Kia ora. Welcome to Wednesday's Economy Watch where we follow the economic events and trends that affect Aotearoa/New Zealand. I'm David Chaston and this is the international edition from Interest.co.nz. Today we lead with news of a changing of the guard. Countries are moving away from US Treasuries as a core reserve asset, replacing it with gold. At the same time, crypto values including for bitcoin, seem to be fading fast. But first up today, there was a full dairy auction overnight, one that brought slightly lower overall prices, with the USD index falling -0.6% mainly on -3% lower SMP prices. Milk fat products like AMF. Butter and Cheddar all rose, offsetting the fall in powder prices. But the NZD has also strengthened, so the result in NZD terms was a -2.0% fall. A pull-back in demand from China is part of this story too. In the US, they reported a surge in April job openings, their most in 18 months, notably in California and other western states. It is a services related thing, with manufacturing jobs not really participating. Meanwhile, the US RCM/TIPP economic sentiment survey fell slightly in June from may, but to its lowest in two years. And the US Logistics Managers Index is showing the full impacts of the current supply-chain disruptions and stockpiling. It held in May at its highest since the pandemic stress period. It is increasing at an increasing rate for inventory costs, warehousing capacity, and freight prices. In China, we should note that it is wheat harvest season and that they expect a bumper result. At the same time, both Australian and US farmers are hesitating in their plans for wheat as high fertiliser and fuel costs threaten to make the prospects very uncertain. In the EU and as expected, CPI inflation firmed up to 3.2% in May from 3.0% in April. Their core inflation rose as well. It seems to be only about rising fuel costs at present with the spread wider quite limited. Will the ECB hike its policy rate on June 11? Markets are betting 100% it will. In Australia, they have slipped into their first trade deficit since 2017 in the March 2026 quarter. Exports of minerals fell (except for gold) while imports of data center equipment surged. Globally, it is worth noting again that aluminium, zinc, copper and tin are all now either at record highs or at post-pandemic highs. The UST 10yr yield is now just on 4.46%, down -1 bp from this time yesterday. The price of gold will start today down -US$9 at US$4482/oz. Silver is down -50 USc at just over US$75/oz. Interestingly, an ECB analysis released overnight has highlighted that after the run-up in the gold price, at the same time as the value of US Treasuries fell, gold was the largest single asset held for 'foreign reserves'. (see Chart 7) Oil prices are up another +US$2 just under US$93.50/bbl in the US, while the international Brent price is now on US$96/bbl and up +US$1.50. Hormuz remains shut. The Kiwi dollar is lower from yesterday at this time at 59.2 USc, down -30 bps. Against the Aussie we are also down -40 bps at 82.5 AUc. Against the euro we are down -10 bps at just under 51 euro cents. That all means our TWI-5 starts today at just over 62.7 which is down -20 bps from yesterday. The bitcoin price starts today at just on US$67,464 and down a sharp -5.9% from this time yesterday and falling. Crypto funds are getting excess redemptions at present. She's been the test kitchen director at Saveur and was executive culinary director at Vice's Munchies. Her first cookbook, “The Hot Dog Cookbook: 50 Recipes for the World's Best Food,” was recently released and is full of classic, international, and original takes on her favorite food. Farideh joins host Jessie Sheehan to talk about growing up in an Iranian-Italian household, how cooking became her path after college, what she learned working in restaurants in New Zealand, and how a chicken liver pâté recipe led her to Saveur. They also dive into “The Hot Dog Cookbook,” and Farideh walks us through her Klobásník recipe—a savory pastry with a yeasted dough traditionally wrapped around sausage. The A2 protein variant was identified back in the 60s as a genetic difference among cattle. Recent consumer interest has driven a demand for A2/A2 milk, resulting in increased prevalence in the dairy industry. Acknowledging the importance of protein in cheese production, food scientists have worked with cheese makers to both identify and reduce the impact of A2 on cheese yield. Beyond yield impacts, Dr. Ibanez and his team of researchers at the Center for Dairy Research wanted to better understand specifically how proteolysis differs when casein proteins change and if this knowledge can ultimately be used to improve the human health impacts of cheese. We return to the 1950s tv series The Adventures of Sir Lancelot with two episodes: Episode 3, "The Queen's Knight", which takes some inspiration from Chretien de Troyes' Lancelot, le Chevalier de la charrette as well as Malory's Le Morte Darthur, with Guinevere abducted by Mordred and Lancelot disguising himself as a peasant driving a cart in order to rescue her. Episode 20, "Maid of Somerset", where the people of Cheddar, famed for its cheese, are subjected to the cruel king Meliot, who sells his people into slavery, until Lancelot conspires with the peasants to conduct an uprising against the king. Both episodes are interesting in how they utilize Arthurian legend in order to tell more egalitarian stories, with common people frequently pointing out that all these knights and kings never have to deal with the pains and humiliations they live under. Čuvar Iris Pinot Noir 2024, Marlborough RRP $29.99 A ripe and fruity expression with core varietal flavours of cherry and raspberry, red flowers, and boysenberry. There are some wood spice moments and earth-smoke suggesting clay. A dry wine with fine easily dissolved tannins along with a refreshing acid line. Balanced, well-made and ready to drink from day of purchase through 2029. The Food: A vegan or vegetarian risotto that is also gluten free. The tipping point in flavours is often what style of cheese to use. For vegans I suggest either the Veesey grated mozzarella or Epic brand Cheddar. For regular vegetarians a standard parmesan or similar. Also good to mention is using a whole leak, lots of peas and corn if you have any, and any other veges makes this an ideal match to the Pinot Noir from Čuvar. The Season: Rather epic for Pinot Noir from Marlborough. The region enjoyed warm to hot days and some cool night allowing for ripeness and acidity and ripe skin tannins too. La Pine Library is hosting a free event this Saturday, “Not Your Mama’s Cheddar,” as part of Deschutes Public Library's monthlong exploration of fermentation, decay and rot. Teri Tith is leading Saturday’s event, drawing on her extensive knowledge about cheese and years of experience working as a cheesemonger at Market of Choice in Bend to help educate the public about this delicacy, including cheddar, her personal favorite. But to say Tith is a cheese expert is an understatement. She’s a Certified Cheese Professional, which she was awarded in 2023 by the American Cheese Society. Tith earned that distinction by working more than 4,000 hours in the cheese industry, and she also had to pass an exam testing her knowledge on the production, distribution and science of cheese. Tith also holds a Level 3 certification in wine from the Wine and Spirits Educational Trust, which she says has helped inform the kinds of wines she selects for wine and cheese pairing events at tasting rooms in Bend. While most people know about the natural pairing of cheese and wine, most don’t know about the pairing possibilities of cheese and sake, an alcoholic beverage made from fermented rice. Last autumn, Tith offered cheese and sake pairing classes and is now pursuing a Level 2 certification to boost her knowledge of this traditional Japanese beverage. Tith joins us to share more details and insights into artisanal cheeses made in Oregon and beyond.

There's a chill in the air on this midwinter day — and a warm, mouth-watering aroma wafting from the kitchen. That's right: the Lutheran Ladies are brewing up savory pots of soup in an all-new Iron Ladle Challenge! Erin leads off with a Finnish salmon soup (lohikeitto) that leaves her co-hosts drooling. Rachel then shares a trio of seasonally appropriate soups: seafood chowder for holiday decadence, “feel-better soup” for post-holiday recovery, and curried butternut soup (AKA sunshine soup) for midwinter malaise. Finally, Sarah shares her foolproof formula for improving the perfect, healthful (Instant Pot) soup every time. Finnish Salmon Soup (Lohikeitto) (From Erin) Serves 4-6 Ingredients: 1# salmon fillet 2T butter 1 large leek, sliced .25# mushrooms, thinly sliced 8 cups chicken stock or bone broth, divided 1 jar clam juice .5# russet potatoes, peeled and diced 1 lg carrot, sliced 1t whole allspice Fish sauce for salt .5# bag frozen kale (or 1 large bunch of fresh kale) (spinach is too delicate) 10g fresh dill, finely chopped, divided 4-8 tablespoons heavy cream Instructions: Heat 4 cups of stock and gently poach the salmon fillets until just cooked. Remove the salmon to a plate and reserve the salmon broth. When fillets are cool cool, remove and discard the skin. Meanwhile, melt butter in a soup pot and saute the leeks and mushrooms for ~10 minutes. Add all of the stock (4 c from salmon and 4 c remaining) to the pan with the leeks and mushrooms, along with the potatoes, carrots, allspice, and half of the fresh dill. Cook for 10 minutes, or until the potatoes are just tender. Add the kale and return to a simmer. Stir in a couple of dashes of fish sauce for salt (less than 1 teaspoon). Add the salmon pieces to the soup and gently heat until warmed through, just a few minutes. Add cream, the remaining dill, and salt and pepper to taste. If Freezing (you will use less stock initially) Heat 4 c stock and gently poach the salmon fillets until just cooked. Remove the salmon to a plate and reserve the salmon broth. When fillets are cool cool, remove and discard the skin. Meanwhile, melt butter in a soup pot and saute the leeks and mushrooms for ~10 minutes. Add the 4 c salmon broth to the pot with the leeks and mushrooms, along with the potatoes, carrots, and allspice. Cook for 10 minutes, or until the potatoes are just tender. Add a couple of dashes of fish sauce (less than 1 teaspoon). Strain the vegetables, reserving broth until cool. Divide among 4 freezer containers: Poached salmon Frozen kale and dill. 2oz clam juice/container Vegetables (kale, mushrooms, potatoes, carrots Broth (start with ¾ cup, and distribute the remaining) To serve, heat on the stove until hot, adding a 1 cup container of bone broth to fill out the rest of the broth. While soup is reheating, put a small puddle of cream (1-2 tablespoons) in soup bowl and slowly add hot soup. Seafood Chowder (From Rachel) HT Cari Haan Saute together over medium heat for approx 5 minutes: 1 stick of butter 1/2 onion - diced 1 tsp garlic salt or powder 1/2 tsp thyme Mix in: 1/2 cup flour 1 cup half 'n' half 2 cups milk 4 oz (half block) of cream cheese (softened in microwave) 1 can cream of potato soup 1/2 tsp black pepper 8 oz. can of minced clams (with juice) 8 oz can of tiny shrimp (with juice) 16 oz of flaked crab broken up in desired sized pieces (I use the artificial crab meat) 16 oz of frozen salad-sized (extra small) shrimp (May add milk as needed for desired consistency . . . will need to do this when heating leftovers) Heat until hot throughout. Serve with oyster crackers and shredded Cheddar cheese. Note: May substitute or add additional seafood as desired. The more you put in, the tastier it gets. :) Rachel's Feel Better Soup Note: quantities are approximate. I rarely measure anything for this recipe. Saute in 2 T olive oil: 1 lb. diced chicken 1 c diced celery 1 c diced carrots Cook until chicken is browned and vegetables are beginning to soften. Add 2-4 cups chopped cabbage and/or kale. Cook lightly. Add 4-6 cups chicken broth or an equivalent combo of bullion and water. Add salt, thyme, and turmeric to taste. Add starch of your choice: barley, rice, or noodles. Cook through. Serve with warm tortillas or crusty bread. Curried Butternut Squash Soup (From Rachel) Halve, remove seeds, and oven roast one butternut squash, upside down in a little water. (350 oven for about an hour or until soft throughout) Cool slightly, then use a tablespoon to remove squash from peels Use blender, immersion blender, or foley mill to puree squash In saucepan, combine squash puree with chicken broth (approx. 2 cups), 1 can unsweetened coconut milk, and 1-2 cubes of Golden Curry flavor. Cook over medium heat until all ingredients are blended and soup is hot. Do not boil. Non-curry option: Use whole milk instead of coconut milk, and flavor with salt, pepper, onion powder, garlic powder, or other favorite seasoning. Sarah's Instant Pot Soup Formula Single serving 4(ish)oz meat (beef, chicken, salmon, etc) 8oz baby carrots 4oz green beans or peas (or other legume) 50g cabbage (or a handful lol) 2oz butternut squash 1 Tbs olive oil 1 cup water 2 tsp Celtic gray salt (or to taste) black pepper Brown meat (not necessary with fish) in olive oil. Place all ingredients in Instant Pot. Steam for 0 minutes (will vary by IP make/model) Instant pressure release.
