Also on the programme, Juliet Sargeant on her new book ‘Start with Soil' and Mary Doris joins David in studio with a selection of top performing plants for summer and some health boosting food made from weeds. In the latest episode of The Food Talk Show, Ollie Lloyd hosts Amelia Christie Miller, the founder of Bold Beans, a brand transforming the bean market.  Amelia initially disliked beans until an unexpected experience, inspired by Nigel Slater during her Erasmus exchange in Madrid, altered her perspective. "I spooned one straight from the jar, and it was this mesmerising moment," Amelia recalls. Initially, this did register as a significant life-changing moment. However, a stint working with chefs showed her that there were better solutions to the trend towards meat alternatives, and the journey towards Bold Beans began. Amelia rightly believes in beans' broader global, cultural and culinary roles. She recognises the international appeal of beans and sees beans as an excellent vehicle for embracing diverse flavours and inherently healthy recipes. "Beans are a cornerstone of how civilisation got here," she explains, portraying beans as an essential global food staple. One of the core themes Amelia discusses is the brand's approach to health and sustainability through the lens of pleasure. "I want people to be tempted into buying it because they want to do it, not because they should," she states, emphasising the importance of taste over health benefits.  Amelia also sheds light on their marketing strategy, which is less about overtly highlighting the health benefits, which are a given, and more about creating a genuine love for beans. Their Instagram presence and content creation, led by Hannah Wilding, are central to this, driven by a belief that sharing delicious recipes goes beyond just selling a product. "Our mission is to make people bean obsessed," she explains, noting that early content creation efforts were based on trying to help friends cook with beans even before the brand existed as a real product. Another fascinating aspect of Bold Beans is how they are battling quite established brands like Merchant Gourmet and Belazu in the core beans category and taking on giants like Heinz. In tackling the challenge of broader competition, Amelia finds confidence in focusing on beans exclusively. "Brands like Merchant Gourmet and Belazu can't own beans in the way that we can own beans." This singular focus allows Bold Beans to optimise quality and innovation within their niche, ensuring they remain leaders in flavor and sustainability. As Bold Beans continues to innovate and educate about the versatility of beans, one senses that the team will not only shake up the bean category but also redefine what it means to eat sustainably and deliciously.

Nigel is the first podcast guest ever to make me cry. I'm a big fan of his writing, and suspected he'd be a kindred spirit, but spending the day with him in his house was an overwhelming experience I wasn't prepared for.He lives around the corner from where I grew up, in a pared-back way that feels very familiar. In this remarkably honest conversation, he outlines the essential role his home plays in keeping him on an even keel. We discuss what it's like to suffer from panic attacks, and how they're triggered by the built environment. He tells me that whenever he arrives in a building he hasn't been to before, the first thing he does is check where the exit is so that he can plan his escape. We touch on the childhood trauma that he wrote about in his brilliant memoir, Toast, from his mother's death to his father's bullying. We discuss the roots of his lifelong interest in gardening, why he keeps a daily diary, and the importance of smell within the home. This is a conversation I'll remember forever. Thank you, Nigel. Denise Brady has been a food photographer for two and a half years. She is based on the East coast of the UK in Suffolk. Before this she was doing weddings and family photography, but Covid meant Denise had to pivot her business and moved to food photography. Denise's photography journey began on her wedding day. When she got the images back from her wedding day she didn't like them, and said she could have done better herself, which her husband laughed at. Denise had done photography in her youth but stopped. The next Christmas her husband bought her a Nikon digital camera. Later that year she was asked to photograph a wedding for a friend of her daughter. Denise tried to turn it down but her husband said no, this is your chance to show you can do better. So, Denise shot the wedding for free. The couple were pleased with the photos and paid Denise for them. It then built from there until Covid. Marcus says in fashion the photographers are often not that interested in fashion. So he wondered if she liked food. Denise loves food and was as up with great home cooked food as a child. Marcus asks if Denise has read the book Toast by Nigel Slater. Denise says her cook book shelf is about a meter and a half long. She says if a food photo doesn't make your mouth water and invoke a memory then it's not doing it's job.   Denise loves to use natural light. She can use lighting but uses natural light for all her photos. She will use bounce boards to get light into a shot and blackboards to take light out of a shot. She will use foils and scrims to block out and filter bright direct light on sunny days. On a flat light day her works becomes easier. The hardest days to work on are ones with sunshine and showers so the sun is constantly coming in and out. Denise likes to get the white balance right in shot rather than afterwards. There is a show all about lighting, the ten principles of flash photography. Denise's preference is to take dark and moody shots. Some clients need light and airy shots and she is. Sam asks how she found it finding clients with the move to food. This was very challenging at the start as Covid hit the entertainment industry so hard. Denise has found that she has to be flexible in her approach and work within a clients budget, which can be limited. Denise's son in law is a chef. He has been very helpful to her and means she has someone to go to, to ask questions when she doesn't understand things within the industry. Denise says plating is important and changing all the time. Denise has a particular style. She tried other things like the floating burgers and stop motion, but she prefers to work in her style. Marcus refers back to the recent Joe Giacomet show  as he has been making the gif style stop motion food animations. Marcus asks about working with food stylists. Denise often does the styling herself but she has worked with food stylists. Sam asks what food stylists do. The summary is that they move the peas around the plate and arrange the knife and fork tastefully and things like that. Denise also takes props with her for shoots. They also discuss planning and hot food. When hot food comes out it needs to be photographed very quickly. That means there needs to be lots of planning in place so that when the food comes out the photos are able to be done very quickly.   Denise's influences include: Jonie – The Bite Shot Sarah - Broma bakery Her influences also comes from going to restaurants and looking at their photography. Her ambitions include working on a cook book and getting into a major food magazine. She has been published with other shots, but not food. Her ideal chef to make a cook book with would be Gordon Ramsey or a local chef Galston at Morston Hall.

She was a curator at the National Portrait Gallery in London before deciding to work independently in the early 2000s. Her professional life has brought her to live in London, New York and Paris where she has worked with many institutions on a wide range of projects. These include: Tate, Barbican, The Royal Academy, The Museum of Contemporary Photography in Chicago, Saint Louis Museum of Art, Phoenix Art Museum, and The New York Public Library. In 2007 she co-curated the landmark exhibition How We Are at Tate Britain. This was the first major exhibition of British photography ever held at Tate. In the same year she curated Face of Fashion at the National Portrait Gallery, London. Other significant exhibitions include: Home Truths at The Photographers' Gallery and The Foundling Museum, London (2014) and Playground at Serlachius Museum, Finland (2018). Her survey exhibition Feast for the Eyes toured to six major museums and galleries in Europe, Canada and the USA (2018-2021). In 2019 she was Guest Curator at PHotoESPAÑA. Exhibitions were held at Fernán Gómez Centro Cultural de la Villa, Museo Lázaro Galdiano and the Museo del Romanticismo in Madrid. In 2021 she was co-curator of f/stop 9: Festival für Fotografie in Leipzig. Bright is regularly invited to be a visiting speaker, critic and scholar at universities worldwide. She taught curatorial practice and visual culture to both art and art history students for fifteen years at institutions including Parsons and the School of Visual Arts in New York and Sotheby's Institute and University of the Arts, London. She has authored and co-authored seven books. These include: Photography Decoded (Tate/Ilex, 2019); Feast for the Eyes: The Story of Food in Photography (Aperture, 2017); Home Truths: Photography and Motherhood (Art/Books, 2013); Auto Focus: The Self-Portrait in Contemporary Photography (Thames & Hudson, 2010); How We Are: Photographing Britain (Tate, 2007); Face of Fashion (National Portrait Gallery, 2007) and Art Photography Now (Thames & Hudson, 2005). The holiday of Christmas is a festive time that arrives a mere one week before the new year begins. The arrival of Christmas stirs up nostalgia for some, angst for others, seasonal stress for most of us and a stream of quiet hope for perhaps nearly all of us that a Christmas miracle will occur. And regardless of what we imagine it to be as November arrives and we look ahead to the final two months of the year, it is a holiday capable of being exactly as we most wish it to be when we approach it with a conscious and loving heart and mind. Discovering and then honoring what brings us joy is a step in the direction for a most enjoyable holiday. Nigel Slater reminds in his The Christmas Chronicles that "many of the festival's observances date from pre-Christian times, and those who celebrate it as a purely religious event might be surprised to find out how much of the festivities hails from pagan times." The celebration of the winter solstice just days before the 25th, the beginning of more light to our days was, again as Slater shares, celebrated long before Christmas was celebrated "Saturnalia was the Roman festival of honor of the God Saturn, with feasting lasting from December 17th to the 23rd". And so in many ways, while religious or not, spiritual or atheist as Slater shares he is happily, we all borrow from each of the reasons to celebrate during this Christmas time of year, and that too is something to celebrate. I had planned on posting on an entirely different topic for today's episode/post, but in the days and weeks leading up to curating this episode, I found myself becoming increasingly excited about my own plans for Christmas. Knowing that how I am choosing to celebrate is a less celebrated approach by the culture, I wanted to share because as I wrote in the December chapter of my book The Road to Le Papillon, it is imperative that we celebrate all holidays that come with traditions in such a way that brings us true joy. I acknowledge that not everyone lives alone by choice as I do, but even in a household of a couple or a family, knowing and voicing and observing what brings true joy to those we love and then honoring this need in some way as you design your day of celebration is a priceless gift to give. So day, as the final episode of 2022, the holiday episode it will be, and along with the ideas for savoring Christmas home alone simply luxuriously, today's Petit Plaisir will be holiday inspired as well and ties in quite nicely with the theme of our conversation. While alone typically signifies one person, it can also include you and your significant other/partner/spouse or you and your household - family. I am emerging from a marriage break up and I need some lightness and happiness in my life. Maybe a bit of courage too.Germaine's book prescriptionMaira Kalman's The Principles of Uncertainty is one of my favourite books that I return to whenever I am feeling in need of a reminder that life always contains lightness alongside the need for courage. Kalman is perhaps best known for her children's book illustrations and as a contributor to the New Yorker magazine, however this illustrated memoir is a different way of reflecting and understanding the meaning of her life. Her quirky illustrations, existential questions and melancholic observations are very powerful. I prescribe it as a completely different way of reading about life. Kalman walks the streets of New York and draws the people she sees. Her daily walks in Central Park with an old friend also impact on her sense of wellbeing. She reminisces about her childhood and the past. It's a visual journey through her mind!Sophie's recipeI think it has to be cake. Specifically, a sponge, though one with structure so it won't deflate on you or be finicky about travelling. Something you can cut and come again and keep in the fridge. Take to work to share, take to a morning tea with your friends. You can't not be cheered by a sponge. And you can take courage that this recipe will work! As Nigel Slater says in Christmas Chronicles, “there was something about the way my mother would put a cake on the table that made me feel all was well. Safe. Secure. Unshakeable'Here's my sponge cake recipe, please try it, fill it with jam, cream, curd, love, whatever you have to hand!Letter 2I am going ‘home' for Christmas for a number of reasons. It may well be our last - or only-  ‘family' holiday with all 6 of us that we will remember, as my eldest is 19 and will be moving on with his life - a fact we celebrate and mourn, and my youngest is 11, and therefore too young to remember our trips before the Covid years.  Included in the trip are 2 weeks in the UK to have our first English Christmas with my family, and our first one all together in 7 years. It is always a little bittersweet without my Dad, whose presence is long missed, but it is definitely a time for celebration.What will make the trip a little more interesting, and is making my mother slightly apprehensive, is a history of tension between my brother and sister - I refuse to get sucked in to any drama and can smooth almost any situation - but I want her to feel excitement and eagerness about spending this time together, so do you have a suggestion for a book that celebrates the joy of family reconnection, or something that will bring light to dark winter evenings? Something fun, but real would be grand. And she is always fond of a murder.In terms of asking for something to cook, I am being held responsible for an Australian style brunch - limited by available ingredients so sadly no mango unless I smuggle them in (which I may), and need something sweet, but light to finish the traditional croissants and smoked salmon, and that won't compete with pavlova and Christmas pudding that will be served after late lunch. Also, my mother loathes cream and milk, unless cooked into a cheese sauce, so yoghurt is out.Hope that's not too prescriptive? I love listening to you both, and hearing your discussions.Sophie's recipeWhat about a warm Christmas crumble? In a medium-sized saucepan, mix together about 2 cups frozen (or fresh berries) with about 2 cups rhubarb, apple or stonefruit (depending on season and taste. Add 1/3 cup sugar, 1 tsp vanilla paste and the juice of one orange or lemon and cook on low heat for about 10 minutes or until the fruit is soft. Transfer to a bowl and pop in the fridge to cool or if cooking the crumble straight away, tip into an oven-proof dish.For the crumble topping, in a medium bowl, combine 50g unsalted butter, cold and cubed, 1/2 tsp cinnamon, 1 tsp vanilla paste, 1/2 cup almond meal, 1/4 cup brown sugar, 1/4 cup rolled oats, 1/4 cup shredded coconut and 200g marzipan. Work everything together with your fingers and crumble together. Preheat oven to 180C and crumble the topping over the layer of fruit and cook for about 20-30 minutes or until the topping is golden. Serve hot with cream, yogurt or ice cream. Germaine's bookI rose to the challenge with this letter and managed to find a book that is about family and reconnection, with humour and depth. Also, there is a missing person! I'll let you discover if it's a murder or just a side mystery… When God Was A Rabbit by Sarah Winman is a family story about bad things happening to good people and good things happening to good people! This is the poignant tale of Ellie and her family from her childhood in the 1960s through to her adulthood in the early 2000s. There is a cast of quirky characters, all damaged and all loveable who feel very real. Winman also writes beautifully about sibling bonds, “I am here but I am not yours”. Welcome to a new podcast for all stitchers, embroiderers, textile artists and creative souls, where we have friendly informal conversations about what it actually means to be an artist working in textiles. Isobel and Gina are both practicing artists and tutors specialising in machine embroidery, but we're still figuring it all out! We chat about combining the creative process with running a business and hope that you will find inspiration and support for your own creative journeys. As it was through following each other's blogs that we first met, it seemed appropriate to take a closer look at our blogs and our blogging habits. We look back at our reasons for starting a blog and what we were writing then, compared with our reasons for continuing, and what we are writing now. We also discuss whether there's even still a place for blogs within how we communicate as artists, and talk about how we decide what's appropriate for sharing in a blog, compared to what we may or may not share on other social media platforms. Finally, we consider the sometimes tricky question of knowing when, how and if to say something, and when to keep schtum - something we don't always get right! The dining space at the Acid Bar is taken over by different chefs and cuisines every few months – like a pop-up restaurant but for longer than one night only! Red is the best-selling lipstick colour on the market for most brands. Beauty journalist Rachel Felder, author of ‘Red Lipstick' has explored the origins and history of red lipstick, looking at its association with film stars, the aristocracy, its sex appeal, its power and glamour. She joins Jenni to discuss why the colour has stuck around for centuries, along with Florence Adepoju the founder of a lipstick brand who studied how to make cosmetics at the London College of Fashion. .Alabama has become the latest US state to move to restrict abortions by passing a bill to outlaw the procedure in almost all cases. Earlier this year the governors of four other states - Georgia, Kentucky, Mississippi and Ohio - signed bills banning abortion if an embryonic heartbeat can be detected. For cook and author Nigel Slater, 'Nutmeg and citrus are the scents of Christmas' but Sheila Dillon needs convincing.Together they look at the versatility of nutmeg as a spice that can bring life to mulled wine, egg custards, meats and puddings.People take it for granted now but nutmeg was highly prized in the kitchens of 16th and 17th century Europe. Traders ventured to the ends of the earth to secure it because of its value. The Dutch and the English vied for nutmeg supremacy and, in December 1616, Nathaniel Courthope and his small army saw off all competitors to gain control of the valuable nut so it could be shipped back to Britain for the culinary elite to enjoy.Today in Grenada the spice is so important it features on the national flag. But when Hurricane Ivan struck in 2004 it devastated the entire crop and hit the economy with a vengeance. Almost ten years on the nutmeg crop seems to be well on its way to recovery and we find out how it is used on the island. Producer : Perminder Khatkar.
