The boys drink and review Sunshine Pilsner and Springtime Lager (both by Troeggs) while they discuss beer styles.  There are only two main categories of beer: lagers and ales. They are distinguished by the type of yeast used (not by color or strength). Lagers use a bottom-fermenting yeast that ferment at lower temperatures while ales use a top-fermenting yeast that ferment at slightly higher temperatures.  Lagers tend to be more crisp in flavor while ales tend to have more complex flavors.  Generally speaking we think of light-colored beers when we think of lagers, but there are dark lagers like a bock or a schwartz beer, and there are dark-ish lagers like Octoberfest or Dunkel. Lagers take longer to ferment.  Ales tend to be quick-fermenting beers that can be ready to drink in a week or two. Historically, ales were served at cellar temperature. (Warm by U.S. standards.)  Most modern craft beers are ales.  Some of the contrasts that make up the various beer styles are …  * Ale vs. lager  * Dark vs. light  * Malty (sweet) vs. dry  * Hoppy vs. mild  * Strong vs. weak  Ales were the more traditional beers in America, but when the Germans came over with their clean, crisp lagers, they won over the American palate, and American-style lagers became the standard.

This exciting course is currently taught by Woody Mott, son of Todd Mott the New England brewing legend, and Horst Dornbusch, editor and contributor for The Oxford Companion to Beer, at Tributary Brewing Company. The class will start off with Todd's journey from the finance world to the brewing world, explaining his deep involvement and understanding of every step in the beer-making process. Horst will then join us and kick off the lecture with a dive into the history of pilsner, the Californian Common, New York Cream Ale, all before introducing us to Tributary's favorites like the flagship Pale Ale, the Dinkelator, and the soon-to-run-out Imperial Stout that will be available April 23. Lastly, Todd will go deep into his approach to recipe writing and his adoration for Aventinus, whereas Horst will emphasize the importance of ingredients and agriculture in the making of the beers, along with a climate change industry report. Specifically - the Treasury wants to give beer lovers more choices than “the usual suspect” and help shake their grip of 65% of the US beer market. The answers could include everything from rethinking how beers are displayed on grocery store shelves to considering whether brews can be shipped straight to doorsteps. The Treasury Department came up with its list of suggestions in a 64-page report as part of a plan to improve small business access to the beer, wine, and spirits industry. Part of what they're looking at is how state alcohol laws impact competition for smaller brewers, how mergers affect smaller companies, and how the labeling laws may be making it difficult to comply with laws. Horst Dornbusch is a well-known brewer, author, beer judge, and speaker, and the founder of Cerevisia Communications, LLC, a consulting company in the international brewing industry. He has published hundreds of articles, as well as many books, in English and German, for both brewing professionals and beer lovers alike. For Brewers Publications, he has written PROST! The Story of German Beer (1997); Bavarian Helles (2000); and Altbier (1999). In 2010, he published The Ultimate Almanac of World Beer Recipes (Cerevisia Communications), followed by Die Biersorten der BRAUWELT® (Hans Carl, 2014), Beer Styles from around the World (Cerevisia Communications, 2015), Das Große BRAUWELT® Lexikon der Biersorten (Hans Carl, 2017), and мирые сортов пива (2018; the Russian translation of Beer Styles from Around the World), and Dark Lagers (with co-author Thomas Kraus-Weyermann, MBAA, 2018). He was also the Associate Editor of The Oxford Companion to Beer (Oxford University Press, 2011). Horst is a frequent media guest and he has been the script consultant on two Discovery Channel programs about beer. He was born and raised in Germany, and is now He is now a dual German-American citizen. He is a former Fulbright Scholar and holds a B.A. from Reed College and an M.A. from Brandeis University.
