Send us a textThis week, Heather is flexing her creativity to create a Cream Egg Cupcake. It's a take on the popular Easter treat, the Cadbury Creme Egg, in cupcake form. They turned out pretty well, after some brainstorming on the approach in the first half of the episode! Plus, Erin and Heather chat about ways to zhuzh-up boxed cake mixes (because sometimes that's handy, right?). At Three Kitchens, we're all about trying something new. Usually we prefer to have a recipe to follow, but what can you do? Sometimes there isn't one. In this case, there was an Instagram video with no recipe, but some vague details provided by helpfulish commenters. Probably not a baking project for an amateur, but what the heck. Let's go. The chocolate cake Heather bakes up for these cupcakes is an easy recipe called One Bowl Chocolate Cake. The ingredients are mixed up together in one bowl (obvs), and then you add a cup of hot water, which makes a thin cake batter. She amped up the chocolate flavour by adding instant coffee to the water. The tops of the cooled cupcakes are then hollowed out to leave room for the cream egg filling. In this case, the filling is a type of marshmallow fondant made by melting marshmallows and mixing in icing sugar until it's a pipe-able consistency. A small amount is coloured to look something like egg yolk, and then it's a game of filling cakes to look a little like a chocolate cream egg. Give this one a try! With Summer behind us and the touch of Autumn on the horizon, it's time to say a fond and lengthy farewell to the 2024 garden season. But that's not to say there is still a tremendous amount of gardening to be done. Lucy will be revelling in her Fruit and Veg as Autumn is the crescendo of harvest time, and Saul will be willing an Indian Summer so his last few exotics can flower before tucking them away for some well deserved winter rest. Otherwise there are still lawns to cut, leaves to be racked and a lot of planning for 2025!Well - it's been a while, gremlins and bugs have laid the Talking Heads pair low for a while, but nought can keep the Horti-waffle down for long, so we are back and just when Autumn is finally (we think) starting to kick-in! We've been busy when not being afflicted, and our main focus for the past few days has been in the greenhouse (dodging the rain mostly) to get them ready for their winter 'cost' of overwintering, propagating and protecting us poor gardeners. Mike's super moorish chocolate cake Cook time: 30-40 minutes Prep time: 5 minutes Serves: large cake 100ml vegetable oil 250ml cream 1 cup boiling water 1 tsp vanilla paste 2 eggs 1 1/2 cups caster sugar Pinch salt 2 tsp baking soda 1/2 cup cocoa powder 1 3/4 cups plain flour In a large mixing bowl, with a whisk, combine ingredients one at a time starting from the top and working your way down. Mix well until all combined (will be quite runny) Pour into a greased and lined 20cm x 30cm tin or cake mould. Cook in a pre-heated 170*C oven, for anywhere between 35-45 minutes. Check regularly, and skewer test. When it comes out clean, it's good to go. Coat it in chocolate ganache or like a Italian meringue and use a blow torch to burn the outside. Gosh he can write.The 6-inch springform pan you will need if you decide to make yourself and your loved one(s) a sexy little cake.Petit Gateau au Chocolat, adapted from Maida Heatter* 4 ounces unsweetened chocolate* 1/2 cup sugar, divided* 6 T. (3/4 stick) butter* 2 T. flour, plus flour for dusting pan* 2 eggs, separated* Pinch of saltPreheat oven to 350F. Butter a 6-inch springform pan, line it with parchment paper, butter that and dust with flour, shaking out any excess. (You can use pan spray instead of butter; I won't tell.)Melt chocolate over low heat or in the microwave. Allow to cool several minutes. Stir in the butter, all but 2 T. of sugar, the flour, sugar, salt and then egg yolks, one at a time. In a separate bowl, beat the egg whites with the remaining 2 T. sugar until they form soft peaks. Fold whites into chocolate mixture, then turn into prepared pan. Bake 30 minutes. The cake will look soft. That's fine. Cool on a rack until it's warm, remove springform ring and invert cake onto a serving plate. If you are being fancy - and why not? It's New Year's Eve - place four strips of wax paper around the edges of the cake to catch the icing drips.If you want a mirror like glaze: In a small saucepan, melt three ounces bittersweet chocolate with 2 T. sugar and 2 T. water. Whisk in 2. T butter until smooth. Allow to cool, stirring occasionally, about 30 minutes, then pour slowly over the cake. Remove the wax paper and, look how pretty!You can also ice with ganache, which is ridiculously easy to make, just chopped chocolate and heavy cream.
