Standard-strength Porter and Stout styles such as American Porter, English Porter, Oatmeal Stout, Milk Stout, Irish Stout, and some American Stouts feature roasty flavors and aromas from the presence of roasted malts. These grains are roasted similar to how coffee beans and cacao beans get roasted, and take on many of the same flavor notes—coffee and chocolate are two common flavor descriptors for these beer styles.Beers in these styles tend to cast a wide net when paired with chocolate and can work solidly with a wide range of chocolates, making them good to have on hand for impromptu pairings. The trick here is transcending the good pairings to find the great ones. The versatility of beers in these Porter and Stout styles make them good choices if you're hosting friends for an in-home beer and chocolate pairing. If you don't have specific courses planned, one of these styles will work with a number of different bars and allow your guests to find some easy combinations. In this bonus episode, David Nilsen explains which types of craft chocolate to seek out and which to avoid when pairing with standard-strength Porters and Stouts. You can read more about Porter and Stout styles here. You can order my book Pairing Beer & Chocolate on the Bean to Barstool shop or on Amazon.Check out David's new book Pairing Beer & Chocolate: A Guide to Bringing the Flavors of Craft Beer and Craft Chocolate Together.Follow Bean to Barstool on social media!InstagramFacebookPinterestSign up for host David Nilsen's newsletter to get regular updates!

The day is finally here. We are putting Guinness and Murphy's Irish Stout head to head in a blind taste test. There has been a lot of talk about whether or not Guinness is merely a marketing engine that has pushed the other stouts out of the way, or if it really is the best beer in the world. Today we will find out.
The boys drink and review Pigweed's homebrew Irish Stout, then invite John Wayne Jew onto the show to speak about the month in woke (at about 4:00). The silliness of woke-ism is almost unbelievable. P&C and their special guest discuss some of the obvious lunacies, including the following. Some Canadian police recently encouraged residents to leave their car keys outside so thieves can steal cars without any violent confrontation. After the destruction of the Key bridge in Baltimore, some wokesters want a name chance, since Francis Scott Key doesn't meet modern moral standards. A Democratic representative says black should be exempt from taxation to make up for past injustices. NPR hired 50 new interns. Only 5 of them were white males. On the positive side, some companies are pulling back on DEI and other woke policies, but it's not clear if that's a significant trend.
While our main focus here at BAOS is craft breweries, chatting with the folks who take care of the ingredients is just as important. Colin Byrne of Le Labo, a yeast company based in Quebec, joined Cee and Nate to chat about all things yeast, the lineup of beers all used Le Labo yeast so it was great to compare and taste different beers side by side that use the same yeast, they touched on the differences between dry and liquid yeast, how house yeast comes about, how yeast is propagated and reused, the differences between yeast companies, and talked about his work with a new contract brewery in Montreal, Passenger. They crushed some killer beers with Le Labo yeast, including Passenger The Sea To Sky West Coast IPA, Siboire Discipline Non-Alcoholic IPA, Passenger Malinovka Czech Pils, Overflow Cross Walk Dry-Hopped Pale Ale, Breton Irish Stout, Kichesippi Sasquatch Schnitzel Vienna-style Lager, and Passenger The Fire Pine Porter. This was fascinating - cheers! BAOS Podcast Subscribe to the podcast on YouTube | Website | Theme tune: Cee - BrewHeads

This week I visited with Jeff and Shari Bailey at Auburn Acres Hop Farm in Auburn, Ohio. They started growing hops in a small section of their property for their home brews early on, and after 8 years they have grown it to 1 acre featuring hop varieties such as Triple Pearle, Vista, Chinook, and Triumph. During our sit down we talked about everything that is involved in running a hop farm including the prep work in the spring to post harvest. We also focused on their newly opened event space which is two barns joined together that date all the way back to the late 1800's. During the show we also got to sample some of the beer from local breweries that are using their hops. In recent years, there has been talk of a potential "National Divorce" in the United States, a separation of sorts that would see the country split into smaller, more ideologically homogenous regions. In Episode 51 of our podcast, John and Wes have a "kitchen table" conversation about the pros and cons of this idea. They touch on the controversial comments made by MTG, and explore the possibility of reconciliation in our country. Over a couple of drinks, including Powers Gold Label Irish Whiskey and Murphy's Irish Stout, they delve into the nuances of this complex issue. Their candid conversation is both thought-provoking and entertaining, and we invite you to join in on the discussion by sharing your thoughts in the comments.

This week as Bob and I continue our month of beers from the UK we take on the most famous category, well at least on St. Patrick's Day, the Dry Irish Stout. A beer that is often misunderstood and completely miscategorized by the novice beer drinker. Contrary to many people's beliefs this beer is not thick, chewy, and sweet. Instead the dry Irish stout presents a light to medium body and finishes very dry. So, grab a beer, sit back and enjoy our Hijinx as we unravel the amazing Dry Irish Stout. Style examples: 1. Murphy's Irish Stout 2. North Coast Brewing Old #38 Stout 3. Pizza Port Seaside Stout · ABV: 3.8-5.0% · IBUs: 25-45 · Color: 25-40 Our sample beer for the week: Guinness Draught 4.2% 45 IBU Beer as described by brewer: Swirling clouds tumble as the storm begins to calm. Settle. Breathe in the moment, then break through the smooth, light head to the bittersweet reward. Unmistakably GUINNESS, from the first velvet sip to the last, lingering drop. And every deep-dark satisfying mouthful in between. Pure beauty. Pure GUINNESS. Guinness Draught is sold in kegs, widget cans, and bottles. The ABV varies from 4.1 to 4.3%. Guinness Extra Cold is the exact same beer only served through a super cooler at 3.5 °C Support the show by doing your Amazon shopping through our affiliate link. P&C drink and review an Irish Stout from Nashville, then discuss five topics in five minutes each. * Self Love on Valentine's Day. What do you think of someone who sends her love to herself on Valentine's Day? P&C think that's ridiculous. Love is outwardly directed, not inwardly. * Brandon and the Chinese Balloons. Was this the most embarrassing thing for the U.S. in decades? We showed the whole world that we're indecisive and incompetent and that we overreact when we're caught with our pants down. A total embarrassment. * The non-binary soprano. Pigweed took the sprouts to an orchestral performance to expose them to some genuine art. The soprano was wonderful. But ... it was a they/them, and the program was full of all kinds of confusing gibberish. * Liberal tells. What words or phrases immediately tell you that someone is a liberal? Undocumented immigrant. Always talking about gender. Everything is explained by hate or bigotry. Safe spaces. Decolonization. Problematic. Personal pronouns. Dog whistles. Privilege. Racist. Sexist. Homophobe. Transphobe. Triggered. * Beer fasting. You think beer fasting means giving up beer. But P&C are traditionalists. They're going to give up everything except beer for a few days, to see what it was like for the Paulaner monks in the old days.

The boys drink and review O'Hara's Irish Stout, then celebrate March 17th. They do a quick review of Irish history, starting back in pre-history, through St. Patrick, the Vikings, Brian Boru and the English occupation, and up to modern times. They ask why is Ireland divided north and south, and wonder about the demise of the IRA. They also discuss the two spellings of whiskey, the potato famine, St. Patrick Day customs, Irish beer, and how much Irish blood Pigweed and Crowhill have in them.

Enjoy the classics at Ironshield Brewing We're bringing you one from our backyard this week! If you're a Georgia beer nerd you may know the name Glen Sprouse. If you don't know his name then you probably know some of his breweries. The old timers may recall Phoenix Brewing which opened in Atlanta at The Prado in 1996, slightly less older timers likely know 5 Seasons that took over the space in 2001. Sprouse was part of both of those ventures. He stepped away from brewing for a while before opening up Ironshield Brewing in Lawrenceville, GA. The brewery features classic European styles including Seven Sisters Munchner Lager, which was a staple on the taps at 5 Seasons. With the addition of Jason Carroll to the team some true Irish beers have hit the taps. Carroll came to America from Ireland where he brewed at Guinness's Open Gate Brewery, among others. In addition to their Ironshield brand the brewery also contract brews under Big Kettle Brewing and expects to brew 30,0000 barrels for their customers in 2022. Welcome back Lorelei Hefeweizen Ironshield offers several returning seasonals, like Lorelei Hefeweizen which returns this weekend. (Release party March 26th, 2022) We got a sneak preview of this one and it's one fine Hef. Next up is Warhammer Maibock in late May. We're all in for that one on the name alone. Although contract brewing is the largest part of the brewery's business right now they are working diligently to grow the Ironshield brand. If you're a fan of classic ales and lagers do yourself a favor and check them out.
In honor of St. Paddy's Day, Joe and Caroline explore some of the different styles of beer from Ireland. They also discuss a brief history of the holiday, how people celebrate and Joe off goes on a tangent about nitro beers and their significance to Ireland. Caroline continues to question the logic in Children's TV and Joe tells a dad joke of the week that will make you cringe (again). What We Are DrinkingConway's Irish AleGreat Lakes Brewing - Cleveland, OhioABV: 6.3%IBU: 25“A pint for Pa Conway! In this episode, Rum Guy Dave joins Josh for Irish beers which are not Guinness. Josh pours the O'hara'a Irish Stout from the nitro can and had a beer, cheese and leek soup. Dave opens the and has Wexford Irish Style Cream Ale from a nitro can with a Sheppards pie. These beers go really well with the conversation they have about pairings. I hope you enjoy.
Time to boil some potatoes and crack open a pint of your favorite Irish Stout in honor of St. Patrick's Day! In this episode, Scott tells the true story of the origin of the term "Boycott," and the guys discuss some successful and not so successful boycotts of the past. In this episode's New Slang segment, Steve explains the origins of "Bussin" and introduces us to not one, but two Tays (Scott adds a third Tay for good measure). Listen now to find out why the word "Bussin" could be considered taboo for hillbillies like Scott to use. Speaking of hillbillies, the second term in the St. Patty's Day episode is "Hillbilly." In this segment, Scott explains why he's had to update his favorite racial slur. But first the guys discuss eponyms, which is a term which comes from the name of a person, and try and decide what they would like their eponyms to be. Murphy's Law happens to the best of us including most musicians, but the Homespun Ceilidh Band turned a bunch of funny stories inspired by the Law into a fun song. Marc Gunn shares a story about another Murphy, Captain Black Jack Murphy, and how a Talk Like a Pirate Day accent led to a dreadful story of air pirates and hunting dragons. It's all on Pub Song & Stories #241. WHO'S PLAYING IN THE PUB TODAY Welcome to Pub Songs & Stories. Facebook Went down at the beginning of October. There was a whole Twitter hashtag about it. Yeah. In order to find out what happened, I had to go to Twitter. That served as a great reminder of the problem of social media. So many people rely on it for “news”. But the things you get off social media are not news. They are fake news and misinformation at best. Put aside bad algorithms. It is still detrimental for people to rely on it. Especially if you have a business like I do. I learned back in 2000 to not trust a third-party system. Mp3.com suffered similar problems. Ever since then, I have had my own mailing list and my own website. They are the places you go to find out about me in my music. And I think it's safe to say that's the case with every musician. So if you are not yet subscribed to my mailing list, please do so. Daphne shares a story about Murphy's Law and how that turned into a song. But she also shared a story with me, right after sending me the audio files that I could relate to. “since I know how you feel about cats, I should share this: Guillaume (alien disguised as a dilute-orange tabby) was pestering me the whole time I was recording this afternoon. Pawing my leg, trying to tell me he Needed Something Urgently -- with a short break in the middle to sulk ("Look upon your poor, despondent cat, and feel guilty!") Didn't want petting or scritching, didn't want to be picked up ... I saved & exported my work and came into the next room. He followed me and immediately started eating. He wasn't asking for more kibble -- there was plenty -- but he needed me to Be There before he'd eat. My last cat, Perrine, was even more like that -- she preferred that I not only be present, but eating, when she ate.” 9:24 - “Mrs. Murphy's Band” by Homespun Ceilidh Band from Homespun Ceilidh Band 13:54 - SUPPORT WHAT YOU LOVE If you enjoy these stories, then join Gunn Runners Club on Patreon. I really loved how the album came out. But the songs feel off-point from my music in general. That's probably because it was a concept album. It has a story. I was playing a character in that story. Even though the character was technically me, it just felt weird sometimes. The story of Pirates vs. Dragons was about me being shanghaied by Air Pirates led by Captain Black Jack Murphy. Capt Murphy was a character I created as part of the Renaissance Festival Podcast back in 2006 or 2007. I forget. It was Talk Like a Pirate Day. So I put on a brogue and created this pirate character and his ship the Irish Stout. The story of Murphy grew. So in 2010, I wanted a Steampunk-inspired album about me shanghaied by air pirates. I asked Rie Sheridan Rose to write the lyrics for this story. We fleshed it out in 2015 when I finally tackled the album Again, I love the story that came out of this project. The idea was that I was writing an album to praise Captain Black Jack Murphy, but my secret mission was to “save the dragons”. One of the songs to come out of this was “The Wreck of the Bold Irish Stout”. Again, Rie was writing with the idea that these songs were more sea shanties than anything. But I infuse my own music style. So many of the songs, including this one, came out not quite shanty-like. But it's a great story. If it was shorter, I might actually play it at shows. It tells the story of how dangerous it is to hunt dragons and the motivations behind some dragons. 16:14 - “The Wreck of the Bold Irish Stout” from Pirates vs. Dragons Pub Songs & Stories was produced by Marc Gunn. Cooper and Nolan are on a two-man quest for justice this week with MURPHY'S LAW, and they don't care how many 80s cop movie tropes they have to go through to get it! Thanks to the magic of Charles Bronson (and more of the incredible production value you've come to expect from the Cannon Films Group), what seemed like a paint-by-numbers cop thriller gave the guys a lot more than they expected - more genre-bending tonal shifts, more incredible one-liners, and more senior-citizen-aged action scenes than you can shake a crossbow at. Jack Murphy's law says don't miss this episode - featuring Murphy's Irish Stout!

This episode involves all things 'Stout'. Vike has brewed an 'Irish Stout' for us, which falls under the BJCP Category - '15B - Irish Stout'. (Who would've thought.) We not only get the privilege of tasting a bang on version of the style, we taste a bang on version of the style on nitro. We provide some tasting notes, critique his recipe, and provide feedback on how to modify the recipe to perfect the beer during 'Segment 1'. You'll find the recipe by following the link below. In 'Segment 2' we talk about 'Guinness', it's origins, and provide some interesting information on the beer company. We compare the homebrewed beer to it's commercial equivalent, and give the listener our thoughts on 'Guinness' by providing a 'CBB Review'. We finalise the show in 'Segment 3' by 'Getting to Know Mike'. We learn which beer was Mike's 'First Craft Beer'. We learn which beer is his 'Guilty Pleasure', as well as what his 'Desert Island Beer' is. We reveal last month's answers to 'BrewBusters', and we deliver the clues for another round of said game. Enjoy. We go over a ton of interesting stuff in this one. We talk about the history of the Murphy's brewery, why nitro beers are so popular, the many brewing innovations that Guinness introduced to the world, the difference between Great Britain and the UK, and who is the best Irish filmmaker. It's a solid episode, if I do say so myself.
In our very first episode of the MMB Podcast we give our thoughts of Child's Play (2019) and Brightburn and award the appropriate "mugs" to rate both films. We also introduce our standing segments such as "R&R" or Recommends and Regrets. This is where we let you in on what we've been watching lately (tv and film) and what we suggest you check-out, or stay away from. In each show we also cover some of the music we've been listening to recently and have added to the Movies Music and Beer playlist on Spotify. One of the songs we talk about is the new release from Tool. As musicians, our taste in music is quite diverse, so expect to be introduced to a wide range of music. Finally, we get into our beers of the week. Ryan and I both traveled recently and enjoyed some great brews, which we'll share with you. In this episode the ladies report back on a delicious Irish themed parfait they made for St. Patrick's day. Spoiler alert, it was delicious.
The beer scouts opted out on the artificial green beer this Saint Patrick’s Day and instead took a virtual trip to an Irish pub with another blind tasting of four unknown authentic Irish style brews! While trying to guess the provenance of our murky and mysterious pints, the beer scouts also discuss the politically incorrect history of beer icon Arthur Guinness, the difference between carbonation and nitrogenation in beer, and whether “nitrogenated” is even a word (news flash: Wiktionary says yes). Listen in to hear all that and more, and stop reading now if you want to keep the suspense before we reveal our mystery beers as we go! *SPOILER ALERT* Featuring: Guinness Draught Stout, Breckenridge Brewery’s Nitro Irish Stout, The Duck-Rabbit Milk Stout, and Murphy’s Irish Stout. This didn’t go unnoticed by police. In fact the police opened two major investigations to address the situation. The problem, neither investigation provided any answers. Until January, 2018 when the cases of Toronto’s missing men broke wide open.
