What to Drink with Charred Corn Avocado Salad: Mezcal Vago Elote

What to Drink

Chris Simmons, National Agave Spirits Specialist for Mezcal Vago, joins us today to tell us how to pair Mezcal Vago with pretty much anything -- but especially a Charred Corn Avocado Salad with Pickled Onions! Snag our recipe here: https://littlespicejar.com/charred-corn-avocado-salad/ The Pairing: We're going complementary flavors here -- corn with corn! Vago Mezcal uses charred corn in the second distillation and those flavors will marry perfectly with several elements of our salad. Do not sleep on pairing foods with agave-based spirits! Chris claims Italian food and Mezcal work beautifully. What Makes Mezcal Vago Special: American best friends Judah and Dylan traveled to Oaxaca and decided to open a beachside bar. One day, Judah had an ear infection, and ended up falling in love with his nurse, Valentina. Valentina's father Aquilino grew agave for Mezcal as a hobby. They decided to sell his wares to fellow surfers on the coast, and it became wildly popular. Mezcal Vago was born. Mezcal Vago has four bottlings from four different palenques (distilleries) in Southern & South-Central Oaxaca, with 4 different 'Terroirs' and village styles. Elote was the first they produced. Vago in Spanish means a "Lazy bum," but also a term of endearment. Think: your grandmother yelling you to come inside after dark. "Time to come in, Vago!" Corn adds a roundness and slight sweetness to this Mezcal Elote Differences between Mezcal and Tequila: Types of Agave: Tequila and Mezcal are both agave spirits, but Tequila must all come from Blue Weber Agave, while Mezcal uses upwards of 3 dozen different agaves Production Method: Mezcal is a more ancient style of production, while Tequila uses more modern methods. All agave needs to be cooked or steamed to convert the starches to fermentable sugars. In Tequila we use steam in an autoclave, while Mezcal we often cook agave in underground pits heated by firewood Aging: Tequila is more likely to be aged versus Mezcal. Barrels were not traditionally found in most Mezcal-producing areas Learn more here: https://mezcalvago.com/ Mezcal Vago on Instagram: https://www.instagram.com/mezcalvago/

This weeks Thoughts Off The Stem, infused with a few shots of 1800 Agave Tequila and Pheno Hunter Pixie Sticks, a 27% thc Sativa by Nugz for the pre-roll and bowl.  I'm also trying out a new toy!  The Divinci Artiq. A vape battery that conceals your cartridge in the casing.  That way they never know what your smoking. Did you know marijuana makes you gay?  Yup there's a resurgence of this backwards way of thinking.  Granted alot of cannabis accessories are fallic in design,  tasting the devils lettuce isn't going to get you tossing your buddy Frank's salad.  If you're thinking about the D when your blazing, you probably want the D when your not.  It's not the weed. They also say weed makes you lazy.  The "lazy" most people associate with marijuana use is a personality trait in my opinion.  If you're lazy, you're lazy.  The weed just makes you ok with it.  Not everyone smokes, eats Cheeto's, watches movies or plays video games all day. You know how people say "It's not you, it's me" when they want to end a relationship?  Well in this case it's you. Not the weed. Hope you enjoy the Sesh! In this episode we speak to Paul Hayes, Co-Founder of Vivir Tequila.VIVIR Tequila was born from the love of the Agave based spirit that two good friends (Paul and Nav) shared. A number of years ago they started to question why it was so difficult to find quality 100% Agave Tequila in the UK without going to a specialist bar or retailer. This was especially important for Paul as cheaper Mixto Tequilas are the only thing in the world he's allergic to meaning he found it hard to drink any Tequila in the UK full stop.Paul had already been working with Agave for over 16 years and knew the industry well. In 2016 they finally made the decision to change perceptions of Tequila in the UK and create their own line of premium 100% Agave Tequilas. It took them 3 years to develop as they wanted to get it right and in 2019 they finally introduced VIVIR Tequila to the UK.During the recording, we discuss:Paul's journey through the FMCG sector until the launch of VivirThe Tequila boom on 2022 and 2023The GOOD Tequila and the BAD TequilaThe community spirit of the FMCG sectorSupporting other start-ups and the challenges that some have facedHaving unexpected pivots due to COVIDContact Harlands Accountants / The Evolving Accountant Tweet us at @Harlands_NE Give us a follow on LinkedIN Give us a Like on Facebook Email us at host@theevolvingaccountant.co.uk Don't forget to leave us a review Thanks for listening!

On this very special episode of Blossom, just kidding, this week is on the new Netflix show from Jamie Foxx, Dad Stop Embarrassing Me! The show is about a single dad and cosmetics owner figuring out fatherhood on the fly when his strong-minded teen daughter moves in with him. It stars Jamie Foxx, Kyla-Drew, Porscha Coleman, Jonathan Kite, David Alan Grier, and Valente Rodriguez. Ginger Beer Margaritas (minimalistbaker.com): Ingredients 1 1/2 oz of 100% Agave Tequila 1 oz Fresh Lime Juice 3 oz of Ginger Beer 1/2 oz Simple Syrup 1/2 Cup of Ice Coarse Salt Directions Line a small serving glass with fresh lime juice and dip in coarse salt (optional). Add tequila, lime juice, ginger beer, simple syrup, and ice to a large glass or cocktail shaker and stir vigorously. Don't shake with a lid on or it will erupt from the ginger beer carbonation (lesson learned). Pour liquid (reserving ice) into serving glass with a few ice cubes. Garnish with a lime wedge and serve immediately. Repeat for more drinks, or double/triple the amounts for more people. Drinking Game: Drink Every Time Whenever you feel second hand embarrassment for the characters. When you can relate to something on the show, 2 drinks if you relate to the millionaire on the show. Whenever the dad attempts to do something to seem cool. Any time two or more characters speak in stereo. Any time the fourth wall is broken. Finish Your Drink A dad joke is told. As always drink responsibly and with friends. Please subscribe and share to the podcast, also leave a 5 star review. I know I will be toasting to Nicci Stringfellow, the UK Casa Herradura Brand Ambassador on Mexican Independence Day this Friday. In fact, I might just be proclaiming a Grito de Nicci, not the historic Grito de Dolores, the battle cry of Miguel Hidalgo y Costilla, the priest who kicked off the entire revolution! Download the audio Did you even know that same agave plant that sits on your work desk can produce one of the most popular liquors in the world? Thanks to Nicci Stringfellow, my shot, lime, salt, days are long gone. Sip and savor have replaced them after she educated me on the marvels of 100% Agave Tequila. Nicci has worked beside the greats, including the legendary, “King Cocktail” Dale Degroff, the godfather of the contemporary cocktail and author of The Craft of the Cocktail. In her own right, Nicci has helmed some of the best bars in the world, including LAB & Opium in London, Biervana in Tokyo and Hakkasan in Mumbai. Lucky for Casa Herradura, Nicci’s passion was tequila and she grabbed the chance to represent such a wonderful brand. “It’s a dream job for me to be able to represent such an amazing tequila. There are few things I like more than Herradura. Not just the liquid, though its honeyed silk is indeed a thing of beauty, but the way of life that it represents; the spirit of the community that its sharing creates.” Casa Herradura has been producing 100% Agave tequila since 1870, in the same hacienda in Amatitán, Jalisco, the home of tequila in Mexico. You will not be alone in loving the stuff, as over 60,000 visitors stop by each year to visit the distillery.   See how she makes her own version of the classic Old Fashioned on Mixology in a Minute: [embed]https://youtu.be/gNq9kqQKFuw[/embed]     [content_boxes class="" id="cheat-sheet"] Make this at home yourself with all the ingredients that Nicci uses.   Click on the icon below to find them: [/content_boxes]   WHERE YOU CAN HEAR ME DRINKING NEXT: Next up, we fly across the Med to sunny Cyprus to share a Tiki Cocktail with Dinos Constantinides, owner of Lost + Found Drinkery, awarded one of the World’s 50 Best Bars last year by Drinks International. They then travel down to Mexico City to discover some modern uses of the Agave plant: meeting with a chef from Mexico’s top restaurant Biko and fashion designer Carmen Rion to find out how Agave is used in modern Mexican cooking and fashion.
