The world of professional specialty coffee can be both inspiring and intimidating with many customers and new baristas feeling lost in the mix of rules, methods, and information. How can we create a great experience for guests and staff who all really want to enjoy coffee and find their place in it? Today we get to learn from the story of someone whose career in coffee took him from curious customer, to barista champion, and finally to teacher and business owner, all along the way finding his identity in coffee firmly rooted in providing the kind of hospitality that won him over at the start. Winston Thomas is 33 years old and grew up in the small suburb of Strand in Cape Town. He studied Civil Engineering at CPUT but developed an interest in coffee after reading a letter in his local newspaper of a woman complaining that there was no good coffee in Strand/Somerset West. This sparked his interest in coffee and during his studies he completed a barista course. This changed his whole perspective on coffee and after completing his National Diploma in 2014 decided to work in coffee full time. Since then he has managed to win the South African Aeropress Championship in 2016, the Western Cape Barista Championship for 2017, 2018 & 2020, the South African Barista Championship in 2017, 2018 & 2020 title as well as the Africa Barista Championship title for 2019. He now owns and runs a coffee training and consulting business called Winston Douglas Coffee and a Coffee Roastery Called Cedar Coffee Roasters.   In this episodes you will learn about: Winston's entry into coffee and how his engineering mind helped him discover higher levels Curiosity and a desire to understand how things work are valuable traits in the coffee industry. Barista competitions can provide opportunities for growth and learning, but it's important to maintain a sense of humility and not let success cloud one's perspective. I am thrilled to welcome to the show, Michael Phillips, of Blue Bottle Coffee! Michael Phillips has worked in Specialty coffee since 2006 and was a co-founder of LA based Handsome Coffee Roasters before joining Blue Bottle Coffee.  Throughout his career he has held Director of training positions at Handsome Coffee, Intelligentsia Coffee and Blue Bottle Coffee.  His work at Blue evolved into supporting new cafe openings internationally helping to launch cafes and new markets from Boston and DC to Tokyo and Seoul.  He also holds two United States Barista Championship titles from 2009 & 2010 and one World Barista Championship title from 2010.  His current role at Blue Bottle Coffee is as the Global Director of Education & Engagement where he focuses on creating consumer facing educational content. Hi, friends. A quick note before we get started: This is a re-release of an episode I did in November 2019, and features David Hu, former owner of The Peccary, a coffee shop in New Jersey. I wanted to re-release this episode for two reasons. One: David is an incredible resource, and I regularly turn to social media for his insights (you can follow him @the.david.hu). Second: I’m preparing a presentation on how to advocate for yourself at work as part of a coffee conference called High Density, hosted by The Barista League, and the topics raised in our conversation have informed much of my recent thinking. My talk focuses on the ways that baristas and other service workers can stand up for themselves, and learn about the laws and protections in place to safeguard their rights. As I’ve researched and prepared for it, I keep coming back to lessons that David shared in his episode, and I think it’s required listening for anyone who has ever held a leadership position. Essentially, he asks folks to step outside of themselves, be humble, and truly do good for the people around them. My talk is just one of the dozens of events, panels, and demonstrations happening at High Density, which is a free and 100% digital coffee conference like none other I’ve ever encountered. We have written before about how good the Prague coffee scene is. There’s a few reasons why, but we did mention one specific contributing factor: the power duo of Petra Vesela and her UK-born husband, Gwilym Davies, who happens to be the 2009 World Barista Champion.They may have met under some interesting circumstances: we will just mention a death threat during a coffee competition, judges locked in the judges room… and a bottle of whiskey in the very same room, a leftover from an Irish coffee preparation before. For the rest of the story, you will just have to listen to the podcast. Anyway, Gwilym came over to see Petra in Jílové, a village near Prague, and the rest is history.Gwilym is an incredibly interesting guest to interview because…He is in a unique position to compare Prague and London coffee scenes (which we do a lot of in the podcast), since he owns a stake in Prufrock coffee in London but lives in PragueHe was one of the pioneers of the Third Wave Coffee revolution, having learnt the craft in New Zealand and brining it to Europe. He was right there with James Hoffmann and Scott Rao, the people who have helped define what a specialty coffee operation looks like.He and Petra own a barista training centre that will train anybody from the general public to baristas who are about to compete in the World Barista Championships. You always see Gwilym and Petra in a Prague coffee shop with a barista from Korea, Japan or Australia who flew over just to have their presentation fine tuned by Gwilym and Petra, who are both certified judges for high-profile barista championships and events.He is now also a roaster under The Naughty Dog label, taking on a different role in his never-ending quest and thirst for knowledge.As a result, Gwilym has helped cultivate and improve the coffee scene in Prague through his trainings and sheer presence, and has been a connecting link between Prague’s coffee culture and the rest of the coffee world. But as you will hear in the podcast, he has learnt a thing or two from Czech baristas, and brought some of that knowledge with him back to London and Prufrock Coffee.Finally, Gwilym is a super nice guy that is just a pleasure to talk to. We sat for about 40 minutes in Kafe Pragovka during the Czech Barista Championships, and despite the noise in the coffee shop and at the event (sorry about that!), we had an absolute blast talking to Gwilym.This is some of the things we discussed with Gwilym during the interview:What does he like about the Prague coffee scene.How does it compare to the London coffee scene.Does he feel a part of the Prague coffee scene, or London coffee scene?   Gwilym discusses going into competition. discovering how to understand and respect the judges,  Comparing his skills to the top baristas around him, James Hoffman and James Morrissey, Gwilym took a chance in entering the UKBC. He explains how he went into the world competition in order to open peoples mind towards espresso. He went overtime on purpose in his heat in the Finals of the world Barista Championship and as he says himself in the interview “I tried not to win…”   Stories of barista struggles... not having the right gear for the competition: "Everything apart from the table cloth was borrowed…" "And then, we started cupping…" Gwilym tells how he started experimenting with flavours and textures of different techniques. How he embarrassed himself all in the name of coffee "Chasing James Hoffman down the street, screaming questions about coffee roasting..." In this episode we will discuss roasting related topics with Gwilym Davies like our take on dark roasts, importance of solubility in lighter roasts for espresso. We will also discuss what is the specialty coffee industry’s market share and why it is so important to share and stick together if we want to succeed. We will also touch on problems with consistency during roasting. Gwilym thinks the problem is caused by the nature of the coffee roasters, which are notoricaly temperature unstable. I take a slightly different approach: I see the problem in the nature of the always-changing ingredient – coffee. We agree that we have to recognize this issue and we have to work with it in mind. What if a coffee roaster ruins a batch? We’ll give you a few tips on what to do with coffee that is not up to your standards. Speaking of standards, Gwilym will tell you how they define standards at Prufrock Cafe and how they can help you to stay in harmony with the expectations of your customers.
