Ricotta salata cheese is made from sheep's milk and is similar to feta but with a creamier consistency. It is slightly sweet in flavor and makes a nice complement to the vegetables and beans in this colorful salad. When assembling this for serving, toss it gently. You want to maintain the shape of the individual components because together they are interesting and appealing.

Marilyn misses everyone and tells Michael Adolph to talk even more on tapes. Josh didn't want to talk at first but then tells MawMaw that he colored the walls and he's sorry. Josh has a big truck, big car and big chopper to go see MawMaw. Deron and Jason took a ride in the real helicopter that morning. Deron shares story about the helicopter ride and saw some natives. Camp Tu'an (sp?). Louis "D.D." gives some updates and says how he misses everyone and wished Uncle Bill Evans good luck on landing work in Texas. Deron slept over at Richard Chamberlain's house. They had fun at cub scouts and the Brooks. Mrs. Chamberlain is the leader in cub scouts. Back-to-back pushes. Deron's won most of the contests. Indian wrestles. Jason tells about the chopper ride in his own words. Talks to the cousins and tells them his story. Went to a camp. Got native friends Morio and Eddie. Morio gave him some sea shells and can hear the ocean. Gave him a bow and arrow and Jason walked down to the village with them. Went over bridge with no railings. Went alone with Morio. Miss everyone a lot and so does Deron. Refuted that his name is JayJay. Deron talks about the V - where the road turns towards the Mill. Deron shares that there was a lot of excitement where a native tried to kiss someone but some speculation whether or not it occurred. Thursday, August 12, 1976, 0700. Louis "D.D." talks about the nice weather and there was a fire. Asked MawMaw to check bank statements to see if they've deduction for place in Buras. Tell everyone hello including all his family. Supposed to get Sea Freight soon. Drizzling outside, went to the store, grilled cheese sandwiches. Two little boys McClaren started the fire. The kids were in the house... Left a candle downstairs - had told Deron the story. Boys weren't hurt though. Said some of the sisters weren't talking on the tapes anymore or writing. All she ever thinks about is eating. Saw The Fortune movie, not too good, disappointed. Fried chicken for supper and creamed potatoes. What about Wayne's (Scarabin) baby? Hadn't heard from Judy (Scarabin Willig) yet but D.D. had written to Roy. Working on her shawl and kids lost her needle. Supposed to borrow one from Patsy (Barras). Got only guords and such in her China cabinet... wishes she had something nice to put in it. Talks about emeralds and other stones. Wonders if they are still buying Deep River Eggs or not. Thanks MawMaw for buying tape player for Jason - $50. Asked about Deron's cub scout pictures. Explains how our house is green. Asks MawMaw to put all the pictures together so she can look at all of them when they return. Mentions a depression and tells them to tell Gremion (sp?) to telex. Josh napping. This month, we discuss books about music or musicians, one of the prompts on the Books and Bites Bingo Reading Challenge. From mixtapes to AI, music memoirs to YA novels, we share our thoughts on both music and books. Michael's PickMichael recommends The Storyteller: Tales of Life and Music by Dave Grohl. This memoir describes the passion that Grohl has had for music since he was a kid and goes into his punk-rock roots. He tells stories that are hilarious and heartfelt, from his days in Scream to the rise and fall of Nirvana and the formation of the Foo Fighters and everything in between.Pairing: KFC and champagne, a staple the Foo Fighters enjoy after special occasions.Carrie's PickCarrie enjoyed Don't Tell Anybody the Secrets I Told You by Grammy award-winning singer-songwriter Lucinda Williams. If you've ever aspired to make art, whether music, literature, or something else, you'll find her persistence inspiring.Pairing: Monday's Red Beans from Melissa M. There's also the House Gumbo which is a New Orleans staple combining braised chicken, andouille sausage, and heirloom rice into a dish we are curious to try.If you like a little extra spice, the Cajun Spice Half Chicken is one to try. The chicken is brushed with a house-made chicory BBQ sauce and served with baked macaroni and cheese and coleslaw. For sandwiches, there's the Muffuletta Sandwich has mortadella, salami, rosemary ham, cheddar, provolone and house-made olive relish on toasted New Orleans sesame seed bread. The Beef Po-boy Sandwich has slow-cooked beef coated with gravy and fully dressed with shredded lettuce, tomato and mayonnaise atop a toasted New Orleans French bread. Listener Questions and Answers Today's episode is a question and answer show, where we answer questions from listeners like you! Time Stamps for Today's Show 05:42 - What is your favorite, casual restaurant right now? Narrow it to the Garden District? 06:48 - I'm hoping to visit New Orleans during the Christmas season. Are Reveillon dinners only offered on Christmas Eve or is typically the entire month of December? 08:32 - My question is, what are some things you are your family do to cope with the brutal heat of the summer months? 12:08 - How do locals feel about all of their “hidden gems” not being so hidden anymore? 15:08 - Has there been any update on the opening of the Backstreet Cultural Museum? 17:17 - Which swamp tours do you recommend? 18:46 - There's always lots of chatter online about increased crime. What's it like on the ground - are people feeling anxious about this, or is it status quo? 25:34 - I think it would be interesting if you mentioned some of your favorite books (fiction and non-fiction) about New Orleans. Books that really capture the city. 35:11 - A buddy and I are considering riding in this year's Krewe of Boo Halloween parade. Wondering if you might have any helpful tips for first-time, out-of-town float riders? Also, any favorite costume shops you can recommend in or around the French Quarter? 38:31 - My husband and I will be returning with our son (9) in mid-October. Anything specific to that time of the year that is great for families that love to have fun? 41:55 - If you ever want to talk mirliton I'm happy to help. 42:33 - Have you interviewed Jalence Isles? She is the founder of Where Black NOLA Eats and a serious champion of black owned restaurants in the city. 45:40 - I am an alum of New Orleans Baptist Theological Seminary, and would love to know more about the Gentilly Neighborhood and how it have changed over the years. 47:01 - My daughter and I love New Orleans. She loves New Orleans so much that she is starting at Tulane as a freshman this year! She moves in August 15th. My husband has never been to New Orleans!! I'm looking for suggestions of things to do that will show him how awesome the city is - while simultaneously escaping the heat. 48:33 - What if you covered a topic that's been done, like Mardi Gras - but from a different perspective? Have someone on from a krewe, and they can explain what it's like, how to join (can we live out of state?), what it means to be a part of their krewe. Even a few different people from different krewes… 49:40 – What about someone like Mason Hereford from Turkey and the Wolf. His cookbook just came out (just and he recently competed on Iron Chef? Not just him but Isaac Toups too. They worked together for raising funds for Ukranian refugees. 51:33 - I think a great topic for a future show would be uniquely New Orleans charities and non-profits. Bridge House Grace House comes to mind and so many others would be great to highlight and celebrate. There is so much good being done in our city 53:04 - Perhaps you could interview someone from the Krewe of Red Beans about their community work. 53:54 - What are a couple food/drink, New Orleans History and Voodoo/Ghost tours you would recommend? 56:43 - I've heard that taking a ferry ride to Algiers and walking the bank is a good way to spend an hour or two seeing New Orleans from a different point of view, but I've also read that the ferry schedule can be inconsistent and somewhat unreliable to plan a day around. What are your thoughts? 58:53 - I am a big planner- planning is part of the fun for me, even if we don't stick to all my plans. Many others, however, believe the best way to enjoy a few days in New Orleans is to go light on the planning and just let the trip happen on its own. What are your thoughts? 1:02:57 - Have you interviewed Sam Malvaney? He lives in the FQ and his home is called the Museum of Bad Taste. 1:03:20 - How did you start your podcast and what has been the best and worst things about it that you didn't expect? 1:07:49 - Is there TV or local icons that are New Orleans Legends ? Such as kids show hosts or guys that did local tv variety shows or similar? Who are celebrities that claim New Orleans as home that might surprise us ? 1:13:52 What's the deal with BIG SHOT soda? Was a New Orleans based soda company with flavors including grape, pineapple, strawberry, black cherry, root beer, creme soda and more. Now owned by a national company 1:15:25 - Is there something happening in town that's causing businesses to close besides the current economy? 1:19:43 - Been a yearly visitor since Mardi Gras 1990. Just got your book this week. It's a definite thumbs up! 1:19:52 - Someone in here asked about the history of the fleur de Lis in New Orleans. French, Italian, Catholic, French Canadian? I'd love to hear an episode on that. 1:20:13 - How easy/hard is it to get into Kermit Ruffin's Mother-In-Law-Lounge? Is it safe to travel to and more importantly from?

Yesterday on Louisiana Considered, we heard about efforts to install backup generators in community centers and churches to provide electricity in New Orleans during natural disasters. But that's only one of a handful of recent campaigns to ensure the city maintains power during emergencies. After Hurricane Ida last year, Devin De Wulf, founder of the Krewe of Red Beans, had the idea to start a solar power recovery system for local New Orleans restaurants. He joins us today for an update on his grassroots project, Get Lit, Stay Lit. But first, The U.S. Fish and Wildlife Service recently stated that experts disagree on whether or not the Ivory-billed Woodpecker is still alive. Last year, the agency said they were planning to declare the bird with the 30-inch wingspan and high, nasal call extinct. But now they are now reopening the discussion and looking for new photo and video footage of the species.  Back in 2019, our then Coastal Reporter Travis Lux looked into the Ivory-billed Woodpecker in Louisiana. As residents keep their eyes peeled for evidence of the bird, we give this story a second listen.  Today's episode of Louisiana Considered was hosted by Karl Lengel. Our managing producer is Alana Schreiber and our digital editor is Katelyn Umholtz. Today's Locked On Saints breaks down the intricacies and large changes you'll see with Jameis Winston leading the New Orleans Saints offense. Will it be perfect? Probably not. But will it be exciting? Sure looks like it.Jameis Winston's role will be much different than Drew Brees's which affects the players around him. Erik McCoy making protection calls, Alvin Kamara perhaps more involved from the slot, and lots of play action, which asks more of the offensive line. Breaking it all down from a procedural vantage point to start the show. Then, looking at three major route concepts used in Sean Payton's offense and how they will look different not just with Jameis Winston but with Marquez Callaway, Tre'Quan Smith, and Deonte Harris. And soon with Michael Thomas. Then, host Ross Jackson closes out the show with a look at five storylines to watch before Week 1 against the Green Bay Packers. What will happen with Marshon Lattimore and Deonte Harris to start the season? Who will line up next to Demario Davis at linebacker? Will we get a look at a fully improved Jameis Winston? Five questions to we all seek the answers to as the Saints get ready for Week 1 NFL action.Follow Ross on Twitter @RossJacksonNOLAImportant Links and how to help those affected by Hurricane Ida.Imagine Water Works (Local): https://donorbox.org/idaUnited Way SELA (Donate local, not national): http://UnitedWaySELA.org/IdaReliefWorld Central Kitchen (National): https://wck.org/Krewe of Red Beans: https://feedthesecondline.org/donateSecond Harvest Food Bank: https://no-hunger.org(Via New Orleans.Football): NewOrleans.Football: http://support.no-hunger.org/site/TR/FoodampFundDrives/TeamRaiser?team_id=2200&pg=team&fr_id=1130Truest Relief Effort: https://www.thetruestadventure.com/truest-relief-effort/Join the Locked On Saints Survivor Pool: https://www.runyourpool.com/join/pool_info.cfm?id=167129&p=kiptauSupport Us By Supporting Our Sponsors!Built BarBuilt Bar is a protein bar that tastes like a candy bar. The New Orleans Saints could end up with the best of both worlds. A strong-armed and improved passer in Jameis Winston and an unlocked offensive weapon with Taysom Hill. If all goes well, these two can go from competitors to dynamic duo.Taysom Hill's run style is best suited for a catch and run role, his pass-catching acumen is best where Jameis Winston wants to throw, and his change of pace QB play could be more unpredictable. All in addition to his usual effectiveness as a redzone and third down bruising option.Unfortunate news around former New Orleans Saint David Patten, and what to do about getting your tickets to New Orleans vs Green Bay Packers in Jacksonville.Join the Locked On Saints Survivor Pool: https://www.runyourpool.com/join/pool_info.cfm?id=167129&p=kiptauFollow Ross on Twitter @RossJacksonNOLAImportant Links and how to help those affected by Hurricane Ida.Imagine Water Works (Local): https://donorbox.org/idaUnited Way SELA (Donate local, not national): http://UnitedWaySELA.org/IdaReliefWorld Central Kitchen (National): https://wck.org/Krewe of Red Beans: https://feedthesecondline.org/donateSecond Harvest Food Bank: https://no-hunger.orgSign up to Volunteer, even remotely with Mutual Aid Disaster Relief: https://docs.google.com/forms/d/e/1FAIpQLSeZt2H_0g38h647DDWtTYjvU9ttzNLI2h5tVmyIFQZ3PVffyg/viewformSupport Us By Supporting Our Sponsors!Built BarBuilt Bar is a protein bar that tastes like a candy bar.
