It goes much quicker as a pair! ** Equipment: 1 medium soup pot with lid (to cook meatballs) 1 medium soup pot (for sauce) Meatball Ingredients: 1 LB Ground beef ½ LB Ground pork ¾ cup fine dry breadcrumbs 1 TBLS. Minced Parsley 1 ½ tsp. salt 1/8 tsp. pepper 1 TBLS Worcestershire Sauce 1 egg ½ cup milk Gravy Ingredients: ¼ cup flour 1 tsp. paprika ½ tsp salt 1/8 tsp pepper 2 cups boiling water ¾ cups sour cream Meatballs: In a large bowl combine: ground beef, ground pork In a small bowl mix egg, Worcestershire sauce, milk salt, and pepper. Add egg mixture to beef and pork and combine. Add breadcrumbs and parsley. Mix thoroughly until all ingredients are incorporated evenly. Shape into balls the size of a large walnut. Brown meatballs in a ¼ cup of hot oil on medium heat for approximately 10 minutes. Turning periodically to brown evenly. Gravy: Once all meatballs are cooked thoroughly, remove meatballs and stir into fat, flour, paprika, salt, and pepper. Stir in 2 cups of boiling water. Continue stirring on medium heat until the mixture develops into a gravy consistency. Stir in sour cream. Return meat to the gravy. Cook for 15 -20 minutes. Serve alone or over pasta or mashed potatoes. I am somewhat sympatico with him, although I'm not a poet, because I wrote all the obits on Oregon Music News for the first eight or nine years of our existence. Why did he do it? Thanks for listening to Marti’s Music Kitchen. http://TheBylines.com http://MartiMendenhall.com Spaghetti with Thyme-Chile Celeriac Puree Recipe From SeriousEats.com Ingredients • 1 pound spaghetti • 1 tablespoon olive oil • 1 large celeriac, peeled and diced into 1/2-inch cubes • 1 tablespoon fresh thyme leaves • 2 cloves garlic, peeled and minced • 1/2 fresh red chile, minced, or a crushed red pepper flakes to taste • 2 tablespoons unsalted butter • 1/2 teaspoon minced fresh parsley, for garnish • Grated Parmesan cheese, to taste Directions Heat the olive oil in a large (12-inch) skillet over medium heat until shimmering, then add the celeriac along with a pinch of salt and pepper. Cook until the celeriac has begun to color, then add the thyme leaves, garlic, and chile and continue to cook for another 3 to 4 minutes. Add about 1/2 cup of hot water to the skillet, cover, and turn the heat to low. Simmer until the celeriac is tender, about 20 minutes, adding more water if the pan gets completely dry. Once tender, mash the celeriac with a potato masher or wooden spoon to create a rustic puree. Season to taste with salt and pepper. In the meantime, bring a large pot of salty water to boil. Cook the pasta until a minute away from al dente. Reserve 1 cup of pasta water before draining, then add the noodles to the puree along with some of the pasta cooking water. Cook on low, adding pasta water as needed, until the pasta is al dente. Finish with the butter to create a silky sauce, then serve with fresh parsley and Parmesan. Tom says the cheaper the better, because it’s not as filtered! In a large pot, cover beans with water, or alternatively use the sauce you soaked them in overnight as part of the liquid. Add chopped onions, bell pepper, ham hock and garlic. Cook on low for 5 hours. Stir about once per hour, adding hot sauce to taste as you go. Prep and serve over rice. Any kind of rice will do! Tom’s Tips: • Invite guests to arrive about an hour before the dish is done. • The cheaper the wine, the better. Can use cheap beer as a sub. • Don’t invite your girlfriend over to watch an episode of a freaky food show you produced if you want a girlfriend after she has watched the show! She’s such an institution around here that they named the best vocalist Muddy Award after her because she won it so much.
June 1, 2017 Back in the coffeeshop with an old friend, right here at World Cup Coffee and Tea at NW 18th & Glisan for another OMN Coffeeshop Conversation. His band, The Wailing Wind has been around for seems like ten years. Time flies. I wrote this in 2011 and it's still true: Remember when there was "Rock?" I mean the Rock that defined the late 60's and early 70's. Countrified Rock, Hippie Rock (I do not use the word Hippie pejoratively). The kind of Rock that found it's commercial success with the Eagles, the Byrds, the Flying Burrito Brothers, the Allman Brothers and a lot of others. If that is your speed, Ron is for you. But it's not retro in any respect, it's what he loves. There's a dash of L.A., a bit of Texas. It's guys like Ron that keep this music alive. For them and millions of other it never died, it only got pigeon-holed and held prisoner by Classic Rock radio stations. Ron Rogers and the Wailing Wind keep the roots and the Rock fresh and, well wailing. Born in Ft. Worth, the cool part of the north hill country in the middle of Texas, Ron Rogers worked in the music industry in both LA and Austin. As more proof of the talent crush and fascination between the two big indie towns, Portland and Austin, he now lives here. He's been around the block during his long career in the music industry. There were stints as a songwriter for Island Records, and he fronted an Austin band named Ron Rogers and the White Slave Boys. He added a career as an artist after he moved to Portland. Rogers' icon-on-wood artwork can been seen in the living rooms of some famous Portland music industry characters as he paints features the faces of jazz and blues musicians no longer with us.

She’s a sharp cookie, and anyone who has ever known her can attest to that. They’ll be handling the tickets for the upcoming Waterfront Blues Festival again this year. Joining me today is journalist Cervante Pope. You may recognize her from the pages of Oregon Music News which is where she got her start in Portland. These days, however she is also the editor of The Deli, a music webmagazine, a full-time reporter for the Portland Observer, as well as writing for music magazines The Owl, mixdown and free-lancing for the Mercury and Willamette Week. How did she get t.here? How did she get to Portland from her native California? And a big question, “What does she have to do in order keep writing in her own special voice while keeping editors happy?’ That’s something she learned a lot about at OMN.

With me today is composer and bassist Damian Erskine, possibly the most versatile bass player in a city of truly great bass player. He’s a Jazz artist, he plays in a funk band, he plays with rock star Gino Vannelli…I could go on. He has a signature sound that when you hear it, you know it’s got to be Damian and no other.

You have seen his work in Oregon Music News pretty much since we started in 2009. He’s not only a music photojournalist, having come back recently from covering the Syrian refugee tragedy on the Isle of Lesbos. You have seen his photos of Storm Large. Everyone has. He has probably taken more shots of Storm than anyone else on earth. You’ve also probably seen him shooting photos at a concert you have attended. He did all this while maintaining a parallel career as a cardiologist. It’s fun to let you meet our OMN family once in a while.
December 17, 2014 I met Art Levine when he was on summer break from Johns Hopkins University. We were roommates in 1970 in the two floor apartment leased by the Baltimore Underground paper of record, HARRY. I was a gritty city hippie with hair down to my ass and crabs and he was....he had an air conditioner. Nevertheless we became friends and remain so today. He became one of the top investigative reporters in America, still a Contributing Editor to the Washington Monthly. He is also a life-long music journalist and has contributed many splendid pieces to Oregon Music News. He was on Skype from Washington, D.C. and I was in the cupping room of Word Cup Coffee and Tea at NW 18th and Glisan in Portland, which is where do these things. His new book (2017) is called "Mental Health, Inc.: How Corruption, Lax Oversight, and Failed Reforms Endanger Our Most Vulnerable Citizens," which we did not discuss when this was recorded.
