Brazilian chef and Youtube star Guga who has no less than 12 million followers on social media including five and a half million subscribers to his YouTube channels. Born Gustavo Tosta, Guga has developed this huge following in particular for his multiple ways with steak - one of signature methods is reverse searing where a steak is slow smoked then followed by hot searing. He uses all sorts in his cooking: pellet smoker, charcoal grill, gas barbeque and is a fan of the sous vide machine - where food is cooked in a tepid water bath. Fat on the inside so it keeps the meat moist when you cook it, this is the best cut to cook on the BBQ in my opinion Sirloin. Fat on the outside so you have to be careful as to not overdo itRump. The tougher of the 3 cut but has maximum flavour. So a good one to cook Medium to rear but never well done!Preparing the meat and seasoning is key. Buy your meat from a trusted butcher or on-line meat supplier Always try and bring your meat up to room temperature Always preheat heat your BBQ or cast iron frypan to hotAlways season with flaky salt and cracked pepper just before you want to cookCooking of the meatResist the urge to turn the meat until a good amount of colour has been formed Colour is flavourAlways keep your BBQ on highNever overload the BBQ as you will take the heat out and it will steamIf you can cook over fire or charcoal. DO! the flavour is so much betterYou are better to undercook your meat, you can always bang it back on the BBQMeat should never be served straight off the BBQ or grillRest your meat for a good 5-10 minutes before serving, just loosy lay some tinfoil over the top and place in a warm placeIf you are going to slice the meat before serving do it as close to serving as possible and season with a touch more flaky salt.Simple marinates work wellSoak in dark soya sauce for 10 minutes before cookingCrushed garlic, oil, salt and pepperPaint with Dijion mustard during cookingMeat rubs for a little extra punch, but be careful as you don't want to drown the flavour of your meat. Always check for flavour enchancers like MSGDifferent types of salt can change the taste, like smashing some rosemary with flaky salt or using a smoked salt to sprinkle on afterwardsUse a compound or flavoured butter to enhance the flavour and moistness of the meatCafe de Paris Butter 250 gm unsalted butter 1 tbsp tomato ketchup 1 tbsp Dijon mustard 1 tbsp capers, chopped 1/2 cup onions, finely diced 1/2 cup parsley, chopped 2 tbsp thyme leaves 3 cloves garlic, crushed 4 anchovy fillets 1 tbsp brandy 1 tbsp worcestershire 1/2 tsp paprika powder 1/2 tsp curry powder 1/2 tsp seasalt crack of pepper 1 lemon, juicedCut the butter into small dice and place into a mixing bowl. Using a paddle attachment slowly beat the butter until smooth. Gradually add the rest of the ingredients starting from the top to the bottom. Laying out a 30 cm piece of greaseproof paper, spoon the butter mixture across the paper about a third of the way up. Gently roll the paper over to form a cylinder. Then wrap again in clingfilm to help roll tight. Store in refrigerator till hard Cut into small disc's, removing the clingflim and paper before serving.

Huff-duff allowed operators to determine the location of an enemy radio in seconds and it became a major part of the network of systems that helped defeat the U-boat threat. It is estimated that huff-duff was used in about a quarter of all attacks on U-boats. In 1935 Watt was asked to comment on reports of a German death ray based on radio. Watt and his assistant Arnold Frederic Wilkins quickly determined it was not possible, but Wilkins suggested using radio signals to locate aircraft at long distances. This led to a February 1935 demonstration where signals from a BBC short-wave transmitter were bounced off a Handley Page Heyford aircraft. Watt led the development of a practical version of this device, which entered service in 1938 under the code name Chain Home. Watson-Watt justified his choice of a non-optimal frequency for his radar, with his often-quoted “cult of the imperfect,” which he stated as “Give them the third-best to go on with; the second-best comes too late, [and] the best never comes.” He was born in Brechin,Angus.13 April 1899 - Alfred Mosher Butts - https://en.wikipedia.org/wiki/Alfred_Mosher_ButtsAmerican architect, famous for inventing the board gameScrabble in 1938. In the early 1930s after working as an architect but now unemployed, Butts set out to design a board game. He studied existing games and found that games fell into three categories: number games such as dice and bingo; move games such as chess and checkers; and word games such as anagrams. Butts decided to create a game that utilized both chance and skill by combining elements of anagrams and crossword puzzles, a popular pastime of the 1920s. Players would draw seven lettered tiles from a pool and then attempt to form words from their seven letters. A key to the game was Butts' analysis of the English language. Butts studied the front page of The New York Times to calculate how frequently each letter of the alphabet was used. He then used each letter's frequency to determine how many of each letter he would include in the game. He included only four "S" tiles so that the ability to make words plural would not make the game too easy. Butts initially called the game "Lexiko", but later changed the name to "Criss Cross Words", after considering "It", and began to look for a buyer. The game makers he originally contacted rejected the idea, but Butts was tenacious. Eventually, he sold the rights to entrepreneur and game-lover James Brunot, who made a few minor adjustments to the design and renamed the game "Scrabble." To memorialize Butts's importance to the invention of the game, there is a street sign at 35th Avenue and 81st Street in Jackson Heights that is stylized using letters, with their values in Scrabble as a subscript. The basic principle resembles that of the BLU-82 Daisy Cutter, which was used to clear heavily wooded areas in the Vietnam War. As I promised in my last podcast, here’s some brief advice on how to achieve the perfect steak:1.Don’t cook a cold steak. Take it out of the fridge 20 minutes before cooking to remove some of the chill. You are more likely to achieve the right degree of cooking if the steak is closer to room temperature to begin with, but always consider hygiene.2.The steak must be placed on a very hot surface (pan or grill) that begins to sizzle immediately on contact. If the heat is too low, the steak will not hold in its juices and will begin to stew.3.Before cooking, brush the steak with olive oil and season with sea salt flakes and freshly milled black pepper, this will enhance the flavour.4.Seal the steak for at least one minute on each side, the remaining cooking time will depend on how far you want the steak to be cooked. If a steak is really thick, you may have to adjust the temperature down during the cooking process.5.Allow the cooked steak, to rest for approximately half the amount of time it took to cook, before serving. If the heat is too low, the steak will not hold in its juices and will begin to stew. 3.Before cooking, brush the steak with olive oil and season with sea salt flakes and freshly milled black pepper, this will enhance the flavour. 4.Seal the steak for at least one minute on each side, the remaining cooking time will depend on how far you want the steak to be cooked. If a steak is really thick, you may have to adjust the temperature down during the cooking process. 5.Allow the cooked steak, to rest for approximately half the amount of time it took to cook, before serving.
