Disgust, often seen as a primal and universal emotion, can reveal a lot about our values, boundaries, and cultural norms. In this week's episode, both of our storytellers are confronted with something that grosses them out. Part 1: While on a school trip in Russia, Cassandra Hartblay's vegetarian dietary restrictions keep getting tested. Part 2: As a meat lover, Jenny Kleeman has high hopes for the world's first lab-grown chicken nugget. Dr. Cassandra Hartblay is an Assistant Professor at the University of Toronto, where she works with graduate students in Anthropology, European, Russian, and Eurasian Studies, Disability Studies and Sexual Diversity Studies, as well as undergraduates in Health Humanities. She is author of the 2020 book "I Was Never Alone or Oporniki" (University of Toronto Press 2020) and numerous articles, a documentary play, and co-curator of the #CripRitual art exhibition. If you can't find her, she's probably our running or swimming with her dog, an Aussie-Retriever mix named Arlo. Jenny Kleeman is a journalist, broadcaster and author. She writes for the Guardian, the Sunday Times and The New Statesman and makes radio and podcasts for the BBC and the Times. Her latest series for BBC Radio 4 and BBC Sounds, The Gift, tells the story of the remarkable truths that emerge when people take at-home DNA tests. On television, Jenny has reported for BBC One's Panorama, Channel 4's Dispatches and VICE News Tonight on HBO, as well as making 13 films from across the globe for Channel 4's Unreported World. Her first book, Sex Robots & Vegan Meat, was published in 2020 and has been translated into ten languages. Her second book The Price of Life, was published in March 2024. Professor Ben Garrod guest presents. As a new 'meaty rice' is created and Fortnum & Mason launch a scotch egg made with cultivated meat that they hope to have on sale as early as next year, we investigate the world of laboratory-grown meat. Mark Post made the first ever synthetic meat in 2012 to the tune of £200,000. He tells us how these lab-grown meats are made and how, he thinks, they could play an important role in reducing greenhouse gas emissions and feeding a growing population. Jenny Kleeman, author of Sex, Robots and Vegan Meat, is more sceptical, citing concerns over food security and if the public really want to eat this stuff. A stingray called Charlotte has become pregnant, despite there being no other stingrays in her tank at the Aquarium & Shark Lab in North Carolina. Marine biologist Dr Helen Scales considers how this may have happened. And cosmic minerologist Sara Russell from the Natural History Museum tells us how astronomers tracked and found a particularly unusual asteroid entering Earth's atmosphere and what we might learn from it. Check out my cooking show, Make Your Own! on YouTube @HealthyVeganEating https://www.youtube.com/@healthyveganeating/featured You can also find my free recipes and informations videos on Instagram @HealthyVeganEating https://www.instagram.com/healthyveganeating/ Veggie Ground 1 head of cauliflower 2 medium carrots 1 onion 3 cloves of garlic 16 oz portobello mushrooms (**) 2 tbsp Italian seasoning 1 tbsp paprika 2 tsp sage 2 tsp garlic granules 1 tsp thyme 1 tsp oregano 2 tsp cumin powder 1.5 cups walnuts (*) 3 tbsp tomato paste 3 tsp salt OR TO YOUR TASTE * for nut free version omit walnuts and add another 8oz of portobello mushrooms more coarsely chopped than the first portion to keep some texture. ** for mushroom free, use an equivalent amount of jackfruit and process it into smaller pieces. Coarsely chop all vegetables and garlic in a food processor. Mushrooms can be made even coarser for a more meaty texture (This will need to be done in batches) Coarsely chop walnuts along with tomato paste until combined. Add 1 tbsp of water to the heated pan. Add vegetables and mushrooms and continue to cook on medium-high until all the water releases (10-15 minutes) When most of the water has cooked out add seasoning. Continue to cook on medium for another 10 minutes, or until all the water has evaporated. Turn off heat and add walnut and tomato paste mixture. Mix thoroughly to combine. Add to your dish of choice.

Today on Boston Public Radio: We began the show by talking with listeners about new polling that puts the economy and inflation at the top of mind for voters just three weeks out from the midterm elections. Even the most ardent carnivore might struggle to argue that meat is a force for good. The global livestock industry produces more greenhouse gases than the exhaust from every form of transport on the planet combined. And while doctors try to curb antibiotic prescription, 80 per cent of antibiotics used in the US are administered to healthy animals to minimise infections on crammed farms. Industrial animal farming is also a major cause of deforestation, water waste, water pollution, eutrophication and diseases. One solution, of course, is to stop eating meat. Another, posited by scientists and entrepreneurs in the US and UK, is to start growing it. In this magazine long read, reporter Jenny Kleeman (author of Sex Robots and Vegan Meat) looks at two start-ups – a shiny Silicon Valley facility and a “farm” on an Oxford industrial estate – which aim to do just that: multiplying stem cells in bioreactors, creating in-vitro chicken nuggets, burgers and steaks. For now, it is an expensive and time- and energy-consuming process – but some have predicted the global market for such products will reach $250bn by 2030. So many people think they are eating "gluten-free", but gluten sneaks in so many foods. Gluten isn't just in bread. Even 1/8th of a fingernail amount of gluten can cause an immune response that lasts for weeks. Here are some sneaky gluten sources to be aware of: Common “Hidden” Gluten List: 1. Soy sauce and teriyaki sauce are often made with Wheat! Swap for Coconut aminos. 2. Cereals - Some popular brands are made with malt from barley. Swap to a grainless granola or grainless cereal like Seven Sunday, NuCo Coconut Flakes, or Autumn's Gold Grainless granola 3. Soups are often thickened with “roux” – Roux is a mixture of fat, usually butter, and flour. 4. Salad dressings – May contain malt vinegar, soy sauce, or flour. Could also contain modified food starch that's used to emulsify, thicken, or as an anti-caking agent. In the U.S., modified food starch is usually made from corn; if made from wheat, this must be specified on the label as “modified wheat starch” or “modified food starch (wheat.)” 5. Marinades and barbecue sauces – May contain malt vinegar, soy sauce, or flour. 6. Taco seasonings – Certain brands contain wheat. 7. Some Vinegars – Fermented vinegars made from gluten-containing grains need to be avoided. Malt vinegar is fermented and made from barley. Chinese black vinegar could be made using wheat in addition to rice. 8. Sausage – Could contain rusk, a twice-baked, gluten-containing bread that is used as a cereal filler in some types of sausage like British “banger” sausages. Some specialty or plant-based (meat-free) sausages could contain wheat gluten. 9. Some Beef jerky – Certain flavors of beef jerky – such as teriyaki – contain soy sauce. Owen Kelly has held a number of workshops in Helsinki exploring ways of making industrialised products at home. He has made face creams and oat milk. This year he turned his attention to vegan cheese which led him to look at the various ways in which industrialists have begun to create plant-based meat substitutes. In this episode he looks at the different approaches to replacing meat before returning to the vexing question of why most vegan cheese tastes disgusting. He offers a reason that relates to the whole business of industrial substitutes, before offering a different way forward.
To some, the very word ‘migration' generates fear, suspicion and even hatred. But according to Felix Marquardt, author of the acclaimed The New Nomads, we need to look afresh at our notions of the mass movement of people around the world. Far from being abnormal, he claims, the act of going in search of a better life is at the core of human experience. Since the age of the hunter-gatherers, migration has been the most effective means of education, emancipation and empowerment known to humanity. And today, as the world falls increasingly prey to nativist and political polarisation, migration is the surest way to break down barriers and find personal and political emancipation.That's the argument that Marquardt made in this special Intelligence Squared event. But according to author David Goodhart, it epitomises the wrongheaded worldview of the global elites who know nothing about the harm mass migration causes to communities on the ground. Rich countries ransack the best and brightest talent of poorer ones leading to brain drain and inequality. And national solidarity is eroded as towns and cities are changed unnervingly fast by inflows of migrants with different cultures and values. Does the world need more or less mass migration?
