My guest today is Russell Norman Known as The Restaurant Man. He is a writer, broadcaster and award winning founder of celebrated restaurants with first THE POLPO restaurant group and now BRUTTO. Hailed as “London's coolest restaurateur” and having been described as the man who saved restaurants after the financial crash, Russell is a restaurateur with over 20 years experience in London restaurants – he worked his way up from bartender, to waiter, maître d, general manager and operations director at Caprice Holdings before opening his first restaurant Polpo. Never one to follow trends, in fact he sets them…it was Russell that started our love affair with small plates, sharing platters and a move away from the fussiness of fine dining. It was also Russell that started the strict no reservation policy that spread like wild fire. Russell has said, "A lot of people fantasise about opening their own restaurant, thinking it is going to be a bit like a dinner party but with a till, but it's a fallacy” The reality is 18 hour days and they would be tired and miserable”. And yet he says for him, the feeling of running a restaurant is as though “someone's plugged into the mains”. Hope you enjoy today's episode. Don't forget Russell's beautiful book Brutto is out now.Thank you very much to Nestlé Carnation for sponsoring this weeks episode. It wouldn't be fair to say I have a favorite restaurant in Venice, but my guest today runs the one spot that is nearest to my heart. Now he's not only wowing them with his world-class Venetian cuisine but he's created an amaro that makes the gondoliers sing. I'm not the only one who Luca di Vita has welcomed into Alla Testiere, the wonderful restaurant he owns with chef Bruno Gavagnin. London's Russell Norman of Trattoria Brutto, a former Lush Lifer,  is also a dear friend and colleague. Out of this friendship, http://amaronostrano.it (Amaro Nostrano )was born. And one sip of an amaro that is a tribute to Venice and its lagoon is all I needed to love it, but it seems I am not alone. To bastardize John Ruskin's quote, “Venice is now  – a splendor of one amaro.” During my stay in Venice, I was thrilled to sit down with my friend Luca to hear how and why Nostrano came to be.  The cocktail of the week is the Bacan. Food offers a unique insight into community and culture. One of the joys of international travel is discovering a region through its food – not just for the pleasure of eating like a local, but for what doing that tells you about people, place and time. After a year of little if any travel for leisure (and perhaps more travel uncertainty ahead too), our panel will be discussing how the discovery of the foods of a nation impacts our cultural understanding of it – and in turn, how increasing or decreasing international tourism can impact a region's culinary landscape. Chair Angela Clutton – food historian, writer and host of the hugely successful Borough Market Cookbook Club – will be joined by panelists Russell Norman, who fell in love with Venice through its food and has spent years using the food of that city to communicate a greater understanding of its history and culture; and Yasmin Khan, whose recently published Ripe Figs is typical of her immersive work in food and travel.

How to make the Aperol Spritz, Venetian-Style

Like many others who came before him, our guest today fell in love with Venice at first site. Unlike many others, he brought Venice home with him..in a big way.  I’m Susan Schwartz, your drinking companion, and this is Lush Life Podcast, every week we are inspired to live life one cocktail at a time by the best in the industry.  We’re not talking a t-shirt or gondola-shaped ashtray, Russell Norman brought us Polpo - the restaurant that introduced cicchetti and, for our purposes here, the Aperol Spritz to London and the UK.  I met up with Russell in the original Polpo on Beak Street, to hear how  his first date with Venice developed into a long, long lasting relationship! I apologise now for all the background noise you’ll hear…this is London during the day on a busy street. Just pretend every honk is made by a vaporetto on the Grand Canal.  You could fight me and say that the Aperol Spritz is not a classic cocktail and I promised it would be all classic cocktails this season. Well, I’m fighting back to say that yes it is. Aperol was invented in 1919 by the Barbieri brothers and the spritz is ages old.  During the time when the Austrians owned Venice in the 1800s. The Austrian soldiers found the wines a little too alcoholic and added in a bit of water. Thus the spritz was born. Fast forward  to the 1950’s when the Italians added Aperol to their spritz and, now, it’s everywhere and so easy to make. Of course, our Cocktail of the Week is the  Aperol Spritz: INGREDIENTS 3 oz Prosecco 2 oz Aperol 1 oz  Soda Olive  METHOD Add all the ingredients to a wine glass with ice Stir  Garnish with an olive if you want it really Venetian.    I would be remiss if I didn’t share the recipe for the Cynar Gin Fizz that Russell and I enjoyed during our chat, and you can find that recipe, the Aperol Spritz and all the cocktails of the week at  ALushLifeManual.com, where you’ll also find all the ingredients in our shop.  Full Episode Details: http://bit.ly/2oDUXf5 ----- Join the conversation on your IOS or Android at flick.group/lushlife where we can talk cocktails until the sun rises! Andrew Dickens Afternoons

Play Episode Listen Later Aug 4, 2019 4:18

The Greens conference was over the weekend and it highlighted a party for whom confusion is always their middle name. The Greens: two leaders, two strands.  A party is split between the social justice side of things and the environmental side of things, with the two leaders standing for the different halves of the party. So moderate James Shaw used his Saturday address to get stuck into Simon Bridges and National. He called Mr Bridges a climate change denier.  He said calling climate change an emergency or a crisis is not an exaggeration but an accurate description about the situation. And then he announced the climate change policy for the Government which is to adopt 43 of the Productivity Commission’s recommendations which include reforming the New Zealand Emissions Trading Scheme rather than replace it with a carbon tax.So far, so green. Then Social Justice Warrior Marama Davidson spoke on Sunday and announced a proposal for a state run rent to own scheme.  Which is a lovely idea if the state owned enough homes to rent out to buyers but they obviously don’t.  And I guess housing is about the environment since it is the environment humans live in, but it’s this sort of thing that muddys the Greens waters. Rent to own schemes doesn’t save kauris or endangered snails.James Shaw seems more green that many of the greens. Yet many of the Greens don't think so.Some bloke called Jack MacDonald, a man I’ve barely heard of but someone who is a big cheese in the party, comes out and stands down because James Shaw is too centrist for him.  Mr MacDonald describes himself as an indigenous eco-socialist.  Yikes. He says because of the impending climate catastrophe in 12 years time, we simply don't have time for centrism, moderation or fiscal austerity. So in reply he’s just not going to stand for parliament anymore or do anything.  This is very similar to a petulant toddler who sits in the corner, refuses to move and cries until he gets his way.  I just don’t get his attitude at all. When the going gets tough, Jack, the tough stand up and get going, they don’t run away complaining and grizzling.Meanwhile every time the Greens actually do something like increase the DOC budget or ban plastic bags former members like Russell Norman and Kevin Hague jump into the media and diss them.  With friends like those, who need enemies. But there is a point here.  The Greens could write themselves a long term pass to parliament if they ditched the preaching, the moralistic high ground taking and the ideological bump they often spout. The biggest ecological crisis this country faced this year was the Fox River dump disaster.  A disaster that Eugenie Sage appeared to ignore for months. Then there’s all the imported coal to keep the power networks and Fonterra going. They're great on theory but not on concrete steps to help the ecology. It’s almost as if the Greens are not green enough.  It’s not James Shaw’s moderatism that’s taking the party off focus.  It’s the social justice division that has taken their focus away.

I’m surprised that more people aren’t up in arms after a report yesterday found an investigation firm have been spying on New Zealanders and invading their privacy on the behest of State agencies.Security company Thompson and Clark has been barred from doing any more work for the government after the investigation by the State Services Commission found it used an unlicensed private investigator and produced electronic recordings of closed meetings without the consent or knowledge of attendees. To me the report is eye opening. Two brothers who claimed they were physically, sexually and psychologically abused in state care were seeking legal redress and damages from the Government. But rather than taking responsibility the Ministry of Social Development (MSD) and Crown Law hired private investigators to dig up dirt on witnesses. An entire government department, MBIE, has been found to have abandoned impartiality and become politicised. The report reveals Thompson and Clark also invaded the privacy of political parties like the Greens and Mana and various iwi groups around the country. And it had a peer into Greenpeace. The report says it was concerned that Thompson and Clark investigated so called “issue motivated groups” under the excuse that they raised security concerns. But then they stepped over the mark into information mining. And most disturbingly they invaded closed meetings of Christchurch earthquake victims to mine information for Southern Response, the government's insurance agency. This had led to the immediate resignation of the agency’s chairman Ross Butler. Now while we can call it spying it’s at the lower end of the scale but not in the eyes of some. Kim Dotcom was all over Twitter last night saying that New Zealanders pride themselves on being the least corrupt nation on earth but that’s a delusion. Of course he reckons the rot goes deep. After all the GCSB was found to have illegally spied on him. And on the face of it state agencies hiring private investigators to spy on New Zealand citizens going about their lawful business just sounds awful. My concern is how it demonstrates the deep polarity that exists in our society these days. The contest of ideas has grown so vicious that if we not for something we’re against it. And we’ll do anything to defeat our so called enemies and in doing so we lose all perspective. We saw it in Jami Lee Ross’s leaks of banal information. The rise of political strategists like Simon Lusk and the co-operation of bloggers to spread dirt. The whisper campaign against Clarke Gayford that caused the police to issue an extraordinary statement refuting the rumours. The way this morning when Russell Norman raised his concerns at being spied on most texts just waved them away because they just don’t like what Greenpeace stands for.It seems to me that some New Zealanders fervour in their own beliefs have caused them to lose their soul. So step back, take a chill pill and stand up for yourself, but do it honestly and openly.

Valerie Morse: Why Is Nuclear-Free New Zealand Hosting A Weapons Conference and Inviting Warships?

Peace activist Valerie Morse talks with Lisa Er on the upcoming weapons conference, warship visits and why this is bad for New Zealand and the rest of the world. This November, coinciding with the New Zealand Navy’s 75th birthday celebrations, is the annual NZ Defence Industry Conference and Arms Expo, that includes approximately 500 international weapons companies. The Navy "celebration" is a stage-managed marketing event to secure public support for future ties with the US, sanctioning wars, with ever-increasing budgets, and the recruitment of young men and women who are asked to fight and die.

This is proposed for 16th and 17th November 2016 in Auckland, sponsored by the world’s largest weapons manufacturer and maker of nuclear weapons, Lockheed Martin. Also sponsoring are Thales, Babcock, ThyssenKrupp, and Cubic Defence (all in the top 100 list of international arms companies), along with the NZ Defence Industry Association, itself an industry trade promotion group consisting of another approximately 60 members involved in weapons and military-related production. Lockheed Martin currently has a $446 million contract with the NZ Navy to upgrade New Zealand's two frigates, Te Mana and Te Kaha; boats the Government has already indicated it plans to replace as part of its $20 billion boost to the NZ Defence Force, announced as part of the Defence White Paper released earlier this year. This enormous injection of cash into the military is happening despite the NZDF's own evidence that "the country does not face a direct military threat in the foreseeable future". The New Zealand military has been continuously at war in Afghanistan alongside the US for 15 years; it is conducting regular training with the US Marine Corp, and it participates in the largest maritime war games in the world, the US-led Rimpac. The NZ Defence forces original deployment to Iraq was aimed at helping a broader coalition, headed by the United States, to defeat Islamic State and reduce the threat politicians say it poses to New Zealand. Now the deployment has been extended. New Zealand has clearly come under pressure from the US to stay on in Iraq. It is not just about the extra resources, it's about having more countries in Iraq as part of the coalition, giving greater legitimacy to the US-led "Operation Inherent Resolve."

Valerie says, “We’ve had enough of the politics of fear and austerity. We aren’t going to stand by while those who profit from misery, murder and repression meet to make new deals and congratulate themselves on their successes. We need YOUR help to blockade the weapons conference and to create a peace flotilla on the water to resist the warships.” Get involved

Valerie Morse is a writer, librarian, peace activist and anarchist. She is the author of two books: “Against Freedom: the war on terrorism in everyday New Zealand life”, and “The Day the Raids Came: Stories of survival and resistance to the State Terror Raids”.
She has worked on a range of grassroots community issues including war, arms dealers, climate justice, prison abolition and public transport. She loves to garden, and pet fuzzy animals.

Valerie is passionate in her opposition to war. She writes - “There are two broader interconnected issues that arise in opposition to the Weapons Conference. First, if there is a military, it needs weapons. Therefore, the issue of the Weapons Conference goes to the heart of the military project in New Zealand. Does New Zealand need a standing army? The peace movement with a long trajectory back to the First World War would say no. Contemporary academics and commentators reject the very idea of the “Defence Force,” instead decrying New Zealand’s history of offensive engagement in foreign wars of empire and conquest.”
Both journalist Nicky Hager, and Russell Norman of Greenpeace, agree that New Zealand’s Nuclear-Free Act will not be threatened by the US Navy bringing a warship to be part of the NZ Navy's 75th birthday in November.
 Oh really?
Think again!
The US position on neither confirming nor denying whether its war ships are nuclear powered or nuclear armed remains the same. What has changed is the position of the New Zealand Government. It is now perfectly happy to use what is publically available and known as to the ships background, and so it is not going to ask anything further! This is the first time in 32 years the US has been invited to send a warship to New Zealand. This event is the culmination of many years of work by those who wish to bring the New Zealand military back into the fold of US empire. The New Zealand government has signed both the Washington and Wellington Declarations in recent years, re-committing the country to joint military cooperation, and conveniently side-stepping the nuclear-free issue altogether. We as a country need to decide who we are.
Wellington was declared a nuclear free zone on April 14 1982 and 40 local authorities in total had declared themselves nuclear-free by the end of 1984. It is an affront to this country’s nuclear-free status that a naval exercise with United States ships will be taking place in the waters of the Aotearoa New Zealand this November.

Are we a country that sits under the US military and nuclear umbrella, supporting foreign wars that have nothing to do with us; or are we going to stand up for our own sovereignty declaring  that war is never a solution, and that we will insist on staying nuclear free.
