The Kernel (https://www.thekernelbrewery.com) founder Evan O'Riordain embodies a few interesting contrasts—he's an Irishman in London committed to shining a light on the city's own dark beer past, and he's a brewer in Britain who caught the craft bug after experiencing hop-forward beers in the United States—but it's this dynamic range that drives and defines Kernel today. History is important, yet no modern techniques or ingredients are off the table, as the beers they make respect and reference the past without dogmatically recreating them. There's no such thing as textual accuracy when ingredients have changed so much over the past 100 years. Every act of recreating an old recipe from original text is an act of interpretation, and what matters most now is connecting that past to where drinkers are today. This week was the last onsite interview in the history of Pint Talking and got to hang out with Paoloa Vabuena and John Hill from Pulpo Brewing Co. in Willoughby Ohio. Five years into cold IPA, the arguments still aren't settled, but one thing is certain—strategic brewers have embraced the style for the unique counterpoint it can provide to more ester-driven IPAs, and the focus on light body has struck a chord with beer drinkers who increasingly want strong hop notes in ever-paler beers. We thought it was time to revisit the subject with three brewers who are no stranger to the podcast, and who each have contributed to the evolution of the style in their own way. Sam Tierney of the Firestone Walker (https://www.firestonebeer.com) Propagator in Venice, California has helped develop some pioneering cold IPAs for the California brewery, like core brand Hopnosis. Jude La Rose of Chicago's Hop Butcher (http://www.hopbutcher.com) brews plenty of hazy IPAs, but continues to explore what hops can also do within the context of clear and light-bodied cold IPA. This week I visited Pompatus Brewing Company and sat down with the Joker of Love Steve Miller. Steve is the owner and brewer at Pompatus. This week I visited with Cory Smith from Twin Oast Brewing in Port Clinton, Ohio. It has been a couple years since I last visited with Cory and since then there have been several changes. They have added a 60BBL lagering tank to combine with their 30BBL tank. They have also put in a new biergarten which features pour your own beer faucets.The biggest news came in June of 2023 when Twin Oast aquired Catawba Island Brewing Company. This will eventually become a sour beer production facility, and fans of Hot Blonde don't need to worry as they will continue to brew that year round. This Friday and Saturday 9/29 and 9/30 Twin Oast will be hosting their annual Oastoberfest. You can buy tickets online through 9/26. After that you will need to purchase them at the door. They are $5 for Friday and $10 for Saturday. There will be plenty of entertainment as well as 19 breweries serving up their beer. If you have time you should definitely check it out. This week I visited with Jeff and Shari Bailey at Auburn Acres Hop Farm in Auburn, Ohio. They started growing hops in a small section of their property for their home brews early on, and after 8 years they have grown it to 1 acre featuring hop varieties such as Triple Pearle, Vista, Chinook, and Triumph. During our sit down we talked about everything that is involved in running a hop farm including the prep work in the spring to post harvest. We also focused on their newly opened event space which is two barns joined together that date all the way back to the late 1800's. During the show we also got to sample some of the beer from local breweries that are using their hops. Oktoberfestbier or Festbier is a German-style of low fermentation beer that is very similar to lagers in its blonde color but also in the fact that it is fermented at a cooler temperature than ales. In this episode Bob and I look at the Helles Bock. Also called “heller bock” (meaning “pale bock”), the German-style Maibock is paler in color and more hop-centric than traditional bock beers. This week I was in Newark, Ohio and I sat down with Heather and Josh Lange who own Dankhouse Brewing. Dankhouse has always been a favorite of mine as they specialize in Hazy IPAs and Sours. While sours aren't my jam anymore I do quite like theirs. During the show we talked about how Dankhouse was born from a homebrewing dream in a garage, and how Josh developed the business plan in his work van. The original plan was to own start craft beer bottle shop, but once a large chain grocery store put the kibosh to those plans the brewery quickly took flight. In the end we should all be glad that the bottle shop idea failed, and the brewery idea prevailed. This week I was in Columbia Station, Ohio visiting Ann Zofchak Red Wagon Brewing/Four Paws Brewing. Four Paws/Red Wagon is a fun place situated on a farm just north of Medina County. There is plenty of food options, a massive patio, and yes dogs are most certainly allowed on the patio. During the interview Ann talked about falling in love with brewing in the 90s and then taking a break for 10 years only to have the spark once again be re-ignited in the early 2010s. She brewed commercially off and on and got some really good on the job training collaborating with a number of local breweries. In this episode Bob and I take on an interesting category. We discsuss the American Brown Ale, which in theory looks like a version of the English brown, but jacked up on hops (allegedly). American brown ale with roasted malt, caramel-like and chocolate-like characters should be of medium intensity in both flavor and aroma for the American brown ale. American-style brown ales have evident low to medium hop flavor and aroma and medium to high hop bitterness. The history of this style dates back to U.S. homebrewers who were inspired by English-style brown ales and porters. It sits in flavor between those British styles and is more bitter than both. Examples of this style: 1. HiHo – Touchdown Brown 2. Treehouse – Bear 3. This week I was out west again in Toledo, Ohio. I got to spend some time with Alex and Ali Drosdowicz who are co-owners of Quenched and Tempered Brewing Company. Alex is the head brewer at Quenched and Tempered and Ali runs the marketing for the brewery as well as handling all the can art. They began brewing in 2019 in Grand Rapids, Ohio which is approximately 20 miles from Toledo. The tap room did not open until August of 2022, but Quenched and Tempered had already earned quite a following over the previous 3 years. Q&T has events almost every day that they are open. They recently celebrated becoming part of the ORA in Toledo, and on 8/11 they will begin the weekend celebration of their taproom's 1 year anniversary. Maumee Bay Brewing Company has a rich history as it is the oldest brewery in Toledo. Opened in 1995 MBBC is in a 19th century hotel filled with unique stories. The brewery has two different floors for serving, as well as an outdoor patio. There is also a restaurant located on the property and MBBC offers a full kitchen that services the brewery as well. The quest for more of the India pale ale flavor has led them to the imperial India pale ale, a stronger version of the American IPA, which boasts even more hoppy flavor, aroma and bitterness. Imperial India pale ale is darker in color than the American IPA, substantially more bitter, and high in alcohol by volume. This week I was down in Delaware, Ohio hanging with Frank Barickman who is the owner and head brewer at Restoration Brew Works. Frank and I discussed the brewery's opening in 2015, and how they survived through 2020. We also talked a lot about how breweries need to evolve in 2023 to remain successful. During the interview we drank some very tasty beers including a Pilsner featuring a new aged lager yeast that helps it finish out fast like an Ale while still maintaining a traditional lager taste. We also drank an award-winning Irish Red that they often use as a gateway beer for non-craft beer drinkers to convert them. At the end we drank a delicious Russian Imperial Stout from 2021. In this episode Bob and I stay on the IPA train, and turn our attention to the Hazy IPA. Emphasizing hop aroma and flavor without bracing bitterness, the New England IPA leans heavily on late and dry hopping techniques to deliver a bursting juicy, tropical hop experience. This week I celebrate my 100th episode with a visit to Cambridge, Ohio. This week's brewery visit was at Guernsey Brewhouse, and I got to sit down with Shawn Long who is the co-owner of Guernsey Brewhouse along with his wife Amy. We were also joined by Shawn's co-brewer Tony Wray. We talked about the history of Cambridge and its lack of brewing history. We discussed the challenge of being a rural brewery and the challenges of being discovered by brewery explorers. This led to Shawn making a very solid point that your regulars are the ones that sustains business due their reliability, which makes it very important to brew great beer that they want to drink. This week I sat down with Nick Sheets and Zack Cline at Henmick Farm & Brewery near Columbus, Ohio. Henmick is situated on 8 acres of the Sheets family farm in Delaware County. Henmick has a huge amount of outdoor space to accommodate some larger crowds that they often see come through the doors Thursday through Sunday. The beers at Henmick run the gamut. Their portfolio incudes lagers, IPAs, Belgian style beer, farmhouse Saison, to stouts. During the show Nick talked about how it has been a dream of his to own a brewery for over two decades. Finally in 2020 he quit his job in the corporate world to fulfill his dream.
