Celebrity Chef Dave White recently released his first cookbook "Salted:A Recipe Book with a Story to Tell." This new book spotlights 50 of his favorite recipes and adventurous travels (photos included) around the world. Before he was the chef on Bravo's "Below Deck Mediterranean," Chef White cooked in some of the finest kitchens in London and Paris and was a top competitor skier. In the book's endorsement, Captain Sandy Yawn writes that Chef White "was the best chef on Below Deck Med." With mountaintops and valleys in his life, Chef White shares how cooking saved him. He is a big advocate for mental health and openly speaks about his own challenges. Having grown up near London, Chef White has a passion for Fish N Chips and hopes to one day open a restaurant. Meanwhile, he continues his culinary adventures on land and sea. Here are Chef Dave's top tips for the home chef: When you are cooking, it needs to be fun. I never write lists when I go shopping. See what's fresh and organic and what they brought in that morning. Then create something around that ingredient. Season fish and meat treating them both the same. Let it set out for an hour before you cook it. Bread doesn't have to be complicated. Just get good flour, all purpose and some quick yeast. Put it together in one pot, warm water, rest and a tiny bit of sugar. Don't overthink. Let it proof once and just bake it at a high heat. It really isn't that complicated. This week, Mish and Zach watched "Fish N Chips: The Movie" - an animated film from 2013 directed by Dan Krech. It's a film about a fish named Fish and a cat named Chips who are both dealing with some deep generational trauma surrounding the ownership of a small bone on a string that they wear like a necklace. Fish's ancestors stole the bone from Chip's ancestors after literally eating them. Chips desperately wants to get the bone back so that he can return it to his family, but Fish is being a little bitch about it. The opening titles of this movie are written in comic sans. About the Show: Today we sit down with Lewis Chase, who along with Michael and Matt Sutton, is one of the founders of Feed and Folly. Based in downtown Fayetteville, Feed and Folly took over a building that has not been occupied since 1972. For those of you that are “OFF” (Originally from Fayetteville) this building used to house the B&B Automotive store but the building has been empty for decades. Lewis Chase comes from a long line of business owners here in Northwest Arkansas and Michael and Matt Sutton are originally from Southport England but grew up with Lewis here in Fayetteville. Michael and Matt were working in a restaurant in Colorado and Lewis convinced them to come back to Northwest Arkansas and open up Feed and Folly. The timing was terrible. They had a soft open scheduled for the week in March that Arkansas had to shut down due to the Coronavirus Pandemic. Lewis, Michael, and Matt, persevered and waited patiently to open up things in a safe way. The restaurant has a very funky vide to it with custom wrought iron furniture and fantastic woodwork throughout. The highlight of the restaurant is their Rooftop bar which has wide-open Southern views of the Ozarks. You can actually see, the Mount Sequoia Cross, Fayetteville Square, and West Fork from the rooftop. Feed and Folly provides a very nice assortment of comfort food on the menu from Cheesesteaks, Fish N’ Chips, Salads, Charcuterie Boards, and Smoked Wings (Smoked and then fried). They source a lot of their food from local farms so you know their offerings will be fresh. And, a beautiful smoker out back provides the smoked meats. We will Live Streaming on FB, Live Blogging from home and were Live at the City of Bainbridge Island, Washington Regular Business Meeting of the City Council. Tonight was the last public meeting for Matthew Tirman, Bainbridge Island City Council. He was acknowledged by his fellow council members and member of the public at the start of the meeting for his time and accomplishments while representing the South Ward over the last 2+ years. Along with a proper send off by his peers, Proper Fish and Wake Up Bainbridge teamed up to give Matt a "Proper" send off with a complementary order of the best Fish-N-Chips in the USA. The Council took up both old and new business including using up to 50% of LTAC funding for Workforce Affordable Housing where Sal DeRosalia gave public comment, as well as an update on Floor Area Ratio Bonus Density Options, the Roundabout at Wyatt Way and Madison, Sustainable Transportation and several appointments to multiple committees and task force type groups. After visiting Japan, becoming enamored with the culture and cuisine, and making a spur of the moment purchase of a specialty grill, John traveled down a path that led to the opening of a Fish N Chips - Japanese Cuisine joint shop in the suburbs of Melbourne. His love and passion for Japanese cuisine and his unique approach to introducing locals to that earned him rave reviews and stunning accolades. Through his story of luck, dedication, and curiosity to a culture not of his upbringing, we can learn that we aren’t all that different after all. And we begin to see the miracles that can occur from being curious by something unfamiliar to us.
