While the chicken market may be saturated, Sobocinski and Tekin found a niche for hot chicken, and the rest is history.Tekin and Sobocincki have history when Tekin worked for Sobocincki at a restaurant he owned years ago. During his interview, Tekin told his boss he'd like to open a business with him someday. They stayed in touch as Tekin opened his own businesses and in 2018, Tekin contacted his former boss about a business opportunity he had.That business? A Nashville hot chicken concept."There was nothing like it in Connecticut," Sobocinski said. He wanted to do a brand, however, and initially said no. He was invited to meet the other two founders, and Sobocinski was "blown away" by them and the food. He was in.Tekin said there was a story created behind the brand they wanted to create, and at the same time they were doing rigorous recipe testing."After three or four months of work, I just felt like something was missing in the organization," Tekin said. Micah Klasky is from the Dallas-area, but spent his formative years growing up in Jonesboro... From a very young age, one of the tv shows he grew up watching was the greatness of Justin Wilson. If you've never heard of Justin Wilson, just look him up on YouTube. He was an exceptional Cajun cook and could absolutely spin a yarn. You'll see what I mean... he was the best. So, Micah was destined to cook, obviously. He started making his way through the business because of a mentor that he connected with. It included a seasonal work-trip to the east coast. Micah will tell you that story. He'll also talk about some of the best advice he's gotten, and it's the same advice that I've given before when talking to college kids. What got him from Little Rock to Bentonville in 2014? He'll tell us. Also, he's super-passionate about No Kid Hungry. He talks about 2 fundraisers he's doing for them, including a chef's dinner with some insanely talented chefs, and there will be some Michelin Stars represented at that dinner. Dave's Hot Chicken began as a tiny pop-up, selling spicy chicken tenders and fries from a tent in East Hollywood. Their homemade take on Nashville Hot Chicken was an overnight sensation in a city that had barely heard of it, and within days, co-founder Arman Oganesyan and his partners were working frantically to serve the long lines out front. Imgur albumSpecial Ingredients - NoneSpecial Equipment - None1 whole chicken, broken down into breasts, wings, legs, and thighs1.25 cups pickle juice3 tablespoons sugar1.5 cups buttermilk1/4 cup hot sauce2 cups all purpose flour1/4 cup corn starch2 quarts frying oil (vegetable, peanut, avocado)3 tablespoons of flour seasoning (mix together 1 tablespoon each of salt, pepper, garlic powder, onion powder, paprika, oregano, cayenne pepper and then use 3 tablespoons of this mixture)For the hot oil:3/4 cup of frying oil1/4 cup cayenne pepper1 tablespoon paprika1 tablespoon brown sugar2 teaspoons chili powder1 teaspoon garlic powder1 teaspoon saltWhisk the sugar into the pickle juice until it's dissolved. In a shallow container, arrange the chicken pieces in one layer and pour the pickle brine over the meat. Pepper the surface of the chicken, cover with Saran Wrap, and refrigerate overnight. Drain the pickle juice from the chicken.Mix hot sauce and buttermilk together in one container and the flour/cornstarch/dry seasonings in other container. Submerge the chicken in the buttermilk and then dredge in flour. Go back into the buttermilk and a second coating of dry ingredients. Let the chicken rest on a wire rack, refrigerated, for 1-3 hours after breading. Fry in oil at 325ºf for 10-12 minutes, working in small batches. Hold cooked chicken in a 250ºf oven while subsequent batches are frying. Once all of the chicken is cooked, allow the oil to cool for 15 minutes. Use 3/4 cup of the oil and stir the spices into it before brushing it onto the finished chicken. Serve on a soft white bread with cold pickles.

He worked under chefs like Thomas Keller in Beverly Hills, Gordan Ramsay in London, and Nobu Matsuhisa in West Hollywood, before becoming the executive chef at La Poubelle in LA's Franklin Village. She is undeniably one of the most eloquently emotive vocalists of modern times. In the studio with us is award winning recording artist Lorrie Morgan. Lorrie shares with us what it has taken to be successful, the perils and pitfalls that have gone along with it, and the desire she has to keep going. Morgan also shares with us how she and her late husband, and Country music legend (and recent Country Music Hall of Fame inductee) Keith Whitley met, her time with Tammy Wynette, Loretta Lynn, and her close relationship with Naomi Judd. Lorrie also explains how she has become the official Ambassador for “Nashville Hot Chicken”, and with the help of some of her famous friends, have created a music video promoting the Nashville staple. Lorrie Morgan has been around great songs all her life. She is a Nashville native who is the daughter of Country Music Hall of Fame member George Morgan. She made her debut on the Grand Ole Opry stage at age 13, singing "Paper Roses." Her father died suddenly of a heart attack at age 51. She was 16 at the time and just beginning her musical career. Lorrie Morgan began making her own records shortly thereafter and was inducted into the Grand Ole Opry at just 24 years old. Morgan married fellow country singer Keith Whitley in 1986. She was signed to RCA Records in 1987, and her onslaught of hits began the following year. Whitley's tragic death of an alcohol overdose in 1989 left her a widowed working mother. Their duet "Til a Tear Becomes a Rose" earned her a 1990 CMA award. Her first three albums, Leave the Light On (1989), Something in Red (1991) and Watch Me (1992), all earned Platinum Record awards. Her Greatest Hits collection (1999) is also Platinum. War Paint (1994), Greater Need (1996) and Shakin' Things Up (1997) are all Gold Record winners. She sang "The Sad Cafe" on Common Threads: Songs of the Eagles, which was named the CMA Album of the Year in 1994. Country fans voted Lorrie Morgan their TNN/Music City News Female Vocalist of the Year in 1994, 1996, 1997 and 1998. Lorrie Morgan, the first woman in her genre to begin her career with three consecutive Platinum albums, is back in the studio with award-winning producer Richard Landis, working on a new album. It is sure to be yet another collection showcasing the rainbow of emotions, from darkest heartache to bright, shiny humor, that is the hallmark of Morgan's range. Concurrently, Morgan is working on a second project of original songs co-written with Larry Gatlin. "Where I am in my life right now, I'm not afraid to express what I feel," she says. “I'm not afraid to express my views on anything, especially on being a woman and my experiences in this business and in life.” Morgan is known for her lustrous vocal phrasing and the down-to-earth believability of her torchy performances. In many ways, Lorrie is a living, breathing country song, and she knows what she sings. She is a peerless song interpreter, drawing from a deep personal well that spans enormous tenderness to cheeky hutzpah. Whether covering a classic or sharing one of her own songs, Morgan is truly a song stylist in the grandest tradition. "I have always been a songwriter and I do love to write," she comments. "But I'm only comfortable co-writing with a few people, and I don't like appointment writing at all. Plus, I'm not one of those people who says, 'If I didn't write it, I'm not going to record it.' If somebody else's song is better, I'm going to record it and not my own. Morgan has recorded in collaboration with her father, as well as Whitley, Frank Sinatra, Johnny Mathis, Tammy Wynette, The Beach Boys, Dolly Parton, Andy Williams, the New World Philharmonic, and Pam Tillis. She has toured with George Jones and shared a stage with Jerry Lee Lewis, newly inducted into the Country Music Hall Fame along with Whitley. “My children and I are thrilled to see Keith's name added to the list of stars who've earned their place in the Country Music Hall of Fame,” she says. “It is a well-deserved honor, though Keith himself would've been painfully humbled. Writer, educator and Harvard graduate Caroline Randall Williams reveals the staggering number of cookbooks she owns and how her personal experiences and history as a Black woman shaped her vision for her show, Hungry for Answers. Caroline talks about how the women in her life shaped her culinary perspective and what it means to be a steward of Black food and culture. She details the stories she uncovered over the course of filming, including the Black family that created the famed Nashville Hot Chicken and the reality of appreciation versus appropriation. Caroline shares the systemic lack of credit and ownership given to Black creators and what it means to course correct using the story of Nearest Green, the Black man who taught Jack Daniel's how to distill whiskey, as an example. She explores the history of sugarcane and its relationship to convict leasing and the shocking inequities that Black farmers face. Caroline talks about the delicious food she got to experience on the show and her advice for someone who has a story they need to share. Hello one and all and welcome to a brand new Nikoli's Kitchen! This week, I take on Nashville Hot Chicken, something I never knew existed and I'm so thrilled to have found it! I also talk about some things that were stirred up on Twitter lately. How do you deal with detractors? Thank you so much for listening! Featured Recipe for this Episode Spice Rub 3 T salt 1-1/2 T smoked paprika 1 T onion powder 1 T garlic powder 2 T black pepper 2 t Turmeric 1 t ginger 2 t ground red cayenne pepper 1/4 t allspice Combine all ingredients in a bowl and whisk together. Reserve out 2 T, one for the marinade, one for the hot sauce mix- the rest goes into the dredge. Marinade 2 c buttermilk 1/4 c hot sauce 1 T spice rub 1 whole roasting chicken Combine all ingredents in a large bowl and whisk together. This was enough for 1 large roasting chicken, broken down into quarters (wings removed). Marinate for 24-48 hours. Dredge 1-1/2 c flour 1/2 c cornstarch Remaining Spice mix Combine all ingredients in a bowl and whisk together. Remove your chicken and place on a rack above a baking tray, allowing the excess marinade to drip off. Dredge the chicken in the flour mixture and return to the rack, allowing it to rest for 10 minutes. Dunk back in the buttermilk, then dredge again and return it to the rack, letting it rest another 10-15 minutes before frying. Making your chicken! Preheat your oven to 400°. Heat your oil to 375°. Fry your chicken for 5-7 minutes, or until the coating is a beautiful golden brown color. You may need to do this in batches. While your chicken is frying, clean the rack and baking tray you used during dredging, then line the tray with foil. Transfer the chicken to the baking tray and place into the oven for 25-35 minutes (this will highly depend on the size of your chicken, mine took about 35 minutes in the oven after frying). Remove the chicken from the oven and place on a paper towel-lined tray to rest. Hot oil mix 1 T spice mix 2 T brown sugar 1 T smoked paprika 1 t cayenne 1 T garlic powder 1 c oil from frying While your chicken is resting, prepare your hot oil mix. Combine all of the dry spices in a bowl and whisk together. Place them in a small skillet over mid heat and warm them for a few minutes, allowing them to release some of their oils. Remove from the heat. Add the 1 c oil from frying and mix together well. Brush the oil over the finished chicken and serve. Villa Park native and University of Illinois, Chicago graduate, Joe Fontana got his start as a valet working at over 140 restaurant and bar venues including some of Chicago's staples such as The Redhead Piano Bar, Ranallis, Mothers, and the Italian Village. After finding a passion for the industry, Joe worked his way up from barback, to server, to bartender to manager at the late Doc Ryan's in Elmhurst. 6 years of pursuing different marketing and sales jobs in the “real world,” Joe decided to return to hospitality with a small dream of opening a restaurant. So in 2015 Joe opened a pop-up Meatball stand in Oceanside, California. It wasn't long before the meatball stand was selling out night after night and Meatball Republic was born. In 2016 Joe signed a lease for the Meatball Republic, but after a heartbreaking real estate deal gone wrong, Joe was forced to look at other locations. After a year of searching for the right spot, a golden gem made it self available, but this time it wasn't for meatballs. In 2017, Joe opened Fry the Coop, a Nashville Fried Chicken joint focused on becoming the “In and Out” of Nashville Hot Chicken. Fry the Coop got off to a fast start serving 1000's of guest per week in its first month and has big plans for the future.
