This is the weekly columnMore interesting facts and trivia about wine:• World wine production averages around 6.5 billion gallons a year.• Portugal has the most wine consumption in the world at 13.7 gallons per person per year.• Italy drinks 12.3 gallons, France 12.2, Switzerland 9.4, Austria 7.9, Australia 7.3, Argentina 7.3, Germany 7.3, Sweden 7.1, Netherlands 6.4, Spain 6.3.• Although the U.S. consumes more wine than any other country, we rank 16th in the world in per-person consumption at 3.2 gallons. Russia is next at 2.3 gallons.• Wine is produced in all 50 states in the U.S.• There are four wineries in Alaska. There is very little wine grape production, so wineries mostly import juice for grape-based wine, but they also make wine using Alaska-grown blueberries, strawberries, and rhubarb.• California produces 85% or more of U.S. wine—685 million gallons a year.• Washington State is the second-most U.S. wine producer with 36 million, followed by New York State with 28.5 million, Oregon with 11 million, Texas with 4.3 million, Michigan with 2.8 million, North Carolina with 2.4 million, Virginia with 2.4 million, Illinois with 2.4 million, and Pennsylvania with 2.2 million.• There are 269 American Viticultural Areas (AVA) in 34 states. The story is heartfelt, it has relatable stakes, it's romantic and touching and funny: everything a holiday movie should be. As The Jar team drove towards Jackson, Mississippi to meet their next guest, Pertis Williams, they received a text message from him informing them of a new location near his home called The Grind. Pertis's friend, Terence, had transformed an old Sonic burger drive-up into a community center where people could come together and talk about their issues, enjoy art, relax, and even record podcasts. But what caught their attention even more than this was the delicious aroma of barbecue wafting from the parking lot.Pertis, being a true Mississippi native, had woken up extremely early that morning to smoke some ribs and chicken corn. He welcomed The Jar team with open arms and offered them some of his mouthwatering barbecue. Even though it was only 10 AM, they couldn't resist the tempting aroma of the meat and decided to snack on some before sitting down for The Jar interview.Pertis talked about his childhood growing up in Brookhaven, Mississippi, surrounded by nature and spending his days playing in the woods, collecting things, and running around from sunrise to sunset. He had a natural curiosity, and he often referred to himself as a borrower, which he explained to The Jar team with a chuckle.Family played a crucial role in Pertis's life. His father owned the funeral home in town and had recently been elected into politics, becoming the first black man to hold some of these positions. However, when Pertis was quite young, his father was killed in their home during a dispute while playing cards. This tragedy left a profound impact on Pertis and his family, but he was lucky to have a fantastic stepfather and a beautiful mother who was always there for him.Recently, Pertis had gone through a difficult divorce, and he had moved back in with his mother. This experience allowed him to get closer to her, and they had formed a stronger bond than ever before. Pertis had also started a new project called Project Humanity, where he was trying to bring people together and unite opposites. He was the host of the "Audit" podcast, ran the "Uniting America" Facebook page, and firmly believed that we all had a responsibility to help others.The Jar team was grateful to Pertis and his friend Terence for the fantastic hospitality and mouthwatering barbecue. Ethan Holmes founded Holmes Mouthwatering in 2008 at the age of 15 after being inspired by his grandfather's applesauce recipe and deciding to innovate his own line of products. While studying business at Hiram college, he launched the business in 2014 making small batches at a time on campus, eventually growing to his first major retailer: Heinen's in 2015, Giant Eagle in 2016, and Whole Foods Market and Kroger in 2107, selling at a total of 300 locations.To date, they have processed 500,000 pounds of apples from local orchards and made 250,000 units in-house for consumers across the U.S. selling primarily in the Midwest and online, achieving lifetime sales of $400,000. In addition to making and selling applesauce, they created a community program called the Holmes Entrepreneur Initiative teaching youth entrepreneurship through programming, internships, and workshops around applesauce. His brand was chosen for the Chobani Incubator in 2020, The SKU Coca-Cola Accelerator in 2022, and raised $700k from angel investors and grant funding since their start. After 7 years in business and many lessons later, he is now in the final stages of launching a rebranded, improved, and innovative line: 3.2 oz pouches of applesauce. The 1st pouched applesauce on the market with chunks of real fruit! It took him $100,000 and over a year to finalize the packaging with global branding agency Moxie Sozo and nearly 2 years to find the right contract manufacturing partner to recreate their formulas and maintain a premium quality and competitive price point. He had an opportunity to visit their new contract manufacturer in Chile in July to visit their plant and was happy to see they manufacture for prominent U.S. retailers, such as Kroger, Aldi, Walmart, Safeway, and more. Producing over 50MM+ applesauce pouches annually, giving his products a 20% gross margin increase and an option for price breaks as they scale. He signed a 3-year contract with the manufacturer for 360,000 pouches or 60,000 sellable units to be made by the end of the year and delivered to the U.S. Q1 2023. So far, they have commitments from the following: Target, Giant Eagle, Walmart, Heinen's, Whole Foods Market and food service accounts (concessions, foodbanks), and are expecting an additional 500 doors acquired throughout the remainder of the year (Sprouts, Wegman's, Marc's, Fresh Market, etc). I want everybody who wants to cook to be able to see themselves making things, enjoying them, and trying new things." –Nik Sharma, cookbook author and photographerToday's episode, part two in our Behind the Spine series, is all about the mouthwatering photography that draws us to our favorite cookbooks.Our guests today are cookbook photographer Eva Kolenko and Nik Sharma, a cookbook author and photographer.Eva Kolenko studied advertising photography and worked in editorial photography until eight years ago when she decided to transition into food photography. After shooting a couple of William Sonoma cookbooks, she moved full-time into doing food-centric photography work. Now, she’s shot more than 30 cookbooks, including East Bay Cooks and Food Between Friends. Her work has also been featured in many advertising campaigns and magazines. Eva joined our interview from her new studio in Petaluma, California, and shared with us how exactly she moved into food photography, what happens when she hits a creative block, and she breaks down the process of photographing a cookbook from brainstorming to wrap day.‍Nik Sharma is a cookbook author, food blogger, writer, and photographer of his own cookbooks, Season: Big Flavors, Beautiful Food, and The Flavor Equation: The Science of Great Cooking Explained in More Than 100 Essential Recipes. Nik began food blogging while he was still working full-time as a molecular biologist. He had always taken photos for his blog, but he started to realize that he wanted to improve his photography skills and bought an instructional book published by Kodak. When Nik got his first cookbook deal, he knew he wanted to photograph and style the book, but had no idea how to get started. So, he reached out to photographers until one agreed to let him shadow a project—and that photographer happened to be Eva Kolenko. Now, Nik has successfully shot all the photos for his blog and his two cookbooks, as well as many photos for his recipes that have appeared in numerous food publications from the New York Times to Serious Eats.We've got a great episode for you today!
