In this episode, we travel from Poland to the United States as we sit down with Jamie Bogner—co-founder and editorial director of Craft Beer & Brewing Magazine and host of the Craft Beer & Brewing Podcast. Jamie's journey into beer journalism is as fascinating as the industry itself. From his early days in media to helping shape one of the most influential beer publications in the U.S., he has witnessed the evolution of craft beer culture firsthand. We explore the impact of beer media, the rise of Polish craft brewing, and the latest trends shaping the industry—including the fine balance between tradition and innovation. But Jamie's story isn't just about beer. Having lived in New York City in 2001, he experienced 9/11 firsthand—a moment that not only shaped his life but also reinforced the power of community and resilience in the face of adversity. That same spirit of togetherness can be found in the beer world, where brewers and beer lovers rally around each other in tough times, whether facing economic challenges or global crises. And of course, no BierTalk episode is complete without a beer in hand! We sample some exceptional Polish brews, discuss the influence of beer media, and reflect on the role of storytelling in keeping beer culture alive.
No, there isn't a salmon run on the Susquehanna, but you CAN get really fresh (frozen) salmon in central PA! A couple episodes back, we talked about the five pound box of frozen haddock. This time, I talked to the people who actually catch sockeye salmon (and rockfish, and cod, and the big king salmon) up in Alaska, fillet and freeze them, and bring them back to us, wild-caught, and next best to fresh. I interviewed Captain Steve Kurian of Bloomsburg's Wild For Salmon and also talked to two other area fishermen, Captain Dan Brigham of Capt'n Dan's Wild Caught Alaskan Salmon, and Ron Rovansek of Bellefonte's Kodiak Rush. Bring your weather gear, this interview is like being out on the boat! What else? With a story like this, I had to cook some salmon! And I did, on my new soapstone insert for my Kamado Joe grill. It worked like a charm, and I cooked Wild For Salmon sockeye portions and fresh asparagus on it, and baked two local potatoes on the grill. Great meal! 'That's great,' I hear you say, 'But what about the drinks!' I sampled Elk Creek Cafe's new Valley Vista Cream Ale, and I also got in a plug for my friend John Holl's podcast This Week in Rauchbier, the world's most important podcast about smoked beer. Listen to it, I beseech you! Next episode? Got a lot of choices for a change -- got four interviews in the can, doing another one tomorrow night! -- but I think we're going to go with a food producer who's way back in the Pennsylvania Wilds. You've probably seen their stuff. See you again in two weeks! Until then? TELL YOUR FRIENDS ABOUT THE PODCAST! Seen Through A Glass is sponsored by the Happy Valley Adventure Bureau. Learn how Soundgrowler's beers draw inspiration from a variety of art forms, resulting in a blend of rare styles, death metal, and yoga. Head Brewer Jacob Hutcheson and Brewing Operations Manager John Halek showcase Soundgrowler's vibrant and eclectic brewery, where beer, doom, and tacos come alive in Tinley Park, Illinois. Jacob begins by sharing his passion for the Grodzinski, a rare Polish-style beer that won Soundgrowler a medal at the World Beer Cup — in addition to an even more coveted prize from Weyermann Malting Company out of Bamberg, Germany. He also explains the story behind the beer's name, “Good Familiars,” and the wide range of art forms from which he draws inspiration for his beers. Jacob and John then discuss some of the brewery's more unique features, such as its artwork and events like metal yoga. They also discuss death metal subculture, the variety of music they listen to, and how they inspire new beers. Plus: their mission to create an inclusive atmosphere, the challenges of crafting beers that satisfy both brewer and consumer, and what it was like to craft a beer in someone's memory. Here's something spooky for your Halloween night, two rauchbiers. We love smoked beers and rarely find ones that deliver out of Germany. We were able to find two excellent craft brewers that give us hope. Evil Twin Brewing The Anti-IPA Is Having a Moment is a rauchbier. At 5% it's a pretty representation of the style. Not quite the smoked sausage goodness of a German rauchbier but a very drinkable entry. Holy Goat Brewing Goatsmoker 2024 isn't a rauchbier but an smoked double stout with muscavado and demerara sugars. It promises dense smoke, candied bacon, rum, molasses and dark roasted coffee. That's a lot to promise from one beer that doesn't have any adjuncts. #beer #craftbeer #drinks #stout #imperialstout #rauchbier #smokedbeer

Chicago's Dovetail (https://dovetailbrewery.com) has earned a reputation for its refined yet flavorful lagers, but the team's dogged approach to traditional methods is less about religion and more about expression—these techniques and processes allow them to imbue their beers with attributes they want while minimizing those they want to avoid or keep in the background. Each beer they make is like a musical score—a recipe designed to hit the right notes with the orchestra of instruments they've assembled. Whether that's multiple decoctions, dropping temperatures in the coolship before adding whole-cone hops to a hop-forward lager, or how often they skim the open fermentors, they've considered the cumulative impact of each of the intermediate notes. In this episode, cofounder Hagen Dost, production manager Brittany Gedwill, and sales director Dan Modica outline their reverent and rigorous approach to making helles, pilsner, and Kölsch-style ale. Along the way, they also touch on: creating slushies with aged spontaneous beer defining parameters around “traditional methods” for lager brewing the benefits of direct-fire decoction coolshipping lagers with whole-cone hops for “harmony and cohesion” the varying impacts of step mashing, single decoction, and triple decoction with thick and thin mashes the necessity of sulfur and malt character in helles walking the fine line in timing of Kölsch fermentation brewing rauchbier with 95 percent smoked malt And more. Stefan did a really quick visit to the US and grabbed a few beers while he was there. We've featured Gotahold on the show before. This time we're checking out Off the Beaten Path. It's a Munich Dunkel with a 5.5% ABV. Smooth, malty and just endless drinkable, damn I wish we could get more over here. Soul & Spirits is a Memphis, TN brewery. They are new to us, but they did a rauchbier. You don't see many of those in the US, so this was a must try. We were not disappointed. Smoke Stack is a 5.7% ABV rauchbier but not the traditional style. You don't get the sausage flavor from German rauchbier. This is more smokey and balanced. You get the smoking but it tastes like natural smoke without falling into liquid smoke. It's a pretty great and makes us want to find more beers from this brewery. #beer #craftbeer #drinks #rauchbier #dunkel #smokedbeer #lager
Matthias Trum is the sixth-generation brewer at Bamberg's Heller-Trum Bräu—better known as Schlenkerla—and he is as obsessed with local history as he is with producing world-class smoked lagers via their old-fashioned methods. Bamberg has a long history of brewing, and Trum is a great student of that history—and his family has played an important role in it. In this episode, he immerses us in that story, discussing: old family brewing logs that detail strong beers as well as lower-strength ones made from second runnings the true story of rauchbier, and Schlenkerla's role in preserving its legacy details on Schlenkerla's own wood-fired malting process, and the old practice of using different types of wood the non-linear intensity of the smoky character in Schlenkerla's beers the importance of decoction to fermentation and flavor the flavor contribution of their direct-fire copper kettles the trick of balancing smoke and malt with evident hop bitterness experimenting with malts smoked by different woods and paired with different aroma hops balancing the non-smoked yet subtly smoky Helles Lagerbier how hyper-inflation led to the development of the Helles And more. If you've ever tried a Rauchbier, you know what we're talking about. It's the strong whiff of smoke that often gives us an impression of smoked bacon, and many other things. Where does the smoke come from? Is it made with an infusion of smoked bacon? Come, let's find out in this episode! If you love our podcast, please like, share, and subscribe. We appreciate your support. Also, follow us on Instagram @thebeersavages @abierguy and @thebeersnifter Cheers!

This series is dedicated to craft beer styles. During this series we will discuss all things from Stouts to Rauchbier, and everything in between. We will cover appearance, aroma, mouthfeel, taste, ingredients, proper serving temp, and the glassware that should be used for serving. We will do all of this while also interjecting our humorous opinions on the style. In this episode we discuss Sweet Stout. Entrenched in a snow storm that won't ever seem to end we learn something we already knew... this is not Bob's favorite style, but Kenny sure does enjoy it. Peanut butter... yes, lactose... yes, chocolate... yes. What else needs to be said other than sweet stouts aka pastry stouts are delicious. Earlier this week I was in Manchester, New Hampshire for the state's brewers guild conference and I had a chance to sample my way through a lot of what the state is currently producing. This was especially true during my conversation with Devin Bush of Wild Bloom Beer. He's the Head Brewer & Co-Founder - along with his wife Beth Ibitz = of the Littleton, NH brewery which recently opened a taproom with a focus on Saisons, Belgians, and Lagers. He's a graduate of the BrewLab at the University of Sunderland, has certification from the International Guild of Brewers and Distillers, and brewing for Bridge Road Brewers in Australia among other breweries across Europe and the US. He was also awarded the inaugural NH Brewer of the Year in 2020 and also serves on the NHBA Education Committee. What is clear from the conversation – where he opened several beers along the way – he has a passion for local ingredients – actual local ingredients. "I've known Jonathan Moxey since long before I was on the beer writing beat. We were in a group of beer enthusiasts that met in and around new York city at least 15 years ago. Moxey was a homebrewer at the time. He was more than that, of course, but I first knew him as a homebrewer and a damn good one at that. There would be parties and gatherings and bombers would be passed around and all of us, young ‘uns would talk about how beer could save the world – or at least make our worlds better. Strangely enough a lot of folks in that group have gone on to work in and around beer, including opening their own breweries. Moxey and his wife left New York for Missouri where he got a job at Schlafly, and then Perennial and now he's at Rockwell Beer Co. as the head brewer. He's making tasty beer with soul, and it's always a pleasure when I get a can. He's also an insightful and thoughtful guy. I saw him in person at the great American beer festival and over liters at Bierstadt Lagerhaus he got me thinking about beer in ways I hadn't in a long time. So Moxey is here this week to share some of those thoughts and to keep the interest in beer flowing."-John Holl This Episode is Sponsored By:Pro BrewerWe bring original articles to ProBrewer.com twice a week covering issues important to the beer industry and aimed at helping breweries of all sizes understand different facets of the business. "Over the summer I spent a delightful evening at Switchback, the venerable Vermont Brewery and got to talking with Gretchen Langfeldt over beers and during a tour of the brewery. At the time I was bummed that I didn't have my mobile recording kit with me. She's here this week via zoom for the show and I couldn't be happier. After graduating Notre Dame with an engineering degree she started working at Switchback one day a week and then eventually full time. Today she's the engineer and brand marketing leader for the brewery. We'll talk about engineering, and marketing, plus beer and employee ownership, and yes true believers we'll also get into Rauchbier. But I started off by asking about the physical building and the equipment inside. As you'll hear it's truly a special place worth many visits."-John HollThis Episode is Sponsored By:Pro BrewerWe bring original articles to ProBrewer.com twice a week covering issues important to the beer industry and aimed at helping breweries of all sizes understand different facets of the business. Did you miss us? It's been an... adventurous... couple of weeks. While driving down the interstate another car decided to see how fast they could go and I got in his way. After ping-ponging me off a couple of other cars, I walked away, but my trusty Ford Explorer did not. RIP. Brian was going to carry on, but then he got the flu and spent a week locked away from everyone. BUT, we're back and (mostly) good as new. Fireside Beer Chat Vol. 2 Smalls joined us in the studio this week along with our friend Earnest Hansley so we opened some beers and ran on about the hot topics in beer right now. I'm calling these episodes our Fireside Beer Chat. We have no fire, but it's there in spirit.GABF is underway in Denver and expects 40,000 attendees this year. It's a great event that every beer lover should attend at least once. Denver pulls out all the stops for the week and it's a great time all around. We talk seasonal creep that leads to Spooky Season, Thanksgiving sides, and Holiday beers and talk about how big we like our cans. And we argue about Rauchbier and American vs. English Barleywines. We had a good time and cover some burning topics. Enjoy. We're back from Bonn, but we still have some important things to discuss, namely how did all that Haribo taste. Simon might be putting off trying the cake flavoured Gummibärchen, but Nic has been glorying in the wide open spaces of novelty flavour country. Nic has also been to Bamberg recently, which gives us a chance to talk Rauchbier and whether one of Bavaria's most famous cities is really “the Venice of Germany”.Oktoberfest ended this week, and despite many expecting it to be the busiest for years, numbers were actually down, as were beer sales. More disturbingly were the numerous reports of inappropriate behaviour and sexual harassment directed towards women working in beer tents or stands throughout the Wiesn. We look at some of these reports and what it means for Bavaria's most famous festival. We travel back in time for the second part of our Bonn meetup, where Simon shares his experiences of being in Britain for the Queen's funeral, the chaos enveloping the British government, and why Britain has such a problem talking about its history. We finish the show with Simon's recollections of being thrown out the famous Heide Park Resort. For those of you looking to support Ukraine or the many refugees currently fleeing the conflict, please take a look at these different charities and consider donating if you can:Ukraine Crisis Media Centre - A list of different donation pages to help the Ukrainian military response.Disaster Emergency Committee - Ukraine Humanitarian Appeal Save the ChildrenÄrzte ohne GrenzenImage CreditPhoto by Itai Aarons on UnsplashTheme tune courtesy of Kloß mit Soß
