Send a textWe're trying Boston Baked Beans this week on the podcast. This American classic is popular at backyard BBQs and potluck gatherings. This recipe starts with soaking northern navy beans, and then boiling them in water until they're softened. Meanwhile, the sauce is made with bacon, onions, ketchup, brown sugar, molasses, maple syrup, Worcestershire sauce, salt and pepper. After everything is combined, it goes in the oven for a slow bake (about 3.5 hours). You can modify the flavours to suit your palette. We actually felt these beans are far too sweet, and for our tastes, we'd reduce the amount of sugar. And maybe add a kick of spice. For example, they drop the “c” in schedule and add an extra “i” to aluminium. No wonder, then, there is confusion over how to pronounce the name Worcestershire sauce, arguably the world's favorite condiment.

Ethan served us French Onion Pot Roast with Gruyere Mashed Potatoes!Ingredients:2-3 pounds Beef Chuck Roast4 teaspoons kosher salt½ teaspoon ground black pepper1 tablespoon olive oil6 yellow onions, thinly sliced6 garlic cloves, finely chopped6 sprigs fresh Thyme, stemmed and roughly chopped (1-½ teaspoons if using dry herbs)3 cups beef stock2 tablespoons Worcestershire sauceFor gravy: 3 tablespoons cornstarch mixed with 3 tablespoons cold waterInstructions:1. Season the roast with half of the salt and pepper2. Heat a large, heavy skillet over medium high heat. Once hot, add olive oil and chuck roast. Brown the roast for 4-5 minutes on both sides and add to a 6-quart crock pot.3. Add remaining ingredients through Worcestershire sauce to the crock pot.4. Select the LOW heat setting on the crock pot and cook 8-10 hours or until beef is tender5. Remove beef from pot and shred with a fork.6. Turn crock pot to high heat and mix in the corn starch slurry to thicken the sauce7. Crispy chicken arms with hot sauce Cook time: 2 minutes Prep time: 45 minutes Serves: 2 12 plump free range chicken wings 1 cup red wine 6 tbsp soy sauce 2 cups Panko crumbs 5 tbsp poppy seeds 5 tbsp sunflower oil 1 cup flour 3 eggs, beaten with 1 tbsp water Salt and black pepper Mike's hot sauce 1 tbsp sunflower oil ½ red onion, diced 2 cloves garlic, minced 1 tbsp tomato paste ½ tsp ground cumin 1 tbsp smoked paprika 400gm diced tomatoes ¼ cup water 4 tbsp soft brown sugar 3 tsp Worcestershire sauce 2 tsp Dijon mustard 1 tsp salt & white pepper 3 fresh red chili, chopped seeds and all Preheat oven to 180*C (fan-forced). Separate the wings at the first joint. Set aside the first joint of the wings for making stock. Place the remaining plump wings into a pot with wine and soy sauce. Add just enough water to cover the chicken. Bring to the boil, reduce heat and simmer for 5 minutes. Drain, then place chicken wings in fridge to cool. In a large bowl, mix together the Panko crumbs, poppy seeds, oil, salt and pepper. Place flour and eggwash in two other separate bowls. remove skin from chicken and pass through flour, then eggwash, then poppy crumb. Place on a baking tray and bake for 25 minutes. Serve with hot sauce Mike's hot sauce Heat oil in a saucepan over medium heat. Add onion and cook until soft. Add garlic and cook for one minute. Reduce heat, add tomato paste, cumin and smoked paprika and stir. Add all remaining ingredients. Stir until combined, and cook until slightly thickened (approx. 10 minutes). Amen. ***** RECIPES FROM RITA: BUFFALO WINGS Ingredients: Chicken8-10 or so chicken wings, drumettes and wingettes1/2 cup flour1/2 teaspoon sweet paprika1/4 teaspoon cayenne pepper powder3/4 teaspoon saltOil for frying – 2 cups or so, enough to cover wings Homemade hot sauceThe hot sauce is a “taste as you go” recipe, so do just that, adding more of any ingredient.2/3 cup hot pepper sauce8 tablespoons butterUp to 2 tablespoons clear vinegar – start with 11/4 teaspoon cayenne pepper powder1/8 teaspoon garlic powderSalt BONUS RECIPE: Homemade Blue cheese dip 1 cup real mayonnaise1/4 cup sour cream1/4 cup buttermilk3/4 cup blue cheese crumbles (6 oz)1 generous tablespoon minced garlic2 teaspoons minced green onionPepper to tastePalmful fresh minced parsley (opt)Few drops hot sauce (opt)GarnishCelery and carrot sticks Instructions: Chicken:Whisk together flour, paprika, cayenne and salt.Sprinkle over chicken wings in big bowl and toss to coat evenly. Coating won’t be real thick. Place on tray in single layer.Cover and refrigerate from 1 hour to several.Now fry the wings. Add a good inch of oil in a deep, heavy skillet. Heat to 375 degrees. (A cube of bread will fry in about 30 seconds, but a thermometer is more accurate).Fry wings in single layer 10 minutes or so, until they turn golden brown and crisp. Let drain on rack or paper towels. Hot sauce:Put hot sauce, butter, vinegar, Worcestershire, cayenne, and garlic powder in saucepan. Bring to a simmer, remove from heat and whisk until smooth. Taste for salt. Can be done ahead and reheated. Blue cheese dip:Just whisk everything together, then refrigerate an hour or up to a couple of days to let flavors meld. Extra blue cheese dip can be used on salads. Assembly:Put wings in big bowl and pour about half the sauce over. Toss to coat and add more hot sauce if you like. Pour extra sauce into small bowl for dipping. He was Lord Warden of the Stannaries from 1742 to 1751. Pitt was the grandson and namesake of the better known Thomas Pitt and the son of Robert Pitt, MP, of Boconnoc, near Lostwithiel in Cornwall. His mother was Harriet Villiers, daughter of Edward FitzGerald-Villiers and the Irish heiress Katherine FitzGerald. Thomas Pitt was the elder brother of William Pitt the Elder. He succeeded his father in 1727 to his estates, including Boconnoc.As head of the family, Pitt inherited both his grandfather's immense fortune and his parliamentary boroughs - he had the complete power to nominate both MPs at Old Sarum and one of the two at Okehampton, as well as considerable influence in at least two Cornish boroughs, Camelford and Grampound. He had himself elected Member of Parliament for Okehampton in 1727, the first election after he came of age, and represented the borough until 1754; but on a number of occasions he was also elected for Old Sarum, which meant that when he chose to sit for Okehampton the Old Sarum seat was free to offer at a by-election to somebody else who had failed to get into Parliament.Pitt was Assay master of the Stannaries from March 1738 to February 1742 and Lord Warden of the Stannaries from February 1742 to March 1751, when the Cornish Stannary Parliament met for the last time.Pitt was ambitious for political influence and, attaching himself to the retinue of Frederick, Prince of Wales, managed the general elections of 1741 and 1747 in Cornwall in the Prince's interests; but this involved massive expenditure - especially at the notoriously-corrupt Grampound, where he spent huge sums both on bribing the voters and on lawsuits attempting to deprive the most rapacious of their votes. By 1751 he had bankrupted himself, and the death that year of the Prince of Wales destroyed his hopes of securing influence or patronage for his efforts. He mortgaged his boroughs to the Treasury, allowing the government to name two MPs at Old Sarum and one at Okehampton in return for a pension of £1000 a year. After sitting briefly for Old Sarum in the 1754 Parliament, he resigned his seat and fled the country.Returning to England in 1761, however, Pitt persuaded the government to allow him to be once more elected for Old Sarum - a temporary measure, he promised, to prevent his being arrested for debt until he was able satisfy his creditors. (MPs were immune from civil arrest.) He promised to relinquish the seat at the earliest possible moment and allow the government to name his replacement in accordance with the original arrangement; but he died a few months later, still MP for Old Sarum.Pitt had married, c.1731, Christian, the daughter of Sir Thomas Lyttelton, 4th Baronet, M. P., of Hagley, Worcestershire and the sister of Lord Lyttelton. They had two sons and two daughters. He afterwards married, in 1761, Maria, the daughter of General Murray.Pitt died on 17 July 1761. Add the onion and garlic, cooking until onion is translucent.Increase the heat to medium-high and add the ground meat to the skillet. Cook until browned.Stir in the Worcestershire sauce, thyme, pepper, and salt. Cook for another 2 minutes.Sprinkle flour over the meat and stir to combine. Pour in stock, stirring continuously until mixture thickens.Reduce heat to low and add peas, carrots, and potatoes. Simmer for about 10 minutes. Remove from heat and let it cool slightly.Roll out one sheet of the pastry and line a 9-inch pie dish with it. Trim any excess pastry.Pour the meat and vegetable mixture into the pie dish.Roll out the second sheet of pastry and place it over the filling. Trim and crimp the edges to seal the pie.Cut a few slits in the top pastry to allow steam to escape.Brush the top with beaten egg.Bake for 25-30 minutes or until the pastry is golden brown and crispy.Allow the pie to cool for a few minutes before slicing. Enjoy!Sparkling Cranberry Rosemary MocktailIngredients:2 cups unsweetened cranberry juice2 cups sparkling waterJuice two limes 2 rosemary sprigsFresh cranberries1–2 tablespoons honey or maple syrup Ice cubesInstructions:Fill glasses with ice cubes.In a pitcher, combine cranberry juice, sparkling water, and lime juice. Stir gently to mix.Stir in sweetener until dissolved.Lightly bruise rosemary by tapping sprigs with the back of a spoon to release their aroma. I made a rich, zero-waste mushroom soup by dry-searing slices of one of three King Oyster Mushrooms. I sweat onions in a knob of algae butter a friend brought me from France with the thought that it would add to the earthyness of the soup and Yes Sirree indeed it did! Then I  crumbled a vegetable bouillon cube into processed mushrooms and onions, about two Tspoons of flour, white wine, tamari, and Worcestershire sauce and stirred gently occassionally over a medium flame. Small touches like a milk and flour slurry, a spoon of creme fraîche, and a splash of Marsala and sherry rum pepper sauce flavored the silky body soup in a very delectable comforting flavor without any heaviness.Please find the steps I used in a list format: • dry sear for roasted mushroom flavor• onion gently sweated in butter for sweetness• vegetable bouillon and wine for depth• tamari, Worcestershire, paprika for umami and warmth• optional milk slurry for light body• creme fraîche for tang and gloss• sherry pepper or marsala for a nutty lift• roasted mushroom garnish for texture• zero food packaging waste as a core value• toast from rescued bread as a thrifty pairingI  hope you'll be so inclined to give the episode a thumbs up, share it with friends, because we've gotta be disruptors.MINDFUL MEALS & SUSTAINABLE LIVING - The Art of Living an Elevated Lifestyle

The famed New Orleans Po' Boy is a sandwich to beat all sandwiches. It's messy, generous, and utterly delicious: a baguette stuffed with lettuce and fried prawns (or “shrimp”) and oysters, and with plenty of punchy mayo. Makes 2-4 Ingredients For the sauce, whisk the ingredients below until combined, taste and season to suit you. ¼ cup mayo 2 tbsps. thousand island dressing 1 tbsp hot sauce (or to taste) 1 tsp smoked paprika 1 tsp Worcestershire sauce 1 tsp horseradish (optional) Squeeze of lemon Get the below sorted before you start frying: 1 long soft baguette or 2–3 smaller rolls, split lengthwise Dressing as above for spreading Shredded lettuce Sliced tomatoes Pickles, sliced Fried seafood: 200g raw prawns, peeled and deveined 6 fresh oysters, drained ½ cup plain flour ½ cup fine cornmeal ½ tsp cayenne pepper (optional but good) ½ tsp each dried thyme & oregano ½ tsp sea salt + pinch of pepper Oil for frying (neutral oil like rice bran) Method Mix the flour, cornmeal, herbs and spices and salt in a shallow bowl. Pat the prawns and oysters dry – this helps them crisp beautifully. Toss them gently in the flour mixture until well coated. Heat about 1cm of oil in a frying pan over medium-high heat. Fry the prawns and oysters in batches so they don't crowd the pan. They only need 1–2 minutes per side – you want golden, not tough. Drain. To make the po' boys, split the baguette and butter generously with butter, mayo, or the sauce you've made. Add the lettuce, tomato, pickle and then pile in the prawns and oysters. Nous sommes en pleine Prohibition : l'alcool est interdit de l'autre côté de la frontière, et les Américains affluent dans cette ville mexicaine pour boire et faire la fête. Le patron du restaurant, Caesar Cardini, un chef italien au tempérament passionné, regarde sa cuisine dévalisée avec angoisse : les réserves sont presque vides, les clients s'impatientent. Il lui faut improviser.Cardini ouvre son garde-manger : il ne reste que quelques feuilles de laitue romaine, un peu de pain rassis, du parmesan, des œufs, de l'huile d'olive, de la sauce Worcestershire, du citron, et une gousse d'ail. Pas de quoi faire un grand plat… à moins d'un peu de génie. Alors, devant la salle comble, il saisit un grand saladier, pile l'ail, casse un œuf légèrement poché, ajoute le citron, la sauce, l'huile, puis jette la romaine et les croûtons. Il mélange avec énergie, sous les yeux amusés de ses clients. Le parfum d'ail et de citron se répand. Un silence curieux s'installe, puis les premières bouchées sont goûtées : c'est un succès immédiat.La salade César est née — non pas à Rome, ni même en Italie, mais dans un coin poussiéreux du Mexique, un soir d'improvisation. Le bouche-à-oreille fait le reste. Des stars hollywoodiennes en villégiature à Tijuana — Clark Gable, Jean Harlow, et d'autres — s'émerveillent de ce plat simple et élégant. An independent review of the way pigs are slaughtered has called for the use of carbon dioxide gassing to be prohibited, because it causes too much distress and pain to the animals. 90% of pigs reared in England and Wales are slaughtered this way. The report was carried out by the Animal Welfare Committee, an independent expert committee from the Department for Environment, Food and Rural Affairs, the Scottish government and the Welsh government. It recommends that argon gas should be used instead. We speak to vet Dr Jane Downes, who led the Animal Welfare Committee at the time the report was prepared. We also speak to the National Pig Association.All week we're looking at beer and cider. One of the biggest cider producers in the UK, producing 65 million litres every year, is Westons, based in Herefordshire. The business started in 1880, and now works with 180 apple growers and orchard owners in Gloucestershire, Worcestershire and Herefordshire – the heart of apple country. Happy reading.Known as one of the greatest poets of his generation writing in English, and one of the most important poets of the 20th century, Geoffrey Hill lived a life dedicated to poetry and scholarship, morality and faith. He was born in 1932 in Worcestershire, England to a working-class family. He attended Oxford University, where his work was first published by the U.S. poet Donald Hall. These poems later collected in For the Unfallen: Poems 1952-1958 marked an astonishing debut. In dense poems of gnarled syntax and astonishing rhetorical power, Hill planted the seeds of style and concern that he cultivated over his long career. John 9:1-12As [Jesus] walked along, he saw a man blind from birth. His disciples asked him, “Rabbi, who sinned, this man or his parents, that he was born blind?” Jesus answered, “Neither this man nor his parents sinned; he was born blind so that God's works might be revealed in him. We must work the works of him who sent me while it is day; night is coming when no one can work. As long as I am in the world, I am the light of the world.” When he had said this, he spat on the ground and made mud with the saliva and spread the mud on the man's eyes, saying to him, “Go, wash in the pool of Siloam” (which means Sent). Then he went and washed and came back able to see.The neighbors and those who had seen him before as a beggar began to ask, “Is this not the man who used to sit and beg?” Some were saying, “It is he.” Others were saying, “No, but it is someone like him.” He kept saying, “I am the man.” But they kept asking him, “Then how were your eyes opened?” He answered, “The man called Jesus made mud, spread it on my eyes, and said to me, ‘Go to Siloam and wash.' Then I went and washed and received my sight.” They said to him, “Where is he?” He said, “I do not know.” [I chose this morning's Gospel, not because I'm going to spend a lot of time unpacking it, directly, in response to today's question. I chose it – with the notion of Science and Scripture in mind – to simply show the gulf that exists between the life and times of Jesus in the First Century, and our own day and age. And how differently we are invited to understand Scripture because of that.The short of the long – and the obvious expression of this – is to see how the people around Jesus believed that that man's blindness was the result of divine judgment for his sins – or for the sins of his parents – and how he was cast-out and ostracized because of it. We know so much more than that now – and so did Jesus, it seems. Which is why his healing – and the point of the story – wasn't about a health problem or a physical defect.Just like those First Century onlookers, we want to pretend this story is about sickness or science, when really it's all about the forgiveness of sins and showing how wide and merciful God's love and forgiveness was, is, and can be, when we share it.]Anyway, shifting gears somewhat to today's question, which came through in a variety of ways from a variety of sources: Grace Notes, some conversations, the Men's Bible Study crew, and even a second-hand text from one of our college kids by way of his mother.I had tried to address it when we kicked off our last sermon series – the one from July, about Genesis, and the primeval mythology of its first 12 chapters. I threw out the phrase “LITERAL v. LITERATE,” and throughout that series Pastor Cogan and I tried to unpack the way those stories in Genesis (Creation, The Flood, The Fall, The Tower of Babel) speak to larger, universal, cosmic Truths, even if we aren't required to receive them as historically or scientifically accurate accounts.So, here is a list of the several questions we tried to summarize and roll up into today's single query:One was a series of non-sequiturs, asking about Creation in 7 days versus Evolution and the Big Bang Theory, dinosaurs, and how people add up the life-lengths and say that is the age of the earth, …etc.There was a reference to “Talking snakes,” the Nephilim, and the plural use of God in Genesis 3:22 – where God was apparently concerned that Adam and Eve would become like “one of us.”Did God actually walk in The Garden with Adam and Eve?How do you reconcile “time” in the Bible, including the ages of people? (Like how did Abraham live to be 175 years? Or Moses 120? Or Adam 930? Or Methuselah 969?)I don't want to be too simplistic, or to dismiss the thoughtfulness and concern over these kinds of questions. But I have to say that faithful people – especially rationally-thinking, scientifically-minded faithful people – have been making more of this than is necessary for far too long. It can be fun to do, don't get me wrong. And there may even be meaning to be found in some of it.But all of the math, numerology, guess-work and mental gymnastics it takes to “make sense of” what are often nothing more than literary devices or culturally particular context clues or plain-old hyperbole reminds me of the way Swifties dissect Taylor Swift's liner notes, album covers, wardrobe changes, or even the tchotchkes on the wall behind her during that interview with the Kelce brothers a couple of weeks ago. Again, it can be fun. And every once in a while you might find an Easter egg. But you don't have to go into those weeds in order to enjoy or find meaning in the music's big picture.The short of the long – where the Bible is concerned, is – we don't need to get into those weeds, do all of that math, or believe that Moses lived to be 120. Or that Methusela died at the ripe old age of 969. Or that Noah built a boat big enough to hold two of every creature on the planet, including the Tyrannosaurus Rex. Or that God jumped off of a cloud to walk with Adam and Eve.(For the record, even though I don't believe God left actual footprints in Eden, I did have a moment once at the cemetery in Lindsay, Ohio, where my maternal grandparents are buried, to the degree that I think I know what Genesis means when it says they heard the sound of God “walking in the garden at the time of the evening breeze.”)Nonetheless, we don't always have to connect all of those confusing, confounding impossible dots, either.To put it plainly, the Bible is not a science book – and it doesn't pretend or need to be. Every part of it isn't a history book, either – and it doesn't pretend or need to be. The Bible is a book of books – oral history, letters, poems, songs, stories, prophecies, and more, that never intended to be collected, assembled, and bound into a single tome. Humans did that. Male humans – with power and privilege – did that. And we should be wary of what male humans with power and privilege can do with things like science, history, and the stories of people. (That may be another sermon or another day.)But in spite of that … still … by the grace of God, the Bible is beautiful and points us toward God's love and plan for creation at every turn – or it should. And that is how I hope we are inclined and inspired to read, receive, and report what we find in God's word through the pages of Scripture.Now, bear with me, but another way I have explained this, is to tell the story of my dad's Caesar Salad. My dad makes a mean Caesar Salad. It's been a while since I've had it, but growing up it was a staple, whenever we had family or friends over for a nice dinner. The dressing is made with, among other things, a raw egg, Worcestershire sauce, a ton of garlic, lemon juice, and anchovy paste. And even though I can picture him whipping up this concoction a million times while I was growing up, I never really realized or thought about what I was eating, until I asked for the recipe, the first time I tried to impress Christa for a Valentine's Day dinner when we were just dating, 500 years ago, back in the 1900's.(See what I did there? That's the kind of hyperbole that makes a point, without needing to be historically accurate. Bible writers did that too.)Anyway, the problem was, my dad never used a recipe when he made his Caesar Salad, so his instructions, delivered by e-mail and then over the phone, were more than a little vague. There were no measuring cups or Table spoons involved. It was, “Use one egg or two depending how much lettuce you have.” It was, “Use a lot of garlic. You can't really use too much garlic.” It was, “Throw in a couple of splashes of Worcestershire sauce.” And it was, “Squeeze a line of anchovy paste into it, about the length of a couple of knuckles.”Actually, the clearest – and most meaningful – instruction I received that first time around, after giving him grief for how impossibly unclear he was, was when he said, “Mark, you know what it's supposed to look and taste like when it's finished. Just make it like that.”All of this is to say – again – in answer to the question about if and how we are able to square Science with Scripture – is that we don't have to.Martin Luther described the Bible as a cradle that merely, but meaningfully, bears the Christ child. And it is a liberating relief for me to say that we don't worship the words in a book, we worship the Word made flesh, in Jesus.We worship Jesus – and the unmitigated, radical, counter-cultural, uncomfortable love and grace he shares. The love of God in Jesus is to be the heart and soul and goal of whatever we're reading into and pulling out of Holy Scripture. We are reading the Bible faithfully – we square science and scripture (or we liberate ourselves from checking our brains at the door or from trying to cram square pegs into round holes) – when and only when, the crucified and risen Jesus, the loving and living God, is what we receive and share through our best interpretations and our most humble understandings of what we find in its pages.My dad suggested that I'd know it when I saw it, tasted it, presented it, and shared his version of a Caesar Salad with Christa. Throughout Holy Scripture we are invited to see a whole picture of God's love and grace, in Jesus. Some stories seem harsh and unforgiving. Some are packed with immeasurable grace. So many ancient tales just can't be reconciled with our modern understanding of how the world works.But when we toss them all together and when we turn them over in our minds with hearts set on God's larger story and finished product of love, mercy, forgiveness, and hope, these stories tell a story of grace for the whole wide world that can't be measured or made sense of, no matter how hard we try to do the math or crunch the numbers. It all only makes sense and measures up by grace, through faith – not because of the words in a book, but because of in the Word of love, made flesh, in Jesus Christ our Lord.Amen.

Place a wire rack on top of the tray and spray the rack very lightly with cooking oil spray Pat dry chicken skins with paper towel and sprinkle them with kosher salt Place chicken skins in a single layer skin side down on your sprayed wire rack Place the tray in the oven and bake for 20 minutes, flipping the chicken skins to skin side up halfway through the cook.  NEW ORLEANS STYLE SHRIMP AND GRITS WITH CAVIAR Shrimp Ingredients 1 pound large or jumbo shrimp 16/20 size- peeled and deveined 2 tablespoons blackened seasoning (can be homemade or store brand like Zatarains Blackened Seasoning) 3 tablespoon unsalted butter 2 tablespoon extra-virgin olive oil ½ pound spicy pork smoked sausage - diced or sliced thin ½ red bell pepper - fine dice ½ green bell pepper - fine dice 1 small yellow onion - fine dice 3 cloves garlic - crushed or grated 1 cups low-sodium chicken stock 1 cup heavy cream 2 tablespoons Worcestershire sauce Salt and black pepper Cheesy Grits Ingredients 2 ½ cups filtered water 2 cups half and half 1 ½ teaspoons salt 1 teaspoon garlic powder 1 teaspoon onion powder ¼ - ½ teaspoon cayenne 1 cup old fashioned corn grits 8 ounces freshly grated sharp cheddar 3 ounces freshly grated smoked gouda (optional) 6 tablespoons cultured butter 2 tablespoons creme fraiche Salt and black pepper to taste Garnish Ingredients 1 oz tin caviar Chopped parsley Finely sliced spring onion Add water, half and half, salt, onion powder, garlic powder, and cayenne to a medium saucepan. Bring to a boil over medium-high heat.  Very slowly pour in the grits to the boiling liquid, stirring quickly as you pour. Lower the heat to medium-low, cover the pot and cook the grits for 25-30 minutes, stirring at least every 5 minutes for an even cook with no lumps. While grits are cooking, toss the shrimp with 1 tablespoon of blackened seasoning in a small mixing bowl and set them aside. Heat the oil and butter in a 10 or 12-inch skillet over medium-high heat.  Add the smoked sausage and cook for 3 to 5 minutes until browned. Add the peppers and onion and cook for 3 to 4 minutes until the vegetables soften. Add the garlic and cook for 30 seconds to a minute. Season the mixture with 1 tablespoon of blackened seasoning and add the chicken stock, scraping up any browned bits from the bottom of the pan and bring to a simmer.  Add the heavy cream and Worcestershire sauce, lower the heat a little and cook the sauce for 3 to 4 minutes until slightly thickened. Add the shrimp and cook until the shrimp are opaque and the sauce has reduced a bit. This should take about 5 to 7 minutes. Season the sauce with salt and cracked pepper to taste and remove the pan from the heat. Once the grits are thick and creamy, remove them from the heat and stir in cheese, creme fraiche and butter. Season the grits with more salt and cracked black pepper to taste. Serve shrimp and grits immediately by spooning grits, shrimp and sprinkling with parsley and a little spring onion then a generous amount of caviar on top. Pimento Cheese: * 3 cups shredded extra-sharp cheddar cheese * 8 ounces cream cheese * ½ cup mayonnaise * 1 jar diced pimentos, drained * 1 jalapeno pepper, minced * ¼ tsp garlic powder * ¼ tsp cayenne pepper * ¼ tsp onion powder * Salt and pepper to taste 1. Mix all ingredients together until combined. Chicken: * 2 TBSP kosher salt * 1 tsp baking soda * 4 Cups Extra Sweet Tea * Skinless boneless chicken breasts * 1 ½ cups flour * ½ cup cornstarch * 2 tsp garlic powder * 1 tsp fresh cracked pepper * ¾ tsp cayenne pepper * Buttermilk * Brioche Buns * Heirloom tomatoes * Pickles 1. Mix sweet tea and baking soda. Add chicken to mixture, cover with lid and let sit for 1-12 hours before dredging and frying. After chicken has marinated, tenderize and flatten out. 2. Whisk flour, cornstarch, kosher salt, garlic powder, fresh cracked pepper, cayenne. Pour buttermilk into separate bowl. Dredge chicken back and forth between the two. 3. Heat air fryer to 380 and cook chicken for ~20 minutes, flipping halfway through. 4. Add chicken to buns, drizzle with white sauce, add heirloom tomatoes, pickles, and pimento cheese. Andouille sausage * 1 cup frozen okra, thawed * 8 oz can of petite diced tomatoes * 5 cups fish broth * ¼ dry white wine * 2 – 12 oz bottles of amber ale * ¾ cup celery, sliced on the bias 1/8” thick * 1 cup green bell pepper, diced * 1 cup sweet onion, diced * 3 Tbsp garlic * 2 large bay leaves * 4 sprigs fresh thyme * 2 TBSP Worcestershire sauce * 2 Tbsp Cajun seasoning * 1 ½ tsp kosher salt * ½ tsp pepper * Green parts of scallion * Parsley * 1 LBS Mussels Steps: 1. Preheat oven to 415 degrees. Evenly distribute flour on parchment paper and bake for 25 minutes. Flour will become a coca color and have a nutty smell. Set aside. 2. Add 2 TBSP of EVOO and stick of butter to pan on med-low heat. Add the flour slowly while quickly whisking to make a roux. Whisk in fish broth 1 slowly mixing very well until there are no flour lumps. 3. Add the ale, tomatoes (juices and all), Worcestershire, Cajun seasoning, salt, pepper, bay leaves, and thyme sprigs. Once this is brought to a boil, reduce heat and simmer for 45 minutes. 4. Heat 1 TBSP EVOO, once oil simmers add the sausage and brown on both sides. Add peppers, onions, celery, garlic, and okra. Sauté until vegetables become soft. Add shrimp and white wine then cover and sauté. 5. Steam or boil mussels. Then shuck and put the meat to the side 6. Remove bay leaves and thyme stems from gumbo base. Add shrimp and veggie mixture including any juices to gumbo base. Add crabmeat and mussel meat to the mixture and simmer for an additional 5 minutes. Cheddar Corn Biscuits: * 4 ¼ cups flour * 2 TBS baking powder * 1 tsp ground mustard * ¾ tsp salt * ¾ cup cold butter, cubed * 1 can cream-style corn * 1 ½ cups shredded cheddar cheese * 2 large eggs, lightly beaten * 2 TBS 2% milk Steps: 1. Preheat oven to 425 degrees. Whisk flour, baking powder, mustard, and salt. Cut in butter and mix until coarse crumbs form. Add corn, cheese and eggs. 2. Heat oven to 400°. 2. Cook sausage and onion in deep pan. 3. Add desired toppings to pan. 4. Pour sauce over toppings, the lay sliced cheese to cover. 5. Top with crust; drizzle olive oil and garlic butter over. 6. Cook for 35 min, until the dough is golden brown. 7. Take out of oven, allow to rest and set-- then flip and serve Garlic Knots: * 1 1/3 cups warm water * 2 ¼ tsp Platinum instant yeast * 1 TBS granulated sugar * 3 TBS olive oil * 1 tsp salt * ½ tsp garlic powder * 3 ½ cups flour * 5 TBS unsalted butter, melted * 3 garlic cloves, minced * 1 tsp Italian seasoning * ¼ tsp salt * ¼ cup grated parmesan cheese * 2 TBS chopped fresh parsley * Marinara Sauce Steps: 1. Whisk warm water, yeast and sugar; let sit and rest while covered for 5 min. 2. Add olive oil, salt, garlic powder, and half of the flour. 3. Mix; add remaining flour, then mix again. 4. Knead the dough on a floured surface. 5. Grease a large bowl with oil and place dough into bowl, turning it to cover all sides of the dough in the oil. Cover bowl and let sit for 1 hour to let rise. When dough is ready, punch it down to release the air. 6. Preheat oven to 400°. 7. Shape dough into knots and arrange on cooking sheets. 8. Let sit an additional 30 minutes before baking. 9. Melt butter then add garlic, Italian seasoning, and salt. 10. 10.Brush top of the knots with seasoned butter; bake for 20 min. 11. 11.Remove; brush with the remaining butter mix + sprinkle with parmesan cheese and parsley. Beer Cheese: * 4 TBS unsalted butter * 6 TBS flour * 1 ½ cups half and half * 1 1/3 cup Guinness * 2 tsp Worcestershire sauce * Good squeeze of Dijon mustard * 1 tsp garlic powder * ½ tsp smoked paprika * ½ tsp salt * 5 cups shredded sharp cheddar cheese Steps: 1. Melt butter in pan, then add in flour mixing well. 2. Slowly whisk in milk, whisk until it thickens slightly. 3. Whisk in remaining ingredients. Learn more about your ad choices.
