I had never tried a dessert wine till last year. I must admit they can be delicious and a great alternative to coffee. Vignoles is a high acid and high sugar white grape. Because of its high sugar content, it can be made into a late-harvest style sweet white, but is also produced into a dry and off-dry white wine. It is moderate in winter hardiness. Port wine is a Portuguese fortified wine produced in the Douro Valley of northern Portugal. It is a sweet wine, and can be either a white or red wine. It can also be produced using two different processes. First is a “reductive” ageing process where the wine is aged in a sealed container and not exposed to air. Because of this, there is no exposure to oxygen and no evaporation. This produces a wine that is smoother on the palate and less tannic. The second style is matured in wooden barrels, and known as “oxidative” aging. Because is has some minimal exposure to oxygen and some evaporation, the wine that remains is slightly more viscous. Our second wine is not a true "Port" wine, but is made using the same grapes and process.Tonight, we are comparing: 2021 Stone Hill Winery Late Harvest Vignoles. I purchased this wine at the winery for $24. This is an estate-bottled wine from Hermann, Missouri. They report it had 29-degree Brix at harvest and the wine is bottled with 12.6% residual sugar. The wine has aromas of honey, peach, and floral, and has 9.7% alcohol. This wine was awarded 90 points in the 2024 Decanter World Wine Awards. Our second wine is a non-vintage Nightjar from Cooper's Hawk Winery and Restaurants. The wine pairs perfectly with chocolate or rich cheese. It has the flavors of black cherry, blueberry, dried fig, toasted pecan, and cocoa bean. It has a long finish with hints of fruit preserves and has 18% alcohol. This is a port-style wine made with a blend of Tempranillo, Touriga Nacional, Tinta Cao, Bastardo, Alvarelhao, and Souzao. All are traditionally used in Port wines. Part way through the fermentation process, brandy is added to the wine, which kills the yeast and raises the alcohol content. It also leaves residual sugar in the wine. Port-style wines are sweet and fortified wines. Nightjar cannot be called a Port because it is not made in the Duoro Valley, a region in northern Portugal. The wine cost $24.99. This rise was largely due to the closures of Rite Aid and Big Lots stores, which created new opportunities for smaller retailers. Notable developments include Dollar Tree securing a site in Haslett, Burlington and Best Buy consolidating their leases in the West Submarket, and several popular eateries and retailers planning to open new locations across various submarkets. The East Submarket, the largest retail sector in the area, saw vacancies rise to 12.8%, driven by store closures but balanced by strong leasing activity from retailers like Dollar Tree and Lansing Duck Pin. The West Submarket also faced increased vacancies due to store consolidations, but it is attracting significant interest from major retailers such as Bass Pro Shops, which is set to open an 85,000 SF store in Delta Crossings. The North Submarket experienced a decrease in vacancies, becoming a sought-after destination with new restaurants and entertainment venues like Dave & Buster's and Cooper's Hawk Winery. Despite the South Submarket having the highest vacancy rate at 29.4%, it is witnessing a revival with new fast food establishments like Dunkin' and Wingstop. Overall, the Greater Lansing retail market saw a net absorption of -216,877 SF, indicating a decrease in occupied space. One of few full-service brands to report both sales and unit growth in 2020, Cooper’s Hawk Winery & Restaurants began positioning itself as a lifestyle brand with multiple revenue streams long before the pandemic. The full-service restaurant and wine bar is also part wine maker. The brand has a wine club with more than half a million members, who have access to monthly wine dinners and group trips to travel to wine-making regions of the world. That diversification built around a loyal fan base was a driving factor for Cooper’s Hawk’s success through 2020, when the Downer’s Grove, Ill.-based chain recorded sales of $385.4 million, up 12.5%, according to Datassential’s Firefly 500 report. Founder and CEO Tim McEnery said the chain was forced to pivot during the pandemic, like most restaurants across the country. “Our operators became good at opening and closing the restaurants, so it was great for me that they were handling that aspect of the business so I could help navigate a way out of it for us,” he said. About six months into the pandemic, he said the company made some big decisions. “We were going to grab ahold of our future,” said McEnery. “We started investing in talent, technology, digital, data warehousing, really everything that would help Cooper’s Hawk live up to its potential over these next few years.” Hear McEnery look back on those decisions and how they have set the brand up for more-accelerated growth this year and beyond.

Hey Weight Loss Nation! www.TheWeightLossNation.com While at Podfest Multimedia Expo, I had the opportunity to spend time with friends and fellow podcasters for dinner each night. Friday night, the gang selected Cooper’s Hawk Winery Restaurant…..which is located at 8008 International Drive, Orlando. When we walked in ……the place was buzzing! The décor was pleasant to the eye and the wine tasting bar immediately caught my attention. The Maître De was polite and very considerate to our large group. All 12 of us were invited to the wine tasting bar while we had a short wait for our table. Being February …..and close to Valentine’s Day….the group unanimously chose “Romance Red” wine for our tasting. I am NOT a wine connoisseur by any means. I like to occasionally drink wine and I like the Resveratrol in wine. To me, the Romance Red wine was “pleasant.” It has a maraschino cherry and spice taste to it. I think the Romance Red would have been best suited for a dessert wine, but hey…….what does a group of podcasters know about wine? Cooper’s Hawk Winery is the 31st largest wine producer in the United States, producing over 5 million bottles a year from it’s winery in Countryside, Ill. The winery has won hundreds of awards, including a pinot noir with a 99 point rating in the Cooper’s Hawk premium Lux Line, won in a prestigious California competition. Grapes used for their wines are primarily flown in from California, Oregon and the State of Washington. Some grapes are also flown in from overseas The wine menu has many selections to choose from, which should please any wine drinker. They also have beer, craft beer, cocktails and non-alcoholic drinks. Again….I am not a wine connoisseur…..I felt like having Chardonnay….and there were several selections on the menu: They had an “unoaked chardonnay” a regular chardonnay and a chardonnay from Cooper’s Hawk Lux premium line. The price per glass ranged from $7.50 to $10.50 a glass for the Lux Line Chardonnay. I chose the regular chardonnay. The wine had a pleasant aroma of apples and pears…..and the taste was creamy and balanced….with a medium body and balanced acidity. Good choice! The Food menu has a variety of items that should make anyone visiting the restaurant happy. They have appetizers, soups, salads, burgers, sandwiches, chicken, beef, pork, seafood and pasta selections. The thing that really caught my eye…..was the “Life Balance” section of the menu. Each meal on the Life Balance menu is under 600 calories and is designed to accommodate people who are being “mindful” about portion sizes as well as healthy ingredients. The portions are carefully measured to ensure accuracy of the listed calorie count. With a nice selection to choose from, including vegetarian selections, I chose the Grilled Atlantic Salmon. I don’t cook fish at home. I don’t LOVE fish. I “like fish” I usually eat fish out at restaurants I believe will have fresh fish as well as prepare the fish exceptionally well. The salmon filet was served over sautéed spinach, with San Marzano Tomato Sauce. 3 slices of Yukon Gold potatoes also comes on the plate, but I don’t eat white potatoes anymore. I gave the potatoes to one of my buddies. The salmon was “flaky” Good start. The taste was pleasant and NOT fishy at all. So…..I enjoyed the salmon. I LOVE spinach, so that was delicious. Our server was great and I really LOVED that Cooper’s Hawk had the “Life Balance” Menu. The main restaurant is loud and crowded….as would be expected on a Friday evening. We sat on the outside patio, where 70 degrees in Orlando, Fl…..fresh air, good friends and good food is as good as it gets. I want to thank Cara Mahler, general manager of Cooper’s Hawk International Drive…..as well as her outstanding staff, who assisted us that Friday evening. Cooper’s Hawk Winery Restaurant in Orlando is open 11:00am to 9:30pm Mon – Thur and Is open until 10:30pm on Friday & Saturdays. McEnery was able to bring Cooper's Hawk Winery to life at the age of 29, opening the first restaurant in Orland Park, IL in 2005. Eleven years and 25 locations later Tim is CRUSHING IT!
