This Episode is sponsored by:"I've had the good pleasure of knowing today's guest for a while now, although this is only the third time we've hung out in person. Todd DiMatteo is the owner and brewer here at Good Word Brewing and Public House in Duluth, GA and has been turning out some of the more flavorful, interesting, and low abv beers that I've had in a while.  He has a long career in beer and hospitality, including a long term at the Brick Store Pub, an Atlanta institution, the influence of that bar can be felt in his beers today, with nods to traditional styles and an appreciation for well-established international beer regions.  On this episode he talks about the brewer's ego, making beers that make him happy and foster a good drinking experience, and his huge love of carbonation."-John Holl This Episode is Sponsored by:Cigar City Brewing Co.Cigar City Brewing has taken inspiration from beyond the cosmos for Cosmic Crown, a golden-hued Strong Golden Ale, and added Galaxy hops to impart passionfruit and peach qualities to its profile of ripe fruit and light peppery spice. Assertive aromas of pineapple, bubblegum, dried flowers, and a hint of black pepper greet the nose. Overripe banana, red apple, and lime leaf esters play on the palate, while poundcake-like malt, pepper-like spiciness, and herbaceous bitterness play supporting roles. Todd DiMatteo never intended to head up the production side of Good Word Brewing and Public House (https://goodwordbrewing.com) in Duluth, Georgia, a suburb of Atlanta. However, after a rocky start with a previous brewer forced him to quickly step up to the brewdeck, he embraced the role with verve. Thankfully, his homebrew experience plus more than a decade serving beer at Atlanta's legendary Brick Store Pub provided a palate and a point of view—two things that he's leaned into while further developing Good Word's beer program. Small beers are a big deal for DiMatteo. Through collaborations and core brews, he routinely plays across the beer map—from “petite IPA” to Czech-style dark lager and English-style bitter. In this episode, he talks about the challenges and techniques to brewing small beers, including: sharpening critical faculties to focus on constant improvement finding inspiration in source material for beer styles staying respectful of style and naming conventions, in part to keep styles alive and vibrant key points for maximizing character and minimizing detracting notes in small beers the value of decoction in low-ABV beers evaluating ingredients and selecting them for flavor using multiple lager and ale strains while remaining efficient from a production standpoint spunding for natural carbonation And more. *This episode is brought to you by: * G&D Chillers (https://gdchillers.com): For nearly 30 years, G&D Chillers has set the mark for quality equipment you can rely on. Three random Celtic items. 1) WRFG (FM 89.3) has a long-running Celtic music show broadcasting every Sunday 5-7pm 2) The Marlay House in Decatur GA is our best local Irish pub.  The pub used to have a weekly Irish music session but I think that has gone dormant.  One of the best pubs to get a pint, watch rugby and football (soccer) and get some trad food.  Good place for St. Patrick's Day with live music. Bonus is that the Marlay has its own fish n' chips food truck that goes to outdoor festivals. 3) Mac McGee on Decatur square is another good Irish pub with a large selection of irish whiskey.  The pub occasionally has Irish music. Decatur itself has some of the best restaurants and bars in the Atlanta.  I particularly recommend the Brick Store Pub (best beer selection in US) and Chai Pani (great Indian cuisine). Step aside, wine.  We're pairing craft beer and cheese. Wine and cheese get plenty of love but craft beer is gaining more respect for pairing with cheese.  I'll admit, this show was all for us.  Selfish, I know.  However, Chef Bernard McCoy shares some amazing info on pairing craft beer and cheese and we think you're going to enjoy it. McCoy is a graduate of Le Cordon Bleu, a passionate craft beer fan, and a member of the "Kitchen Killaz" team at the renowned Brick Store Pub.  During our selfish session, we get some info on how to set up your pairing, how to best enjoy your beer and cheese pairing, and we sample a few cheeses with a few beers and see how well they play together.  Although there are guidelines when pairing, there are no rules.  McCoy says the main goal is to enjoy yourself.  Ideally, you'll find a combination that brings out flavors of the cheese or beer that you wouldn't have tasted, or a combination that makes muted flavors pop.  However, you do it, just have a good time. Cheeses and beers we tasted Karst Cave-aged with Creature Comforts Bibo Pilsner Cheddar/gruyere blend from Karst in Vermont Sharp and buttery Also pairs with Kolsch or Cabernet Sauvignon Accompaniments: Dark chocolate, soppressata, caramelized walnuts, dried apricots Ewephoria Sheep’s Milk Gouda with Trim Tab Mosaic Singularity and Old Nation Boss Tweed From a small family farm in the north of Holland, aged 9-12 mos Butterscotch sweetness and nuttiness Also pairs well with bourbon, Malbec, Riesling Accompaniments: Pears, whole grain bread, Italian speck. Cravanzina and Zillicoah Saison From Caseificio dell‘Alta Langa in the Southern Piedmont region of Italy Cow and sheep’s milk soft rind cheese, ripened for about 15 days Very soft and buttery, with earthy mushroom character Shout Outs / Links Beats Brews & Life | Bernard's podcast feature craft beer talk, interviews with music producers, and live beat sessions.  Very cool show, make sure to check it out. Brick Store Pub | One of the world's best beer bars is nestled on the square in Decatur, GA.  They offer an impressive tap list, overwhelming bottle list, and fantastic food.  If you haven't been to BSP you're missing out.  Make sure to catch one of Chef Bernard's beer and cheese pairings.... and ask to see the cellar menu.
