We kept brunch cool with bowls of vegan vanilla yogurt, fresh fruit, and walnuts. As most Eastern Washington natives, Lu moved away after college and quickly got into the non-profit world. It was there she learned how to really listen to what others' needs are and how to build inclusive policies before we had words for it. She found herself back in Spokane after a quick but immersed experience in rural Oregon and focused on Spokane's houseless issues through working with Empire Health Foundation. This woman does it all - from consulting to cannabis and working with the LGBTQIA2S+ community serving as board president for Spectrum Center Spokane, she is incredibly impressive and compassionate. And now she's running for a District 3 seat on Spokane's City Council. Inspired to run by the events of summer of 2019, she aims to open the door for someone to do the same thing, someone who may have fewer opportunities. Your ears do not deceive you. We are back on our bullshit! The panini of 2020 (which has now spilled into 2021) was a doozy. It took a huge toll on our mental health and we struggled hard. We have a few remotely-recorded episodes but it just wasn't the same. It was also super fun last year to learn a past guest was an abuser and protected another abuser. BELIEVE SURVIVORS. Nico and Sylas, two volunteers from Spokane County Mutual Aid, join us to share what the organization's purpose is and how to help out. SCMA, which is 100% volunteer-powered, was formed to provide aid to those most vulnerable in our community during Washington state's stay-at-home order (and hopefully after the order has been lifted): POC, black and indigenous people, disabled, the elderly, and immigrant and refugee families. A current project is getting face masks to our immigrant and refugee communities. They also talk about what they do for SCMA and future plans for the group. People can request assistance (website, email, social media) or by calling their hotline at 503-662-7912. People can also request grocery assistance (either money for groceries or someone to get groceries for them), small cash donations for bills, prescription pick up, etc. They continually need support with matching a volunteer with someone who needs aid, and they need reusable face masks or supplies to make masks. On our 27th episode, Alisha and Lara are joined by Robbi and Patrick, the founders/creators of Solace. Solace is the transition assistance app that provides information and resources to guide transgender people through their journey and help track their progress. Robbie and Patrick set out to create something that will provide legitimate resources and education to help those in transition. The app will also encompass medical, legal, and lifestyle aspects. Get a large pizza pan or baking sheet ready. Cook the bacon until half-cooked and drain the fat. Flour a large work surface and roll out pizza dough to fit your pan (we didn't really do this because we read the instructions wrong, but still good!). Sprinkle the mozzarella on top. Whisk the eggs and milk in a medium bowl and pour over pizza dough. Top the 'za with bacon and the cheddar. Bake for 10-15 minutes in the top half of your oven until the cheese is bubbling. Remove from oven. Serve with whatever saucy sauces your mouth hole desires. Lay a piece of bacon on each crescent roll, add half of the cheese around the ring. Then add the scrambled eggs around the ring and top with the rest of the cheese. Fold the crescents over. This is when you can brush with the egg wash if ya wanna get fancy with it. Bake for 20 minutes, or until golden brown. Eat! *honestly, use whatever ingredients you have/want. It'll probably work. Scramble your eggs (DO NOT COOK THEM), and set aside. Meanwhile, brown your ground beef in the olive oil (we used a cast iron, but any medium-sized skillet will do). Add taco seasoning and salsa. Stir to evenly coat, then remove the meat from the skillet*. Add your green peppers and cook for a few minutes. Add the meat back in with the scallions and tomato. Pour the egg on top and sprinkle with salt and cheese. Bake for 20-25 minutes or until the frittata is set, no jiggle. It will be difficult but let it sit for a few minutes before cutting into. Serve warm. Shakshuka with Feta (adapted from New York Times) Ingredients: - 3tb extra-virgin olive oil- 1 large onion, halved and thinly sliced- 1 large red bell pepper, seeded and thinly sliced- 3 garlic cloves, thinly sliced- 1tsp ground cumin- 1tsp sweet paprika- ⅛tsp cayenne, or to taste- 1 28oz. can whole plum tomatoes with juices, coarsely chopped (we used canned tomatoes)- ¾tsp salt, as needed- ¼tsp black pepper, as needed- 5oz. feta cheese, crumbled (we decided to omit)- 6 large eggschopped cilantro, for serving (we used green onion)hot sauce Instructions: Preheat oven to 375 degrees. Heat oil in a large skillet over medium-low heat. Add onion and bell pepper. Cook gently until very soft, about 20 minutes. Add garlic and cook until tender, 1 to 2 minutes. Stir in cumin, paprika and cayenne, cook 1 minute. Pour in tomatoes and season with 3/4 teaspoon salt and 1/4 teaspoon pepper; simmer until tomatoes have thickened, about 10 minutes. Gently crack eggs into skillet over tomatoes. Season with salt and pepper. Transfer skillet to oven and bake until eggs are just set, 7 to 10 minutes. Sprinkle with cilantro and serve with hot sauce. Assemble sandwiches with mustard, mayo, ham, cheese, salt and pepper. Compress slightly. Heat skillet over medium heat. Add butter and melt. Dip and coat each sandwich in beaten egg and place on skillet. Cook sandwiches 2-3 minutes on each side until browned, and cheese has melted. After sandwich has cooled slightly, stuff directly in mouth. Vegan chicken and waffles: -2C vegan chicken (we used Gardein brand strips)-olive oil-1/4 beer (we didn't have any on hand so we omitted)-liquid smoke-1/2tsp Louisiana hot sauce1 1/2tsp Creole seasoning (we used spices we had laying around)-2C vegan Bisquick mix-1 1/2C soy milk-1/2C margarine-2C maple syrup-1tbsp applesauce Preheat your oven to 375F. Cut the vegan chicken into strips or nuggets. Line a cookie sheet with foil and spray with olive oil. In a small bowl, mix the beer, liquid smoke and hot sauce. In another small bowl, combine the Bisquick mix and Creole seasoning. Dip your vegan chicken in the liquids bowl to completely cover the pieces and then dip the chicken in to the Bisquick mix. Place all your pieces on the cookie sheet and spray with more olive oil. Bake for 10-15 minutes to a light golden brown. While the chicken bakes, make your waffles! Preheat your waffle iron. Mix all other ingredients except the margarine and maple syrup in a large bowl with an electric mixer until smooth. Make waffles to your heart's content and top with the chicken and buttery syrup! Episode 9: With special guests Mary Margaret and Laura Jean, we talked about every single goddamn thing than the one thing we set out to discuss, and it was A BLAST! Listen to us chant "pee tape," discuss whether or not penises can sweat, and basically establish the fact Aileen Wuornos is not a serial killer. We sprinkled in some burps and belches for your listening pleasure. Dutch babies w/lemon curd: -2 large eggs-1/2C flour-2tb sugar-1/2tsp salt-1tsp vanilla extract-2tb butter-1/2C milk-powdered sugar, syrup or whatever you like to top these bad boys with Blend together the flour, milk, eggs, sugar, vanilla, and salt with a food processor (we didn't have one) for 10 seconds. Scrape down the sides (again we just mixed by hand) and blend for another 10 seconds. Batter should be quite loose (ayyyeeeeee). Let the batter rest 20-25 minutes (doubt we did this because we was HANGRY and ain't nobody got time for that). Heat your oven to 425 degrees Farenheit and place your skillet on the middle rack. We've used cast iron and aluminum pans with great success. Melt your butter in the pan so it gets all up everywhurrr in that thang and pour the batter in. Bake about 15-20 minutes, or until it's lightly browned across the top and puffed. Lemon curd:(full disclosure: we pared this recipe down and kinda eyeballed everything) -3 large eggs, 4 large egg yolks-3/4C sugar-3/4C fresh lemon juice (about 4 lemons)-pinch of kosher/sea salt-1tb grated lemon zest-4tb butter-1/4tsp salt Stir together lemon zest, lemon juice, sugar, and salt in a small saucepan. Set over medium heat and cook about 5 minutes, or until sugar and salt are dissolved. In a medium bowl beat 3 eggs and 4 egg yolks. When the liquid on the stove is ready, slowly pour some of it into the bowl with the eggs, whisking constantly aka tempering. Return the pot to the stove and add the rest of the eggs while stirring, making sure not to curdle the eggs. But if that DOES happen, you can always strain out the curdled eggs and you're good to go! Whisk about 5 more minutes, it should be thick enough to coat the back of a wooden spoon. Stir in the chopped butter and eat a giant spoonful of this goodness. At this point, you can choose to refrigerate 2-4 hours (press plastic wrap right on top of the lemon curd), but we just went ahead and ate it with our dutch babies 'cuz we was HANGRY. Dip slices of bread of your choice in mixture on each side to soak up all dat custard-y goodness. Heat up a griddle or pan medium-high heat and coat with lots and lots of butter. Place bread on pan and cook 4-5 minutes or until golden brown. Flip and cook the other side. Serve with powdered sugar, more butter, syrup, strawberries, vengeance, or whatever else your heart desires. On this special Father's Day episode, Alisha, Lara, and Adam of Good Brews Radio get way too full on chocolate chip pancakes and lots of stout while they share stories on fatherhood, being a kid, and everything in between. Chocolate chip pancakes: -2c flour-3tb white sugar-1 1/2tsp baking powder-1tsp baking soda-1/4tsp salt-2c buttermilk (we used powdered buttermilk - yes, it's a thing!)-1 1/2tsp vanilla extract-1/2tsp cinnamon-1 egg-1/4c melted butter-mini chocolate chips (as many as you want because you're an adult, or at least are old enough to make pancakes) Melt butter and let cool slightly. In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, combine the buttermilk, vanilla, cinnamon, and egg with a whisk. Add the melted butter and whisk again. Slowly pour the wet ingredients into the dry ingredients and stir to combine. Do not over-mix! Heat up your best pancake-making skillet or griddle over medium-low heat, and add a little butter. Use a 1/4 cup measuring cup (we used an ice cream scoop) and slowly pour batter onto hot surface to make a nice circle. Or any shape you want. Because they're your pancakes! Let the pancake cook about 2-3 minutes. Once bubbles start to form on the surface and the edges are set, flip that baby over! Cook for another two minutes before letting cool slightly so you can devour said pancake(s). Pairs well with your favorite stout or porter. We chose Samuel Smith's Organic Chocolate Stout and Young's Double Chocolate Stout. We risked it for the biscuit (and gravy)! After stuffing our faces and sipping on mimosas, Alisha and Lara talk lots about drugs, and the local music/entertainment scene with special guest Kendra McKay! Kendra is a local business owner, musician, artist and all-around badass being. She also shares her story of a 3-month legal battle with an old ex, after calling out his abusive behavior during their relationship (and towards other women). For the best ever biscuits and sausage gravy you'll need: -6TB butter-2C flour-1TB sugar-1/4tsp baking soda-1TB baking powder-1tsp salt-1C buttermilk -1lb breakfast sausage-1/2C flour-3 or 4C whole milk (we used buttermilk and it was AMAZING)-1/2tsp salt-2tsp pepper Pre-heat your oven to 450 degrees. Cut the butter into small cubes (this works best if the butter is super duper chilled; we didn't have a pastry cutter and it was fine). Sift the dry ingredients together. Then add your cut up butter, it should be coarse and crumbly. Make a well in the middle of your bowl and add the buttermilk. Stir to combine until the dough is sticky/tacky. At this point you can roll out the dough and fold it over itself 6 times. We just freeformed the biscuits, because that's how we roll. Bake for 12-15 minutes until browned. While the biscuits are baking, make dat gravy, BABY! Brown your sausage in a large skillet on medium-high heat until there's no more pink. Add the flour and stir it up so it gets soaked up by the sausage. Pour in the milk whilst stirring constantly. Cook the gravy 10-12 minutes or until thickened. Season with salt and pepper to taste. Drown your biscuits in this gravy and prepare to reach utter and true bliss. Place a thumb-sized slice of orange peel (pith omitted) and muddle with a splash of soda water. Add a shot of your favorite whiskey and stir. To be extra fancy, bend another slice of orange peel to get the oils to come out and rub on the rim of your glass. BOOM!
