Palak paneer curry Cook time: 10 minutes Prep time: 10 minutes Serves: 6 1kg spinach paste 500gm paneer 1 onion diced finely 2 tbsp sunflower oil 4 cloves garlic, peeled and crushed 1 tsp finely grated ginger 2 finely diced tomatoes (or ½ can chopped tomatoes) 1 tbsp cumin seeds ½ cup cream or coconut cream for dairy free 1 ½ tsp garam masala ¼ tsp turmeric Chilli to taste Salt to taste Start by making the fresh spinach paste. Remove the large stalks from the spinach and drop into a large pot of boiling salted water. Leave for 30 seconds before removing and placing into iced water to stop cooling. Place the spinach into a food processor and blend with a pinch of salt until it turns into a paste. Add a touch of hot blanching water if required. Now make up the Palak Paneer: Heat oil and add cumin seeds, fry till it sizzles and pops. Add chopped garlic and let it fry till raw smell goes and it is light brown. Add onions and fry till light brown, then add ginger and fry till raw smell goes. Add tomatoes and cook it till oil separates. Add salt, chili, turmeric, add spinach paste and cook for 2 mins. Margo Flanagan of ‘Two Raw Sisters' serves up a delicious recipe for Halloumi Saagwala. Serves: 2 Time: 20 minutes Ingredients Saagwala 1 brown onion, diced 1 tomato, diced - large ⅓ cup coconut cream 4 cloves of garlic 1 tbsp ginger, freshly grated 1 tsp garam masala ½ tsp chilli flakes ¼ tsp cinnamon 1 tsp sea salt 5 cups greens (spinach, rocket, herbs, kale, silverbeet) Fried Halloumi 100g halloumi, cut into cubes 2 tbsp cooking oil To Serve 1 cup brown rice, cooked 2 tbsp chilli oil 2 tbsp peanuts, toasted and chopped 1/4 cup coriander, chopped Method Add all of the saagwala ingredients, except the greens, to a pan and simmer for 8 minutes. Add the greens to the pan in the last 2 minutes. Mix until wilted. Add the saagwala to the blender and blend until smooth and vibrant green. Clean the pan and cook the halloumi. Heat the cooking oil in the pan until hot, add the halloumi cubes and cook until golden on each side. Pour the saagwala sauce back into the pan with the halloumi and mix. Heat until you reach your desired temperature. Spoon cooked rice into a bowl followed by the saagwala, chilli oil, peanuts and herbs. Enjoy Any leftovers will keep in an airtight container in the fridge for up to 3 days. Alternatively, you can freeze the saagwala sauce without the halloumi for up to 3 months. Simple Swaps / Additions Halloumi for chickpeas, paneer or chicken. Brown onion for red onion. Garam masala for ground cumin. Chilli flakes for fresh red chilli. This week on Dish, Nick and Angela are joined by a powerhouse couple. Brian Cox is a renowned Scottish actor whose career spans more than six decades. Born in Dundee, he was classically trained before becoming a key figure in British theatre. Brian Cox made history as the first actor to portray Dr Hannibal Lecter on screen in Michael Mann's Manhunter in 1986. He went on to star in highly acclaimed films including Braveheart and The Bourne Identity.  On television, Brian Cox is now a cultural icon, thanks to his award-winning portrayal of media titan Logan Roy in Succession. Brian married his wife Nicole in 2002, and they have two sons. Nicole Ansari-Cox is an actor, director and producer. Born in Cologne, she began acting at the age of nine with a breakthrough role in the German crime series Tatort. Her career includes roles in TV shows such as Deadwood and Succession. Nicole frequently shares the stage with her husband, including their current performance in The Score at Theatre Royal Haymarket. Nick prepares the couple's favourite cocktail, a frozen margarita, to start while Angela prepares roast trout with soy, orange and chilli, based on a sweet and spicy salmon recipe from Waitrose. The experts at Waitrose pair this with an English white wine, Chapel Down Bacchus. This episode is one of those great Dish double dates. Brian and Nicole talk about their new play and its parallels with modern life.
