Recipes I'm making in class today: Beef & Veggie Stew Crockpot | 4–6 servings 1.5 lbs stew beef 2 cups baby potatoes, halved 2 cups carrots 2 cups celery 2 cups beef broth 1 tbsp olive oil 1 tbsp Worcestershire sauce 1 tsp garlic powder 1 tsp salt ½ tsp black pepper 1 tsp dried thyme Directions: Add all ingredients to the Crockpot. Cook on LOW 7–8 hours or HIGH 4–5 hours. Chicken Sausage Sheet Pan 400°F | 4–5 servings 3–4 chicken sausages, sliced 1 bag frozen cubed sweet potatoes 2 cups frozen peppers & onions Drizzle of avocado oil 1½ tsp Italian seasoning 1 tsp garlic powder 1 tsp salt ½ tsp black pepper ½ tsp smoked paprika Directions: Toss everything on a sheet pan. Roast at 400°F for 30–35 minutes, flipping at the 15-minute mark. Mediterranean Cottage Cheese Bowl No cook | 1 serving 1 cup cottage cheese 2 tbsp tzatziki, stirred in ¼ cup cherry tomatoes, quartered ¼ cucumber, chopped ¼ orange bell pepper, chopped Olives to taste 1 tbsp toasted pumpkin seeds Sea salt & black pepper to taste Directions: Mix tzatziki into cottage cheese. GB2RS News Sunday, the 31st of May 2026 The RSGB celebrates Volunteers' Week 2026 The RSGB Youth Committee has announced the YOTA Austria team The closure of BBC Long Wave Volunteers' Week 2026 begins tomorrow, Monday, the 1st of June. This national campaign is an opportunity for organisations like the RSGB to recognise the contribution and hard work of its volunteers. In celebration, the Society asked some of its volunteers why they chose to step forward. You'll be able to see their answers and view more in-depth profiles from tomorrow via rsgb.org/volunteers-week. The answers, along with a short video, will also be shared on the RSGB's social media channels throughout the week. If there is a volunteer you would like to thank, or you'd like to share your own volunteering story, please add a comment on the daily social media content that the RSGB will be posting. You can also see these profiles in the July edition of RadCom. Volunteers are at the heart of the work that the Society does, and on behalf of the RSGB Board, HQ and the amateur radio community, it would like to thank everyone who gives their time and expertise to support the RSGB across such a wide range of roles. The RSGB Youth Committee is delighted to announce the team for this year's Youngsters on the Air summer camp in Wagrain, Austria. Team leader Tom, M1TJM, will be joined by team members Filip, M7SZW and Milo, M9ILO. They will be going to the Austrian Alps at the end of July for a week of exciting activities and challenges designed to allow youth members to push their skills within amateur radio, while meeting other amateurs from across the world. The Youth Committee's hard work in promoting amateur radio to young people has seen great success, with applications increasing by 200%. All the applications received were outstanding, and the Committee was blown away by the calibre of enthusiastic youth members of amateur radio. Tom, Filip and Milo impressed them with their variety of interests and clear dedication to the hobby and promoting amateur radio. The RSGB looks forward to hearing what they get up to in Austria this summer! This year's camp is being organised by ÖVSV, the Austrian Amateur Radio Society, and the IARU Region 1 Youth Committee. You can read more about the camp and the team at rsgb.org/yota-camp The BBC has announced that its Long Wave service on 198kHz, currently transmitting BBC Radio 4, will close on the 27th of June 2026 at 1 am BST. The Long Wave transmitters at Droitwich in Worcestershire, Westerglen near Stirling, and Burghead overlooking the Moray Firth will be closed that day. The RSGB and the BBC Amateur Radio Group will be marking this occasion on the air and are looking for volunteers to activate a special callsign in the week leading up to and including the day of the closure. In addition, three radio clubs have volunteered to activate special callsigns to celebrate the almost-92 years of these historic transmitters on the day that they are finally turned off. You can find more information on the RSGB website at rsgb.org/longwave-transmitters The weekend of the 13th and 14th of June is 1940s weekend at Bletchley Park. The RSGB National Radio Centre will be open to visitors and is supporting the occasion by hosting the special event station GB1SOE using CW on 40m. Remember that RSGB Members can gain free access to the Bletchley Park museum by downloading and printing the entry voucher via rsgb.org/bpvoucher The May 2026 issue of RadCom Basics is now available in the RSGB mobile and web app for members to enjoy. RadCom Basics is aimed at newcomers to amateur radio and those who enjoy refreshing their skills and knowledge. Now the radio propagation report, compiled by G0KYA, G3YLA and G4BAO on Thursday the 28th of May 2026 What a difference a week can make! Last week, we reported that the solar flux index was down in the 100s, but that it looked like there were spots coming around the Sun. This week, they've arrived, pushing the solar flux index up to 142 on Thursday, the 28th. But with sunspots comes the risk of solar flares and coronal mass ejections, or CMEs, so don't get too comfy! So far, we have only seen minor C-class flares, so keep your fingers crossed. Upper HF activity has been split between F2-layer propagation and Sporadic-E. As always, there seems to be more activity on FT8 than CW or SSB. However, it is also worth keeping an eye on the 10m band beacons, which often spring out of the noise. DX to be worked this week includes 5Z4/MM0ZBH in Kenya; 3G0Z and XR0Z on the Juan Fernández Islands; ZL7IO from the Chatham Islands; CP7DX in Bolivia, and VJ2L on Lord Howe Island. More details can be found at dx-world.net Next week, NOAA predicts the solar flux index will remain in the 140 to 150 range, with generally calm geomagnetic conditions and an estimated Kp index of 2. There may be a brief excursion to 4 around Thursday, the 4th of June, but it is predicted to return to 2 the next day. As we mentioned earlier, with up to ten sunspot groups visible on the Sun's surface, anything could happen, so keep an eye on solarham.net  for news of solar flares and CMEs. Otherwise, enjoy the good HF conditions while they last. And now the VHF and up propagation news from G3YLA and G4BAO. The lengthy spell of heat is releasing its grip, and we are now seeing the start of a change to unsettled weather driven by Atlantic weather systems crossing the country. It can often take a while to properly reach the southeast, but there will be some rain there eventually. For most parts of the country, it will be a mix of occasional spells of rain or scattered heavy showers. Apart from transient ridges of high pressure in between the fronts, there is only a limited option for tropo, in favour of rain scatter for the coming week. The first week in June is often regarded as a prime period for Sporadic-E, and the return of unsettled weather means that there should be some jet stream activity to generate atmospheric gravity waves that provide the wind shear in the E region. There is also a lesser-known meteor shower to provide the fuel for Sporadic-E propagation. This is the Arietids, which is mainly a daytime shower. The solar conditions have provided a few recent minor enhancements of the Kp index between 1 and 4, but not enough to get excited about in a radio sense for aurora. EME now, and this is a week to check out your kit. Moon declination reaches its minimum tomorrow, the 1st of June. We also reach lunar apogee tomorrow. Conditions will improve after this period. 144MHz sky temperature is moderate to high all week, peaking at nearly 3,300 Kelvin on Tuesday. And that's all from the propagation team this week.

Ann's family were based in a rural community in Buckinghamshire, England, and times were hard. Ann learned straw plaiting (something Janet wasn't as successful with) and this brought the family a valuable income.However, plaiting was taught at an early age in specialist schools, and those who were good at it could earn sometimes twice as much as the men... and this seems to have been a problem! Grilled picanha steak, hash browns, café de Paris butter 4 x 175g picanha steaks Salt Remove steaks from fridge half an hour before cooking and season with seasalt. If cooking in a pan – place steaks fat side up over medium heat and cook until fat is rendered and golden. Flip and cook to your liking. Allow to rest. Keep the fat for the hash browns. Café de Paris butter 250g soft butter 1 teaspoon smoked paprika 1 tablespoon oil 1 shallot,finely chopped 2 cloves garlic, minced 1 teaspoon curry powder 2 anchovies, chopped 1 teaspoon capers 1 tablespoon ketchup 1 teaspoon English mustard 35ml Brandy 1 tablespoon Worcestershire sauce Handful parsley Cook the shallot and garlic in the oil until soft and golden. Cool and then blend with the butter and other ingredients to a smooth paste. Wrap in a sausage shape in cling and chill. Slice and serve on the steak. Any excess can be frozen. Hash browns 4 medium rooster potatoes 1 heaped tablespoon plain flour 1 egg Good pinch salt Oil for cookingBoil the potatoes for 10 minutes then drain and cool. Coarsely grate and mix in the flour, egg and salt. Add a little oil to the beef fat. Press the mixture into moulds and then cook for 2-3 minutes each side until golden.

A new trial is starting this summer, as part of the third phase of a programme to develop a vaccine for people against bird flu. 3000 volunteers are needed from the UK to take part, and 1000 in the USA. Researchers at the National Institute for Health and Care Research are hoping that poultry workers might take part.Fuel and fertiliser costs are soaring because of disruption caused by the war in the Middle East. That's having a big impact on farmers and it's also putting pressure on food prices as MPs on the Environment Food and Rural Affairs select committee have been hearing. They were told that food prices were 40% higher than before Covid and that the food supply chain needed urgent government support with fuel costs.All week we're hearing how farming is trying to cut down on the damaging emissions it can cause. One of the biggest growers in the Vale of Evesham in Worcestershire says it's making its crop-growing more environmentally friendly by developing a giant one hectare high-tech greenhouse. Best known for his work with peanuts, renowned agricultural scientist George Washington Carver had a lifelong passion for needlework. Park Ranger Curtis Gregory shares stories about Carver's interests in handwork and natural dyeing. Born in 1865 near Diamond, Missouri, George Washington Carver is one of the best known and most respected agricultural scientists in the history of the United States. Before his death in 1943, Carver “created 325 uses for peanuts, 108 applications for sweet potatoes and 75 products derived from pecans. Some of the products he created include chili sauce, meat tenderizer, instant coffee, shaving cream, and Worcestershire sauce,” according to the National Park Service website. Park Ranger Curtis Gregory stewards the scientist's legacy and shares stories of his life at the George Washington Carver National Monument, which is located at Carver's birthplace. Even in his most industrious decades, as Carver obtained a masters degree, taught at the Tuskegee Institute, and worked in a laboratory, he kept his hands busy with needlework. Any crafter today will relate to his recollection in a 1931 letter: “If I had leisure time from roaming the woods and fields, I put it in knitting, crocheting, and other forms of fancy work” (quoted in Kremer, Gary R., ed., George Washington Carver in His Own Words (Columbia, Missouri: University of Missouri Press, 1987), 128.) Carver used uncommon materials and foraged natural dyestuffs in his work, drawing on his childhood love of painting. He designed projects not only to express his own creativity but also to inspire poor tenant farmers and sharecroppers who wanted to improve their homes. Gregory describes a handsewn table mat fashioned from cotton stalks and botanically dyed, a treasured example of a man who saw value where others did not. Shepherd Pie Jackets with fennel and feta salad Shepherd Pie Jackets 4 large baker potatoes, scrubbed 250g lamb mince 1 tablespoon oil 1 onion, finely chopped 2 cloves garlic 1 stick celery, finely chopped 1 small tin chopped tomatoes 1 tablespoon tomato puree 250ml beef stock 1 tablespoon Worcestershire sauce 50ml milk 125g finely grated cheddar Bake the potatoes in a 180oc oven for about 45 minutes or until cooked through. Heat a pan until smoking hot and add the lamb mince. Cook until sealed off well. Drain off the fat and add the onion, garlic and celery to the pan and cook for about 10 minutes. Add the tomato puree, tomatoes, stock and Worcestershire sauce and simmer for 20 minutes. Check seasoning. Cut the potatoes in half while warm and scoop out the flesh. Mash the flesh with the milk and season to taste. Place the shells in a baking tray and spoon the mince. Spoon or pipe the potato on top and then sprinkle with the cheese. Bake in a 180oc oven for about 20 minutes or until golden and bubbling. Fennel and feta salad 1 tablespoon white balsamic vinegar ½ teaspoon Dijon mustard 75ml olive oil 1 teaspoon honey Salt and pepper to taste 1 bulb fennel 1 little gem lettuce 75g crumbled feta Whisk the vinegar, mustard and oil together with the honey and season to taste. Cut the fennel in half and remove the core. Slice as thinly as you can and toss into the dressing. Toss in the feta. Shred the lettuce and mix in.

Send a textWe're trying Boston Baked Beans this week on the podcast. This American classic is popular at backyard BBQs and potluck gatherings. This recipe starts with soaking northern navy beans, and then boiling them in water until they're softened. Meanwhile, the sauce is made with bacon, onions, ketchup, brown sugar, molasses, maple syrup, Worcestershire sauce, salt and pepper. After everything is combined, it goes in the oven for a slow bake (about 3.5 hours). You can modify the flavours to suit your palette. We actually felt these beans are far too sweet, and for our tastes, we'd reduce the amount of sugar. And maybe add a kick of spice. Ethan served us French Onion Pot Roast with Gruyere Mashed Potatoes!Ingredients:2-3 pounds Beef Chuck Roast4 teaspoons kosher salt½ teaspoon ground black pepper1 tablespoon olive oil6 yellow onions, thinly sliced6 garlic cloves, finely chopped6 sprigs fresh Thyme, stemmed and roughly chopped (1-½ teaspoons if using dry herbs)3 cups beef stock2 tablespoons Worcestershire sauceFor gravy: 3 tablespoons cornstarch mixed with 3 tablespoons cold waterInstructions:1. Season the roast with half of the salt and pepper2. Heat a large, heavy skillet over medium high heat. Once hot, add olive oil and chuck roast. Brown the roast for 4-5 minutes on both sides and add to a 6-quart crock pot.3. Add remaining ingredients through Worcestershire sauce to the crock pot.4. Select the LOW heat setting on the crock pot and cook 8-10 hours or until beef is tender5. Remove beef from pot and shred with a fork.6. Turn crock pot to high heat and mix in the corn starch slurry to thicken the sauce7. Amen. ***** RECIPES FROM RITA: BUFFALO WINGS Ingredients: Chicken8-10 or so chicken wings, drumettes and wingettes1/2 cup flour1/2 teaspoon sweet paprika1/4 teaspoon cayenne pepper powder3/4 teaspoon saltOil for frying – 2 cups or so, enough to cover wings Homemade hot sauceThe hot sauce is a “taste as you go” recipe, so do just that, adding more of any ingredient.2/3 cup hot pepper sauce8 tablespoons butterUp to 2 tablespoons clear vinegar – start with 11/4 teaspoon cayenne pepper powder1/8 teaspoon garlic powderSalt BONUS RECIPE: Homemade Blue cheese dip 1 cup real mayonnaise1/4 cup sour cream1/4 cup buttermilk3/4 cup blue cheese crumbles (6 oz)1 generous tablespoon minced garlic2 teaspoons minced green onionPepper to tastePalmful fresh minced parsley (opt)Few drops hot sauce (opt)GarnishCelery and carrot sticks Instructions: Chicken:Whisk together flour, paprika, cayenne and salt.Sprinkle over chicken wings in big bowl and toss to coat evenly. Coating won’t be real thick. Place on tray in single layer.Cover and refrigerate from 1 hour to several.Now fry the wings. Add a good inch of oil in a deep, heavy skillet. Heat to 375 degrees. (A cube of bread will fry in about 30 seconds, but a thermometer is more accurate).Fry wings in single layer 10 minutes or so, until they turn golden brown and crisp. Let drain on rack or paper towels. Hot sauce:Put hot sauce, butter, vinegar, Worcestershire, cayenne, and garlic powder in saucepan. Bring to a simmer, remove from heat and whisk until smooth. Taste for salt. Can be done ahead and reheated. Blue cheese dip:Just whisk everything together, then refrigerate an hour or up to a couple of days to let flavors meld. Extra blue cheese dip can be used on salads. Assembly:Put wings in big bowl and pour about half the sauce over. Toss to coat and add more hot sauce if you like. Pour extra sauce into small bowl for dipping. Add the onion and garlic, cooking until onion is translucent.Increase the heat to medium-high and add the ground meat to the skillet. Cook until browned.Stir in the Worcestershire sauce, thyme, pepper, and salt. Cook for another 2 minutes.Sprinkle flour over the meat and stir to combine. Pour in stock, stirring continuously until mixture thickens.Reduce heat to low and add peas, carrots, and potatoes. Simmer for about 10 minutes. Remove from heat and let it cool slightly.Roll out one sheet of the pastry and line a 9-inch pie dish with it. Trim any excess pastry.Pour the meat and vegetable mixture into the pie dish.Roll out the second sheet of pastry and place it over the filling. Trim and crimp the edges to seal the pie.Cut a few slits in the top pastry to allow steam to escape.Brush the top with beaten egg.Bake for 25-30 minutes or until the pastry is golden brown and crispy.Allow the pie to cool for a few minutes before slicing. Enjoy!Sparkling Cranberry Rosemary MocktailIngredients:2 cups unsweetened cranberry juice2 cups sparkling waterJuice two limes 2 rosemary sprigsFresh cranberries1–2 tablespoons honey or maple syrup Ice cubesInstructions:Fill glasses with ice cubes.In a pitcher, combine cranberry juice, sparkling water, and lime juice. Stir gently to mix.Stir in sweetener until dissolved.Lightly bruise rosemary by tapping sprigs with the back of a spoon to release their aroma. In today's poem, a young Geoffrey Hill is looking for a story to believe in. Happy reading.Known as one of the greatest poets of his generation writing in English, and one of the most important poets of the 20th century, Geoffrey Hill lived a life dedicated to poetry and scholarship, morality and faith. He was born in 1932 in Worcestershire, England to a working-class family. He attended Oxford University, where his work was first published by the U.S. poet Donald Hall. These poems later collected in For the Unfallen: Poems 1952-1958 marked an astonishing debut. In dense poems of gnarled syntax and astonishing rhetorical power, Hill planted the seeds of style and concern that he cultivated over his long career. Place a wire rack on top of the tray and spray the rack very lightly with cooking oil spray Pat dry chicken skins with paper towel and sprinkle them with kosher salt Place chicken skins in a single layer skin side down on your sprayed wire rack Place the tray in the oven and bake for 20 minutes, flipping the chicken skins to skin side up halfway through the cook.  NEW ORLEANS STYLE SHRIMP AND GRITS WITH CAVIAR Shrimp Ingredients 1 pound large or jumbo shrimp 16/20 size- peeled and deveined 2 tablespoons blackened seasoning (can be homemade or store brand like Zatarains Blackened Seasoning) 3 tablespoon unsalted butter 2 tablespoon extra-virgin olive oil ½ pound spicy pork smoked sausage - diced or sliced thin ½ red bell pepper - fine dice ½ green bell pepper - fine dice 1 small yellow onion - fine dice 3 cloves garlic - crushed or grated 1 cups low-sodium chicken stock 1 cup heavy cream 2 tablespoons Worcestershire sauce Salt and black pepper Cheesy Grits Ingredients 2 ½ cups filtered water 2 cups half and half 1 ½ teaspoons salt 1 teaspoon garlic powder 1 teaspoon onion powder ¼ - ½ teaspoon cayenne 1 cup old fashioned corn grits 8 ounces freshly grated sharp cheddar 3 ounces freshly grated smoked gouda (optional) 6 tablespoons cultured butter 2 tablespoons creme fraiche Salt and black pepper to taste Garnish Ingredients 1 oz tin caviar Chopped parsley Finely sliced spring onion Add water, half and half, salt, onion powder, garlic powder, and cayenne to a medium saucepan. Bring to a boil over medium-high heat.  Very slowly pour in the grits to the boiling liquid, stirring quickly as you pour. Lower the heat to medium-low, cover the pot and cook the grits for 25-30 minutes, stirring at least every 5 minutes for an even cook with no lumps. While grits are cooking, toss the shrimp with 1 tablespoon of blackened seasoning in a small mixing bowl and set them aside. Heat the oil and butter in a 10 or 12-inch skillet over medium-high heat.  Add the smoked sausage and cook for 3 to 5 minutes until browned. Add the peppers and onion and cook for 3 to 4 minutes until the vegetables soften. Add the garlic and cook for 30 seconds to a minute. Season the mixture with 1 tablespoon of blackened seasoning and add the chicken stock, scraping up any browned bits from the bottom of the pan and bring to a simmer.  Add the heavy cream and Worcestershire sauce, lower the heat a little and cook the sauce for 3 to 4 minutes until slightly thickened. Add the shrimp and cook until the shrimp are opaque and the sauce has reduced a bit. This should take about 5 to 7 minutes. Season the sauce with salt and cracked pepper to taste and remove the pan from the heat. Once the grits are thick and creamy, remove them from the heat and stir in cheese, creme fraiche and butter. Season the grits with more salt and cracked black pepper to taste. Serve shrimp and grits immediately by spooning grits, shrimp and sprinkling with parsley and a little spring onion then a generous amount of caviar on top.
