Feed 4 for under $20! One pot, one pan! (Makes 20) Prep time: 15 mins Cook time: 15 mins Ingredients: 500 G Basa Fish (Frozen Fish Fillets Basa) 4 tbsp red curry paste ( Exotic Food Asian Red Curry Paste) 1 egg ¼ cup corn flour 8 green beans (chopped into ½ cm pieces) (Supermarket own green beans) 1.5 tbsp fish sauce or soy sauce 1.5 tbsp lime or lemon juice ½ cup chopped coriander stems (save the leaves) 2 cups grated Cucumber (leave it in the bowl so the juices come out) 4 tbsp Sweet Chilli Sauce Hot Cooking Oil *Cooked rice for 4 people Method: Make sure the fish is well defrosted. Leaving it overnight in the fridge is best. It needs to be soft enough to work with. In a bowl, combine the fish, curry paste, fish or soy sauce, coriander stems, lemon or lime juice and the egg. If you have a food processor, use that that to blend everything up. If not, get in there with a fork or a potato masher and get it as fine a paste as you can. Add the corn flour and chopped green beans to mix and combine well. Heat the oil, in a pan, over a medium heat. 4-5 tbsp should be fine depending on the pan you use. Take a tablespoon of the mix and lay it down on the oil. Fashion the fish cakes into 1.5-inch discs that are about 1 cm high. Fry the fish cakes in the oil till then turn golden brown on each side. When finished, place them on paper towels to cool. Repeat till all the fish is cooked. Drain the water from the grated cucumber. Combine with the Sweet Chilli sauce and chopped coriander leaves. For a number of years now, chef Ganesh Raj has been teaching people how to eat well for less. It's the title of the book, based on his popular TV show with Michael van de Elzen, which is about to start filming for a fifth season. Ganesh also runs a YouTube channel called The Humble Yum Yum, promoting global food that doesn't cost the world. He's teamed up with South Seas Healthcare to run the Humble Yum Yum food education programme, focused on creating healthy family favourites on a budget. He joins Kathryn to talk about that - and share his favourite recipes, including one for chop suey and another for Korean BBQ Kimchi burgers.
Chicken katsu with green salad Ingredients: 230g Panko Crumbs Sun Valley – $3 for 400g $2 1tbl (20g) Sesame seeds $1.55 – 100g 31c 4 eggs 66c an egg $2.64 500g chicken meat $7 ½ head lettuce $1.50 ½ Cup chopped mint $2.30 1 tbl Worchester sauce $2.60 for 250ml 16 c 1 tbl mustard $3.90 for 200g 30 c 1 tbl soy $3 for 500ml 9 c 1 tbl tomato sauce $5.40 for 270ml 30 c 1 Lemon $1 Existing Ingredients: 4-6 portions of leftover cooked rice salt and pepper 1 cup of oil Directions: Add chicken, salt, pepper and panko crumbs, into the eggs and mix well Heat a little oil over a medium heat. Fry the chicken for about 8 mins until fully cooked. Some of the bits will get crispy. That's a good thing. Next mix the Worchester sauce, mustard, soy and tomato sauce. Mix the lettuce and cucumber with the sesame seeds and lemon Lay the salad and chicken on the rice and serve! Drizzle with the sauce and enjoy. Ganesh Raj, host of Eat Well for Less has launched the Humble Yum Yum Project - a food education course designed to educate people about good nutrition. Raj says he aims to teach people how to cook a wide range of affordable dishes to get ahead of the cost of living. Ingredients:4 cans chilli chicken1/2 cup soy sauce2 tbl garlic powder1 tsp white pepper6 cups cooked rice2 cups frozen vegetables½ cup Sesame oil2 cups vegetable oil4 cloves of garlic chopped4 eggs2 spring onionsDirections: Cook the rice ahead of time and cool it. You can do this by sticking it in the freezer for 30 mins. Leftover rice is great here.Beat the 4 eggs in a bowl till they are airy and fluffyPut 1/2 cup of soy and 1 tsp pf garlic powder into the eggs and mix wellIn a shallow pan, heat 1 cup of oil till hot. Pour the eggs in and let it fluff up. Bast the uncooked top with oil till it's completely cooked. Remove the fluffy, drain on kitchen paper and set asideRemaining extra oil, leaving about 1tbl of oil in the pan.Cook the chopped garlic on high till it just starts to go yellowImmediately remove the garlic and oil and pour into a bowl. The garlic will continue to cook in the hot oil till its golden brown. Do not let it burn!Heat 1 tbl of oil in the pan. Pan fry the vegetables in the oil. Season with 1 tsp saltOnce the vegetables are cooked, add the cold rice into the pan and mix itThen add 4 pots of chicken mix from the cans. Sauce and all!Add ½ cup soy and ½ cup sesame oil into the rice mix and combine thoroughly.Add white pepper. TVNZ programmers have the show for the times with Eat Well for Less. Viewers are in for some jaw-dropping reality when household shopping goes under the microscope.The show, based on a UK series, is hosted by chefs Mike van de Elzen (TVNZ's The Food Truck, and Kiwi Living) and restaurateur Ganesh Raj (owner of The Tasting Shed, co-owner of The Māori Kitchen.) Viewers will be happy to meet Raj and his infectious sense of humour, with van de Elzen already a favourite of TV audiences.In each episode, the pair will meet a Kiwi family, and share their knowledge on how to save money, sort food facts from food fiction and eat well for less. By the end of each episode, the team hopes to have changed a family's life, as well as the size of their shopping bill.Raj has been behind the camera as a marketing creative and a director since he and his producer wife, Jo, moved from Singapore to Auckland in 2002."It's been almost 20 years since I was a presenter on ESPN Asia and MTV Asia, and it was great to be back in front of the camera again and not have to think about camera angles and how segments will edit together," Raj tells Spy.In 2011 the pair opened The Tasting Shed, in Kumeu. The restaurant has consistently been in the Top 50 Auckland Restaurants' list and he has twice been named Restaurant Personality of the Year.The pair were amped to do the show as a useful aid to families, with neither realising how important their show would be in these times."My passion has always been to encourage Kiwis to eat healthier and share recipes and tips that are good for you, but don't compromise on taste," says van de Elzen. "It was an absolute honour to be invited into people's homes during Eat Well For Less, and if we can help just one Kiwi family watching the show, it will be a success in my eyes." he says."Right now we all need to shop within our means and serve what keeps the family happy. Comfort food is key during these stressful times but that doesn't mean you can't make a few tweaks to have some variety," says Raj, who is soon to start a YouTube channel about global food that doesn't cost the world."Make sure each meal has leftovers so you can repurpose it the next day. Budgets are going to get tight over the next six-18 months. Save money by learning how to cook some simple, delicious meals," he says.Van de Elzen says Uber Eats was just too easy and expensive for families and the show will more than demonstrate wasted spending. "Takeaways can still be a treat for families, just not an everyday thing. This lockdown has made us put back on our pinnies and cook for ourselves. Yes, it doesn't always work out and taste as good as your favourite Thai delivery but you are cooking from scratch and best of all your kids are learning the very valuable lessons of food," he says.Both hospo pros know Level 3 will be tough on their own restaurants."I am trying to approach the next wee while with two values in mind. Compassion and courage. Every day I tell myself that I have to have the compassion to look after my family and staff," says Raj.For van de Elzen, he says its back to basics."Each chef and business will have dishes or cuisines that they're loved for, and people will have been craving during the Lockdown.
