České pekárny mají za sebou několik mimořádně náročných let. Pandemie, drahé energie i inflace výrazně proměnily jejich nákladovou strukturu. Podle majitele pekárny Kabát Richarda Kabáta se sice obor postupně stabilizuje, tlak na ceny a provozní náklady ale nekončí a promítá se do konečných cen pečiva. „Zdražovat musíme stále. Dnes už nepřepočítáváme ceny dvakrát ročně, ale každý měsíc upravujeme část sortimentu podle toho, jak se vyvíjejí náklady,“ říká majitel sítě pekáren Kabát v rozhovoru pro Seznam Zprávy. U základních výrobků, jako je rohlík nebo houska, musí podle něj pekárny postupovat opatrně. Právě tyto položky zákazníci sledují nejvíc. „Doufám, že u nás rohlík deset korun letos nepřekoná, možná až v roce 2027 nebo 2028,“ říká Richard Kabát v pořadu Agenda. Agenda.
