Master Brewer Hagen Dost delves into Dovetail Brewery's traditional brewing techniques, from open fermentation to coolships. Hagen starts by sharing his journey of getting into brewing, with an emphasis on his German heritage growing up and the sensory class that helped him develop skills that he feels would benefit any brewer. He then explains how he became a Certified Master Brewer and discusses traditional European brewing methods, including decoction and the use of a coolship. Plus: the art of identifying fermentation flaws, the science behind crafting classic European beer styles, the significance of the German beer purity law, and the shelf life you can typically expect from beer you buy at your local craft brewery. After the beer break, Haagen discusses their Wet-Hopped Hopfenlager, a lager brewed with freshly picked hops from Michigan, characterized by subtle hop flavors and a lack of bitterness. He also explains what a coolship does and why it's so rare, why some brewers prefer to serve full pours over flights, and the history of the lauter grant faucets behind Dovetail's bar. Plus: what piece of equipment is Dovetail actively using that used to belong to the oldest brewery in the world (and how did they acquire it)? This past summer, we visited Indianapolis for the first time and thanks to reddit recommendations for the best haze in the city, the only brewery in town we hit was Guggman Haus. We enjoyed it so much that we had to get the folks behind the brewery on the pod! Derek and Courtney joined Cee to chat about their lengthy and rocky journey to opening the brewery, the impact their time in Germany had on their approach to their beer, the scene in Indiana, how they leveraged the full real estate of their property to get open sooner, why they turned their old brewery into a cafe, how they opened their second location, the Indy 500 and the impact on the city, their recent equipment upgrade, and why they don't really do much distro. They got into four fantastic Guggman Haus beers - Wilburs Prize Pils American Pilsner, The Riverside New England IPA, Guggenweizen Hefeweizen, and Into The Wild Sour (Strawberry, Raspberry and Blueberry). This was fascinating - cheers! BAOS Podcast Subscribe to the podcast on YouTube | Website | Theme tune: Cee - BrewHeads

Katherine challenges the idea that top fermenting and bottom fermenting yeasts function in the same way. Learn what yeasts actually do and the role they play in the fermentation process. 09:03 Revolution Brewing Interview: David Blackford, Lead Brewer at Revolution Brewing, explains the difference between a head brewer and a lead brewer, reminisces about his first impressions of Revolution Brewing and the first beer he ever got to work on, and discusses the development of signature beers like Eugene Porter and Anti-Hero, his journey from a packaging specialist to lead brewer, and what it was like for the brewery to transition from a small brewery to a large-scale operation, including the use of new technology like centrifuges to increase production capacity. Then, David talks about Revolution's latest favorite, the Cold Time Lager, and explores the growing trend of lighter, less complicated beers making a comeback, emphasizing the appreciation for quality brewing with fewer ingredients. David and Katherine discuss the difficulty (and fun!) of naming beers before Cody jumps in with questions about Revolution's Deep Wood Series of barrel-aged beers, including what inspired Revolution to release such high ABV beers year-round. The discussion also touches on memorable yet discontinued brews, such as the Bottom Up Wit, discussing its unique qualities and why it's no longer a staple despite its popularity. David also clarifies the differences between Wit wheat beers and Hefeweizens, focusing on yeast's role in defining their distinct flavors.  53:56 Beer Behavior: What's up with hop waters? David discusses the intricacies and challenges of making hop water, a non-alcoholic beverage gaining popularity among beer enthusiasts, including insights into their process for creating Super Zero. He discusses the benefits of hop water as a non-alcoholic alternative that allows breweries to showcase their craftsmanship, its role as an excellent palate cleanser at beer festivals like FOBAB, and its versatile suitability for various settings, from work lunches to outdoor activities.  1:00:12 Today's Featured Merchandise: “Drink a Stout” tee (if you can drink coffee, then you can drink a stout!), available in multiple colors! Over the past 15 years of Fat Head's (https://fatheads.com) existence, they've won 27 GABF medals (14 gold) and a dozen World Beer Cup medals (seven gold), but brewmaster Matt Cole takes it all in stride with typically Midwestern humility. They love to win, but they do it for the sake of making great beer. There's a modern sensibility to their flagship American IPA, Head Hunter—one of our Best 20 Beers in 2023 (https://beerandbrewing.com/the-best-20-beers-in-2023/)—which feels West Coast–driven but with an almost analog-like warmth that makes it accessible and refined without sacrificing any of its urgency and presence. And their approach to open fermentation of German-style weissbier is a master class in controlling ester and phenol production for flavorful yet balanced beers. Ask Cole, however, and he'll chalk it up to quality ingredients and sound process. “Good product in, good product out.” In this episode, Cole discusses: soft fining to protect bitterness and aroma brewing American IPA with a strong West Coast vibe evaluating new-crop-year hops in the brewhouse after selection selecting hops at the brewery with input from the entire brewing team tagging hops from different selected lots for different usages in a brew maximizing natural hop flavor and aroma with whole-cone hops in the hopback the stylistic overlap of West Coast and American IPA dialing in packaging for competition fermenting weissbier in an open fermentor using a flotation tank to clean up brews the importance of process over recipe And more.

Cambridge, ON is home to some phenomenal breweries, and one of the newest, Farm League, has some big shoes to fill. Taking over the old Grand River location, they've turned a legendary brewery into something that truly reflects who they are and what they bring to the scene. Co-Founders Matt and Mike join Cee and Nate to chat about their interest in some of the less popular styles, what it was like to open a brewery mid-pandemic, some of their big collabs, their Meadows Music Festival on June 2nd and 3rd, and their plans for the future. We got into four of their crackin' brews - Hauler Lager, Big Ticket Kölsch, What Feeling Good Feels Like Hefeweizen, and Galt Red Amber Ale. This was a great one, cheers!   BAOS Podcast Subscribe to the podcast on YouTube | Website | Theme tune: Cee - BrewHeads

This week I travel to Market Garden Brewery in Cleveland, Ohio. My guests were Sam McNulty and Patrick Daniels. Sam is the owner of the Market Garden Brewery and Pat is the director of brewing at MGB. We discussed the inception of the Market Garden Brewery located in the Ohio City area of Cleveland, Ohio. We also talked extensively about water chemistry, brewing processes, brewery expansion, and what breweries need to do to set themselves apart from a rapidly growing craft beer market, not just in Ohio, but across the country. The beers we sampled during the interview were a Czech Pilsner, Hefeweizen, IPA, and freshly canned 3-hour old Hazy IPA. All of which were delicious. Pin High Pilsner – Czech Pils 4.8% ABV Prosperity Wheat – Hefeweizen 6% ABV Citramax – American IPA 7.4% Cosmic Haze – Hazy IPA 8.5% Make sure to follow Market Garden on FB & IG @marketgardenbrewpub. Pigweed and Crowhill drink and review a Hefeweizen from 1623 Brewing, then discuss Hell and Satan. We often read later understandings of Hell and Satan back into old texts, so we see the serpent in the garden of Eden as Satan, and Sheol in the Hebrew Bible as Hell. But it wasn't always that way. The notion of Hell and the role of Satan wasn't as clear in older texts as they became later. Hell is much more clearly described in the New Testament, as is Satan, but the concepts continued to develop past that through art. Our modern notions of Hell might have more to do with Dante and Hieronymus Bosch than they do with the Bible. Also, P&C were surprised to learn that Hell is not an exclusively western idea. There are notions of Hell in Buddhism, Hinduism, etc.

Enjoy the classics at Ironshield Brewing  We're bringing you one from our backyard this week!  If you're a Georgia beer nerd you may know the name Glen Sprouse.  If you don't know his name then you probably know some of his breweries.  The old timers may recall Phoenix Brewing which opened in Atlanta at The Prado in 1996, slightly less older timers likely know 5 Seasons that took over the space in 2001.  Sprouse was part of both of those ventures. He stepped away from brewing for a while before opening up Ironshield Brewing in Lawrenceville, GA.  The brewery features classic European styles including Seven Sisters Munchner Lager, which was a staple on the taps at 5 Seasons.  With the addition of Jason Carroll to the team some true Irish beers have hit the taps.  Carroll came to America from Ireland where he brewed at Guinness's Open Gate Brewery, among others.  In addition to their Ironshield brand the brewery also contract brews under Big Kettle Brewing and expects to brew 30,0000 barrels for their customers in 2022. Welcome back Lorelei Hefeweizen Ironshield offers several returning seasonals, like Lorelei Hefeweizen which returns this weekend. (Release party March 26th, 2022)  We got a sneak preview of this one and it's one fine Hef.  Next up is Warhammer Maibock in late May.  We're all in for that one on the name alone. Although contract brewing is the largest part of the brewery's business right now they are working diligently to grow the Ironshield brand.  If you're a fan of classic ales and lagers do yourself a favor and check them out.
