Many of us are travel looking for food experiences and we often want to eat something that is authentically of that place. So we seek out the local delicacy which hopefully reflects the local landscape, history and people. However many of the foods we think of as quintessential ‘destination' foods are elevated in the 20th century with the rise of easier travel and more and more tourism. On the other hand, it's easier than ever to access to ‘global' food in the towns and cities we live in. Sheila Dillon explores what travelling to eat looking for authentic experiences means in an increasingly globalised world.We start the programme hearing the story of Nashville Hot Chicken from journalist Zach Stafford. In recent history, Hot Chicken went from an obscure speciality of a specific community in North Nashville, Tennessee to one if it's most iconic symbols. Zach tells the story of how Hot Chicken became part of the ‘Disnification' of Nashville as it has become a popular tourist destination. But like so much of American culture the story is racialised with new white owned businesses making money from a food created by a black community.Sheila then travels to Brussels to become a food tourist herself. Guided by Elisabeth Debourse, Editor-in-Chief at Le Fooding she explores whether the search for the elusive ‘authentic' local food is helpful in trying to get a good meal. She visits Rue des Bouchers and restaurant Les Brigittines.Someone who's thought a lot about food and place is food writer Anya von Bremzen. Brad had previously played the cello in the school orchestra and had held a strong interest in sports, but his true passion for old time was realized at Meadowlark Music camp in Maine. He signed up for the banjo for beginners class after his father (the renowned fiddle and hammer dulcimer player Ken Kolodner) brought him along to the camp under the condition that he was to play some kind of music that week. While Brad had grown up around traditional music through his father's performances with his band Helicon, dad's recordings and music lessons at the house, he wasn't drawn to that particular style of music. Once he started on the banjo, however, he began going down YouTube rabbit holes, going out to jams and soaking in as much as he could. Brad went to school in Ithaca, NY, where he started hosting a folk radio show that further deepened his love of old time. Once he returned home to Baltimore, he became invested in community organizing with weekly jams and music festivals.Brad's released albums with his band Charm City Junction, as Ken & Brad Kolodner and recently, he's put out his debut solo record, Chimney Swifts. The album focuses on what he calls “private music.” This is what musicians play when they first pick up their instruments, it's familiar and evokes time and place. In our conversation, he goes into detail about what that means and how the pandemic has impacted his practice of "private music." He also talks about his most recent project The Birds' Flight with Pete Sutherland and Timothy Cummings. Pete and Tim were working on Scottish songs and then decided to bring Brad in since he has an affinity towards genre-mixing and is a kick-ass banjo player. In addition to reviewing City's prospects for this coming season Phil talks with fondness for TC and recalls his selfless act in letting Clive Middlemass and long serving scout Jock Rae lead the team out on to the Wembley pitch on that memorable day in 1986

Little did we know as we started our live podcast that barely an hour after the final whistle we would be reporting on the ending of Dean Holden's tenure as Head Coach after just 41 games. He had a credible win rate of 44% but a sixth straight defeat in another dreadful showing against Reading who cruised to a 2-0 win brought about his demise. Mark, DaveFevs, Ian, Lezz & DaveP analyse the match action and went on to discuss the contents of Steve Lansdown's Radio Bristol interview before the rumours became fact that Holden had gone. Talk then switched to who will be next in the hot seat and has Lansdown got a masterplan that could surprise us all! Holden was no hero in the eyes of the City fans. He is a decent bloke but one who should never have got the job in the first place and the Man who fired the Holden Gun, Mark Ashton, looks as though he will live to fight another day.

From history student to running one of the early commercial radio networks. In this hour of ‘Radio Moments – Conversations, Colin Mason tells of his move to the US where he indulged his love of radio whilst studying – and how he persuaded his way through the doors of local stations there.  Back home, after a short spell at the BBC, he moved to TV as a continuity announcer before returning to the Corporation at BBC Radio Durham and Radio Bristol.  As commercial radio began across the UK, Colin tells how it felt to set up the first station in Wales – Swansea Sound, before moving to launch Chiltern Radio as programme controller.   As the Chiltern network grew into Northampton, Milton Keynes - and Wales and the South West on winning the regional licence, Colin headed the management team for 14 years. He opens up the struggle to retain control – and how it felt when his efforts were thwarted and the stations were bought by GWR. Colin also tells of his radio ventures whilst serving in the Forces -and those in his new home in the Channel Islands. He shares his thoughts too on the future of radio,  and his philosophy – ‘This is showbiz – be an entertainer’. This is the Colin Mason story – in his own words.

Stephen Merchant first came to fame with the TV sitcom The Office, which he co-wrote and co-directed with Ricky Gervais. He continued to work with Gervais on the series Extras, Life is Short and An Idiot Abroad. His comedy hero as a young man was John Cleese and as a fellow tall West Country boy, he felt he would try his hand at a comedy career. As a teenager, he worked at Radio Bristol, was a wedding DJ and enjoyed drama at school. While at Warwick University, he created his own radio programme, The Steve Show. Those radio production skills encouraged him to send in his CV to a new London radio station, XFM, where the head of speech was Ricky Gervais. Following a successful interview – conducted in a pub – Stephen became Ricky’s assistant. Stephen left XFM to join a BBC training scheme. It was the short film he made with Ricky as part of his course which would eventually lead to the creation of The Office. Alongside his successful comedy partnership with Gervais, Stephen has pursued his acting and writing ambitions and this year wrote and directed his first film, Fighting with my Family, based on a family of wrestlers. His performance as a stand-up led to his HBO series Hello Ladies, and he starred in his first stage play, Richard Bean's The Mentalists, in London in 2015. His work has earned him two Golden Globe Awards, three BAFTAs, a Primetime Emmy Award, and four British Comedy Awards.
