in 2018 as the first Tiffin Brewery post Prohibition. Not only is the LAB making some great beer they are at the forefront of the downtown revitalization of Tiffin. In 2021 Tiffin adopted a DORA program and as every other city that has done the same they have noticed an increase in business. In this episode Bob and I stick with lagers, but instead of Germany or the U.S. this time we head to the Czech Republic, and tackle the Czech Pale Lager. The Czech Pale Lager is a hoppy, session-strength pale lager that is among the most popular styles of beer among drinkers in the Czech Republic. The guidelines give us something of a mish-mash of guidance, though. The beer should be "rich" and "refreshing," which can be a tough needle to thread, though not impossible. Style examples: 1. This week I sat down with Mark Burke, Dave Jones, and Zach Osborne from Arrogant Goat Brewing in Bucyrus, Ohio. The guys told me how they were inspired to open a brewery by drinking a craft beer while attending a parade. The rest as they say, is history. All three guys take part in brewing and running the tap room. While the tap room is open two days a week, they have a steady flow of clientele. We talked about the process of opening, and how at times things seemed to grind to a halt thanks to 2020. In the end they just celebrated their 1st year anniversary, and they are having a blast. This week Bob and I wrap up our lager kick for now as we discuss the German Pilsner. Quite possibly the most iconic beer style in modern history, the pilsner captured the attention of beer drinkers across the world and inspired a myriad of regional imitations. This lightly colored, exquisitely balanced lager remains one of the most loved beers to enjoy, and one of the most challenging for the brewer to create. Pilsner is characteristically light in color and have a very short finish. The world over, pilsner -style lagers have become the standard beer for many reasons, and American craft brewers have worked hard to put their own unique spin on this classic German beer. A classic German-style pilsner is straw to pale in color with a malty sweetness that can be perceived in aroma and flavor. Perception of hop bitterness is medium to high. Noble-type hop aroma and flavor are moderate and quite obvious. Distinctly different from the Bohemian-style pilsner, this style is lighter in color and body and has a lower perceived hop bitterness. ABV: 4.4 – 5.2% IBUs: 22-40 Color: 2-4 Serving Temp: For most lagers and pilsners, 38 degrees is ideally your low point. Anywhere up to the low-to-mid 40s is fair game. “[Pilsners] are more traditionally [served at] 38 degrees, and are probably best suited there. Serving Pressure: 11-16PSI Examples of this style: 1. Pauliner – Pils 2. Wooly Pig– Keller Pils 3. Lager Heads – Tacklebox Pilsner Drink representative selection of the week: Maize Valley German Style Pilsner 5.2% ABV and 30 IBU Beer as described by brewer: Brewed with pilsner malts from Dusseldorf Germany accompanied by a touch of carafoam and wheat malts for head retention and foam stability. The malt profile is light, clean and crisp with hints of breadiness while teetnang and perle hops lend a floral and citrusy hop character. This week I sat down with Carmone and Duncan Macfarlane from The Phoenix Brewing Company in Mansifeld, Ohio. They are no strangers to the show as Phoenix has appeared two other times in the past. During this visit we talked about some of the ways the brewery has changed over the past couple of years including the addition of the Spirit Room located on the second floor above the tap room. In this episode Bob and I talk about yet another great lager style beer. This week it is the American/International Amber lager. A widely available, sessionable craft beer style that showcases both malt and hops. Amber lagers are a medium-bodied lager with a toasty or caramel-like malt character. Hop bitterness can range from very low to medium-high. Brewers may use decoction mash and dry-hopping to achieve advanced flavors. Style examples: Examples of this style: 1. Rhinegeist Brewery – Antelope 2. Dos Equis – Amber 3. Terrestrial Brewing - Erie Dusk ABV: 4.5-6.0% IBUs: 8-25 Color: 6-14 Serving Temp: For darker lagers, like Vienna-style, Oktoberfest or Marzen-style lagers, and amber lagers, you'll want to go slightly warmer, in the 45 to 50 range. Stronger lagers, like a dunkel or doppelbock, would do well at 50. Serving Pressure: 10-14 PSI Drink representative selection of the week: GLBC Eliot Ness Amber Lager 6.1% and 27 IBU.
