Send us a textTonight's episode dives deep into the world of double oak and toasted oak bourbon, exploring the science and flavor differences between various finishing techniques. We examine what sets apart barrel finishing methods and why they create such distinct flavor profiles in your favorite bourbons.• Woodford Double Oak stands as our benchmark for the category—butterscotch and caramel notes with exceptional availability• Peerless offers both Toasted and Double Oak expressions with higher proof points and distinct character differences• French oak versus American oak creates notably different sweetness profiles, with French imparting more butterscotch notes• Charred barrels serve as both flavor enhancers and natural filters for column-distilled spirits• The Kentucky Bourbon Festival (Sept 5-7, 2025) will feature exclusive releases with tickets going on sale April 17th• Old Louisville Whiskey Company's Double Double Oak earned a spectacular 17/18 rating on our barrel bottle breakdown scaleJoin the Crystal Glencairn Club and connect with us at www.scotchybourbonboys.com for merch, updates, and membership information. Remember to like, subscribe, and leave good feedback wherever you listen!Ever wondered why some bourbons taste like butterscotch while others lean heavily toward caramel? The secret lies in the oak—specifically whether that barrel was charred or toasted, and whether your bourbon spent time in one barrel or two.We journey through the fascinating world of barrel finishing techniques, comparing the sweet spot of double-oaked bourbons against their toasted counterparts. From Woodford Reserve Double Oak (the gold standard) to Peerless Distilling's twin expressions and the ultra-premium Old Louisville Double Double Oak, we explore how these barrel treatments transform whiskey from good to extraordinary. The science behind barrel treatment proves fascinating—charring caramelizes wood sugars and creates a natural filter, while toasting gently warms the wood to release more subtle flavors. We learn why French oak tends to produce butterscotch notes while American oak leans toward vanilla and caramel. Each sip tells a story of time, temperature, and transformation.Beyond the tasting, we share details about the upcoming Kentucky Bourbon Festival (September 5-7, 2025), where bourbon lovers can sample countless expressions and exclusive releases. Tickets go on sale April 17th, with early access for "Bourbon Insiders" on April 16th—definitely an event worth marking on your calendar if you've fallen in love with these complex, layered whiskeys.Whether you're new to bourbon or a seasoned enthusiast, understanding the oak behind your pour adds a whole new dimension to appreciation. Which do you prefer—the caramelized richness of charred barrels or the subtle sweetness of toasted wood? What to Drink
What to Drink with Charred Corn Avocado Salad: Mezcal Vago Elote

What to Drink

Chris Simmons, National Agave Spirits Specialist for Mezcal Vago, joins us today to tell us how to pair Mezcal Vago with pretty much anything -- but especially a Charred Corn Avocado Salad with Pickled Onions! Snag our recipe here: https://littlespicejar.com/charred-corn-avocado-salad/ The Pairing: We're going complementary flavors here -- corn with corn! Vago Mezcal uses charred corn in the second distillation and those flavors will marry perfectly with several elements of our salad. Do not sleep on pairing foods with agave-based spirits! Chris claims Italian food and Mezcal work beautifully. What Makes Mezcal Vago Special: American best friends Judah and Dylan traveled to Oaxaca and decided to open a beachside bar. One day, Judah had an ear infection, and ended up falling in love with his nurse, Valentina. Valentina's father Aquilino grew agave for Mezcal as a hobby. They decided to sell his wares to fellow surfers on the coast, and it became wildly popular. Mezcal Vago was born. Mezcal Vago has four bottlings from four different palenques (distilleries) in Southern & South-Central Oaxaca, with 4 different 'Terroirs' and village styles. Elote was the first they produced. Vago in Spanish means a "Lazy bum," but also a term of endearment. Think: your grandmother yelling you to come inside after dark. "Time to come in, Vago!" Corn adds a roundness and slight sweetness to this Mezcal Elote Differences between Mezcal and Tequila: Types of Agave: Tequila and Mezcal are both agave spirits, but Tequila must all come from Blue Weber Agave, while Mezcal uses upwards of 3 dozen different agaves Production Method: Mezcal is a more ancient style of production, while Tequila uses more modern methods. All agave needs to be cooked or steamed to convert the starches to fermentable sugars. In Tequila we use steam in an autoclave, while Mezcal we often cook agave in underground pits heated by firewood Aging: Tequila is more likely to be aged versus Mezcal. Barrels were not traditionally found in most Mezcal-producing areas Learn more here: https://mezcalvago.com/ Mezcal Vago on Instagram: https://www.instagram.com/mezcalvago/

The wildfires that destroyed Lahaina in Hawaii last year have led to something of an ecological reset. For decades, the area was drained dry by sugar plantations and developers, but now water has returned. That's sparking hope for the restoration of Lahaina's ancient and sacred wetlands.

Thank you for joining us for our 2nd Cabral HouseCall of the weekend! I'm looking forward to sharing with you some of our community's questions that have come in over the past few weeks…   Kelsi: hi dr. cabral! there is SO much conflicting information regarding coffee and PCOS. as someone who struggles with high androgen/testosterone production, should i not be drinking any caffeine? does caffeine really increase androgen hormones? i drink 1 cup of organic, mold free coffee per day. ive justified not giving it up due to how much joy it brings me. thanks!   Sarah: Hi Dr. Cabral, I get horrible gas when I eat energy balls that I make made of bobs red mill gluten free oats, nut butter, chia seeds, pumpkin seeds and honey. I recently did the big 5 and none of these came up as a sensitivity. Why am I having gas with this and should I cut these out of my diet? I eat all of these separate at times and don't have the gas, but for whatever reason have it with all of them combined. Thanks   Calista: Hi Doctor Cabral, Is it unhealthy to consume burnt pizza crust? Whenever I visit a great pizza place, the crust often has a lot o charred spots on the bottom and edges. I know that the dose makes the poisin, and it's not like I eat pizza every day, maybe once or twice a month, but still - I want to keep that rain barrel as empty as possible ;) Thanks so much for your answer! Much love, Calista   Anonymous: Hi Dr. Cabral! Long time listener. I'm 39 with AMH of .03. I've completed your functional medicine detox, eat all organic, avoid seed oils, exercise appropriately, ect. I've also done testing that revealed candida overgrowth and some chemicals that were overwhelming my immune system. I've since cleared the candida, stopped wearing nail polish and started sauna regularly. I also use all clean products and have never taken birth control nor did I participate in any experimental therapy during the pandemic. I had one natural c-vid infection in March of 2022 and after that went 90 days without a cycle! Is it possible that virus damaged my ovaries? What else specifically can I do to naturally increase my AMH/ward off early menopause? Have you heard of ovarian PRP injections being successful?   Lara: Hi, dr. Cabral.. I've been tracking my sleep with Oura and lately I've been trying to go to bed earlier than my whole life.. Since starting to learn from you I can no longer keep shutting my eyes that sleeping earlier is important for health.. but the thing is that I get 90+ minutes of deep sleep when I go to sleep at 2am or later on off days and whenever I manage to go earlier (around midnight is where I'm currently at), I don't get enough deep sleep! Even less than an hour sometimes! Could it be that my body is used to my rhythm (hormones?) so it's difficult for me to get into the deep sleep phase earlier than it's used to? I'm really wondering what the cause could be.. please help me figure it out, thanks.. you're the best!   Sam: Hi Doctor Cabral, I was just listening to a podcast with a registered dietitian who claimed that having a healthy liver and detoxifying it requires consuming animal protein.. That sounded false to me, but I wanted to check what you think about it? Thanks in advance for your answer!   Thank you for tuning into this weekend's Cabral HouseCalls and be sure to check back tomorrow for our Mindset & Motivation Monday show to get your week started off right!   - - - Show Notes and Resources: StephenCabral.com/3075 - - - Get a FREE Copy of Dr. Cabral's Book: The Rain Barrel Effect - - - Join the Community & Get Your Questions Answered: CabralSupportGroup.com - - - Dr. Cabral's Most Popular At-Home Lab Tests: > Complete Minerals & Metals Test (Test for mineral imbalances & heavy metal toxicity) - - - > Complete Candida, Metabolic & Vitamins Test (Test for 75 biomarkers including yeast & bacterial gut overgrowth, as well as vitamin levels) - - - > Complete Stress, Mood & Metabolism Test (Discover your complete thyroid, adrenal, hormone, vitamin D & insulin levels) - - - > Complete Food Sensitivity Test (Find out your hidden food sensitivities) - - - > Complete Omega-3 & Inflammation Test (Discover your levels of inflammation related to your omega-6 to omega-3 levels) - - - Get Your Question Answered On An Upcoming HouseCall: StephenCabral.com/askcabral - - - Would You Take 30 Seconds To Rate & Review The Cabral Concept? Vancouver's Schara Tzedeck was lit aflame—and the shul decided to leave the door charred. Here's why

It's been more than two weeks since an unknown suspect set fire to the front doors of Vancouver's Schara Tzedeck synagogue on May 30, while people were inside attending a late-night meeting. A passerby saw the flames and called it in, while a shul member used his jacket to douse the flames. No one was hurt, but the incident left one of the building's ornate silver doors blackened—and the community shaken. Vancouver police tasked the Major Crimes Unit to investigate, but to date have not released any updates. Schara Tzedeck was the eighth Canadian synagogue targeted by violent attacks since Oct. 7—but not the last. Another attack targeted the glass windows at Beth Jacob in Kitchener on June 7. A week later in London, Ont., on June 14, someone threw a rock through a glass door of the Beth Tefilah Synagogue. While politicians in B.C. made a point to attend Shabbat services after the Vancouver attack, Schara Tzedeck's rabbi has a message for them: in his words, when you permit hate speech against Jews to go unchecked, and when you gloss over chants at university encampments that glorify Hamas's attack on Oct. 7, don't be surprised when hateful or ignorant people take it a step further. On The CJN Daily, Rabbi Andrew Rosenblatt tells us what's happened since the attack—and why the damaged spot has not been fixed. Lindsay is joined by author Judith Starkston to discuss her book, Priestess of Ishana. A curse, a conspiracy and the clash of kingdoms. A defiant priestess confronts her foes, armed only with ingenuity and forbidden magic.A malignant curse from the Underworld threatens Tesha's city with fiery devastation. The young priestess of Ishana, goddess of love and war, must overcome this demonic darkness. Charred remains of an enemy of the Hitolian Empire reveal both treason and evil magic. Into this crisis, King Hattu, the younger brother of the Great King, arrives to make offerings to the goddess Ishana, but he conceals his true mission in the city. As a connection sparks between King Hattu and Tesha, the Grand Votary accuses Hattu of murderous sorcery and jails him under penalty of death. Isolated in prison, Hattu's only hope lies in Tesha to uncover the conspiracy against him. Unfortunately, the Grand Votary is Tesha's father, a rash, unyielding man, and now her worst enemy. To help Hattu, she must risk destroying her own father.Step into this exotic world of historical fantasy, with its richly imagined details of the Bronze Age, evocative of the Near East. In a whirlpool of magic, politics, family crisis and love, Tesha pursues justice over the dark forces arrayed against her. Judith Starkston has spent too much time reading about and exploring the remains of the ancient worlds of the Greeks and Hittites. Early on she went so far as to get two degrees in Classics from the University of California, Santa Cruz and Cornell. She loves myths and telling stories. This has gradually gotten more and more out of hand. Her solution: to write fantasy set in the exotic worlds of the past. Fantasy and Magic in a Bronze Age World. Hand of Fire was a semi-finalist for the M.M. Bennett's Award for Historical Fiction. Priestess of Ishana won the San Diego State University Conference Choice Award. Judith has two grown children and lives in Arizona with her husband. Because writing is best done with community, Judith belongs to her local chapter of Sisters in Crime and the California chapter of the Historical Novel Society. Our guest, Jimmy Hank Pizza, shares the excitement of his first foray into a major pizza competition in Las Vegas, where his non-traditional pizza-making wowed the judges and spectators alike. From the high-pressure environment of pizza contests to the non-stop creativity demanded by the ever-evolving world of pizza, Jimmy's story is one of triumph, community, and a touch of charred crust. You can find Jimmy on Facebook at https://www.facebook.com/jimmyhankpizza Navigating the fiery world of pizza ovens proved to be a hot topic in our discussion. And for the social media mavens and culinary entrepreneurs among us, Jimmy's anecdotes on how he turned his pizza prowess into a buzzing side hustle are enough to stoke the flames of inspiration.Rounding off our chat, we take a slice out of Jimmy's life with the tale of his trademarked alter ego, 'Frico King,' and the bustling pizza scene that spills from the ovens of New York to the broader canvas of culinary delights. With today's episode I am crossing off my list a creator that I have wanted to chat with since Byron first mentioned the idea of starting a podcast. In 2020, the early days of the pandemic, I first decided to try and write a comic script in order to enter the Mad Cave Studios Talent Search and I based my script on Show's End, written by Anthony Cleveland. Although I didn't win the talent search (unlike Anthony who won in 2018), I fell in love with the story of Show's End along with Jef Sadzinski's artwork. Since then, Anthony has written a 2nd volume of Show's End, Stargazer (also published by Mad Cave), and he's here on the podcast today to talk about Charred Remains, his newest series from Mad Cave Studios. Anthony has teamed up with horror artist extraordinaire Andrea Mutti for this story about a supernatural entity made of fire. Issue #1 is out December 13th. As Evil Dead 2 played on the tv behind Anthony, we talked about horror, his journey in comics, and a bit about both Show's End and Stargazer. It's a wonderful conversation that I think you're going to enjoy.  Learn more about your ad choices. Visit megaphone.fm/adchoices

We open with "Can the Charred talk?" and it goes from there. This episode, we have Eric (Chaos), David (Windrunner), Evgeni (Argent), Grace (thegatorgirl), and Ala (Rasarr). A South Carolina man faces life in federal prison after his wife's burned body was discovered in a 'makeshift' grave in 2020," according to the U.S. Attorney's Office. Lawrence Joseph Florentine, 56, has "pleaded guilty to interstate domestic violence resulting in death, use of a firearm during a crime of violence to cause death, obstruction of justice, and use of fire during the commission of a felony" over three years after his wife Nicole Zahnd Florentine's body was found "charred" with a ".22 caliber bullet wound to the head" determined to be her cause of death, per a release. The U.S. Attorney's Office noted that the two had a "volatile" relationship after marrying in 2018, citing recordings and observations from family. Since December 2019, authorities in York County responded to multiple calls from Nicole, who accused Lawrence of physically abusing her and having "threatened to kill her, burn her, and bury her." Lawrence was previously arrested twice on domestic violence charges, one of which was at least partially dismissed at Nicole's request. Then, on May 23, 2020, the couple's home in Rock Hill was "destroyed by fire," the release from the U.S. Attorney's Office noted. "Text messages and photographs Florentine sent to Nicole during the fire show that he intentionally burned her belongings and intentionally set the property on fire," the release read. "Florentine is charged with arson in state court in connection with the fire." Between June 2 and June 11 of that year, the two then traveled together by car and were last known to be in Piedmont, South Carolina, according to an FBI investigation. Nicole's grandmother reportedly filed a missing person report when she stopped hearing from her during the trip.  A body that was later identified as Nicole's was found by a groundskeeper for Hill Cemetery in Fredonia, Kentucky, on June 13, 2020. "A gas can was recovered from behind a tree near the burial site," the release notes. "No identification, cell phone, or other personal belongings were found." After eyewitnesses reported seeing a car identical to Florentine's and a hardware store clerk identified a transaction for a shovel and gas can to someone who matched Florentine's description, surveillance footage later featured Florentine filling the can at a nearby station, per the office. "No firearm was found; however, police recovered a lighter and .22 caliber cartridges in the center console and located Nicole's blood on the rear exterior of Florentine's abandoned car," the release noted. "Sometime after June 11, 2020, Florentine fled Kentucky and arrived in Denver, Colorado. On June 23, 2020, he surrendered to the Denver Police."   Florentine, who faces life in prison, also faces eight years of supervision after his sentence, and a fine of up to $250,000 restitution.  A date for sentencing has not yet been announced, and Florentine will be sentenced by U.S. District Judge Donald C. Coggins. Want to listen to ALL of our podcasts AD-FREE?
