This week on Organic Matters, we meet brothers Charlie and Dan Hogan, and Dan's wife Una Wycherley who all run Larkin's Hill Farm together on the outskirts of Nenagh in Co Tipperary. They sell salad and vegetables to local retailers, and in addition to managing a suckler herd, they have more recently started growing and selling combi crops as animal feed to meet growing demand from organic livestock farmers. They talk about their experiences with the different farm enterprises and their complementarity as well as plans for the future, which include finishing cattle, incorporating trees onto the farm and further developing market outlets for their horticulture.

Irish apples can sometimes be difficult to buy, but when you do find them, there's a good chance they were grown by Con Traas. Con has 40,000 apple trees on ‘The Apple Farm' in Co Tipperary and he sells the fruit directly from his on-site farm shop and also produces apple juice, cider, crisps, vinegar, jams and jellies. In this episode of Food Matters, Con joins Mick Kelly of GIY to share the story of taking over the farm from his parents and how he has scaled and diversified the business since. They also talk about the challenges of fruit production in Ireland, Con's positive experience with major retailers, and the impending threats of climate change.

Mark Lynch was in Tralee District Court yesterday where 66-year-old Thomas Carroll from Brookway, Clonmel, Co Tipperary was charged with the murder of Paddy O’Mahony from Castlemaine at the weekend. Separately, 41-year-old James Leen of Pilgrim Hill, Kilmorna, Listowel and 43-year-old Nathan McDonnell of Ballyroe, Tralee also appeared in connection with the €32.8m crystal meth seizure in Cork Port earlier this month.

There were skirmishes between protesters and gardaí, filmed on social media. Last night 200 people came out to add their support to the protesters in sub zero temperatures. In the 18th Century, the faction fighters of Tipperary used to gather together in groups or “fighting factions” to battle each other over territory or land disputes. This fighting involved the use of bata or clubs and when the law prohibited the carrying of a club or gavel, the fighters extended these bata to the length of a walking cane to get around the new law. Often the bata had the end or knob filled with lead for greater striking power in combat and this later became known as a shillelagh. In these battles, the men would sometimes be accompanied by their wives as backup. These women would put stones into handkerchiefs and using these like a slingshot would throw them at the enemy. As a result, they were referred to as stone throwers or stone chuckers. The men and fighting women of Tipperary were fierce and the faction fighting spread throughout the south of Ireland with the last being held in 1887 in Cappawhite near Cashel, Co Tipperary, only a few miles from where Mick's family are from and where his father was born. The Lingaun Valley is a little known valley that forms the border between Co Kilkenny and Co Tipperary. However for thousands of years this small river formed one of the most important frontiers in Ireland.While the societies and kingdoms that fought and died over this valley are long vanished the region is littered with their remains in the tombs, religious sites, castles and battlefields.A few weeks ago I met up with archaeologist Neil Jackman, an expert in the region and we spent a morning exploring the valley. Having decided that a career in Hotel Management would enable him to fulfil his desire to travel the world, he graduated in 1988 from DIT, Cathal Brugha Street and Trinity College with a Degree in Hotel Management and ended up working in the Park Hotel Kenmare and The Shelbourne Hotel in Dublin in the early part of his career. After two years working for Giuseppe Pecorelli in Surrey at Pennyhill Park Hotel in Surrey, he returned to help open Sheen Falls Lodge in Kenmare as Deputy Manager. Four years later he took on the challenge of running the exclusive Royal Scotsman Train in Scotland for two years before being called back to help open an extension of 21 rooms in Sheen Falls Lodge as General Manager. The next ten years were spent establishing the property as one of Ireland's premier country resorts. Prior to his appointment as General Manager of the Cliff House Hotel in Ardmore, Co Waterford, in 2008, he spent the previous two years developing The Marlbrook Resort in Clonmel, Co Tipperary. During his time in CLIFF he was also in charge of the running of the Cliff Townhouse in Dublin, a sister property to the hotel in Ardmore and was involved in the operation of the newest addition to the CLIFF family, Cliff at Lyons in Celbridge, Co Kildare, as Group General Manager. He is now General Manager of the Cashel Palace Hotel in Cashel, Co Tipperary. Adriaan was awarded a Certificate in Executive Management Development from Cornell University in 2005 and graduated with a Masters Degree in Hospitality Management from Dublin Institute of Technology, Cathal Brugha Street in 2008 to add to his Bachelor Degree.
