This week on the podcast, Heather takes on a classic French recipe, Coq au Vin, chicken braised in wine. This dish usually includes pearl onions, but Heather was unable to find them for this episode. Mushrooms and carrots joined bone-in, skin-on chicken thighs and legs and a whole bottle of burgundy wine. One trick is to marinate the chicken in advance in the wine. Essentially you're going to brown the chicken, then braise it in wine and chicken broth and then add in mushrooms (and those pearl onions if you've got them). One note: we found there was a lot of liquid and it wasn't necessary. Half a bottle of wine probably would've been enough for our ten pieces of chicken. So buy a wine you enjoy and just drink the other half.  We mention a few past episodes in this one, including way back when we reviewed the documentary film Julia at the Calgary International Film Festival about the life of Julia Child who brought coq au vin to an American audience.  Julia Child's recipe was a bit more complicated than Heather was willing to attempt, so she followed a simpler version of this classic French recipe. ~~ Episode links:Coq Au Vin recipeChicken deconstructing videoArroz con pollo episode CIFF episode Julia Child's Coq au Vin recipe Three Kitchens Podcast - a home cooking showCheck out our website where you can listen to all of our episodes, and find recipes on our blog (psst! there are even some extra recipes never discussed on the podcast!).www.threekitchenspodcast.comYou can support the show with a small donation at Buy Me A Coffee.Want to be a guest? Calgary immigration lawyer Evelyn Ackah speaks with her clients Brian and Michael, American expats in Canada who moved to Calgary in September of 2018. Brian Owens and his husband Michael Dettner had the opportunity to move from Tennessee to Alberta, Canada for Brian's job as Artistic Director for the Calgary Film Festival. Brian accepted the job, and the film fest contacted Evelyn Ackah and Ackah Business Immigration Law to get his LMIA as a senior highly Skilled Foreign Worker. Brian started work in Calgary a few weeks later. Michael needed to apply for a Canadian visa for an open Spousal Sponsorship and received a 2-year Temporary Resident work permit before moving to Canada, which Ackah Law handled. Brian and Michael's American expats in Canada journey includes living through COVID in a new country while trying to qualify for permanent residence, which they finally received in 2023. This is their expat story. The Calgary International Film Festival retains Ackah Business Immigration Law for guidance on immigration matters.Evelyn, Brian and Michael discuss:Why moving to Canada in 2018 was the best decision they ever madeAs Americans, why did they want to move to CanadaHad they ever lived outside the United States beforeWhat surprised them most about expat life in CalgaryAlthough they moved here together, Brian already had a job offer in Canada, while Michael - the trailing spouse - had to apply for Spousal Sponsorship. How did this make their immigration journey's different? Now that you've lived in Canada for 5 years - and lived here through the pandemic, experiencing all the delays getting your paperwork approved, what were their biggest misconceptions about living in Canada - good and bad?Are their friends mainly Canadians, Americans, expats or…???Before moving to Canada, what did their friends in America think about this decision?Brian and Michael have lived in Canada for a while and become Canada permanent residents, what do their American friends and family think now?If another American asked for advice about moving to Canada, what would you tell them? We get lots (OK, like, two) questions on how we made our shorts. A little background: Last year, our short film Tapes was selected for the 2020 Tribeca Film Festival. Before that, our film Amazing Bagel had a great festival run at Maryland Film Festival, Calgary International Film Festival and won the Audience Choice Award at the Nitehawk Shorts Fest. We are not your typical filmmakers, but we did it! And if it’s a passion of yours, you can do it too. Here’s how we made our short films, from writing, gathering a crew, finding locations, nabbing talent, editing footage and applying to festivals. And yes, we talk about MONEY because honey, we got to. Thanks for listening :) Intro song “Why-Wait” by Ketsa (CC BY-NC-ND 4.0)

Upstream Flix is partnering again with Award winning producer Adam Scorgie (Ice Guardians, The Culture High, Inmate #1: The Rise of Danny Trejo) in conjunction with Oilers Entertainment Group VP Don Metz and Co-Producer Shane Fennessey for Making Coco: The Grant Fuhr Story.  Upstream Flix plan to release the film in late 2018. Don Metz directs this captivating cinematic chronicle on one of the most celebrated, yet enigmatic goalies in the history of the NHL. The feature has been announced as the closing Gala film at the Calgary International Film Festival.  Featured contributors in the documentary include Wayne Gretzky, Mark Messier, Martin Brodeur, Brett Hull, Chris Pronger and many more of the NHL’s royalty. Fuhr, along with a number of his teammates, will provide a never-before-seen exclusive look into the high-flying Oilers dynasty of the 80’s, what made them so successful, and the infamous challenges that they faced. All-time rivals will speak to what it was like playing against the greatest goalie on the greatest team in the NHL’s 100-year history. Those closest to Grant will take the audience on a journey behind the mask to understand who the mixed-race superstar truly is.  Barely 19, Grant ‘Coco’ Fuhr became starting goalie for the most exciting team in NHL history. In his mid-30’s, he played 76 consecutive and 79 total games in an 82-game season to set two league records, then followed that ironman performance by playing 73 the following season on a completely rebuilt knee. During the decade and a half between, he employed his acrobatic style and cat-like reflexes to backstop five Stanley Cup champions and two Canada Cup winners, cementing a reputation as the ultimate “money goalie”. He also got himself demoted to the minors for calling the hometown fans jerks, announced his retirement at the age of 26 in an attempt to force a famously hard-nosed general manager to renegotiate a long-term contract, and was suspended for an entire NHL season for conduct deemed “dishonourable and against the welfare of the league” for substance use, only to return and redeem himself as one of the game’s true greats.  “I think he’s the best goaltender in the history of the NHL.” - Wayne Gretzky

Because of Greg's incredible story of overcoming adversity to play college football at age 38, (click here for more info) and his passion to share it, he has become a much sought after motivational speaker.  His love of film, which he discovered while studying Communication Arts at Saddleback College, has made him an award winning filmmaker. The Business of Recovery is the third feature film Greg has produced. Unfinished Business was considered for a Canadian Gemini Award and Hope for the Broken Contender won the American Express People’s Choice Award at the Calgary International Film Festival. Greg is very passionate about The Business of Recovery, a story he felt compelled to tell. Michelle sat down for a controversial and enlightening interview with the producer of The Business of Recovery, Greg Horvath. Greg struggled with alcohol as a young man, but he overcame his addiction and decided to give back by working in the addiction treatment industry for over 10 years.  During this time, he discovered the outdated and questionable treatment recovering addicts were receiving.  He's made it his mission to shed light on this $35 billion industry and invoke change for the way addiction is treated by speaking out and making a thought-provoking documentary that was just featured on HBO last Sunday.  We encourage you to listen (without judgment) to what Greg has to say.
