Physician to Physician Plant-Based Nutrition

In this episode, Audrey and Eden dive into the world of vegan baked goods—exploring everything from smart baking swaps to store-bought favorites. Whether you're a dessert devotee or a reluctant baker, there's something here for everyone. We break down how to replace dairy, eggs, and butter in baking, offer tips to improve your plant-based creations, and share some go-to recipes and products to satisfy your sweet tooth—without sacrificing your values or health goals.   Mentioned Recipes & Resources: Tracy's Peanut Butter Chocolate Chip Cookies Almond Cake by The Buddhist Chef A fluffy, easy-to-make cake that uses almond flour for a light texture and added fiber. Ube Pie by Sweet Simple Vegan A creamy, coconut-topped pie made with frozen purple yam (ube) for a unique, colorful dessert. Vegan Cupcakes Take Over the World by Isa Chandra Moskowitz & Terry Hope Romero Sweet Loren's Cookie Dough Refrigerated, ready-to-bake (or ready-to-eat!) cookie dough—perfect for a quick treat. Abe's Muffins & Coffee Cakes Nut-free, school-safe vegan muffins, cakes, and snacks available at many major retailers. Daiya Vegan Cheesecake Store-bought, plant-based cheesecakes for a no-fuss dessert option.   Baking Substitutions Cheat Sheet: Egg Replacements: Binding: Flax egg (1 tbsp ground flax + 3 tbsp warm water), chia seed gel Leavening: Baking soda + vinegar, mashed banana Moisture/Richness: Applesauce, silken tofu, mashed avocado Dairy Replacements: Milk: Almond, soy, oat, or any plant-based milk Butter: Plant-based butters, coconut oil (in moderation) Buttermilk: Plant milk + 1 tbsp vinegar or lemon juice Creams: Coconut cream, blended cashews Tips for Vegan Baking Beginners: Start familiar – Try veganizing recipes you already know and love. Make one swap at a time – Don't overhaul everything on your first try. Understand ingredient roles – Know if an egg is for binding, leavening, or moisture. Measure carefully – Baking is chemistry, so ratios matter. Let batters rest – Especially when using alternative flours or no gluten.

Send us a Text Message.Hey Pickles! We hope this episode finds you well.Fair warning: There is talk of animal abuse in this episode. Our Main Topic this week is the incredible investigation done by Animal Rising into the fraud that is the RSPCA Assurance Scheme. The RSPCA is supposed to be looking out for the welfare of animals, but has fraudulently approved the conditions on many farms in England and Scotland. Through the brave investigative work of Animal Rising, these farms have been found to have deplorable conditions. They found sick and dying animals, animals in overcrowded and confined conditions, and a multitude of severe infractions to the very laws that the RSPCA is supposed to be upholding. We urge you to read their thorough report here: https://www.animalrising.org/_files/ugd/80f7b1_312aaf59f84e462fa13ae8d355c2cf02.pdfWatch their video on the investigation here:  https://youtu.be/OfM5VRMl7wk?si=ugxeciX0vfLisytvOur Noteworthy segment is a much lighter subject. Hello and welcome to a long, yet riveting, episode of Tasty Pages, a podcast from Cooking The Books! Dare we say this episode has it all? Cursing, marital bickering, bowling, a restaurant review and a heated discussion on all things tipping! Then, we share submissions from our listeners about their favorite cookbooks from 2022. Finally, we chat about our featured cookbook, 'Fake Meat' by Isa Chandra Moskowitz. Spoiler alert: we hated this book. We will explain why in excruciating detail. The conversation becomes a bit heated (note to selves: do more yoga). Some of the conversation is funny, while some may be uncomfortable. One thing is for certain: we are passionate for each other and share a mutual disdain for "fake meat" masquerading as the real thing. Then, Victoria takes us to Morocco for our Gastro Obscura segment to share a decidedly NOT vegan dish. Lastly, Johnny shares two vegan jokes which bring the episode to an abrupt end - leaving Victoria in a fit of laughter (and, perhaps a puddle of pee).  --- Support this podcast: https://anchor.fm/tastypages/support

Hey Pickles! We have a recipe for you from our Vegan Cookbook Challenge. This week we made a recipe from Isa Chandra Moskowitz' new book, "I Can Cook Vegan".What a great book this is. It's perfect for new vegans, the vegan curious, and anyone who's looking for fun, weeknight recipes to make. It would also make a great gift for anyone that is looking to learn more about vegan cooking! We saddled up the old Hyundai once again, and headed to Batavia and Rochester NY!We had lunch at the adorable Eden Cafe & Bake Shop in Batavia. They're located at 242 Ellicott St, Batavia, NY.What a cute and calming space they've created. Its a cute corner shop with lots of natural light coming from the front windows. With comfy bench seats lined with colorful pillows, plants in the windows, and a nice cozy color scheme of pink & sage green. They are an all vegan establishment, and the food was fantastic! We then had plans to see a couple shows in Rochester. The first of which was a modern dance performance that was part of the Rochester Fringe Festival , called Commotion Dance Theater. One of the dancers was a former student of Sam's, and we were thrilled that we were able to attend! Before the second show that we were going to see, we had dinner at The Red Fern. They are located at 283 Oxford Street, Rochester, NY.  With it's inviting little red door, you step down into the place & come face to face with their awesome looking bakery case! We throughly enjoyed our meal there, and we will definitely be back! As expected we grabbed a couple baked goods to take home with us. We got a lemon raspberry blondie & a chocolate peanut butter rice crispy treat! We then made our way to the Kodak Center to see Randy Rainbow Live - The Pink Glasses Tour! What a fun show! What does it take to transform a forgotten neighborhood park into an asset for the community? How do you figure out what you're drawn to, and then become a part of that industry? Sara Hirschler is the Marketing & Membership Manager at Fairmount Park Conservancy, a non-profit in Philadelphia. Sara played a significant role in transforming Clemente Park & Playground into a welcoming space where the community wants to gather. The Fairmount Park Conservancy is an organization I have admired for years. Since Sara started working there in 2013, when there were only 7 employees, the team has more than doubled. They even have a couple new opportunities open. Check them out at https://myphillypark.org/who-we-are/opportunities/!Something I learned from my conversation with Sara is that commitment to your purpose, or something that draws you in, can lead to incredible experiences. Sara's story about Clemente Park & Playground, the bootstrapping improvements she led, remind me that what you're passionate about doesn't have to be your job. However, if you do it with commitment and you do it well it certainly can be! A few references you may be interested in reading more about:Fairmount Park Conservancy: https://myphillypark.org/10-mile Broad Street Run training route mapped by Fairmount Park Conservancy in 2020, and the reason I contacted Sara: https://myphillypark.org/we-mapped-a-10-mile-route-through-fairmount-park-for-the-2020-broad-street-run/Local parks, Clemente Park & Playground and Liberty LandsLandmark self expression and leadership program: https://www.landmarkworldwide.com/Isa Does It, by Isa Chandra Moskowitz; that and more at https://www.theppk.com/The Oh She Glows Cookbook, by Angela Liddon: https://ohsheglows.com/the-book/Follow along:whenyougrowup.orgwww.instagram.com/whenyougrowup_podcast/

If you're interested in participating or just attending, check out the website for the workshop at digitalworldsworkshop.wordpress.comBen Almassi is an Associate Professor of Philosophy at Governors State University in Chicago's Southland.Margaret Urban Walker's work on Reparative Justice is an important influence on Ben's book. One place you could read more is in the book Moral Repair: Reconstructing Moral Relations after Wrongdoing.Eric Katz wrote a response to some of Ben's ideas, which as he says in the podcast he was able to respond to in his book (as always: if you think you don't have access to this article, you actually might through your library etc. Email the podcast if you'd like some advice on how to find out if you can actually access it).Ben mentions a number of other thinkers and writers, including Aldo Leopold on being in relationship with ecosystems; Annette Baier on trust; Robin Kimerrer on ecological restoration and gratitude; Edith Brown Weiss on our duties to past and future generations; Charles Mills on ideal and non-ideal theory; Deborah McGregor on responding to environmental racism; Arthur Fine and the importance of engaged, responsive philosophy; and an extended discussion about Kyle Powys Whyte and his work on Traditional Ecological Knowledge, particularly for its governance value. We also discussed an important case study in Ben's book of the Chicago Wilderness alliance. Check them out!Ben defends Kale and the surprisingly delicious but often maligned Kale salad as the food he shares with us. Isa Chandra Moskowitz has two phenomenal kale salad recipes you might want to check out, one for kale Caesar salad, and one for a kale, lentil, and butternut squash salad for a colder day.The intro and outro music is "Whiskey Before Breakfast" which is both a great traditional song and a good way to cope with living in a pandemic but not a homemade alternative to a vaccine. The secret is out: If you want to lose weight, lower your cholesterol, and prevent (or even reverse!) chronic conditions such as heart disease and type 2 diabetes, the right food is your best medicine. Thousands of people have cut out meat, dairy, and oils and seen amazing results. If you’re among them or you’d like to be, you need this cookbook. Del Sroufe, the man behind some of the mouthwatering meals in the film, proves that the Forks Over Knives philosophy is not about what you can’t eat, but what you can. Chef Del and his collaborators Julieanna Hever, Judy Micklewright, Isa Chandra Moskowitz, and Darshana Thacker transform wholesome fruits, vegetables, grains, and legumes into 300 recipes – classic and unexpected, globally and seasonally inspired, and for every meal of the day, all through the year: Breakfast: Very Berry Smoothie, Breakfast Quinoa with Apple CompoteSalads, Soups and Stews: Kale Salad with Maple-Mustard Dressing, Lotsa Vegetable Chowder, Lucky Black-Eyed Pea StewPasta and Noodle Dishes: Sicilian Cauliflower Linguine, Stir-Fried Noodles with Spring VegetablesStir-Fried, Grilled and Hashed Vegetables: Grilled Eggplant SteaksBaked and Stuffed Vegetables: Millet-Stuffed Chard RollsThe Amazing Bean: White Beans and Escarole with ParsnipsGreat Grains: Polenta Pizza with Tomatoes and BasilDesserts: Apricot Fig Squares, Bursting with Berries Cobbler. . . and much more! Simple, affordable, and delicious, the recipes in Forks Over Knives: The Cookbook put the power of real healthy food in your hands. Start cooking the plant-based way today, it could save your life! Del’s cooking career began when he was just eight years old; creating dishes from whatever he could find in his father’s kitchen. By age of thirteen he was flaunting his culinary talents by preparing family dinners, much to his mother’s delight. After high school Del shelved his love for the kitchen and sold men’s clothing while he attended The Ohio State University School of Business. Selling suits and ties did not polish Del’s wing tipped shoes so he set out to pursue his passion, cooking. He landed a position at one of Columbus, Ohio’s premier vegetarian restaurants, The King Avenue Coffeehouse, and began to establish himself as a leader in the industry. In 1997 Del opened his own bakery, Del’s Bread, where he created, prepared and served delicious vegan pastries, breads, potpies, calzones, smoothies and other sorted delicacies to the palate of his Columbus based clientele. In 2001, Del transitioned from his bakery business to start a vegan Personal Chef Service, preparing eclectic plant-based cuisine to his already captivated audience. During this time, he developed what became a very popular cooking class series, sharing many of the delicious recipes he had created over the years with his students. In 2006, Del joined Wellness Forum Foods as Executive Chef, where today he continues the tradition of delivering great tasting plant-based meals to clients locally and throughout the continental United States. Del continues to teach cooking and health classes and is a keynote speaker at local venues and events around the country. Del is the author of Forks over Knives: the Cookbook, on the New York Bestseller list for more than 30 weeks; Better than Vegan, the story of his struggle with weight loss and gain, and how he managed to lose over 200 pounds on a low fat, plant based diet and; The China Study Quick and Easy Cookbook due to be published in May of 2015. I’ll admit, I had a hard time capturing the conversation I had with this week’s guest in one simple title - I’d argue none could do this justice! I’m speaking with Ashley Wood on today’s show, the host of Manifest This! podcast and international Akashic Records reader. Ashley Wood is a healer, spiritual teacher, intuitive guide, and mother dedicated to empowering women to live their best life. She is passionate about vegan living, yoga, animals, and the outdoors. She lives in Winnipeg, Canada, with her husband Ben and daughter Ivy, and cats Bose and Feesh. Together, they create and produce Manifest This! and own Lot 49 Dairy Free Foods. I first came across Ashley online when a friend recommend checking out her vegan food blog, and I instantly fell in love with the joy and peaceful nature within each recipe post - she provided a lot of inspiration during the two very snowy Winnipeg winters I made it through! Since then, Ashley has gone on to become an amazing mother and an internationally-recognized podcast host and Akashic Records reader. This gradual shift made so much sense, given that Ashley radiates a kindness and wisdom that comes through even during an inter-province Skype call! We speak in this episode about her journey through life and the ways that her vegan lifestyle has influenced and interacted with different periods of growth from her: from the reasons she became a vegan and longtime connection to nature, to her early food blogging days to the creation of her podcast and shift in focus to something that aligned more with her own spiritual goals and passions. This interview paints a beautiful audio-portrait of a woman who’s honesty and grounded nature has inspired thousands of women internationally to explore their spiritual side a bit more, and it was such an honour to speak with her on topics we both feel so passionately about! In this show we feature interviews from the 2006 Boston Vegetarian Food Festival. As many of you know, there is a great debate forming in the animal rights movement over wether we should back companies and laws that are supposedly making animal agriculture more humane, or wether we should be abolitionists who do not accept any form of animal enslavement, rape, torture and murder. We have interviews with Satya Magazine who recently dedicated two issues to this very subject. We also interview Isa Chandra Moskowitz and Terry Hope Romero about Post-Punk Kitchen and their cookbooks Vegan with a Vengeance and Vegan Cupcakes Take Over the World. Dr. Michael Greger, MD. tells us about the bird flu and his new book Bird Flu: A Virus of Our Own Hatching. We also have the Little Vegan Monsters, Boston activist Homefries, The new vegan cheese, Cheezly, Herbivore Clothing, Tamar Portafino, NEAVS (New England Anti-Vivisection Society), Lush, and much more! To top it off we have a phone interview with Megan's high school friend's 80 year old grandfather, Joe Esposito. Joe has overcome heart problems and lives a pharmaceutical-free lifestyle thanks to his nearly-vegan diet.

Anja also plays a song for us to sweeten up our musical segment. In the Naked News we cover the Dick Cheney hunting accident, McDonald's allergy-ridden fries, sheep sodomy, new research on the link between eating red meat and colon cancer, Muslim inmates in Seattle suing for meat, and an amazing parrot named N'kisi. Also: Sarah Kramer, Isa Chandra Moskowitz,We also would like to apologize for the background noise. Aside from the jet airplane flying over the studio at the end of Anja's interview, apparently there was a piano lesson going on above the Valley Free Radio studio.
