This episode developed thanks to Nick, who thought it would be a good time to revisit a bit of my history in coffee to reconnect with long-time listeners, and to share a bit more about myself with new listeners. We started this podcast about 6 years ago, and if you've been through all 72 episodes, you probably have a good idea about my coffee philosophies. But I also know that not everyone enjoys, or maybe even has the time to go back and start at the very beginning of a podcast. So we thought it would be a good opportunity to give you a bit of my coffee origin story, and a manifesto of sorts, all under one roof.Resources:Responses, Inquiries, & questions about coffee sales or future Fermentation Training Camps: info.luxiacoffee@gmail.comSupport the show on Patreon to join our live Discord hangouts, and get access to research papers, transcripts and videos. And if you don't want to commit, show your support here with a one time contribution: PayPalSign up for the newsletter for behind the scenes pictures.Cover Art by: Nick HafnerIntro song: Elijah BisbeeSupport the show

Coffee. We love it so much! However, in spite of our love for coffee, we have all been burned by taking in just a little too much caffeine as we sip, cup, and enjoy. As technology and methods around decaf coffee have improved and evolved, so too has the demand for having more control over the stimulating effects of the beverage. This is where Caffeine Control Coffee comes in to educate us on caffeine and provide options for people who want to love coffee but stave off the less desirable impacts of it. Beginning in 2003 as a barista in college, Pete Licata fell in love with both coffee and the industry behind it. As he worked in various cafes he took on leadership positions as well as roasting he also became deeply involved in competitions leading to his 2x US Championship titles and finally winning WBC in 2013. Pete is a longtime coach and mentor for world class baristas and founder of Licata Coffee Consulting. In 2019 he took on R+D and eventually the role of Head of Coffee work in Australia for Nomad Coffee Group In 2025 Pete, along with his wife Maria, opened Caffeine Control Coffee. A business focused on bringing clarity on caffeine in coffee with a focus on wellness to the masses with products designed to control how much and when their customers drink caffeine. In today's episode, we continue our series on the rise of specialty coffee in France and speak with Tom Clark, Co-founder and CEO of Coutume. Originally from Australia, Tom was among the early pioneers of Paris' specialty coffee movement. While studying in the city, he spotted a clear gap in the market to bring high-quality coffee to French consumers and set up Coutume in 2011. Today, the business operates a thriving roastery and runs 11 locations across the city a growing corporate venue business. In this conversation, Tom reflects on how consumer attitudes have shifted dramatically over the past decade, including a growing willingness to pay for higher quality. He also shares why he believes France is on track to become one of the top five specialty coffee markets in the world.
