The boys drink and review Honey Kolsch by Rogue Brewing, then talk about how the media treats mass shootings. As with so many issues in the news today, you have to peel back the agenda from the news coverage. Often the media can't even wait for the facts to come out before they start with their interpretations and explanations. You can almost feel the hunger by the news organizations for a story that confirms their view of the world. Mass shootings are almost always used as an excuse to promote new laws, even if the new law wouldn't have done a thing to stop the latest outrage, and even if there were already laws on the books that should have. In story after story, if a shooting fits with the liberal media's agenda, we hear about it for weeks. If the story doesn't confirm their agenda, it quietly goes away. It's all about identity politics. But only when that's convenient and fits the preferred template.

Almost Heroes is the final leading role of comedy legend Chris Farley. Five months prior to its release, he tragically died of an overdose. With that dark cloud hanging over the film, it's not altogether surprising it suffered at the box office. On a budget of $30 million, it grossed just $6.1 million. Its 5% rating on Rotten Tomatoes probably didn't help either. For fans of Farley's work, though, there are things to be enjoyed about Almost Heroes. 241: Edward Slingerland Argues that Beer is an Evolutionary Adaptation, not an Accident

The human brain is an amazing piece of machinery. It's uniquely adapted to success in the world we live in, and the result of that success is evidenced by the population spread of humans across the planet. Yet one element of the brain that provides a particular evolutionary benefit—the prefrontal cortex—also has a habit of getting in the way of “softer” tasks, such as building social relationships and creative problem-solving. As tool-using primates, early humans discovered a rather effective way to overcome the occasional limitations of the prefrontal cortex—low-strength alcohol produced via fermentation. In this episode, author and professor Edward “Ted” Slingerland (https://www.edwardslingerland.com) walks through that evolutionary history, explaining how prior theses about alcohol—that it was an evolutionary mistake or shortcut for the brain's pleasure circuits, like junk food—got it all wrong. Instead, alcohol has played a crucial role in the development of the human species, allowing evolutionary advantages not enjoyed by other primates by creating space for social trust and creative problem-solving. By down-regulating the prefrontal cortex in managed, time-limited ways, it has allowed us to develop the deep, trusting social relationships necessary for widespread community. Eric Larkin enjoys constraints. Gallow Walkers is wild west Blade, only if Blade was terrible and went straight to DVD. With a $17 million budget, that probably wasn't the plan. But, shit happens and Gallow Walkers is indeed that unsavory term. It's sort of a shame because the movie isn't devoid of interesting ideas. It just executes them poorly, is stuffed with an insane amount of backstory for a 90-minute film, and boasts costumes and sets that look to be straight out of a local theater production. And it doesn't help that the plot makes very little sense. Wesley Snipes is Aman ("a man"), a drifter who roams the wasteland murdering Gallow Walkers (the undead, sort of). One problem: Anyone he kills comes back from the dead. What? Why? Well, his mom, who's a witch, made a deal with the Devil (?) after he was shot avenging the love of his life. I'm not making any of this up; and yes, listeners, in some awful corner of the multiverse, this movie would perpetuate itself until the end of time. Anyway, this was filmed during Snipes' issues with the law, which resulted in it sitting on a shelf for years. It even features a fake Snipes doing VO exposition. As comically bad as that is, it's somehow not even the worst part of the movie. Barrett Tillman's love affair with yeast started innocently enough—as his small group of homebrewing friends divided up brewday tasks, he arbitrarily chose yeast duty. Little did he know that choice would turn into a passion that would define his brewing career for the past decade. Homebrewing led him to pursue brewing professionally, and over the course of a few years and a few different positions, he eventually landed at Deep Ellum Brewing in Dallas, where he became head brewer. Sour beer has long been his passion, and even in this commercial environment, he was able to bring his fermentation experience to bear, launching the brewery's first kettle-soured beer. However, a series of events led Tillman to question the systemic culture of craft beer and the toll it can take on individuals. The social requirement to be chief party officer led him to do things that he ultimate didn't feel comfortable doing—from leading bar-wide beer chugs to drinking in an unhealthy way. Those behaviors ultimately led to a crux moment where Tillman was arrested for DWI while parked in his own driveway. Passionate people tend to have exacting ideas of how to do things, and Pierre Tilquin is no exception. The founder of Gueuzerie Tilquin (https://gueuzerietilquin.be/en/) has spent over a decade now purchasing lambic from classic houses like 3 Fonteinen, Cantillon, Boon, Lindemann's, and Girardin then aging this lambic in his own facility before finally blending it in carefully considered ratios. A perfect lambic blend is not solely based on taste—making sure the blend has the perfect amount of residual sugar to re-ferment in the bottle to the appropriate carbonation is of utmost importance. But some of the myths about lambic—like the idea that young lambic provides the fermentable sugar for bottle conditioning—has not proven true in Tilquin's experience. Certain producers tend to produce lambic that finishes at higher or lower gravities. Some years, weather and culture conditions may completely alter the expected fermentation arc. When Nino Bacelle and Guido Devos started homebrewing together in the 80's, Belgian beer was in the midst of a sea change. Consolidation was afoot as larger industrial breweries swallowed up smaller concerns, while an earlier generation of brewers had reached retirement age with few of the younger generation interested in carrying on the brewing tradition. The beers that they loved and grew up drinking were disappearing—subsumed by a wave of sweeter mass-produced crowd-pleasing beers. To be fair, there were (and continue to be) some historical holdouts. But generally speaking, bitterness was slowly leaving the lexicon of Belgian brewing. Bacelle, who grew up around beer (his father was a guezesteker, or blender, but did not brew), longed for the beers he had tasted growing up. Together with homebrewing partner Devos, he decided to launch a beer brand, De Ranke (https://www.deranke.be), to address the opportunity they saw in the market for beer that embraced bitterness. First was their Guldenberg Tripel, followed closely by what is now considered a paragon of hop-forward beer, the aptly named XX Bitter. Today, these beers feel familiar, but they were groundbreaking in their time and remain somewhat unique today due to the peculiarities of De Ranke's process. It's a striking spot for a brewery—the site of a former mill on a winding stream, with the village church looming overhead. Antidoot's (https://www.antidoot.be) Tom Jacobs didn't set out with the goal of launching a brewery. It was more a natural outgrowth of his and his brother's homebrewing, which grew too large to remain just a hobby. Still, Jacobs pursues every one of the small batches they brew with the exploratory zeal that informed their homebrewing days. The brewery and batches are small, intentionally, for two reasons. First, Jacobs is not willing to compromise their creative vision to achieve the scale necessary for a larger corporate entity. It's ocean aged at sea and it says, blend of straight bourbon whiskeys. Very small batch. And then there's a little label on the side, and it says, Ocean aged at sea. Ocean voyage 17. Hand selected by Bourbon Street Barrel number five. Batch number 1 40 Bottle number 30. So it makes it sound very special. Yeah, well, when at the top on around the neck even says voyage 17.
