This episode features Dave Schmier of Proof and Wood Ventures. Dave co-founded Redemption Rye in 2010. In 2015 he sold the company and within a short time he started Proof and Wood. Presently he doesn't distill, however, he does source some incredible whiskey and barrel aged spirits. A huge part of what they do is blending of whiskey. The have recently added rum to the mix. Dave's been developing boutique craft brands for over 20 years. The Proof and Wood library includes international whisky too. With the new year already here, we thought what better way to start the year than with a cigar and glass of whiskey. This episode, we do our regular review then add a little twist by pairing it with a cigar. As you may already know, we love whiskey and enjoy a nice cigar too. The whiskey was decided based on our preference of pairing a rye whiskey with cigars, due to the stronger pallet on a rye whiskey. On this week's episode of The Speakeasy, Damon and Sother are joined in studio by Whiskey Ambassador Joe Riggs of Redemption Whiskey. Having grown up the grandson of Springfield, KY Bootlegger and son of a former bartender; Joe Riggs was raised hearing stories of his Grandfather being “the only bootlegger to drive around Nelson County Courthouse on two wheels without breaking a bottle.” As well as watching his mother memorize recipes, Joe was always drawn to work in spirits and hospitality industry. Currently a 16-year veteran of restaurants Joe Riggs has won multiple cocktail contests, bartended and hosted events at such cocktail gatherings as the Manhattan Cocktail Classic, Tales of the Cocktail and The Kentucky Bourbon Festival.
Dave Schmier and Michael Kandar started Bardstown Barrel Selections five years ago to bottle some casks of good whiskey they'd come across from MGP-I in Indiana, but their Redemption Rye business took off. In this case, success was too much of a good thing, and the partners ran out of capital to keep investing in new casks. This week, they sold Redemption Rye to Deutsch Family Wine & Spirits, which has already completed a long-term supply contract and plans to take the brand nationwide as part of its push into the whiskey business.
