This week, Gilly's at the home of award-winning recipe writer, author and YouTuber, one of Bake Off's most celebrated winners and mother of 2, Chetna Makan to talk about her new book, Chetna's Indian Feasts. But in this first episode of a special series this summer, we're talking about food through the prism of matrescence, the raw ingredients which make up the heady mix of motherhood and provide the recipe for life. Like adolescence, matrescence shows us a picture of process, and with it an implicit understanding of what that means. Just as adolescents are always adults in training, so matrescents are mothers in training, and that never stops.The word was coined by anthropologist Dana Raphael in 1973 to describe the experience of half the global population but which is barely known, barely discussed, barely acknowledged. On the contrary, we're supposed to know it all the minute we give birth. It's estimated that perinatal mental health problems alone cost the NHS and social services around £1.2 billion annually. Imagine the impact on families and wider society of way post natal mental health issues – the massive lows that come with the roller coaster of emotions of motherhood – at all ages and stages.The aim of this Cooking the Books series is to introduce the word into the national conversation. 40 years ago the BBC broadcast a new TV cooking series called "Madhur Jaffrey's Indian Cooking". It was a first, and showed audiences that Indian food did not rely on curry powder, and that dishes were different depending on what region of India they originated. But that's not all, the series and Madhur Jaffrey's subsequent books (she has written more than 30) had another effect; it made her a model for two generations of women with roots in India. Today Sheila Dillon meets some of those prominent and hugely successful female chefs, restaurateurs, food writers and stylists who are currently working in the UK, to find out about their lives, and what they make of Madhur Jaffrey's legacy. Asma Khan rose to fame when she was chosen as the first British chef to star in the Netflix series, Chef's Table. She runs her London restaurant, Darjeeling Express, with an all-female staff. Chetna Makan worked as a fashion designer in India before moving to the UK. She switched careers after making it to the semi-finals of the Great British Bake Off in 2014. She is now the author of 5 cookery books, and has more than 210,000 subscribers on YouTube. Ravinder Bhogal is a chef, food writer and author of two books. She also runs the London restaurant, Jikoni, which she describes as being “proudly inauthentic”. Romy Gill is a chef, broadcaster and food writer, and was one of the first Asian women in the UK to own her own restaurant. Rukmini Iyer is a food stylist and writer and the author of the bestselling "Roasting Tin" series of books. Sejal Sukhadwala is a London food writer. Bio: "I was born and brought up in a small town in Central India called Jabalpur. I then moved to Mumbai to train as a Fashion Designer in NIFT. After my college, I worked in Mumbai for a few years before moving to the U.K. in 2004. I have always been interested in food and cooking and have been greatly inspired by my mum's cooking who has taught me everything I know about flavours. After having my 2 children I found my interest in baking grow, it was a perfect way for me to relax and found it very relaxing. I am a creative yet meticulous baker and find baking a perfect outlet for my creativity. Trying out new techniques and challenging myself is what keeps me going. Being on Great British Bake Off 2014 has been an amazing journey and has given me the confidence to try new combinations of flavours. I will always cherish this experience and the time I spent in the tent with my fellow bakers. Soon after the show, I started work on my first book which is all about Indian flavours in some very western bakes. The book is called ‘The Cardamom Trail' and was published in 2016. After that, I went on to write my second book called ‘Chai, Chaat and Chutney' which is all about Indian street food from the 4 corners of India. I wrote this book after intensive research into the 4 cities of India to find some of the most delicious street food. This book was published in 2017. My third book ‘Chetna's Healthy Indian' is all about the food I cook at home for my family. It is the quick, delicious and healthy recipes we enjoy to balance out all the cakes I bake. This book was published in 2019. People living in Seasalter have hit a nerve with those on Sheppey after making a jibe at the island. Residents claims plans to expand a holiday park with more than 90 new mobile homes would make the seaside village near Whitstable 'become like Sheppey'. That's not gone down well with people who call the 'sunkissed isle' home - including our reporter John Nurden. Hear what he had to say. Also in today's podcast, a Kent woman's spoken about being groomed online when she was barely a teenager. 'Chloe' was targeted by men who claimed to be the same age as her. She only realised they were much older when she spoke to them via web-cam. She's now a mum herself, and is urging the government to make child protection a priority in their Online Safety Bill. We've been finding out what work is being done in Maidstone to tackle fly-tippers. There were almost 3,000 cases in the county town last year - that's more than 8 reports every day. And, as Bake Off returns to our screens tonight, we've been catching up with Chetna Makan from Broadstairs who made the semi-finals back in 2014.

From working as a fashion designer in Mumbai to being one of the UK’s most loved Indian cookbook authors, it’s been quite the career ride for today’s guest. Chetna Makan moved to the UK around 14 years ago, and after entering Great British Bake Off in 2014, viewers fell in love with her exotic bakes and Indian twists on British classics, and the rest, as they say, is history. Chetna is now known for more than just her delicious cakes; she’s published 3 cookbooks, her latest, Chetna’s Healthy Indian, came out earlier this year and is filled with delicious, homey and super easy home recipes that you can whip up in no time.  I met up with Chetna for coffee a couple of weeks ago when she was in London to hear more about her story and how she’s created her dream career in food.  Follow Food Tribe on Instagram @the_foodtribe

My guest today is Chetna Makan. You may remember Chetna from The Great British Bake Off Season 5 where she made it through to the semi-finals and really stood out for her exciting use of flavour, creativity with her dishes and the fact that many of these dishes were completely new to her. She has gone on to write three cookbooks all showcasing the food of India in different and exciting ways. She has her own successful Youtube Channel “Food with Chetna” where she shares her love of cooking all inspired by Indian cuisine. Of Indian food Chetna says: Many people still think of Indian food as unhealthy takeaways or elaborate tedious recipes to prepare. I want to show that everyday Indian food, as I cook in my own kitchen, can be extremely delicious while being easy to prepare and healthy”. Hope you’re all well and that you’ve had a lovely week. If you know Chetna from the show, you'll be surprised to hear that for most of her life, Chetna never baked! She lived in Mumbai and didn't even have an oven....but food has always played an important role in her life, (even back when she was a bigwig in the fashion industry in her former career path). Taunya also introduces a citrus compliment to the bundt cake with a delicious caramel blood orange compote. On the café side, Melody works on a perfectly emulsified balsamic vinaigrette. Now on to the recipes!   Orange, Cinnamon & Hazelnut Bundt Cake (Slightly modified from Chetna Makan’s recipe)   220 grams softened unsalted butter 220 grams sugar 4 eggs 1 tbsp baking powder 220 grams flour Zest of 2 large Oranges mixed with 2 tbsp of orange juice ½ tsp salt   Filling 60 grams brown sugar 2 tbsp cinnamon 60 grams toasted and chopped hazelnuts   Instructions Lightly spray your bundt with non-stick cooking spray (or grease in your favorite way) and set aside Pre-heat oven to 350F degrees In a bowl mix the flour, salt and baking powder and set aside In your stand mixer with paddle attachment, combine butter and sugar, mix until light Add the eggs and orange zest, mix until distributed Add the flour mixture to the bowl, mix until distributed Using a rubber spatula (or your favorite tool), transfer ½ of the batter to the bundt smooth the surface Add the filling (it’s a lot of filling, don’t worry), and spread an even layer Add the remaining batter to the bundt, covering the filling completely and smooth the top Bake for 35 to 40 minutes or until skewer (or favorite testing instrument) comes out clean Let cool in pan for at least 15 minutes before removing   Blood Orange Compote: Via New York Times https://cooking.nytimes.com/recipes/1014535-blood-orange-compote

It's a 'pop-up' dinner hosted and put together in Bristol by Romy Gill and Kim Somauroo to raise money for international charity 'Action Against Hunger'.
